LEMON CURD BROWNIES WITH HOME-MADE LEMON CURD: National Lemon Juice Day!

Today is National Lemon Juice Day. I have several lemon trees, including three prolific Meyer lemon trees that are perfect for making lemon curd. I love this recipe for Lemon Curd to use in Lemon Curd Brownies.

A few years ago after my Mother passed away, while going through her correspondence, I came across a note and recipe from an English friend of hers who wrote, "As promised here's the recipe and a little supply of my lemon curd for you." Unfortunately, the lemon curd was not in the cupboard or refrigerator. I'm sure it had been eaten promptly. My mother loved lemon, and I do, too, especially with chocolate.

Since then I've been making Lemon Curd Brownies using "Elaine's Lemon Curd" recipe. Here's the recipe from "Elaine's" note. Be sure and scroll down for the Lemon Curd Brownie Recipe! Of course, you can always use store bought Lemon Curd, but try making your own. It's easy and delicious, and you can adjust the recipe as you see fit!

LEMON CURD


LEMON CURD BROWNIES

This recipe is very loosely adapted from Coffee & Quinoa. Go there for fabulous photos!

Ingredients 
4 ounces dark chocolate
3/4 cup unsalted butter
1 1/2 cups granulated sugar
3 large eggs
1 tsp pure vanilla extract
1 cup all purpose flour
1/2 tsp salt
2 cups dark chocolate, chopped into chunks  (or chocolate chips)
1 cup lemon curd

Directions
Preheat oven to 350.
Line 9 x 9 baking pan with parchment and grease with cooking spray or butter.
Melt chocolate and butter in top of double boiler, or in saucepan over another saucepan over simmering water. Take off stove. Stir in sugar. Beat in eggs and vanilla. Stir in flour and salt. Fold in chocolate chunks.
Spread 2/3 of batter into baking pan. Spread lemon curd on top. Put remaining batter on top, spreading to cover lemon curd completely.
Bake for 40-50 minutes, or until toothpick inserted in center comes out with crumbs.

LEMON JUICE: A Secret Ingredient in Chocolate Chip Cookies

Today is National Lemon Juice Day. I have several lemon trees, mostly Meyer lemons, so I could easily make lemonade for National Lemon Juice Day, but instead, I'm sharing a secret. Lemon Juice is a secret ingredient in making chewy Chocolate Chip Cookies. So if you're given lemons, make Chocolate Chip Cookies! You're not going to taste the lemon juice, but it will make for a chewier cookie. And, the reality is that since you only use a teaspoon in the batter, you can make lemonade with the rest of the juice to go with these cookies!

Chocolate Chip Cookies Secret Ingredient: Lemon Juice

Ingredients
1/2 cup rolled oats, ground to fine powder in blender or food processor
2-1/4 cups flour  (if you have bread flour, give it a try.. it will make an awesome cookie)
1-1/2 tsp baking powder
1 tsp salt
1/4 tsp cinnamon
1 cup unsalted butter, softened (do not microwave)**
3/4 cup sugar
3/4 cup brown sugar
1-1/2 tsp vanilla extract
1 tsp fresh lemon juice 
2 eggs
3 cups semi-sweet chocolate chips or dark chocolate chopped into chunks

Directions
Grind rolled oats in blender or food processor until very fine.
Measure flour, baking powder, salt, and cinnamon in blender jar and use blender to combine all dry ingredients.
Cream together butter and both sugars. Add eggs, lemon juice, and vanilla. Stir after each addition. Beat until fluffy.
Combine dry ingredients with wet stuff, and mix until fully combined.
Add chocolate chips and stir by hand or fold in chopped chocolate chunks (or chips).
Refrigerate dough for an hour.
Drop dough by large spoonfuls or using an ice cream scoop onto ungreased cookie sheet. Allow room for cookies to spread as they cook.
Bake in preheated  350 oven for approximately 16 minutes, or until barely golden and still slightly raw.
Cool cookies in pan for five minutes, then transfer to wire rack to cool completely.

LEMON CHOCOLATE CHIP POUND CAKE: National Pound Cake Day!

I have an abundance of Meyer lemons in my garden all year round, so I'm always looking for new recipes. Here's a great recipe that combines citrus and chocolate, a great combo. Lemon Chocolate Chip Pound Cake is perfect to celebrate today's Food Holiday: National Pound Cake Day. And, if you want to make this 'look' fancy, you can make these pound cakes in one of these three NordicWare pans. The pans will create a luscious loaf (loaves) with 3-D citrus or citrus fruit blossoms. Amazing! If you want to decorate, just add a simple glaze or sprinkling of confectioners sugar to define the design. Pans are made of cast-aluminum. Great for baking! Available at Williams Sonoma, Amazon, and other baking supply places.

Lemon Chocolate Chip Pound Cake

Ingredients
1-1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup sugar
1 tsp vanilla extract
2 large eggs
2 Tbsp grated lemon peel (lemon zest)
1/2 cups buttermilk
1 cup dark chocolate chips (use mini-chips if you're using the small pans)
1 1/2 Tbsp fresh lemon juice

Directions
Preheat oven to 350° F.  Butter and flour any of above pans (or regular 9 x 5 x 3 loaf pan).
Sift dry ingredients (not including chocolate chips).
In large bowl, cream butter, sugar, and lemon zest in mixer. Add eggs, one at a time, beating well after each addition. Add vanilla and lemon juice mix until blended. Gradually (on low) beat in flour mixture alternately with buttermilk.
Fold in chocolate chips.
Pour into prepared pan.
Bake for 50 minutes or until wooden pick inserted in cake comes out clean.
Cool in pan on wire rack for 10 minutes.
Let stand for 5 minutes. Invert onto plate.

Glaze or sprinkle with powder sugar, if desired.

LEMON CREME PIE WITH CHOCOLATE GRAHAM CRACKER CRUST: National Lemon Creme Pie Day

Today is National Lemon Creme Pie Day. This is not the same as Lemon Meringue Pie. This pie has a smooth fresh lemon filling and dollops of whipped cream on top (not meringue). I'm lucky enough to have five Meyer Lemon trees in my garden, and they're all loaded with fruit right now. I make this pie from scratch. It's really easy. But, if you don't have time, you can buy a store bought crust and whipped cream in a can.

Lemon Creme Pie (aka Lemon Cream Pie) with Chocolate Graham Cracker Crust 

Ingredients 

Chocolate Graham Cracker Crust
1-1/2 cups chocolate graham crackers
6 Tbsp unsalted butter, melted
2 Tbsp granulated sugar

Lemon Filling
1 1/3 cups granulated sugar
1/3 cup cornstarch
1 1/2 cups whole milk
2/3 cup freshly squeezed lemon juice
4 large eggs yolks, lightly beaten
1/4 cup unsalted butter, cubed
1 -1/2 Tbsp grated lemon zest
1-1/4 cups sour cream

Whipped Cream
1 1/2 cups cold heavy cream
3 tablespoons powdered sugar
1/2 teaspoon pure vanilla extract

Directions

Crust
Preheat oven to 350°F.
Break up graham crackers and put them in food processor. Pulse until chocolate graham crackers are processed into fine crumbs. Pour crumbs into bowl and stir in melted butter and sugar. Once all graham cracker crumbs are moistened, press crumb mixture into bottom and halfway up sides of 9-inch pie plate. Bake the crust for about 8-10 minutes. Set aside to cool.

Lemon Filling
In heavy saucepan, combine sugar and cornstarch. Whisk in milk and lemon juice. Place over medium-high heat and cook, stirring frequently, until thickened and bubbling. Reduce heat to low and cook for 2 more minutes, stirring frequently. Remove from heat.
Put egg yolks in bowl. Slowly add cup of hot mixture into egg yolks, whisking as you pour (this will slowly bring up the temperature of the eggs).
Add egg mixture back to pan and bring to gentle boil for 2 minutes, whisking constantly.
Remove from heat.
Stir in butter and lemon zest, mixing until completely combined.
Transfer to bowl and cool to room temperature.
Once cooled, whisk in sour cream. Whisk vigorously to maintain creamy texture.
Pour lemon filling into the crust. Cover and refrigerate until chilled.

Assembly
Before serving, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Top pie with whipped cream (pipe on in stars or spread using butter knife or spatula).
Garnish with finely grated lemon zest.

LEMON-ORANGE BUNDT CAKE: National Oranges and Lemons Day


Today is National Oranges and Lemons Day! Who doesn't love a holiday celebration for lemons and oranges? Citrus is so versatile in cakes. I'm lucky to have both lemon and orange trees in my garden. Here's a recipe from Southern Living  (originally from Stop and Smell the Rosemary, Junior League of Houston) to celebrate the holiday--and perfect for a Spring Tea.

 

LEMON-ORANGE BUNDT CAKE

Ingredients 

Cake 

2 cups granulated sugar 

1/2 cup unsalted butter, softened, plus more for greasing pan 

1/2 cup vegetable shortening 

6 large eggs 

3 cups all-purpose flour, plus more for pan 

1 1/2 teaspoons baking powder 

1/2 teaspoon salt 

1/2 teaspoon baking soda 

1 cup whole buttermilk 

1 teaspoon vanilla extract 

1 teaspoon lemon extract 

Vanilla Icing 

2 cups powdered sugar 

3 tablespoons whole milk 

1/4 teaspoon vanilla extract 

Lemon-Orange Icing 

2 cups powdered sugar 

1 tablespoon fresh lemon juice 

1 tablespoon fresh orange juice 

1 drop yellow food coloring gel 

Additional Ingredients 

Thin lemon or orange slices, optional 

Directions

Prepare the Cake: 

Preheat oven to 350°F. Grease and flour a 12-cup Bundt pan. 

Beat sugar, butter, and shortening in a large bowl with an electric mixer on medium speed until light and fluffy, 5 to 6 minutes. Add eggs, 1 at a time, beating well after each addition. 

Whisk together flour, baking powder, salt, and baking soda in a bowl. Alternately add flour mixture and buttermilk to butter mixture in 5 additions, beginning and ending with flour, beating until blended after each addition. Beat in vanilla and lemon extracts. Transfer batter to prepared pan; smooth top. Bake in preheated oven until a wooden pick inserted in the center comes out clean, 45 to 50 minutes. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on rack, 30 to 40 minutes. 

Prepare Vanilla Icing: 

Whisk together powdered sugar, milk, and vanilla extract in a bowl until smooth. Drizzle icing over Cake, letting it drip down sides. Refrigerate 10 minutes to allow icing to set. 

Prepare the Lemon-Orange Icing: 

Whisk together powdered sugar, fresh lemon and orange juices, and yellow food coloring gel in a bowl until smooth. Drizzle Lemon-Orange Icing over Vanilla Icing, letting it drip down sides. Let stand until set, about 20 minutes. Garnish with thin lemon or orange slices, if desired.

LEMON CHIFFON TRUFFLES: National Lemon Chiffon Cake Day

Today is National Lemon Chiffon Cake Day, and there's nothing so light and wonderful as a lemon chiffon cake made right! However, there really isn't a Chocolate Lemon Chiffon Cake, so instead to celebrate the day, make Lemon Chiffon Truffles. The truffle recipe below is simple to make. There's no coating.. so they're really easy. I always use Meyer lemons, maybe because I have 4 Meyer lemon trees that never stop producing lemons.. or maybe because Meyer Lemons have the best flavor.  For the white chocolate I use Guittard. Whichever you choose, use 'real' white chocolate.

LEMON CHIFFON TRUFFLES

Ingredients

Zest of 1 Meyer lemon
3 Tbsp heavy cream
1 cup white chocolate, finely chopped (real white chocolate not disks-I use Guittard)
3/4 tsp lemon extract
1/4 cup powdered sugar or sparkling sugar for coating

Directions
Put white chocolate in mixing bowl, set aside. Melt butter with lemon zest in saucepan. Stir in cream and heat until bubbles form around edges but not boiling.
Pour hot cream mixture over white chocolate. Add extract then stir until smooth.
Cover mixture and refrigerate 2 hours (or overnight) -- until firm enough to handle.
Scoop mixture by heaping teaspoon fulls and form into balls. Roll in powdered sugar or sparkling sugar.
Freeze truffles 20 minutes or refrigerate for one hour then enjoy.
Keep truffles in refrigerator until ready to eat.

EASY CHOCOLATE LEMON MERINGUE PIE: National Lemon Meringue Pie Day

Today is National Meringue Pie Day and what could be better than a Chocolate Lemon Meringue Pie. I love lemon and chocolate!  (Photo is from a Vintage ad for "Jello" pie filling, but I use Meyer Lemon Curd for the filling.)

There are so many recipes for Lemon Meringue Pie. You can make your own lemon filling and your own pie shell, but here's a simple and easy recipe that uses Chocolate Ganache (I always have some in the freezer--but you can make fresh), artisan Meyer Lemon Curd from a jar, and a pre-made pie shell (I use Trader Joe's pie dough). O.K. you'll be making the meringue, but that's o.k. it's fun and fast.

EASY CHOCOLATE LEMON MERINGUE PIE

Directions
Use a pre-made 9" pie shell. Prick and bake as directed.
Let Pie shell cool.
Add a layer of Chocolate Ganache (see chocolate ganache recipe). Warm it up first, so you can easily spread evenly to the edges.
Refrigerate for 15 minutes.
Warm Lemon Curd (to allow it to spread easily) and then add it to make a layer on top of the chocolate ganache. Spread gently and evenly to the edges--don't mix the two, if possible.
Top with Meringue (see directions below)
Bake at 350 for 10-15 minutes.

Meringue Topping:
4 egg whites
Pinch of cream of tartar
2 Tbsp sugar

Whisk together egg whites and cream of tartar in bowl of mixer. Beat whites until peaks form and then gradually add sugar. Keep beating mixture until stiff peaks form-about one to two minutes.
Using a spoon, place spoonfuls of meringue over surface of entire filling. Meringue should cover the filling completely to edge of crust.
Bake for 10 to 15 minutes --until meringue has golden tips.
Remove pie from oven and place on wire rack to cool before slicing.

Unfortunately, the lemon curd was not in the cupboard or refrigerator. My mother loved lemon, and I do, too, especially with chocolate.

Since then I've been making Lemon Curd Brownies using "Elaine's Lemon Curd" recipe. Here's the recipe from "Elaine's" note. Be sure and scroll down for the Lemon Curd Brownie Recipe! Of course, you can always use store bought Lemon Curd, but try making your own. It's easy and delicious, and you can adjust the recipe as you see fit!

LEMON CURD BROWNIES

This recipe is very loosely adapted from Coffee & Quinoa. Go there for fabulous photos!

Ingredients 
4 ounces dark chocolate
3/4 cup unsalted butter
1 1/2 cups granulated sugar
3 large eggs
1 tsp pure vanilla extract
1 cup all purpose flour
1/2 tsp salt
2 cups dark chocolate, chopped into chunks  (or chocolate chips)
1 cup lemon curd

Directions
Preheat oven to 350.
Line 9 x 9 baking pan with parchment and grease with cooking spray or butter.
Melt chocolate and butter in top of double boiler, or in saucepan over another saucepan over simmering water. Take off stove. Stir in sugar. Beat in eggs and vanilla. Stir in flour and salt. Fold in chocolate chunks.
Spread 2/3 of batter into baking pan. Spread lemon curd on top. Put remaining batter on top, spreading to cover lemon curd completely.
Bake for 40-50 minutes, or until toothpick inserted in center comes out with crumbs.
