Chocolate Coffee Zucchini Bread: Zucchini Bread Day

Tomorrow is National Zucchini Bread Day, but I have no zucchini in my garden. Luckily for me, it's available at my market. If you don't find any, save this recipe for the summer when your garden is filled with zucchini!

The 'secret' ingredient in this particular Chocolate Zucchini Bread is 'Coffee.' If you've been following my daily posts, you know that coffee enhances the flavor of chocolate, and you'll find that happens in this recipe! As always, your final results will only be as good as your ingredients. Use the very best cocoa, fresh oil, and good coffee.

Chocolate Coffee Zucchini Bread

ingredients
1-1/2 cups shredded fresh zucchini (approximately 1 zucchini)
1/4 cup vegetable oil
1/4 cup brewed coffee, cold
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg + 1 egg white
1 tsp pure vanilla extract
1 1/4 cup flour
1/2 cup unsweetened DARK cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1/2 cup walnuts,  chopped (optional)

Directions
Preheat oven to 350° F.
Lightly oil 9 × 5 bread pan.
Shred zucchini using fine shredding disc on food processor or hand shredder. I usually wrap the shredded zucchini in a paper towel and squeeze after shredding to get out excess moisture. Do this before measuring.
Measure 1-1/2 cups and set aside.
Beat together oil, brewed coffee, sugar, egg, and vanilla. Stir in dry ingredients until incorporated, then beat together until smooth. Fold in shredded zucchini and walnuts (optional). Once zucchini is incorporated, pour into prepared pan and bake 55 minutes, or until toothpick inserted into center comes out dry. Remove from oven and cool on wire rack. Remove from pan after cooling for 15 minutes.

DOUBLE CHOCOLATE ZUCCHINI BREAD with Pistachios: National Zucchini Bread Day!

Oddly, today is National Zucchini Bread Day. That doesn't really make any sense since it's only April 25 and my zucchini hasn't even started to bloom. Maybe this holiday refers to zucchini growing Down Under? Of course you can buy zucchini in the market all year round, but it's a summer crop in the Northern Hemisphere. By mid-summer if you're growing zucchini here (even one plant!), you've probably run out of friends to hand zukes off to, and you're thinking of wrapping your zucchini up in a blanket, putting them in a basket and leaving them on the church steps, so you might want to save this recipe for the summer.

Unfortunately Zucchini Bread doesn't use up a lot of zucchini, but it's a tasty way of serving up your courgettes! Add chocolate and you're calling my name!

When I first started baking 'vegetable' breads, I used old coffee tins for baking pans, but that was a long time ago, and my beans now come in recyclable paper bags. I usually make my zucchini breads in Bundt pans. Of course conventional loaf pans work, too, since this is a quick bread.

Most recipes say to let the zucchini bread cool before serving. I don't follow that advice since by the time the aroma has filled my kitchen for an hour, I'm ready to devour this Chocolate Zucchini Bread and often do! Since you, too, may make short shrift of this Double Chocolate Zucchini Bread with Pistachios, you'll want to make two, so double the recipe, if you plan to share.

A few comments on zucchini. Depending on where you live, zucchini may be called courgettes or marrows (remember Hercule Poirot throwing the marrow over the fence in the opening of Agatha Christie's The Murder of Roger Ackroyd) and sometimes summer squash (although in my neck of the woods summer squash is a totally different squash and a different color).

For your recipe pleasure, here's a link to recipes for different, but equally tasty Chocolate Zucchini Bread: Geeky Double Chocolate Zucchini Bread and Chocolate Chunk Zucchini Bread. As you know, you can never have too many recipes for Chocolate Zucchini Bread!

This Double Chocolate Zucchini Bread tastes great toasted with a little cream cheese or mascarpone! And, the secret ingredient --  Pistachios!

DOUBLE CHOCOLATE ZUCCHINI BREAD with Pistachios!

Ingredients
3 large eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp pure Vanilla
2 Tbsp unsalted butter
6 Tbsp DARK Cocoa
2 cups zucchini, grated
2 cups flour
1 tsp baking soda
dash of salt
1-1/2 tsp. cinnamon
2/3 cup chopped chocolate or dark chocolate chips
3/4 cup coarsely chopped pistachios
2 tsp flour

Directions
Preheat oven to 350°.
In large bowl, combine eggs, sugar, oil, and vanilla. Mix until well blended.
In small saucepan, melt 2 Tbsp butter, add 6 Tbsp cocoa and blend until smooth. Set aside to cool.
Peel and grate zucchini. Add zucchini and cooled cocoa mixture to the large mixing bowl and blend well.
In separate bowl, mix together flour, baking soda, salt, and cinnamon. Add dry ingredients to batter. Stir only enough to blend in all dry ingredients.
In another bowl, coat broken up chocolate chunks (or chips) with 2 tsp flour.
Fold in flour-coated chocolate chunks and chopped pistachios to batter.
Spoon batter into two greased and floured 9x5x3 loaf pans or into greased bundt pan.
Bake 60-70 minutes or until a toothpick inserted in middle comes out clean.
Cool in pans for 5-10 minutes.
Remove from pans and continue to cool on wire rack.

CHOCOLATE CHIP BANANA BREAD: Go Bananas!

Today is Banana Bread Day! Who doesn't love a big slice of banana bread? Add chocolate chips, and you'll be in heaven! I love this old postcard. Good banana bread is all about ripe bananas.

I have several recipes for Banana Bread, and every time I make banana bread, I change it up a bit. It usually depends on what's in the pantry, but mostly it doesn't matter. Two musts: baking soda and over ripe bananas--black and squishy, if possible!

The other day I was out of whole milk, so I used 1/2 -half and half and 1/2 -two percent. I actually prefer buttermilk, but use what you have. Oil or butter? Well, I used butter this last time, but oil works just as well, and I think I might even prefer it. I did think about olive oil, but opted for butter! French butter vs. domestic in baking? I think regular butter works better. I know, that may be a surprise, but French butter has more fat and changes the banana bread, so I save my French butter for buttering the bread after it's baked. As always, I add chocolate chips. Oh, and this is a one bowl recipe! How easy is that?

CHOCOLATE CHIP BANANA BREAD
Makes 1 loaf--easily doubled!

Ingredients

1/2 cup unsalted butter, melted
1 cup sugar
2 large eggs
3 medium-sized bananas (I used 4 smaller ones), very ripe
1/4 cup milk
1 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1/2 cup chopped nuts (I used walnuts)
1/2 cup + chocolate chips

Directions

Preheat oven to 350°F. Line 8 x 5 loaf pan with parchment, letting excess hang over sides. Spray inside with nonstick cooking spray. (this last time I buttered the pan and then used some flour)

Whisk together melted butter and sugar in mixing bowl until combined. (If you cream the sugar and butter, you'll have a more cake-like banana bread--always a choice!)
Add eggs and whisk until combined and mixture is smooth.
Whisk milk and vanilla into batter.
Peel bananas and add to bowl. Using fork, mash them into batter. Leave bananas as chunky or as smooth as you prefer.
Add flour, baking soda, and salt to bowl. Switch to spatula and stir until ingredients are just barely combined and no more dry flour is visible. (Don't overstir)
Fold in nuts and chocolate chips.
Pour batter into prepared loaf pan. Smooth top of batter.
Bake 55 to 65 minutes: Bake until top of banana bread is dark brown with some yellow insides showing (there's usually a crack down the top) and toothpick inserted into middle comes out clean. Baking time varies, so start checking around 50 minutes or so.
Cool in pan on rack for 10 minutes.
Lift loaf out of pan and set on cooling rack to cool for another 10 minutes before slicing.

Café Au Lait Coffee Cake: National Café Au Lait Day

Today is National Café au Lait Day! Café au lait is French for "coffee with milk" and refers to a specific French coffee drink, although like most things there are multiple varieties. Don't confuse it, though, with a Caffe Latte. Did you know that in the 1600s a French doctor suggested Cafe Au Lait for patients, inspiring people to add milk to their coffee? Cafe au Lait is often served in a small bowl. Very French! There are several cafe au lait bowls on the market if you want to be authentic when serving.

To celebrate today, go to your local cafe or brew a cup at home, or you can make this sensational Café au Lait Coffee Cake from Nicole at MadebyNicole. Her recipe is fool-proof, and it's filled with Chocolate Chips. What better way to celebrate coffee with milk than with a Coffee Cake? As always, you can use any good quality chocolate, chopped into small chunks in place of chocolate chips.

For those of you lucky enough to live in New Orleans, pop on over to the Café du Monde today for a Café Au Lait. They make it with chicory, which gives it a strong, bitter taste. The bitterness of the chicory offsets the sweetness of the powdered-sugar-covered beignets that, of course, you'll want to have.

Café Au Lait Coffee Cake

Crumb Topping
1 tsp instant coffee
1/2 cup brown sugar
2/3 cup flour
1 1/2 tsp cinnamon
6 Tbsp cold unsalted butter
1 cup chocolate chips
1 1/4 cup pecans

Cake
1/2 cup softened butter
1 cup sugar
2 eggs
1 cup sour cream
2 Tbsp instant coffee
2 Tbsp warm water
2 3/4 cup flour
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk

Glaze:
1/2 cup icing sugar
milk or cream to desired consistency
vanilla (optional)

Directions
Preheat oven to 350 degrees. Grease 9 x 13 pan
Make crumb topping: Stir together dry ingredients, cut in butter, add chocolate chips and nuts.
In large bowl beat sugar and butter until light. Add eggs, then sour cream, and then coffee dissolved in water.
In small bowl, whisk together dry ingredients. Gradually stir into moist ingredients starting with 1/3 of dry mixture, 1/2 of milk, 1/3 dry, 1/2 milk, and final 1/3 dry mixture.
Spread half of batter into pan. Sprinkle with 1 1/2 cups of topping. Cover with remaining batter and finish with crumb topping.
Bake for 60 – 65 minutes

(Optional) Cool and drizzle glaze off a fork onto top of cake.

DATE NUT BREAD WITH CHOCOLATE CHIPS: Retro Ad & Recipe for National Date Nut Bread Day!

Dromedary Date Nut Bread (in a can) had a Jingle Contest in 1940 to win nylon hose. Here's both the Retro Advertisement and the recipe!

This is perfect for today's food holiday: Date Nut Bread Day. Has this wonderful quick bread fallen out of favor? I think not. It's a great bread to smother with cream cheese or marscapone. Date Nut Bread makes fabulous sandwiches. It's also great toasted and smeared with unsalted butter. Add some chocolate chips or chunks to the recipe, and it belongs on this blog!

This wonderful advertisement from 1940 not only reflects the popularity of this quick bread in the U.S., but it's an historical testament to nylon hose and prepared foods at that time. Want to sell a product in the 1940s? Appeal to women. To win a pair of nylons, all you needed to do was finish the jingle. 1000 lucky women won nylons.
In 1939  DuPont introduced nylon stockings at the New York World's Fair, whose theme was the "World of Tomorrow." DuPont then went into full scale production, and "by May 1940, nylon hose was a huge success and women lined up at stores across the county to obtain the precious goods." Just an FYI, nylon went to war in 1942  to be used as parachutes and tents (as silk had been before nylon) and became in short supply.

Dromedary Date Nut Bread in a Can is no longer in production, but isn't the concept and advertisement fabulous? I used to bake a lot of quick breads in a can, but I never saw any ready baked in a can. FYI: Dromedary Date-Nut Bread in a can did not contain chocolate.

Dromedary Dates, which were also sold at the market, had a recipe on the back of the package for Date-Nut Bread. Here's a recipe that's pretty close to the original Dromedary Date-Nut Bread Recipe -- with the addition of Chocolate Chips. If you want your finished Date Nut Bread to look similar to the ad above, bake the date-nut breads in 4 soup cans!

DATE NUT BREAD WITH CHOCOLATE CHIPS

Ingredients
3/4 cup coarsely chopped walnuts
1 cup chopped pitted dates (Dromedary chopped dates from the original recipe- one package-8 ounces-equals 2 cups)
1 1/2 tsp baking soda
1/2 tsp salt
3 Tbsp oil  (or 3 tbsp melted butter-original recipe mentions margarine, but I don't use margarine)
3/4 cup boiling water
2 eggs
1 tsp vanilla
1 cup sugar
1 1/2 cup sifted flour, unbleached
1/2 cup dark chopped chocolate chips

Directions
Preheat oven to 350.
With fork, mix walnuts, dates, soda, and salt in bowl.
Add oil and boiling water. Let stand 20 minutes.
With fork, beat eggs slightly, add vanilla.
Stir in sugar and sifted flour.
Mix in date mixture.
Fold in chocolate chips.
Do Not Overmix.
Place in greased 9x5x3 inch loaf pan (or coffee can or 4 soup cans).
Bake at 350 for 1 hour until toothpick inserted in center comes out clean.
Cool in pan 10 minutes.
Move to wire rack to finish cooling.

OLIVE OIL CHOCOLATE POUND CAKE

I recently posted a great easy one bowl recipe for Banana Cake with Chocolate Chunks. One of the variations uses oil. Quick breads and pound cakes --terms I use interchangeably--are often made with oil, so for flavor, it will depend on the oil.

If the focus of your quick bread (pound cake) is the oil, I advise you buy fresh extra virgin olive oil. If you have some olive oil on hand that you want to use, give it the sniff test. If it smells at all rancid, dump it and buy new. There's nothing worse than spending time making a lovely Olive Oil Chocolate Pound Cake only to find that it tastes 'off'.  I found this recipe in the local paper, and I've now tried it with different olive oils and adapted it a bit, but so far I'm partial to a more robust extra-virgin olive oil for the its nutty buttery taste, but it's up to you. Experiment!

OLIVE OIL CHOCOLATE POUND CAKE

Ingredients
Extra-virgin olive oil for pan
1-1/3 cups + 1 Tbsp unbleached all-purpose flour
1/2 tsp baking soda
1/4 tsp sea salt  (I've tried different kinds sea salt, as well as Kosher salt)
1/2 cup unsweetened non-alkalized cocoa powder  (use the very best)
4 large eggs, room temperature
1-1/4 cups sugar
1/2 tsp pure vanilla extract
3/4 cup + 2 Tbsp extra-virgin olive oil

Directions
Preheat oven to 350°.
Oil 8 1/2 x 4 1/2-inch loaf pan (or a similar size).
Sift flour, baking soda, salt, and cocoa powder together, then sift again. Set aside.
In bowl of mixer fitted with paddle attachment, beat eggs on medium speed until combined. Add sugar slowly, increasing speed to medium-high, and beat until mixture increases in volume and becomes pale (2 minutes). Reduce speed to low. Add vanilla extract. With mixer running, add dry ingredients in 3 additions, alternating with olive oil in 2 additions, starting and ending with dry ingredients and mixing just until incorporated. Stop and scrape side of bowl as needed. Pour batter into prepared pan. Bake until skewer inserted in center comes out clean (45-55 minutes). Do not overbake.
Cool cake in pan on rack about 15 minutes. Turn cake out of pan, turn right side up and cool completely.

DATE NUT BREAD WITH CHOCOLATE CHIPS: Retro Ad & Recipe for Date Nut Bread Day

KAHLUA ZUCCHINI CHOCOLATE CHIP BREAD: National Zucchini Day

Zucchini is one of those vegetables that seems to proliferate when you're not looking. If you don't check under the leaves every day, you'll find yourself with a gigantic marrow! And that not withstanding, even the small ones tend to multiply overnight. So for today's food holiday National Zucchini Day, here's a wonderful way to use up some of that zucchini bounty. I love this recipe for Kahlua Zucchini Chocolate Chip Bread.

This is, of course, a treat for adults. And, if you're so inclined, you can make your own Kahlua. It will have to sit for a month, so if you want to make this Kahlua Zucchini Chocolate Chip Bread today, use store bought Kahlua. Scroll down for the Homemade Kahlua recipe.

Kahlua Zucchini Chocolate Chip Bread
This recipe makes one loaf, but it can easily be doubled. You can also substitute oil for the butter.  I love quick breads. They're fast and easy, and you only use one bowl!

Ingredients
2 cups flour (all-purpose, but you can use 1 cup whole wheat and 1 cup all purpose)
2 tsp baking soda
1/2 tsp salt
1/2 cup (8 Tbsp) unsalted butter, room temperature
1/2 cup sugar
2 eggs
1/2 cup Kahlua
1 cup shredded zucchini
3 ounces chocolate chips (or more)

Directions
In medium bowl, sift flour with soda and salt. Set aside.
In large bowl of electric mixer, beat butter and sugar until light and fluffy. Beat in eggs, one at a time, then Kahlua. (Don't worry if it seems curdled). Add dry ingredients and mix on low speed until blended. Stir in zucchini and chocolate chips to distribute evenly.
Pour into greased and floured 8-1/2 × 4 inch loaf pan.
Bake at 350 degrees F, about 1 hour and 15 minutes, or until wood pick inserted in center comes out clean.
Cool in pan 10 minutes.
Turn out onto wire rack and cool completely.

CHOCOLATE COFFEE ZUCCHINI BREAD: National Zucchini Bread Day

Today is National Zucchini Bread Day, but I have no zucchini in the garden. Luckily for me, it's available in several of the markets (I live in California where zucchini is a year-round crop).  If you don't find any, save this recipe for the summer when your Victory Garden is filled with zucchini!

Zucchini Breadmakes a good change from the banana bread everyone is making while Sheltered-in-Place.  The 'secret' ingredient in this particular chocolate zucchini bread is 'Coffee.'  If you've been following my daily posts, you know that coffee often enhances the flavor of chocolate, and you'll find that happens in this recipe!
