Chocolate Coffee Zucchini Bread: Zucchini Bread Day

Tomorrow is National Zucchini Bread Day, but I have no zucchini in my garden. Luckily for me, it's available at my market. If you don't find any, save this recipe for the summer when your garden is filled with zucchini!

The 'secret' ingredient in this particular Chocolate Zucchini Bread is 'Coffee.' If you've been following my daily posts, you know that coffee enhances the flavor of chocolate, and you'll find that happens in this recipe! As always, your final results will only be as good as your ingredients. Use the very best cocoa, fresh oil, and good coffee.

Chocolate Coffee Zucchini Bread 

ingredients
1-1/2 cups shredded fresh zucchini (approximately 1 zucchini)
1/4 cup vegetable oil
1/4 cup brewed coffee, cold
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg + 1 egg white
1 tsp pure vanilla extract
1 1/4 cup flour
1/2 cup unsweetened DARK cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1/2 cup walnuts,  chopped (optional)

Directions
Preheat oven to 350° F.
Lightly oil 9 × 5 bread pan.
Shred zucchini using fine shredding disc on food processor or hand shredder. I usually wrap the shredded zucchini in a paper towel and squeeze after shredding to get out excess moisture. Do this before measuring.
Measure 1-1/2 cups and set aside.
Beat together oil, brewed coffee, sugar, egg, and vanilla. Stir in dry ingredients until incorporated, then beat together until smooth. Fold in shredded zucchini and walnuts (optional). Once zucchini is incorporated, pour into prepared pan and bake 55 minutes, or until toothpick inserted into center comes out dry. Remove from oven and cool on wire rack. Remove from pan after cooling for 15 minutes.

DOUBLE CHOCOLATE ZUCCHINI BREAD with Pistachios: National Zucchini Bread Day!

Oddly, today is National Zucchini Bread Day. That doesn't really make any sense since it's only April 25 and my zucchini hasn't even started to bloom. Maybe this holiday refers to zucchini growing Down Under? Of course you can buy zucchini in the market all year round, but it's a summer crop in the Northern Hemisphere. By mid-summer if you're growing zucchini here (even one plant!), you've probably run out of friends to hand zukes off to, and you're thinking of wrapping your zucchini up in a blanket, putting them in a basket and leaving them on the church steps, so you might want to save this recipe for the summer.

Unfortunately Zucchini Bread doesn't use up a lot of zucchini, but it's a tasty way of serving up your courgettes! Add chocolate and you're calling my name!

When I first started baking 'vegetable' breads, I used old coffee tins for baking pans, but that was a long time ago, and my beans now come in recyclable paper bags. I usually make my zucchini breads in Bundt pans. Of course conventional loaf pans work, too, since this is a quick bread.

Most recipes say to let the zucchini bread cool before serving. I don't follow that advice since by the time the aroma has filled my kitchen for an hour, I'm ready to devour this Chocolate Zucchini Bread and often do! Since you, too, may make short shrift of this Double Chocolate Zucchini Bread with Pistachios, you'll want to make two, so double the recipe, if you plan to share.

A few comments on zucchini. Depending on where you live, zucchini may be called courgettes or marrows (remember Hercule Poirot throwing the marrow over the fence in the opening of Agatha Christie's The Murder of Roger Ackroyd) and sometimes summer squash (although in my neck of the woods summer squash is a totally different squash and a different color).

This Double Chocolate Zucchini Bread tastes great toasted with a little cream cheese or mascarpone! And, the secret ingredient --  Pistachios!

DOUBLE CHOCOLATE ZUCCHINI BREAD with Pistachios!

Ingredients
3 large eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp pure Vanilla
2 Tbsp unsalted butter
6 Tbsp DARK Cocoa
2 cups zucchini, grated
2 cups flour
1 tsp baking soda
dash of salt
1-1/2 tsp. cinnamon
2/3 cup chopped chocolate or dark chocolate chips
3/4 cup coarsely chopped pistachios
2 tsp flour

Directions
Preheat oven to 350°.
In large bowl, combine eggs, sugar, oil, and vanilla. Mix until well blended.
In small saucepan, melt 2 Tbsp butter, add 6 Tbsp cocoa and blend until smooth. Set aside to cool.
Peel and grate zucchini. Add zucchini and cooled cocoa mixture to the large mixing bowl and blend well.
In separate bowl, mix together flour, baking soda, salt, and cinnamon. Add dry ingredients to batter. Stir only enough to blend in all dry ingredients.
In another bowl, coat broken up chocolate chunks (or chips) with 2 tsp flour.
Fold in flour-coated chocolate chunks and chopped pistachios to batter.
Spoon batter into two greased and floured 9x5x3 loaf pans or into greased bundt pan.
Bake 60-70 minutes or until a toothpick inserted in middle comes out clean.
Cool in pans for 5-10 minutes.
Remove from pans and continue to cool on wire rack.

DOUBLE CHOCOLATE ZUCCHINI MUFFINS: National Zucchini Day

Today is National Zucchini Day, so I thought I'd post one of my favorite recipes for Double Chocolate Zucchini Muffins. Perfect to use up all the zucchini taking over your garden now.

Double Chocolate Zucchini Muffins
Makes 18 muffins

Ingredients 
1/3 cup boiling water
2 cups shredded zucchini
1-1/2 cups flour
1/2 cup DARK cocoa
3/4 cup sugar
1-1/4 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 cup canola oil
3 eggs
1 tsp pure vanilla extract
1/2 cup dark chocolate (65-75% cacao), chopped into chunks (or chocolate chips)

Directions 
Preheat oven to 350.
In large bowl, pour boiling water over zucchini.
Add other ingredients (except chocolate chunks) and stir until just combined.
Fold in chocolate chunks (or chocolate chips).
Line muffin tins with paper muffin cups (or grease muffin tin)
Using 1/4 cup measure, pour batter into cups.
Bake for 30 minutes.

How easy is that?

HOW TO USE UP YOUR ZUCCHINI HARVEST: Zucchini Brownies

If you planted zucchini in your garden, you're now probably wondering what to do with your harvest. Zucchini has a reputation for multiplying beyond one's plan, often hiding underneath the leaves. Yes, you can wrap your zucchini in blankets, put them in a basket, and leave them on the church steps, as I heard Erica Jong and Marge Piercy suggest many years ago, but you'll still have a lot to dispose of. Zucchini and Chocolate.. now there's a great and healthy combination.

I've posted zucchini muffin, bread, and cake recipes, but here's a recipe for Zucchini Brownies. You can never go wrong with brownies. I like my brownies, fudgy, so I really like this recipe. You can add frosting on top, too, for more chocolate, but I don't. These brownies are moist and delicious without. This recipe is adapted from www.crazyforcrust.com. You'll want to have a look at her video and definitely read her tip below, especially if you don't want cake-like brownies. And, you might want to make her frosting recipe.

ZUCCHINI BROWNIES

Ingredients
2 cups all-purpose flour
1/2 cup DARK cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups sugar
2 teaspoons pure vanilla extract
2 cups shredded zucchini
3-4 tablespoons water
1/2 cup chopped walnuts (optional-but I usually add them)

*Note There are no eggs, and this will seem more like cookie-dough when you're preparing it, but it will work!

Directions
Preheat oven to 350°F.
Line 9×13″ baking pan with foil and spray with cooking spray. Set aside.
In medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
Using electric mixer fitted with paddle attachment, mix together oil, sugar, and vanilla until well combined. Add dry ingredients and stir. Fold in zucchini. Let sit forfew minutes so batter can absorb the moisture from the zucchini. If your mixture is still powdery, add up to 5 tablespoons water (start with 1 tablespoon and work up from there, stirring well after each addition). Batter will be very thick but shouldn’t be powdery. (depends on how wet your zucchini is!) Add walnuts. Use your hands to work water in instead of  spoon. Dough is super thick. Do not add too much water! 
Spread in prepared pan.
Bake 25-30 minutes until brownies spring back when gently touched.

*Note Don't add too much water or your brownies will be cake-like (unless that's what you want)! The batter is thick and needs help spreading in the pan. If batter is liquidy or thin, you will have a more cake-like brownie.

KAHLUA CHOCOLATE CHIP ZUCCHINI BREAD: National Zucchini Bread Day

Zucchini is one of those vegetables that seems to proliferate when you're not looking. If you don't check under the leaves every day, you'll find yourself with a gigantic marrow! And that not withstanding, even the small ones seem to multiply overnight. Oddly today's holiday, National Zucchini Bread Day, is not during the growing season, but there's lots of zucchini in the market, so you can still make this to celebrate. I love this recipe for Kahlua Zucchini Chocolate Chip Bread.

Because of the addition of Kahlua, this is a treat for adults. And, if you're so inclined, you can make your own Kahlua. It will have to sit for a month, so if you want to make this Kahlua Chocolate Chip Zucchini Bread today, use store bought Kahlua. Scroll down for the Homemade Kahlua recipe.

Kahlua Chocolate Chip Zucchini Bread
This recipe makes one loaf, but it can easily be doubled. You can also substitute oil for the butter.  I love quick breads. They're fast and easy, and you only use one bowl!

Ingredients
2 cups flour (all-purpose, but you can use 1 cup whole wheat and 1 cup all purpose)
2 tsp baking soda
1/2 tsp salt
1/2 cup (8 Tbsp) unsalted butter, room temperature
1/2 cup sugar
2 eggs
1/2 cup Kahlua
1 cup shredded zucchini
3 ounces chocolate chips (or more)

Directions
In medium bowl, sift flour with soda and salt. Set aside.
In large bowl of electric mixer, beat butter and sugar until light and fluffy. Beat in eggs, one at a time, then Kahlua. (Don't worry if it seems curdled). Add dry ingredients and mix on low speed until blended. Stir in zucchini and chocolate chips to distribute evenly.
Pour into greased and floured 8-1/2 × 4 inch loaf pan.
Bake at 350 degrees F, about 1 hour and 15 minutes, or until wood pick inserted in center comes out clean.
Cool in pan 10 minutes.
Turn out onto wire rack and cool completely.

Homemade Kahlua

Ingredients
4 cups water
4 cups sugar
2 ounces instant coffee
1 vanilla bean
Fifth of vodka or bourbon

Directions
Bring 4 cups water to a boil. Add the 4 cups sugar and cook until dissolved. Add the instant coffee. Simmer slowly - do not boil!
Add vanilla bean and 1/5 vodka or bourbon.
Bottle and cap. Leave for a month or more!

Today is National Zucchini Bread Day, but I have no zucchini in my garden. Luckily for me, it's available in my markets. If you don't find any, save this recipe for the summer when your Victory Garden is filled with zucchini!

The 'secret' ingredient in this particular Chocolate Zucchini Bread is 'Coffee.' If you've been following my daily posts, you know that coffee enhances the flavor of chocolate, and you'll find that happens in this recipe! Chocolate Coffee Zucchini Bread 

ingredients

DOUBLE CHOCOLATE ZUCCHINI BREAD WITH PISTACHIOS: National Pistachio Day!

Today is National Pistachio Day! I posted this recipe for Double Chocolate Zucchini Bread with Pistachios last summer when my zucchini plants were taking over the garden. I can get zucchini at the market (not the farmers' market) any time of year, so I can make this Zucchini Bread to Celebrate the day. This zucchini bread is tasty hot out of the oven or toasted the next day with fresh unsalted butter, cream cheese, or mascarpone.

The Secret Ingredient: Pistachios! Pistachios add taste and texture to this wonderful moist zucchini bread.

Pistachios' clam-like seeds pop open when they are ripe and the exposed seed has a brownish pink skin–which in turn reveals a pale creamy green flesh inside. Pistachios are members of the Anacardiaceae family, which includes sumacs and poison ivy.  (This makes it perfect for my other blog: www.mysteryfanfare.com) Like these scary relatives, pistachio plants (and seeds) can contain the oily irritant urushiol—so pistachios sometimes trigger allergies and rashes, however, dieticians assert that the seed is one of the healthier sources of protein and oils. Traditionally pistachio nuts were dyed red to hide the blemishes made by handpicking, however this false color is no longer necessary.

Please use natural pistachios in the following recipe. No red dye #3!

Double Chocolate Zucchini Bread with Pistachios

Ingredients
3 large eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp pure Vanilla
2 Tbsp unsalted butter
6 Tbsp DARK Cocoa
2 cups zucchini, grated
2 cups flour
1 tsp baking soda
Pinch of salt
1-1/2 tsp cinnamon
2/3 cup chopped chocolate chunks or dark chocolate chips
3/4 cup coarsely chopped pistachios
2 tsp flour

Directions
Preheat oven to 350°.
In large bowl, combine eggs, sugar, oil, and vanilla. Mix until well blended.
In small saucepan, melt 2 Tbsp butter, add 6 Tbsp cocoa and blend tuntil smooth. Set aside to cool.
Peel and grate zucchini. Add zucchini and cooled cocoa mixture to the large mixing bowl and blend well.
In separate bowl, mix together flour, baking soda, salt, and cinnamon. Add dry ingredients to the batter. Stir only enough to blend in all the dry ingredients.
In another bowl, coat broken up chocolate chunks (or chips) with 2 tsp flour.
Fold in flour-coated chocolate chunks and chopped pistachios to batter.
Spoon batter into two greased and floured 9x5x3 loaf pans or into a greased bundt pan.
Bake 60-70 minutes or until a toothpick inserted in middle comes out clean.
Cool in pans for 5-10 minutes.
Remove from pans and continue to cool on a wire rack.

DOUBLE CHOCOLATE ZUCCHINI MUFFINS: National Muffin Day!

Today is National Muffin Day, so I thought I'd post one of my favorite recipes for Double Chocolate Zucchini Muffins. I know that zucchini may not be growing in your garden now, but zucchini is in the market. If you're a strong locavore, you can always save this recipe for the summer when you are sure to have a huge harvest of zucchini. 

Double Chocolate Zucchini Muffins
Makes 18 muffins

Ingredients 
1/3 cup boiling water
2 cups shredded zucchini
1-1/2 cups flour
1/2 cup DARK cocoa
3/4 cup sugar
1-1/4 tsp baking soda
1 tsp salt
1 tsp cinnamon

KAHLUA ZUCCHINI CHOCOLATE CHUNK BREAD: National Zucchini Bread Day

Today is National Zucchini Bread Day, not to be confused with National Zucchini Day on August 8.  Be sure and bookmark this recipe for that summer food holiday when you will have a surplus of zucchini. This Kahlua Zucchini Chocolate Chunk Bread is great for toasting at breakfast, for a snack, or to take on a picnic. But here's a heads-up. This zucchini bread includes a hefty amount of Kahlua, so you might want to reserve it for adults.

You can buy Kahlua, but you can make it, too. Lots of other uses. Here's a recipe for homemade Kahlua.

Fifth of vodka or bourbon

Directions
Bring 4 cups water to a boil. Add the 4 cups sugar and cook until dissolved. Add the instant coffee. Simmer slowly - do not boil!
Add vanilla bean and 1/5 vodka or bourbon.
Bottle and cap. Leave for a month or more!

Kahlua Zucchini Chocolate Chunk Bread
This recipe makes one loaf, but it can easily be doubled. You can also substitute oil for the butter.  I love quick breads. They're fast and easy, and you only use one bowl! Because this Zucchini Bread with Chocolate Chunks has Kahlua in it, you might want to take it on an 'adult' picnic only.

Ingredients
2 cups flour (all-purpose, but you can use 1 cup whole wheat and 1 cup all purpose)
2 tsp baking soda
1/2 tsp salt
1/2 cup (8 Tbsp) unsalted butter, room temperature
1/2 cup sugar
2 eggs
1/2 cup Kahlua
1 cup shredded zucchini
3 ounces good quality dark chocolate, chopped into smallish chunks (or chocolate chips if that's what you have)

Directions
In medium bowl, sift flour with soda and salt. Set aside.
In large bowl of electric mixer, beat butter and sugar until light and fluffy. Beat in eggs, one at a time, then Kahlua. (Don't worry if it seems curdled). Add dry ingredients and mix on low speed until blended. Stir in zucchini and chocolate chunks to distribute evenly.
Pour into greased and floured 8-1/2 × 4 inch loaf pan.
Bake at 350 degrees F, about 1 hour and 15 minutes, or until wood pick inserted in center comes out clean.
Cool in pan 10 minutes.
Turn out onto wire rack and cool completely.

KAHLUA ZUCCHINI CHOCOLATE CHIP BREAD: National Zucchini Day

Zucchini is one of those vegetables that seems to proliferate when you're not looking. If you don't check under the leaves every day, you'll find yourself with a gigantic marrow! And that not withstanding, even the small ones tend to multiply overnight. So for today's food holiday National Zucchini Day, here's a wonderful way to use up some of that zucchini bounty. I love this recipe for Kahlua Zucchini Chocolate Chip Bread.

This is, of course, a treat for adults. And, if you're so inclined, you can make your own Kahlua. It will have to sit for a month, so if you want to make this Kahlua Zucchini Chocolate Chip Bread today, use store bought Kahlua. Scroll down for the Homemade Kahlua recipe.

CHOCOLATE COFFEE ZUCCHINI BREAD: National Zucchini Bread Day

Today is National Zucchini Bread Day, but I have no zucchini in the garden. Luckily for me, it's available in several of the markets (I live in California where zucchini is a year-round crop).  If you don't find any, save this recipe for the summer when your Victory Garden is filled with zucchini!

Zucchini Breadmakes a good change from the banana bread everyone is making while Sheltered-in-Place.  The 'secret' ingredient in this particular chocolate zucchini bread is 'Coffee.'  If you've been following my daily posts, you know that coffee often enhances the flavor of chocolate, and you'll find that happens in this recipe! As always, your final results will only be as good as your ingredients. Use the very best cocoa, fresh oil, and good coffee.

Chocolate Coffee Zucchini Bread 

ingredients
1-1/2 cups shredded fresh zucchini (approximately 1 zucchini)
1/4 cup vegetable oil
1/4 cup brewed coffee, cold
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg + 1 egg white
1 tsp pure vanilla extract
1 1/4 cup flour
1/2 cup unsweetened DARK cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1/2 cup walnuts,  chopped (optional)

Directions
Preheat oven to 350° F.
Lightly oil 9 × 5 bread pan.
Shred zucchini using fine shredding disc on food processor or hand shredder. I usually wrap the shredded zucchini in a paper towel and squeeze after shredding to get out excess moisture. Do this before measuring.
Measure 1-1/2 cups and set aside.
Beat together oil, brewed coffee, sugar, egg, and vanilla. Stir in dry ingredients until incorporated, then beat together until smooth. Fold in shredded zucchini and walnuts (optional). Once zucchini is incorporated, pour into prepared pan and bake 55 minutes, or until toothpick inserted into center comes out dry. Remove  from oven and cool on wire rack. Remove from pan after cooling for 15 minutes.

In my Bad Hair Day mystery series, amateur sleuth Marla Vail’s best friend, Tally, is a chocoholic. You’ll find scenes in a chocolate shop in Hair Brained and Trimmed to Death. I based this place on a visit to World of Chocolate in Orlando, where I was impressed by the artisan methods of production and the chocolate sculptures.

In my stories, we learn more about chocolate. This food counters the taint of murder in a mystery. When you’re in a bad mood, do you tend to pop a piece of chocolate into your mouth? Or maybe you’ll reward yourself after a task well done with your favorite chocolate indulgence. We always feel better after savoring the sensation of chocolate on our tongue.

Here’s a snippet of conversation between Marla and Teri, a chocolatier. They’re discussing the health benefits of chocolate.

“Cocoa contains flavonoids that are powerful antioxidants. These prevent cellular damage due to free radicals and help to lower your risk for heart disease. Flavonoids also improve blood flow to your brain and cause your body to release endorphins. Dark chocolate has a higher content than milk chocolate. You’ll want to avoid cocoa powder that has undergone Dutch processing. It’s been treated with alkali agents that reduce the flavonoid value.” 

“How about caffeine? Like, if I eat too much chocolate, won’t it make my heart race?” Marla asked. 

“Cocoa contains some caffeine, but it also has theobromine. Both of these compounds can increase your heart rate. Again, dark chocolate has a higher concentration than milk chocolate. And these chemicals are usually not present in white chocolate.” 

It came as no surprise when I wrote a cookbook that some of the recipes include chocolate. Some desserts are rich indulgences, such as the coconut fudge pie. Or they include healthy ingredients, like the chocolate zucchini cake. Since I like to include a splash of liqueur in my cakes on occasion, you’ll find a Kahlua chocolate cake among the recipes. Here is one sample item:

CHOCOLATE ZUCCHINI CAKE 

Ingredients
2 1⁄4 cups sifted all-purpose flour
1⁄2 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1 3⁄4 cups sugar
1⁄2 cup unsalted butter, room temperature
1⁄2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1⁄2 cup buttermilk
2 cups grated, unpeeled zucchini
6 oz. package semisweet chocolate chips
3⁄4 cup chopped walnuts

Directions
Preheat oven to 325 degrees. Grease and flour a 9x13x2 inch baking pan. Sift the flour, cocoa, baking soda and salt together into a medium bowl. In a separate bowl, beat the sugar, softened butter, and oil until blended. Add eggs one at a time and beat well. Add vanilla, and then mix in dry ingredients alternating with buttermilk. Mix in grated zucchini.

Pour batter into prepared baking pan. Sprinkle semisweet chocolate chips and nuts on top. Bake for 50 minutes or until toothpick inserted in center comes out clean.

Today is National Zucchini Day. Now, you might be wondering why it's Zucchini Day in April rather than August when the zucchini crop is so abundant. Never fear. Today is one of two Zucchini food holidays. There is another on August 8. Of course, any Zucchini Day holiday will be best celebrated with Chocolate.

So here in honor of the Zucchini Day holiday, here is my go-to recipe for Zucchini Chocolate Chip Cookies!

This recipe is from Animal, Vegetable, Miracle: A Year of Food Life (2007) by Barbara Kingsolver with Steven L. Hopp and Camille Kingsolver. I've added walnuts, because I like a little crunch.  This book should be a staple on your shelf. It's part memoir, part journalistic investigation. It tells the story of how the family was changed by one year of deliberately eating food produced in the place where they live. Barbara Kingsolver wrote the central narrative; Steven Hopp's sidebars explore various aspects of food-production science and industry; Camille Kingsolver's brief essays offer a nineteen-year-old's perspective on the local-food project, plus nutritional information, meal plans and most importantly for this blog, the recipes. There's also a Zucchini Season Meal Plan in the book. The recipes are all fabulous, and here is the recipe for Zucchini Chocolate Chip Cookies. As I mentioned, I added walnuts for extra crunch.

Zucchini Chocolate Chip Cookies

Ingredients:
1 egg, beaten
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/3 cup honey
1 tablespoon vanilla extract
Combine in large bowl

1 cup white flour
1 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
Combine in a separate, small bowl and blend into liquid mixture

1 cup finely shredded zucchini
12 oz chocolate chips
3/4 cup chopped walnuts
Stir these into other ingredients, mix well. Drop by spoonful onto greased baking
sheet, and flatten with the back of a spoon. Bake at 350F degrees, 10 to 15 minutes.


How easy is this? And delicious...

DOUBLE CHOCOLATE ZUCCHINI MUFFINS: National Muffin Day

Today is National Muffin Day, so I thought I'd post one of my favorite recipes for Double Chocolate Zucchini Muffins. I know that zucchini may not be growing in your garden now, but zucchini is in the market. If you're a strong locavore, you can always save this recipe for the summer when you are sure to have a huge harvest of zucchini. 

Double Chocolate Zucchini Muffins
Makes 18 muffins

Ingredients 
1/3 cup boiling water
2 cups shredded zucchini
1-1/2 cups flour
1/2 cup DARK cocoa
3/4 cup sugar
1-1/4 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 cup canola oil
3 eggs
1 tsp pure vanilla extract
1/2 cup dark chocolate (65-75% cacao), chopped into chunks (or chocolate chips)

Directions 
Preheat oven to 350.
In large bowl, pour boiling water over zucchini.
Add other ingredients (except chocolate chunks) and stir until just combined.
Fold in chocolate chunks (or chocolate chips).
Line muffin tins with paper muffin cups (or grease muffin tin)
Using 1/4 cup measure, pour batter into cups.
Bake for 30 minutes.

How easy is that?

ZUCCHINI BROWNIES

If you planted zucchini in your garden, you're now probably wondering what to do with all that harvest. Zucchini has a reputation for multiplying beyond one's plan, often hiding underneath the leaves. Yes, you can wrap your zucchini in blankets, put them in a basket, and leave them on the church steps, as I heard Erica Jong and Marge Piercy suggest many years ago, but you'll still have a lot to dispose of. Zucchini and Chocolate.. now there's a great and healthy combination.

I've posted muffin, bread, and cake recipes, but I think this is the first time I've posted a recipe for Zucchini Brownies. You can never go wrong with brownies. I like my brownies, fudgy, so I really like this recipe. You can add frosting on top, too, for more chocolate, but I don't. These brownies are moist and delicious without. This recipe is adapted from www.crazyforcrust.com. You'll want to have a look at her video and definitely read her tip below, especially if you don't want cake-like brownies. And, you might want to make her frosting recipe.

ZUCCHINI BROWNIES

Ingredients
2 cups all-purpose flour
1/2 cup DARK cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups sugar
2 teaspoons vanilla extract
2 cups shredded zucchini
3-4 tablespoons water
1/2 cup chopped walnuts (optional-but I usually add them)

*Note* There are no eggs, and this will seem more like cookie-dough when you're preparing it, but it will work!

Directions
Preheat oven to 350°F.
Line 9×13″ baking pan with foil and spray with cooking spray. Set aside.
In medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
Using electric mixer fitted with paddle attachment, mix together oil, sugar, and vanilla until well combined. Add dry ingredients and stir. Fold in zucchini. Let sit forfew minutes so batter can absorb the moisture from the zucchini. If your mixture is still powdery, add up to 5 tablespoons water (start with 1 tablespoon and work up from there, stirring well after each addition). Batter will be very thick but shouldn’t be powdery. (depends on how wet your zucchini is!) Add walnuts. Use your hands to work water in instead of  spoon. Dough is super thick. Do not add too much water! 
Spread in prepared pan.
Bake 25-30 minutes until brownies spring back when gently touched.

*Note* Don't add too much water or your brownies will be cake-like! The batter is thick and needs help spreading in the pan. If batter is liquidy or thin, you will have a more cake-like brownie.

DOUBLE CHOCOLATE ZUCCHINI BREAD WITH PISTACHIOS: National Zucchini Bread Day

Oddly, today is National Zucchini Bread Day. That doesn't really make any sense since it's only April 25 and my zucchini hasn't even started to bloom. Maybe this holiday refers to zucchini growing Down Under? Of course you can buy zucchini in the market all year round, but it's a summer crop in the Northern Hemisphere. By mid-summer here if you're growing zucchini (even one plant!), you've probably run out of friends to hand zukes off to, and you're thinking of wrapping your zucchini up in a blanket, putting them in a basket and leaving them on the church steps, so you might want to save this recipe for the summer.

Unfortunately Zucchini Bread doesn't use up a lot of zucchini, but it's a tasty way of serving up your courgettes! Add chocolate and you're calling my name!

When I first started baking 'vegetable' breads, I used old coffee tins for baking pans, but that was a long time ago, and my beans now come in recyclable paper bags. I usually make my zucchini breads in Bundt pans. Of course conventional loaf pans work, too, since this is a quick bread.

Most recipes say to let the zucchini bread cool before serving. I don't follow that advice since by the time the aroma has filled my kitchen for an hour, I'm ready to devour this Chocolate Zucchini Bread and often do! Since you, too, may make short shrift of this Double Chocolate Zucchini Bread with Pistachios, you'll want to make two, so double the recipe, if you plan to share.

A few comments on zucchini. Depending on where you live, zucchini may be called courgettes or marrows (remember Hercule Poirot throwing the marrow over the fence in the opening of Agatha Christie's The Murder of Roger Ackroyd) and sometimes summer squash (although in my neck of the woods summer squash is a totally different squash and a different color).

This Double Chocolate Zucchini Bread tastes great toasted with a little cream cheese or mascarpone! And, the secret ingredient --  Pistachios!

DOUBLE CHOCOLATE ZUCCHINI BREAD with Pistachios!

Ingredients
3 large eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp Madagascar Vanilla
2 Tbsp unsalted butter
6 Tbsp DARK Cocoa
2 cups zucchini, grated
2 cups flour
1 tsp baking soda
dash of salt
1-1/2 tsp. cinnamon
2/3 cup chopped chocolate or dark chocolate chips
3/4 cup coarsely chopped pistachios
2 tsp flour

Directions
Preheat oven to 350°.
In large bowl, combine eggs, sugar, oil, and vanilla. Mix until well blended.
In small saucepan, melt 2 Tbsp butter, add 6 Tbsp cocoa and blend until smooth. Set aside to cool.
Peel and grate zucchini. Add zucchini and cooled cocoa mixture to the large mixing bowl and blend well.
In separate bowl, mix together flour, baking soda, salt, and cinnamon. Add dry ingredients to the batter. Stir only enough to blend in all the dry ingredients.
In another bowl, coat broken up chocolate chunks (or chips) with 2 tsp flour.
Fold in flour-coated chocolate chunks and chopped pistachios to the batter.
Spoon batter into two greased and floured 9x5x3 loaf pans or into a greased bundt pan.
Bake 60-70 minutes or until a toothpick inserted in middle comes out clean.
Cool in pans for 5-10 minutes.
Remove from pans and continue to cool on wire rack.
