CHOCOLATE PECAN TORTE: National Pecan Torte Day


Today is National Pecan Torte Day.  I've posted many chocolate pecan pie recipes, but a torte is not a pie. Here's a definition from Wiki:
A torte is a cake made primarily with eggs, sugar, and ground nuts instead of flour. Variations may include bread crumbs as well as some flour. Tortes are Central European in origin. The word torte is derived from the German word Torte, which was derived from the Italian word torta, which was used to describe a round cake or bread.
Tortes are commonly baked in a Springform pan. An element common to most tortes is sweet icing. (Exceptions include several French tortes, such as Gâteau Mercédès and Gâteau Alcazar.) When the cake is layered, a thick covering of icing is placed between the layers, and there is almost always icing on the tops and sides of the torte. A number of European tortes do not have layers.
Following are two recipes for Chocolate Pecan Torte. The FIRST is easier and lots of fun to make! There are lots of shortcuts. The SECOND is fabulous but much more involved. They're both very tasty! As always, a lot depends on the quality of your ingredients.

1. Chocolate Pecan Torte 
from Epicurean.com This recipe is easy and delicious. O.K. it's not traditional, but its great!

Ingredients:
No-stick flour and oil baking spray
1 prepared 8 or 9 inch pecan pie, thawed if frozen
1 box (about 1 pound 4 ounces) fudge brownie mix, makes a 9-by-13-inch pan
1/4 cup brewed coffee or water
2 tablespoons bourbon or other whiskey
1/2 cup vegetable oil
2 eggs, large or extra-large

Directions:
Heat oven to 325F. Spray interior of 9-inch springform pan with baking spray.
Cover surface of pie with plastic wrap and top with plate. Invert pie onto plate, and remove pie tin. Invert prepared springform pan over pie and then invert whole, so that  pie slides into pan. Remove plate and, using the plastic wrap to keep your hands clean, smash pie so it fills bottom of pan.
Mix brownie mix, coffee, bourbon, oil, and eggs in medium mixing bowl until smooth and texture of wet mud. Pour over pie and smooth top. Bake until sides are firm and top is crusty but center is still soft, about 50 minutes. Cool until pan is comfortable to touch; remove sides of pan and cool completely. Cut into wedges to serve.

SECOND recipe
won the $1000 1985 Woman's Day "Yummiest Chocolate Recipe Contest." I've changed it slightly, adding more chocolate and an apricot jam filling. This torte is more traditional and reminds me of a Viennese Torte. You can substitute raspberry or peach jam.

2. Chocolate Pecan Torte

Chocolate Pecan Torte:
12 ounces dark  chocolate (65-70% cacao)
2 ounces unsweetened chocolate
1 1/4 cup pecans
3/4 cup softened unsalted butter
1 cup sugar
5 eggs, separated
1/3 cup sifted flour
2 Tbsp dark rum
2 tsp pure vanilla

Apricot Filling:
1/3 cup apricot jam
1 Tbsp orange liqueur
2 Tbsp dark rum
2 tsp lemon juice

Chocolate Glaze:
6 ounces dark chocolate (65-70% cacao)
2 Tbsp heavy cream
2 Tbsp unsalted butter

Decoration:
1/2 cup pecan halves
1 Tbsp sweet butter
1 Tbsp Apricot Filling

Directions
Preheat oven to 325 degrees.
Butter 9" springform pan and dust with cocoa, shaking out excess. Set aside.
In top of double boiler, over hot water, melt the two chocolates together. Stir until smooth, and completely combined. Remove from heat, and allow chocolate to cool slightly.
Using food processor, grind pecans fine with about 1/2 cup of the sugar. Add butter and remaining sugar, creaming together well. Beat in egg yolks, rum, and vanilla extract. Add flour and process with the rest. Add melted and cooled chocolate, and process again. It's quite dense.
Whip egg whites until they form stiff peaks. Mix about 1/3 of beaten egg whites into thick chocolate batter, then fold chocolate mixture into remaining whites, folding thoroughly.
Spread chocolate batter into prepared springform pan, and bake in preheated 325 degrees oven for 30 minutes or more, until toothpick inserted in center comes slightly moist.
Remove torte from oven, and allow to cool and settle in pan.
Take off springform, and transfer torte to its serving dish.

Sieve apricot jam into small saucepan. Add orange liqueur, rum, and lemon juice. Bring to boil, stirring. Reduce heat and simmer a moment, then remove pan. Reserve 1 tablespoon of finished glaze for pecan trim, and spread rest over torte. Allow apricot filling to set, then top with chocolate glaze.

In top of double boiler, over hot water, melt chocolate and cream together. Remove from heat, and stir in butter, whisking till smooth. Allow glaze to cool until it will spread smoothly over torte. Use metal spatula to smooth it evenly over top, and coat sides with thinner layer.

In small sauce pan, combine apricot glaze, and butter. Melt them together. Add pecan halves, and stir until all are coated. Drain nuts, and allow to set slightly, then press around edge of torte.

SPUMONI DAY: History & Recipe for Spumoni Bundt Cake!

Today is National Spumoni Day! Spumoni, not to be confused with zamboni, is a multicolored Italian dessert. When I was growing up, it was usually a flavorless ice cream served in Italian restaurants at the end of a meal. It wasn't until I visited Italian friends that I had really good Spumoni.

By definition, Spumoni is a special Italian dessert made of layers of ice cream, whipped cream, candied fruit, and nuts. Each layer contains different flavors and ingredients. In traditional dessert kitchens, spumoni is often made of three layers of flavor: chocolate, pistachio, and cherry. Each layer of Spumoni ice cream may include more than flavored ice cream. The chocolate layer, for example, may include chocolate shavings or chunks. Sometimes the chocolate layer has crushed hazelnuts inside. Not only does the hazelnut add a lovely flavor to the chocolate, but it also compliments the pistachio layer. The pistachio layer, of course, almost always includes crushed pistachio nuts. Finally, the fruit layer of spumoni is usually made with candied fruit. The cherry layer is the most traditional fruit component to the dessert.

You can make your own spumoni ice cream today, but if you can't find any and you don't want to make your own, you can always make Spumoni Cake. 

The trick to making beautiful Spumoni Cake is to have layers! This can be done by baking different layers or just layering a bundt cake in the bundt pan (no swirling).

Because this is such a special holiday, I'm posting an easy Spumoni Bundt Cake recipe and linking several others for those of you who are more adventurous or have more time!

Easy Spumoni Bundt Cake

You can add chopped up maraschino cherries to the Red Layer, chocolate chips, or grated chocolate to the chocolate layer, and crushed or chopped pistachios to the green layer. Also, you can put pistachio pudding in the green layer for flavor!

Ingredients
1 (18.25 oz.) pkg. white or yellow cake mix
4 large eggs
3/4 cup vegetable oil
1 (8 oz.) container sour cream
1 (4 serving size) pkg. instant vanilla pudding mix
2 ounces unsweetened chocolate (melted)
green coloring drops
marachino cherries
red food coloring
1/2 cup chopped nuts

Directions
Pre-heat Coven to 350. Grease bundt pan.
Combine cake mix, eggs, oil, sour cream, and pudding mix; beat until well blended.
Divide batter into 3 bowls.
To bowl #1, add and mix in 1/2 cup chopped nuts, 5-6 drops green food coloring, 1/2 tsp. almond extract.
To bowl #2, add and mix in 1 (4 oz.) jar cut up and well drained maraschino cherries, 5-6 drops red food coloring.
To bowl #3, add and mix in 2 (1 oz. each) squares melted unsweetened chocolate.
Pour green batter into pan first, then the red (pink) batter, and over this the chocolate batter. Be sure NOT to swirl or mix batters.
Bake at 350 degrees for 50-60 minutes until cake tests done. Cool in pan for 30 minutes; remove from pan and cool completely.

Back to School Milky Way Brownies: Vintage Ad & Recipes

I like this Vintage Milky Way Ad. Students don't really dress like this anymore, and they're certainly not wearing heavy fur coats in August. School starts so much earlier these days, but it got me thinking about my own school days. 

My friend Donna always had Milky Way bars in her freezer, and I'd stop by her house on the way to school and have one. Her mother never minded! I love frozen Milky Way Bars. When we were older, Donna and I got a ride to high school with a neighbor. While we waited for him, we availed ourselves of the Milky Way bars on his family's coffee table! Maybe this wasn't particularly healthy, but it was a delicious way to start the day!

Now, I buy miniature Milky Way bars to give out at Halloween. There are always some left over. Here are two recipes for Milky Way Brownies that are for back to school! One's for home (or stuffed in a lunchbox), and the other's for a crowd.


1. EASY MILKY WAY BROWNIES!

Make your favorite Brownie Mix (I like Ghirardelli), following directions by adding the 1/3 cup vegetable oil, 1 egg, and 1/3 cup water. At 20 minutes into the baking (350F), put about 7 ounces of chopped up miniature Milky Way Bars or Milky Way Bites on top. Bake another 20 minutes. Oh yum! Gooey back to school love!

2. MILKY WAY BROWNIES FOR A CROWD!

This recipe for Milky Way Brownies is the Bees Knees! Love the Vintage Ad above!

Ingredients: 
1 pound unsalted butter, cut into pieces
1 pound dark chocolate (70% cacao), chopped
6 ounces unsweetened chocolate (or very dark - 90%), chopped
2 Tbsp instant espresso powder
7 large eggs
2 Tbsp pure vanilla
2 1/4 cups granulated white sugar
1-1/4 cups all-purpose flour
1 Tbsp baking powder
1 tsp salt
12 ounces miniature Milky Way bars, chopped
2 Milky Way Bars, sliced

Directions: 
Preheat oven to 350°F. Butter and flour 12x18x1-inch pan. Line with foil that hangs over sides (butter the parchment). This makes it easier to get brownies out.
In metal bowl or saucepan over saucepan of simmering water, heat butter and chocolate until melted and smooth; cool slightly.
In large bowl, whisk together eggs, espresso powder, vanilla, and sugar. Stir egg mixture into slightly cooled chocolate mixture. Cool to room temperature.
In medium bowl, sift together flour, baking powder, and salt, then add to batter. Stir chopped mini Milky Way bars into chocolate mixture. Then pour into prepared baking pan and smooth top with rubber spatula.
Place slices of full-size Milky Way Bar on top of brownie batter.
Bake 25 to 35 minutes, or until toothpick inserted in center comes out clean. Do not overbake!
Let cool completely, then cover tightly and chill overnight. These are very gooey, so be sure to chill if you want to cut them!

(Almost) Instant 3- Ingredient Vanilla Soft Serve

Ingredients 
2 cups (500ml) whipping cream 
½ cup + 3 tbsp (100g) powdered sugar 
1 tsp Beyond Good Pure Ground Vanilla

Directions
In a ziplock bag, combine the cream, sugar, and vanilla powder. 
Seal the bag well and shake to combine. 
Press out all the air and lay the bag flat on a baking sheet. Freeze until firm. 
Break the ice cream up into chunks and place it in a blender or food processor. 
Process until the ice cream reaches a soft-serve consistency. 
Serve immediately or transfer the ice cream to a freezer-proof container and freeze until firm.

OF course you can add chocolate sauce, if you'd like!

S'mores Ice Cream Pie: Ice Cream Pie Day

Today is National Ice Cream Day, a perfect summer holiday. And, summer is all about S'mores, so put them together, and you have a great play on the traditional s'mores: S'mores Ice Cream Pie. I've posted S'mores Pie recipes before. They're usually made with frozen chocolate ice cream, but for this recipe uses Rocky Road ice-cream. You'll have lots more smores ingredients! How fun is that? I originally found this recipe on the Taste of Home website. I've tried other S'mores Ice Cream Pie Recipes, but this is my favorite! It's easy and delicious. Taste of Home has some wonderful recipes. Be sure and check them out!

S'mores Ice Cream Pie

Ingredients
2/3 cup graham cracker crumbs
2 Tbsp sugar
3 Tbsp unsalted butter, melted
2-1/2 cups Rocky Road ice cream (or Chocolate), softened 
2/3 cup marshmallow creme (or marshmallow fluff)
3/4 cup miniature marshmallows

Directions
In small bowl, combine graham cracker crumbs and sugar; stir in butter. Press onto bottom and up sides of 7-inch pie plate coated with cooking spray. Bake at 325° for 7-9 minutes or until lightly browned. Cool on a wire rack.
Carefully spread ice cream onto crust; freeze until firm. Spread marshmallow creme over ice cream. Top with marshmallows; gently press into creme. Cover and freeze for 4 hours or overnight.
Just before serving, use a mini-torch and scorch marshmallows a bit--or broil 6 in. from the heat for 1-2 minutes or until marshmallows are golden brown.

What to do with all that Zucchini in your Garden: Zucchini Brownies

If you planted zucchini in your garden, you're now probably wondering how to use up your harvest. Zucchini has a reputation for multiplying beyond one's plan, often hiding underneath the leaves. Yes, you can wrap your zucchini in blankets, put them in a basket, and leave them on the church steps, as I heard Erica Jong and Marge Piercy suggest many years ago, but you'll still have a lot to dispose of. However, Zucchini and Chocolate is a great and healthy combination. I have a plan!

I've posted zucchini muffin, bread, and cake recipes, but here's a recipe for Zucchini Brownies. You can never go wrong with brownies. I like my brownies, fudgy, so I really like this recipe. You can add frosting on top, too, for more chocolate, but I don't. These brownies are moist and delicious as they are. This recipe is adapted from www.crazyforcrust.com. You'll want to have a look at her video and definitely read her tip below, especially if you don't want cake-like brownies. And, you might want to make her frosting recipe.

ZUCCHINI BROWNIES

Ingredients
2 cups all-purpose flour
1/2 cup DARK cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups sugar
2 teaspoons pure vanilla extract
2 cups shredded zucchini
3-4 tablespoons water
1/2 cup chopped walnuts (optional-but I usually add them)

*Note There are no eggs, and this will seem more like cookie-dough when you're preparing it, but it will work!

Directions
Preheat oven to 350°F.
Line 9×13″ baking pan with foil and spray with cooking spray. Set aside.
In medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
Using electric mixer fitted with paddle attachment, mix together oil, sugar, and vanilla until well combined. Add dry ingredients and stir. Fold in zucchini. Let sit forfew minutes so batter can absorb the moisture from the zucchini. If your mixture is still powdery, add up to 5 tablespoons water (start with 1 tablespoon and work up from there, stirring well after each addition). Batter will be very thick but shouldn’t be powdery. (depends on how wet your zucchini is!) Add walnuts. Use your hands to work water in instead of  spoon. Dough is super thick. Do not add too much water! 
Spread in prepared pan.
Bake 25-30 minutes until brownies spring back when gently touched.

*Note Don't add too much water or your brownies will be cake-like (unless that's what you want)! The batter is thick and needs help spreading in the pan. If batter is liquidy or thin, you will have a more cake-like brownie.

CHOCOLATE LEMON MERINGUE PIE: Pie in the Sky!


Today is National Lemon Meringue Pie Day and what could be better than a Chocolate Lemon Meringue Pie. I love lemon and chocolate!  (Photo is from a Vintage ad for "Jello" pie filling, but I use Meyer Lemon Curd for my filling.)

There are so many recipes for Lemon Meringue Pie. You can make your own lemon filling and your own pie shell, but here's a simple and easy recipe that uses Chocolate Ganache (I always have some in the freezer--but you can make fresh), artisan Meyer Lemon Curd from a jar, and a pre-made pie shell (I use Trader Joe's pie dough). You'll be making the meringue, but that's o.k. It's fun and fast.

EASY CHOCOLATE LEMON MERINGUE PIE

Directions
Use a pre-made 9" pie shell. Prick and bake as directed.
Let pie shell cool.
Add a layer of Chocolate Ganache (see chocolate ganache recipe). Warm it up first, so you can easily spread evenly to the edges.
Refrigerate for 15 minutes.
Warm Lemon Curd just a bit (to allow it to spread easily) and then add it to make a layer on top of the chocolate ganache. Spread gently and evenly to the edges--don't mix the two, if possible.
Top with Meringue (see directions below)
Bake at 350 for 10-15 minutes.

Meringue Topping
4 egg whites
Pinch of cream of tartar
2 Tbsp sugar

Whisk together egg whites and cream of tartar in bowl of mixer. Beat whites until peaks form and then gradually add sugar. Keep beating mixture until stiff peaks form-about one to two minutes.
Using a spoon, place spoonfuls of meringue over surface of entire filling. Meringue should cover the filling completely to edge of crust.
Bake for 10 to 15 minutes --until meringue has golden tips.
Remove pie from oven and place on wire rack to cool before slicing.

ORANGE CREAMSICLE TRUFFLES: National Creamsicle Day!


Today is National Creamsicle Day. Growing up, I was a Fudgsicle Girl, but I occasionally bought a Creamsicle from the Good Humor Truck.

What exactly is a Creamsicle? A Creamsicle is a frozen dessert with a vanilla ice cream core and a fruit sherbet coating.

The classic Creamsicle flavor combination is orange and vanilla. Officially, the term “Creamsicle” is a registered brand name owned by Unilever, and similar products cannot be labeled as Creamsicles. However, the original Creamsicle® is such a best-seller that the term is often used generically. 

So to honor National Creamsicle Day -- and to add chocolate -- make these Orange Creamsicle Truffles. I love this easy recipe.

ORANGE CREAMSICLE TRUFFLES

Ingredients 
1/4 cup unsalted butter
Zest of 1/2 orange
3 Tbsp heavy cream
1 cup 'real' white chocolate chopped (Guittard) or 'real' white chocolate chips
1/2 tsp orange extract
1/4 cup powdered sugar

Directions 
Put white chocolate in mixing bowl, set aside.
Melt butter with orange zest in small saucepan. Stir in cream and scald mixture.
Pour hot cream mixture through mesh sieve over white chocolate and using rubber spatula press zest against sieve to release orange oils into mixture. Allow mixture to rest 1 minute, add orange extract to white chocolate mixture then stir until smooth.
Cover mixture and refrigerate 2 hours or until firm enough to handle.
Scoop mixture out with small cookie scoop or teaspoon and form into balls.
Roll balls in powdered sugar.
Freeze truffles 20 minutes before eating.

Chocolate Earthquake Cookies



This morning in Berkeley, CA, we had a loud rattling earthquake. It was a 4.1 which isn't really all that strong, but my house was close to the epicenter, so we felt it. My cat and I were enjoying a cup of tea--well, I was--when things started to rock and roll. Nothing broke or fell off, but it was loud and shaking.  So today to relieve a little tension on the fault and in my kitchen, I'm baking up some Chocolate Earthquake Cookies. Earthquake Cookies are called that because of the cracking on the top of these great chocolate cookies.

CHOCOLATE EARTHQUAKE COOKIES

Ingredients
8 Tbsp unsalted butter
4 ounces dark high quality chocolate (65-75% cacao)
4 eggs
2 cups sugar
2 tsp Madegascar vanilla extract
2 cups flour
2 tsp baking powder
pinch of salt
1 cup powdered sugar

Directions
Melt chocolate and butter in saucepan on top of saucepan with simmering water.
Remove from heat. Cool.
In large bowl, whisk eggs until well beaten.
Whisk in sugar, vanilla, and melted chocolate mixture.
Add flour, baking powder, and salt. Whisk until smooth.
Chill until firm, 2-24 hours
When ready to bake, preheat oven to 350 degrees F.
Butter one-two baking sheets.
Put powdered sugar in small bowl.
Using teaspoon or small cookie baller, take a lump of cookie dough & roll into ball.
Roll ball in powdered sugar to coat. Place on baking sheet.
Bake 12 minutes.
Cool slightly before removing to wire rack to finish cooling.

Prosecco Chocolate Cake: National Prosecco Day!


Today is National Prosecco Day, and since I love Prosecco, I had to pair it with chocolate. Here's an easy recipe for Prosecco Chocolate Cake. 

Prosecco is an affordable, versatile, appealing, good-quality sparkling wine. The difference between Prosecco and Champagne: 


Sparkling wine can only be referred to as champagne when it originates from the Champagne region of France. Prosecco is specific to the Veneto region in northern Italy. In terms of technique, the two are also made in different ways: for both wines, the grapes are fermented twice, but with prosecco, at least one fermentation takes place in a stainless-steel vat. Champagne is fermented twice in the bottle.


Prosecco Chocolate Cake

Ingredients
2 cups sifted cake flour
1/4 cup DARK cocoa
1 1/2 cups sugar (superfine is best, regular is ok), divided
1 Tbsp baking powder
1/2 tsp salt
3/4 cup Prosecco
5 Tbsp vegetable oil
1 1/2 tsp pure vanilla extract
7 large egg yolks
7 large egg whites, at room temperature

Directions
Preheat oven to 325F. Use an ungreased 10" Bundt Pan.
In large bowl, whisk together flour, cocoa, sugar (reserving 2 Tbsp), baking powder, and salt.
In medium bowl, whisk together champagne, vegetable oil, vanilla, and egg yolks, then pour into dry ingredients and whisk until just smooth.
In another large bowl, using electric mixer, beat egg whites to stiff peaks. Add remaining 2 Tbsp of sugar gradually, starting when whites begin to get foamy.
Once egg whites have reached stiff peaks (do not overheat), gently whisk 1/4 of egg whites into Prosecco batter. Gently, working in two additions, fold remaining beaten whites into Prosecco batter until no streaks of egg white foam remain visible and batter is uniform color. Be sure to scrape sides and bottom of bowl well.
Pour into ungreased bundt pan and bake for 50-60 minutes, until top of cake springs back when gently touched and toothpick inserted into center comes out clean.
Invert onto wire rack and let cool completely.
Once cooled, run knife around the edges and turn cake out onto a serving platter.
Dust with powdered sugar or cocoa.

Serve with whipped cream and a glass of Prosecco

CHOCOLATE RASPBERRY TARTE: Raspberry Tart Day!

So many raspberries this season, and so many recipes. Here's yet another for Raspberry Tart Day. Raspberry Tart day is not to be confused with Raspberry Cream Pie Day! I favor Driscoll's Berries, especially since I can find them in the market year round. I live in California, so that's pretty easy. Driscoll's Berries are always sweet and fresh. I love raspberries!

So in honor of the day, here's a recipe for a Chocolate Raspberry Tarte (or Tart)! This recipe is adapted from the Art and Soul of Baking cookbook. Of course, I make a chocolate crust! The crust in this recipe is not the usual one I make from chocolate cookie wafers. This one is made using cocoa powder, and you'll taste the difference. Of course, use only the best ingredients -- the very best cocoa. The original recipe calls for making 15 tiny tartlettes, but you can also make one big tart (or a pie, if you only have a pie pan). A tart is usually made in a shallow fluted pan, usually with a removal bottom -- a tart pan. Tarts rarely have an upper crust.

For the jam at the end, I use Bonne Maman Raspberry Preserves, one of my favorites. Of course, if you make your own raspberry or strawberry jam, you'll want to use that!

CHOCOLATE RASPBERRY TART!

Ingredients
4 ounces unsalted butter, softened
1/2 cup sugar
1 egg yolk
1 cup all purpose flour
2 1/2 Tbsp unsweetened DARK cocoa powder
3/4 cup raspberry jam (or strawberry)
4 ounces dark chocolate (65-75% cacao), chopped
1/2 cup heavy whipping cream
6 ounces fresh raspberries
1/2 tsp water
powdered sugar

Directions
Beat butter and sugar on medium speed for 3 minutes until smooth and creamy. Use spatula to scrape down bowl and beat another minute if there are lumps of butter. Add egg yolk, beat well, and scrape down sides.
Add flour and cocoa powder. Beat on low speed until dough comes together (but still has small to medium clumps) and looks moist with dark uniform color. Scrape down bowl. Use spatula to incorporate anything not mixed in.
Put dough in tart pan with removable bottom (or pie pan, if that's all you have). Press dough evenly along bottom and up sides of pan. (as with any pie dough, if it isn't working for you, stick it in the fridge for 15-20 minutes)
Use knife to cut off dough that is above top of pan (save left over dough for repairs). Put dough filled tart pan in fridge for 30 minutes. 
Preheat oven to 350 degrees with rack in lower third. Place dough filled pan on cookie sheet and bake for 15 minutes. Remove from oven and use any leftover dough to repair cracks. Bake another 8 minutes.
Remove tart pan to cooling rack and use rounded side of a spoon to press center down and make more room for filling. Let cool completely (in fridge, if you have to).
Put aside Tbsp of jam in small bowl. Spoon rest of jam to cover bottom of tart crust.
Put chocolate in heatproof bowl. Put heavy cream in small saucepan. Heat cream until it just starts to boil, then pour over chocolate. Begin whisking to blend completely and melt all chocolate. Pour ganache into crust.
Refrigerate tart for 1 hour or until filling is firm. Remove from fridge and arrange raspberries on top of tart.
Mix reserved Tbsp of jam with 1/2 tsp of water and heat in microwave for about 15 seconds. Brush jam mixture onto tops of arranged raspberries (just a little to make them shiny).
Serve immediately or refrigerate until ready to serve.
Optional: Sift with powdered sugar before serving.

S'MORES SWIRL BUNDT CAKE: National S'mores Day!

Summertime and the Living is Easy. Summertime is all about S'mores, so it's not surprising that today is National S'mores Day! Celebrate by making this twist on S'mores: S'mores Swirl Bundt Cake. I found this recipe in an old issue of Country Living Magazine. S'mores Swirl Bundt Cake is easy to make and the final product is delicious. I've adapted this recipe by reducing the sugar in the cake because I thought it was a bit too sweet.

S'MORES SWIRL BUNDT CAKE

Ingredients 
2 cups all-purpose flour, spooned and leveled 
2 1/4 tsp baking powder 
1 1/2 tsp kosher salt 
3/4 cup unsalted butter, at room temperature 
1 - 1 1/4 cup sugar 
4 large eggs, at room temperature 
1 Tbsp pure vanilla extract 
3/4 cup whole milk 
Nonstick baking spray, for pan 
1/2 cup unsweetened cocoa, sifted 
1/2 cup fine graham cracker crumbs (from about 2 1/2 crackers) 
Chocolate sauce, crushed graham crackers, and mini-marshmallows, for serving 

Directions 

Preheat oven to 350°F with rack in the middle position. Coat a 10 - to 12-cup Nordic Ware Bundt pan with baking spray. Whisk together flour, baking powder, and salt in a bowl. 

Beat butter and sugar with electric mixer on medium speed until light and fluffy, 2 to 4 minutes. Add eggs, one at a time, beating to incorporate after each addition. Beat in vanilla. Reduce mixer speed to low and beat in flour mixture and milk alternately, beginning and ending with flour mixture. Transfer half the batter to second bowl. Add cocoa; stir until fully incorporated. Fold graham crumbs into remaining batter. 

Transfer batters to separate plastic zip-top or pastry bags. Cut a 3/4-inch opening in one corner of each bag. Pipe alternating batters into grooves of prepared pan. Squeeze remaining batter in piles on top, alternating colors, then swirl with a butter knife. 

Bake until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in pan on wire rack for 15 minutes, then invert onto wire rack to cool. Drizzle with chocolate sauce and sprinkle with graham crackers and mini-marshmallows.

S'MORES GRAVENSTEIN APPLES: Gravenstein Apple Fair

I'm a big fan of Gravenstein Apples. We have thirteen trees, but every year our abundant crop has begun to be harvested methodically by our golden retrievers. Luckily, we are always able to buy a flat in Sebastopol. Gravenstein apples are my favorites--tart and juicy. Unfortunately they don't have a long shelf life, so you probably won't find them in your market, but if you do, you'll be thrilled with the taste! They're great in pies, applesauce, and cakes, not to mention just for eating! This weekend is the Gravenstein Apple Fair in Sebastopol, Sonoma County, California. Everything Gravenstein and more!

Gravenstein Apples have been a large part of  Sonoma County history since the late 1800s when Nathaniel Griffith with the advice of Luther Burbank cultivated the Gravenstein Apple for commercial use. Nathaniel Griffith was born in Iowa in 1850 and at 24 moved West. He came to California in 1883 and bought 78 acres on Laguna Road. Griffith experimented with many kinds of apples but settled on the Gravenstein. The Gravenstein reportedly originated in Germany in the gardens of the Duke Augustenberg, Castle Graefenstein, Schleswig-Holstein.

Gravenstein apple trees once covered acres of Sonoma County, but many of those apple orchards have been replaced with vineyards. Gravensteins have been declared a Heritage food, giving the apples a much needed boost in the marketplace. The trees were discovered in 1797 but didn’t really become popular until the late 1800s when Nathaniel Griffith began cultivating them for commercial use. Over time, the variety’s use spread in the western U.S., but it was also a favorite in Nova Scotia, Canada and other cool-temperate areas. Losing these apples would be an agricultural tragedy, and I hope it doesn't happen.

Gravensteins are a late summer treat not to be missed. 

S'mores Gravenstein Apples

Ingredients 
6 large Gravenstein Apples 
6 strong pointed bamboo sticks (or Wilton Caramel Apple Branch sticks)
1 (10.5-oz) bag miniature marshmallows
5 tablespoons unsalted butter
12 ounces chocolate, chopped  (or chocolate chips)
1 cup ground graham crackers

Directions
Wash and dry apples. Remove stems and skewer each apple with stick; set aside.
Line baking sheet with parchment paper. Refrigerate for 15 minutes.
Melt butter in saucepan and cook over low heat until melted. Add marshmallows and stir until melted.
Dip each apple in melted marshmallows mixture and transfer to prepared baking sheet. Place in fridge.
In meantime, melt chocolate. Put chocolate in saucepan over saucepan over simmering water. Stir until smooth.
Put ground graham crackers in bowl. Remove apples from fridge and dip apple into melted chocolate (about 2/3 way up) rotating to coat evenly.
Immediately dip chocolate-covered apple into ground graham crackers, and coat on all sides.
Repeat for all apples.
Put apples back on lined baking sheet. Refrigerate for 20 to 30 minutes.

Tip: Twist off apple stem. If skewer is blunt, sharpen with kitchen knife on on end (make diagonal cut). Push firmly into apple. If juice leaks out, blot with paper towel before dipping.

Want to get fancy? Serve on a bed of chocolate chips, crushed grahams, and mini-marshmallows.

ROOT BEER FLOAT CHOCOLATE BUNDT CAKE: National Root Beer Float Day!

Today is National Root Beer Float Day!

So what exactly is a Root Beer Float? A Root Beer Float is made from Root Beer and vanilla ice cream. To make a 'traditional' root beer float, add the root beer to a tall chilled glass, leaving a bit of room in top. Then slowly add a scoop of vanilla ice cream to the glass. Drizzle a small amount of root beer on top, and it will turn to foam. You might want to put a plate under the glass, because when the ice cream begins 'to float,' it sometimes bubbles over! Sometimes people just mix the two together, but I like the float-y way. A Root Beer Float is traditionally made with vanilla ice cream, but you can also make a Rootbeer Float with Chocolate Ice Cream--then it would be called either a brown cow or a black cow, depending on where you live. Each region in the U.S. has its own names. No surprise there!

But maybe you want to do something even more special than making an ice cream float to celebrate the day, but still maintain the root beer float flavor. And, you want to include lots of chocolate. I'm a huge fan of bundt cakes. They're easy and pretty! This recipe from the BrownEyedBaker is perfect. There's chocolate in both the Bundt Cake and the Frosting. Make the frosting and ice the cake! The frosting, itself, tastes like a root beer float! Lick the bowl!

Root Beer Float Chocolate Bundt Cake

Ingredients
2 cups root beer (not diet root beer)
1 cup DARK unsweetened cocoa
1/2 cup unsalted butter, cut into 1-inch pieces
1-1/4 cups granulated sugar
1/2 cup dark brown sugar
2 cups all-purpose flour
1-1/4 tsp baking soda
1 tsp salt
2 eggs

Directions
Preheat oven to 325 degrees F. Spray10-inch Bundt pan with nonstick cooking spray, or butter pan and dust with flour, shaking out excess flour; set aside.
In medium saucepan, heat root beer, cocoa powder, and butter over medium heat until butter melts. Add sugars and whisk until dissolved. Remove from heat and cool.
In medium bowl, whisk flour, baking soda, and salt together.
In small bowl, whisk eggs until just beaten, then whisk into cooled cocoa mixture until just combined. Fold flour mixture into cocoa mixture. Do not overbeat. Lumpy is fine!
Pour batter into prepared pan and bake 35 to 40 minutes, rotating pan halfway through baking, until sharp knife inserted into cake comes out clean. Transfer pan to wire rack to cool. Loosen sides of cake from pan and turn onto rack.

Root Beer Float Fudge Frosting

Ingredients
2 ounces dark chocolate, melted and cooled slightly
½ cup unsalted butter, softened
1 tsp salt
¼ cup root beer
2/3 cup DARK unsweetened cocoa powder
2 -1/2 cups powdered sugar

Directions
Put all ingredients in food processor. Pulse in short bursts until frosting is shiny and satiny, scraping sides of food processor a few times. (You can always use hand mixer or standing mixer)
Using spatula, spread frosting over cake in a thick layer. Let frosting set before serving.

CHOCOLATE STRAWBERRY ICE CREAM CAKE


Hot out? Want to cool off? Here's an easy, pretty, and delicious Chocolate Strawberry Ice Cream Cake recipe. I found the recipe on the Whole Foods Market site and adapted it slightly. Some other great summer recipes to be had there! 

CHOCOLATE STRAWBERRY ICE CREAM CAKE

Ingredients
14 Oreos
2 Tbsp unsalted butter, melted
1 quart chocolate ice cream, softened
1 1/4 cup chocolate fudge sauce, divided
1 quart strawberry ice cream, softened
2 cups sliced fresh strawberries

Directions 
Pulse cookies in bowl of food processor until ground (you should have about 1 1/2 cups crumbs). Pour in butter and pulse just until mixed.
Press mixture firmly into bottom of a 9-inch springform pan.
Freeze until chilled, about 30 minutes.
Using rubber spatula, spread chocolate ice cream over cookie crust and smooth top.
Place in freezer until firm, at least 1 hour.
Reserve 2 tablespoons of fudge sauce for decorating top of cake and spread remainder evenly over top of chocolate ice cream.
Freeze until firm, about 30 minutes. 
Spread strawberry ice cream over fudge, level top of cake, and freeze until whole cake is very firm, at least 3 hours and up to 1 day.
Remove cake from freezer. Run large knife under hot water, wipe dry, and run knife around rim of the pan to loosen ice cream from sides; repeat as necessary. Release and remove sides of springform pan. Lightly spread reserved fudge sauce over top of the cake using back of a spoon, and arrange strawberries however you like.
To serve, cut cake into wedges with knife warmed in hot water and wiped dry.

GOOEY CHEWY CHOCOLATE CHIP COOKIES: National Chocolate Chip Cookie Day

If you're like me, you can never have too many recipes for Chocolate Chip Cookies. Sometimes I like them crispy, sometimes chewy, sometimes goey! That's why I like this recipe for Gooey Chewy Chocolate Chip Cookies. These are the perfect cookies to make for National Chocolate Chip Cookie Day!


GOOEY CHEWY CHOCOLATE CHIP COOKIES

Ingredients
2 1/4 cups all purpose flour
2 tsp cornstarch
1 tsp baking soda
1 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 tsp salt
2 tsp vanilla extract
1 egg
1 cup mini chocolate chips

Directions
Preheat oven to 350 degrees F.
In small bowl, whisk together flour, corn starch, and baking soda, set aside.
In bowl of electric mixer fitted with paddle attachment, combine butter with both sugars.
Beat on medium speed until light and fluffy. Add salt, vanilla, and egg until just combined. Gently fold in dry ingredients and finally chocolate chips.
Drop tablespoon-size balls of dough about 2 inches apart on baking sheets.
Bake 8-10 minutes until cookies just start to brown and place on wire rack to cook for at least 5 minutes before serving.

Oreo S'mores and Recipe for Home-made S'moreos

Nabisco has been adding different flavors to their Oreo line-up for years, usually seasonal, around the holidays--Halloween Oreos, Christmas Oreos, Valentine's Day (Red Velvet Oreos), etc. Of course there are Vanilla Oreos, but that seems to defeat the purpose. Some of the flavors work and some don't, but I think you'll find these do!

To the delight of S'mores and Oreo Lovers every where, Nabisco has a Limited Edition  -- Oreo S'mores. These Oreos are like camping in the woods without the bugs. You can eat them straight out of the bag. The cookie is not chocolate! It's a graham cracker cookie, and instead of the usual creme filling, there's chocolate-marshmallow creme. These cookies are not too sweet, either. They're just right. If you like S'mores, you'll want to try these! They may be out of stock, but look for them. It' summer, and that's when they appear.

So if you can't find them, make your own S'moreos? These are a fun variation on Traditional S'mores.

S'MOREOS

Ingredients
Double-Stuffed Oreos
Large marshmallows, cut in half
Hershey bar

Directions
Twist Oreo apart so top and bottom are separated. Put filling side up and put 1 Hershey's rectangle on top. Add 1/2 large marshmallow. Top with remaining Oreo half.
Put on microwave safe plate and microwave on high for 15-20 seconds.
If top half of Oreo falls off, just put it back on top after removing from microwave.

Chocolate Chip Ice Cream Sandwiches: Ice Cream Sandwich Day

I've posted lots of easy Chocolate Chip Ice Cream Sandwich recipes including one for making your own Chipwich, but here's another recipe from Martha Stewart for a very sturdy chocolate chip cookie which is essential for chocolate chip ice cream sandwiches. I'm always looking for new chocolate chip cookie recipes.

One change I would suggest is to use either Chocolate Chip Ice Cream or in my case Ben & Jerry's Cherry Garcia. One other TIP for making ice cream sandwiches is to soften the ice cream and use a cookie cutter to get the size you want rather than just spreading on the cookie. This is great because when you squeeze, ever so lightly, you'll have a perfect center with very little cookie crumbling.

And, of course, you can use packaged big chocolate chip cookies if you're in a hurry.

Chocolate Chip Ice Cream Sandwiches 

Ingredients

1 1/2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/4 cup granulated sugar
1/4 cup sour cream
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups mini chocolate chips
1 pint Ben & Jerry's Jerry Garcia ice cream (or whatever ice cream you prefer)

Directions
Preheat oven to 350 degrees, with rack in center.
In medium bowl, whisk together flour, baking soda, and salt. Using  electric mixer, beat butter and sugars until light and fluffy. Add sour cream, egg, and vanilla; beat until smooth. With mixer on low, gradually add flour mixture; mix in 1 cup chocolate chips.
Using 1 rounded tablespoon per cookie, drop mounds of dough, about 1 1/2 inches apart, onto two baking sheets. (You'll have 25 to 30 cookies.) Bake until golden, 10 to 12 minutes; transfer to a rack to cool completely.
Scatter remaining chocolate chips on a plate. Place about 2 tablespoons ice cream between 2 cookies--or cut a chunk of ice cream using a cookie cutter the approximate size-pressing slightly until ice cream exceeds or matches the size of the cookies, bottoms facing in; press gently.
Roll sides of each sandwich in chips. (If ice cream is melting, place sandwiches in freezer until firm enough to roll in chips.) Transfer sandwiches onto baking sheets. Freeze until firm, at least 2 hours; then wrap individually in plastic.
Freeze up to 2 weeks.

DARK CHOCOLATE RASPBERRY CREAM PIE: National Raspberry Cream Pie Day

This recipe for Dark Chocolate Raspberry Cream Pie is from the Driscoll's website. DARK CHOCOLATE RASPBERRY CREAM PIE

Ingredients

Crust 
1 1/4 Cups chocolate wafer cookie crumbs 
3 Tbsp sugar 
4 Tbsp unsalted butter, melted 

Filling 
4 Ounces dark or semisweet chocolate 
2 Cups whole milk, divided 
4 Tbsp cornstarch 
1/2 Cup sugar 
2 Tbsp unsweetened cocoa powder 
2 Tsp vanilla extract 
Pinch salt 

Topping 
1 Package (6 ounces or 1 1/3 cups) Driscoll's Raspberries 
3 Tablespoons sugar 
1 Cup heavy cream 
2 Tbsp confectioner's sugar 
1 Tsp vanilla extract 

Directions

Crust 
Preheat oven to 350°F. Place crumbs and sugar in a medium bowl and stir in butter until evenly blended. Press crumb mixture firmly on bottom and up sides of 9-1/2-inch pie plate. Bake 10 minutes. Cool. 

Filling 
Melt chocolate. Whisk together 1/2 cup milk and cornstarch. Set aside.

Bring remaining 1 1/2 cups milk, sugar, cocoa and salt just to a simmer over medium heat, stirring frequently. Stir cornstarch mixture then add to milk mixture in saucepot and bring to a boil, whisking constantly. Once mixture is at a boil and quite thick, cook 1 additional minute. Remove from heat and stir in melted chocolate and vanilla. Spoon into cooled crust. Cover surface directly with plastic wrap to prevent skin from forming. Chill at least 4 hours or overnight. 

Raspberry Puree 
Puree 1/2 package of raspberries in food processor fitted with metal blade. Strain through a fine mesh strainer. Discard seeds. Stir sugar into puree until disolved. 

Topping 
Beat heavy cream and sugar until stiff peaks just form. Stir in vanilla. Spread whipped cream topping on chilled pie. With a small spoon drop small amounts of raspberry puree onto whipped cream. Use a toothpick or sharp knife to swirl puree into cream. Top with remaining raspberries.
