Penuche Fudge Day: History & Recipe

Today is Penuche Fudge Day. This tasty fudge is sometimes called Penuche Fudge, sometimes Brown Sugar Fudge, Creamy Praline Fudge, New England Fudge, and even Sucre a la Creme (in Canada)! Whatever you call it, it's fabulous.

Historically, Penuche Fudge has been attributed to New England (New England Fudge) as well as some places in the South (Creamy Praline), but there are many variations in nearly every part of the world. Milk is usually boiled down to thick fudge, and then brown sugar is added to it to create the distinctive butterscotch taste. This fudge is very similar to Mexican Cajeta which is also a kind of sweetened thickened goat’s milk with the same dull brown color of penuche. There are also many East Indian versions of the same dish using thickened milk called as peda or milk fudge burfi. The only difference between the regional variations is the thickness of the eventual dish. Cajeta is liquidy and can be used a as a spread, while penuche is semi-soft like a fudge and pedas or milk burfis are stiffer. But the basic ingredients in the penuche fudge recipe and preparation process are the same. Dulce du leche is another very popular version where condensed milk is thickened with hours of cooking resulting in a thick paste. Different versions of this dish are very popular all over Latin America and France even though they are given different names.

Penuche Fudge

Ingredients
4 cups brown sugar
1 cup heavy cream
2 Tbsp unsalted butter
1 tsp pure vanilla extract
1-2/3 cups chopped pecans

Directions
Combine brown sugar, cream, and butter in medium saucepan. Stir until dissolved. Heat to between 234 and 240 degrees F.
Remove from heat and stir until mixture loses its gloss (or process in food processor 30 seconds) Quickly stir in vanilla and nuts and spread into 9 x 9 inch dish.
Chill before cutting into squares.

RIBBON FANTASY FUDGE: Retro Ad with Recipe for National Fudge Day

Today is National Fudge Day. I love Fudge. Who doesn't? I love both the texture and the taste. What makes it special for you?

To celebrate this food holiday, here's a great Retro Ad with Recipe from Kraft for Ribbon Fantasy Fudge using Marshmallow Creme. I usually use Marshmallow Fluff which I think has a better flavor, but whatever works for you. What I like most about this Fudge recipe is that there are two distinct layers. Easy to make, and oh so pretty! And, you can always throw in some walnuts for more texture.


Ribbon Fantasy Fudge

Ingredients
3 cups sugar
3/4 cup butter (original retro recipe calls for Parkay margarine)
2/3 cup (5-1/3 fl oz can) evaporated milk
6 ounce pkg semi-sweet chocolate pieces (I substitute chopped good dark chocolate)
7 ounce jar Kraft marshmallow creme (I prefer Marshmallow Fluff)
1 tsp pure vanilla
1/2 cup peanut butter (crunchy or creamy style)

Directions
Combine 1-1/2 cups sugar, 6 Tbsp butter, and 1/3 cup milk in heavy 1-1/2 quart sauce pan; bring to full rolling boil, stirring constantly. Continue boiling 4 minutes over medium heat; stirring constantly to prevent scorching. Remove from heat; stir in chocolate pieces until melted. Add 1 cup (1/2 jar) marshmallow creme and 1/2 tsp vanilla; beat until well blended. Pour into 13 x 9 inch pan. Repeat with remaining ingredients, substituting peanut butter for chocolate pieces. Spread over chocolate layer. Cool at room temperature; cut into squares.

ELSIE THE COW'S DOUBLE CHOCOLATE NUTTY FUDGE: Retro Ad with Recipe for Nutty Fudge Day!

Today is Nutty Fudge Day. Fudge is a 'traditional' home-made chocolate candy. Here's a great Retro Ad with Recipe from Elsie the Cow for Double Chocolate Nutty Fudge.


Double Chocolate Nutty Fudge

Ingredients
2 cups (12 oz.) semi-sweet chocolate chips
1 (11 1/2 oz.) package milk chocolate chips
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk (not evaporated milk)
2 Tbsp cream or milk
2 tsp vanilla extract
1 cup chopped walnuts

Directions
In saucepan, over low heat, melt semi-sweet chocolate chips with 2/3 cup Eagle Brand, 1 Tbsp cream and 1 tsp vanilla. Remove from heat; stir in 1/2 cup walnuts. Spread evenly into foil-lined 9-inch square pan.
In another saucepan, over low heat, melt milk chocolate chips with remaining Eagle Brand, 1 Tbsp cream and 1 tsp vanilla. Remove from heat; stir in remaining walnuts. Spread over fudge in pan.
Chill 2 hours, or until firm.
Turn fudge onto cutting board; peel off foil and cut into squares.
Store loosely covered at room temperature.

I love old cookbooks, don't you? Several years ago I found a tiny cookbook, Carnation's Easy-Does-It Cookbook, by Mary Blake (1958), at the Alameda Flea Market. It's filled with helpful tips and recipes. Some are a bit dated, and the assumption is that the "little woman's in the kitchen," but it's a real blast from the past. PASSOVER CHOCOLATE BROWNIES: 4 Recipes


If
you observe Passover, you won't be eating any leavened food products during the holiday which lasts 8 days. So in terms of chocolate baking you need to tweak some things, starting with not using flour. This doesn't mean you can't have Chocolate Cake, Brownies, or Cookies .. . it's just an adjustment. Baking without flour shouldn't be a problem (there's always matzo meal or almond flour meal, and these recipes are great any time, not just for Passover.

So for Passover week, here are 4 different recipes for Passover Brownies. Try all the recipes and let me know which you like best. Do you have your own favorite recipe for Passover Brownies? Be sure and share in comments.

These first two recipes I adapted from recipes I found on Chowhound in 2008.

Passover Chocolate Brownies #1

Ingredients
8 Tbsp unsalted butter, softened
1 cup sugar
5 eggs, separated
8 ounces semisweet chocolate, chopped (not chocolate chips)
8 ounces finely chopped or ground almonds (or almond flour)
Pinch of salt

Directions
Cream butter and sugar together. Mix in egg yolks.
Melt chocolate over double boiler (or over saucepan over saucepan with simmering water). Cool and add to butter mixture. Add finely ground almonds.
Beat egg whites until stiff but not dry. Fold into batter.
Pour into 9" square greased baking tin.
Bake in a preheated 350 oven for 45-50 min.
Cool and cut into squares.

Passover Chocolate Brownies #2

Ingredients
1/2 cup oil
1/2 cup of matzo cake meal
1 cup sugar
1/3 cup DARK cocoa
3 large eggs
1/2 cup chopped nuts

Directions
Mix oil and sugar.
Add eggs and mix again.
Sift matzo cake meal and cocoa together and add to mixture.
Fold in nuts and mix thoroughly.
Grease 8 x 8 pan and pour in batter.
Bake at 350 degrees for 35 minutes.
Cool and cut in squares.

This third recipe is originally from Gourmet 2000 ( Epicurious). It calls for a Chocolate-Wine Glaze, and you might want to try that. I like my brownies unadulterated, but I've tried the chocolate-wine glaze, and it's delicious. Nothing quite like Chocolate and Manischewitz!

Passover Chocolate Brownies #3

Ingredients
6 ounces bittersweet or semisweet chocolate, chopped
1/2 cup unsalted margarine (if keeping brownies pareve) or butter, cut into pieces
3 large eggs
1 cup sugar
Pinch of Salt
2 tsp finely grated fresh orange zest
3/4 cup matzo cake meal
3/4 cup walnuts, coarsely chopped

Directions
Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with wax paper or greased foil.
Melt chocolate and margarine (or butter) in metal bowl over saucepan of simmering water, stirring until smooth. Remove from heat and cool 5 minutes.
Beat eggs, sugar, and salt in large bowl with electric mixer on high until pale and thick. Beat in chocolate in 3 batches on low speed. Stir in zest, matzo meal, and nuts just until blended.
Spread batter in baking pan and bake in middle of oven until firm and tester comes out clean, 25 to 30 minutes.
Cool in pan on rack, then invert onto a platter and remove paper or foil.
Cut into Squares.

Passover Chocolate Brownies #4

Ingredients
2/3 cup semisweet chocolate chips (or dark chocolate, chopped)
1/2 cup unsalted butter or margarine
2 eggs
1 cup sugar
1 tsp vanilla
1/2 cup matzoh cake meal
2 Tbsp unsweetened DARK cocoa powder
2 Tbsp potato starch
1/2 cup chopped walnuts or pecans

Directions
Preheat oven to 350. Grease 8-inch square baking dish.
Melt chocolate and butter in double boiler or in saucepan on top of another saucepan with simmering water. Set aside to cool slightly.
In mixing bowl, stir together cake meal, cocoa powder, and potato starch.
Combine eggs, granulated sugar, and vanilla in large bowl. Beat with electric mixer until light and creamy – about 3 to 5 minutes. Beat in chocolate mixture until smooth, then add cake meal mixture, beating on low speed just until combined. Batter is thick.
Fold in chopped nuts and spread in prepared baking dish.
Bake for 25 to 30 minutes or just until entire surface has puffed slightly. Brownies will still be moist in center.
Remove from oven and cool before cutting into squares.

I especially love Passover Brownies #4--very, very fudgy!!! Of course, always use high quality chocolate! It really makes a difference!!!

BAILEY'S IRISH CREAM FUDGE: St. Patrick's Day!

St. Patrick's Day is right around the corner, so here's an easy recipe for Bailey's Irish Cream Fudge. This recipe is adapted from Fantasy-Ireland.com. As I've mentioned before, you can find some great recipes in some unusual places: Food Associations, Travel Sites, and other product sites.

Bailey's comes in different 'flavors', and your fudge will change flavor, too, when you use Mint Bailey's Irish Cream or Coffee Irish Cream or Creme Caramel Irish Cream. Try them all.


BAILEY'S IRISH CREAM FUDGE

Ingredients:
2-12 oz milk chocolate (35-45% cacao), chopped, or 2-12 oz packages of milk chocolate chips
12 oz dark chocolate (65-75% cacao), chopped or a 12 oz. package semisweet chocolate chips
2-7oz jars of marshmallow creme
2 teaspoons pure vanilla extract
2/3 cup Bailey's Irish Cream
2 cups chopped nuts (optional)
4 1/2 cups granulated sugar
1-12 oz can evaporated milk
1/2 pound unsalted Irish butter, softened

Directions:
In very large bowl, combine milk chocolate chips, semisweet chocolate chips, marshmallow cream, vanilla extract, Irish Cream, and nuts (if you are adding them). Set this mixture aside.
Line 10 x 15 baking pan with foil and spread lightly with butter.
In medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to gentle boil over medium heat and cook slowly, stirring constantly for about 10 minutes.
Pour milk mixture into chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand and NOT use any kind of mixer.
Pour fudge into prepared pan and chill until set.

Extra Nutty Peanut Butter Fudge Brownies: National Peanut Lovers Day!

Here's a great  recipe for Extra Nutty Peanut Butter Fudge Brownies adapted from Pillsbury using their box Brownie Mix.  I don't usually use boxed mixes, but this is a good recipe. Of course you can make your own brownies and just add the layer of peanut butter fudge and 1/2 cup chopped peanuts.

I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe.

I also add chocolate chips to the recipe and cut down on the peanut butter chips. You can never have enough chocolate!

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES

Ingredients
2 (15.8 oz) pkg. fudge brownie mix with chocolate syrup
1/2 cup oil
1/2 cup water
 2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
7 ounces peanut butter chips
1/2 cup peanut butter
1/2 cup chocolate chips
1/2 cup roasted salted peanuts, coarsely chopped

Directions
Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13 x 9-inch pan.
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.
In large saucepan, combine condensed milk, peanut butter chips and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly.
Spoon and spread peanut butter mixture over batter.
Drop remaining half of batter over peanut butter layer.
Sprinkle with chopped peanuts.
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan.
DO NOT OVERBAKE. 
Cool 2 hours.
Refrigerate 1-1/2 hours or until completely cooled before serving.
Cut into bars.

CANDY CANE FUDGE AKA CHOCOLATE PEPPERMINT FUDGE


Nothing say Christmas quite like Candy Canes, so why not combine Candy Canes with another holiday favorite -- Fudge. I love this Chocolate Peppermint Fudge aka Candy Cane Fudge. Fudge can be sent to far-flung friends and family, given as a gift, or enjoyed by the family during the holidays! Fudge is so versatile and easy to make.

Candy Cane Fudge aka Chocolate Peppermint Fudge

Ingredients
18 ounces dark chocolate  (60-75% cacao), chopped
1-14 ounce can  sweetened condensed milk
Dash of salt
1 tsp peppermint extract
4 peppermint candy canes, crushed

Directions
Line 9" pan with wax paper.
Melt chocolate with sweetened condensed milk and salt in heavy saucepan over another saucepan with simmering water (or in top of double boiler). Stir until melted.
Remove from heat; stir in peppermint extract, and half the crushed candy canes.
Spread evenly in prepared pan. Top with the rest of candy cane crumbs.
Chill 2 hours or until firm.
Remove from pan by lifting edges of wax paper.
Cut into squares.

POMEGRANATE FUDGE: Rosh Hashanah or any time!

Here's another chocolate recipe for Rosh Hashana, the Jewish New Year. Even if you don't celebrate this holiday, you'll want to bookmark this easy recipe. I use dark chocolate, but milk chocolate works well, too. I buy my pomegranate seeds at Trader Joe's, but you may want to buy a whole pomegranate and de-seed it. As I've said before, use the very best ingredients for the best flavor!

On the second day of Rosh Hashana, it's traditional to eat a fruit you haven't had this season. Pomegranates are often the 'preferred' fruit, because they also symbolize fruitfulness. The pomegranate is also said to have 613 seeds which corresponds with the 613 commandments of the Torah.

Pomegranate Fudge

Ingredients
23 ounces Chocolate, chopped  (65-70% cacao) or dark chocolate chips (or milk chocolate, if you prefer)
14 ounces Sweetened Condensed Milk
1/4 cup Pomegranate Molasses
1/2 tsp Sea Salt (fleur de sel)
Seeds of 1 Pomegranate (about a cup or 5 1/3 ounces if you're buying them loose)

Directions
Line pan that is at least 7 x 7 and 2 inches high with parchment paper.
In saucepan over saucepan over simmering water, combine chocolate and condensed milk. Stirring constantly.
Remove from stove and mix in pomegranate molasses. Mix in 1/4 teaspoon sea salt.
Pour fudge into parchment-lined pan, smoothing with spatula.
Spread pomegranate seeds over top of fudge and gently pat into fudge so they stick to fudge as it cools.
Add another 1/4 teaspoon of sea salt over top of fudge.
Put in refrigerator to set.
Remove from refrigerator.
Cut and eat.

Vanilla Macadamia Nutty Fudge: National Macadamia Day!

Yesterday was National Macadamia Day, and it's not too late to post this! If you like fudge, you'll want to make this great Vanilla Macadamia Nutty Fudge to celebrate! 

This recipe comes from the Nestle Toll House site, but I've adapted it using Guittard White Chocolate. If you don't have Guittard, make sure your chocolate is 'real' white chocolate and not the fake stuff!

Vanilla Macadamia Nutty Fudge

Ingredients
Unsalted Butter
2 1/2 cups sugar
2/3 cup unsweetened coconut milk
1/2 cup unsalted butter
2 cups White Chocolate chips or 2 cups chopped white chocolate
1 jar (7 oz) marshmallow crème
3/4 cup macadamia nuts, chopped (must be fresh)*
1 tsp pure vanilla
1/4 tsp coconut extract

Directions

LINE 9-inch-square baking pan with foil, extending foil over edges of pan. Grease foil with butter. Butter sides of 3-quart heavy-duty saucepan.

COMBINE sugar, coconut milk and 1/2 cup butter in prepared saucepan. Cook over medium heat, stirring frequently, until mixture boils. Clip candy thermometer to side of pan, making sure bottom of thermometer doesn't touch bottom of pan. Reduce heat to medium-low. Continue boiling at moderate, steady rate without stirring, until thermometer registers 238° F, softball stage (about 15 minutes). Adjust heat as necessary to maintain a steady boil. Remove from heat.

STIR in white chocolate until melted and smooth. Stir in marshmallow crème, nuts, vanilla and coconut extracts until well combined. Transfer mixture to prepared baking pan; cool for 3 to 4 hours or until firm.

LIFT from pan; remove foil. Cut into 48 pieces. Store tightly covered.

FIVE MINUTE DARK CHOCOLATE COFFEE FUDGE: National Fudge Day!

Today is National Fudge Day! Over the years, I have posted many Fudge recipes, but if you're hankering for a quick and easy fudge recipe to celebrate today's Food holiday, look no further than this Five Minute Dark Chocolate Coffee Fudge recipe.

This Fudge truly takes only 5 minutes to make and includes only three ingredients that are probably already in your pantry. Coffee really brings out the chocolate in this old fashioned silky smooth fudge. Soooo rich. 

FIVE MINUTE DARK CHOCOLATE COFFEE FUDGE

Ingredients
1-14-oz can Sweetened Condensed Milk
2 Tbsp espresso granules (or instant coffee)
1/2 Tbsp water
12 ounces dark chocolate (65-70% cacao), chopped

Directions
Heat condensed milk in saucepan over medium heat.
Dissolve espresso granules in water. Stir into condensed milk.
Add chopped dark chocolate, lower heat to simmer (be careful not to burn). Stir just until until melted and smooth.
Pour into oiled 8x8 inch pan. Chill in fridge until set (about 2 hours).
Cut into squares.

S'MORES FUDGE: 2 Recipes for Memorial Day!

I just love S'mores! Memorial Day heralds in Summer, and nothing says Summer more than S'mores. Maybe you won't be camping this Memorial Day weekend..or barbecuing, but you can still have S'mores. There are so many great ways to prepare S'moresS'mores Fudge is perfect for the holiday. It's also easy to make ahead.

The first printed S’mores recipe appeared in 1927 in the Girl Scout handbook called, Tramping and Trailing with the Girl Scouts. Folklore tells us the name “S’mores” came about because everyone who tasted one asked for “some more.”

The first recipe below has three distinct layers...and it really tastes like fudge. One caveat: This fudge is sweet, but then we're talking S'mores, aren't we? The second recipe is quicker to make (and eat) and the ingredients are all mixed together. Whichever you make, you won't be disappointed!

Have a great Memorial Day Weekend!

1. S'MORES FUDGE

Ingredients

Graham Cracker Crust
4 sheets of graham crackers
1/4 cup of sugar
1 1/2 Tbsp melted butter

Chocolate Fudge Layer
1-1/2 cups milk chocolate, chopped (or milk chocolate chips)
1/2 tsp pure vanilla extract
1/2 can of sweetened condensed milk

Marshmallow Layer
1 cup 'real' white chocolate chips
1/2 cup marshmallow fluff
1/2 can sweetened condensed milk

Directions
Preheat oven to 375 degrees
Line 8 by 8 square pan with aluminum foil, with extra foil hanging over (to help lift out later).
Crush graham crackers and mix in melted butter and sugar.
Pour into aluminum foil lined pan and push down with glass cup to make even layer.
Bake for 15 minutes or until edges are golden brown.
Melt chocolate in small saucepan over medium low heat.
Remove from heat and add half can of sweetened condensed milk and vanilla.
When smooth, pour immediately over graham cracker crust.
Melt white chocolate in small saucepan over medium low heat and add in marshmallow fluff and rest of sweetened condensed milk. Stir until smooth and consistent. Pour over chocolate layer.
Refrigerate overnight.
Next day, lift fudge out of pan using aluminum foil.
Carefully remove foil and carefully cut into squares.

2. EASY S'MORES FUDGE

Ingredients
1-12 ounce bag milk chocolate chips or 12 ounces milk chocolate, chopped
5 regular sized graham crackers, broken into small pieces
1 can sweetened condensed milk
2 Tbsp butter
1 cup mini-marshmallows

Directions
In small saucepan, melt chocolate, butter and sweetened condensed milk. Remove from heat. Cool slightly.
Add graham crackers until combined.
Fold in marshmallows.
Pour into greased 8x8 inch baking pan.
Cover and refrigerate for 2 hours.
Cut into squares.

NUTTY FUDGE: Memories, History, and 3 Recipes to celebrate National Nutty Fudge Day


Another holiday, another recipe. Today is National Nutty Fudge Day. My Aunt Annie made the best fudge in the world, but now that I know more about candy nomenclature, I think she actually made truffles. They were dark chocolate balls rolled in cocoa. She called it fudge, and I'll always remember it that way.

But I had my first taste of 'real' fudge down the shore in Atlantic City. Fudge was sold along with Salt Water Taffy at many of the Boardwalk candy shops. I loved trying fudge from all the candy shops.

History of Fudge: Fudge was supposedly invented in the U.S.in the late 1880s. Historians believe the first batch of fudge resulted from a bungled batch of caramels, as in "Oh, Fudge" I don't think so...

According to Wikipedia, the main component of Fudge was similar to the traditional recipe for Scots Tablet found in The Household Book of the Lady Grisell Baillie (1692-1733). The term 'fudge' is often used in the UK for a soft variant of the tablet recipe.

One of the first documented examples of American fudge (containing chocolate!) was found in a letter written by Emelyn Batersby Hartridge, a Vassar College student, who wrote that a friend's cousin made fudge in Baltimore in 1886 and sold it for 40 cents a pound. Hartridge asked for the fudge recipe, and in 1888 she made 30 pounds of the fudge for the Vassar Senior Auction. In The Candy Book (Alice Bradley, 1929) an entire chapter is devoted to fudge.

Fudge is a crystalline candy, which means that, unlike lollipops, caramels, and taffy, crystal formation is the key to making great fudge. Tiny microcrystals of sugar in fudge give fudge its firm but smooth texture. The secret to successful fudge is getting these crystals to form at just the right time. Fudge is one of the rare exceptions to the rule that sugar crystals are not desirable in candy. Tiny microcrystals in fudge are what give it its firm texture. When the crystals are small enough, they don’t feel grainy on your tongue, but smooth.

While you ultimately want crystals to form, it's important that they don't form too early. Now it gets tricky! The key to successful, nongrainy fudge is in the cooling, not the cooking. If you disturb the cooling fudge during this cooling phase you increase the potential for larger crystals (seed crystals) of sugar to form too early and thus a grainy fudge results.

So how to make fudge easily? Here are three recipes.

1. Easy Million Dollar Fudge 
Adapted from Stephanie in All Recipes

Ingredients
4 - 1/2 cups white sugar
1 pinch salt
2 Tbsp unsalted butter
1 (12 fluid ounce) can evaporated milk
2 cups chopped nuts
1 (12 ounce) package semisweet chocolate chips (or good quality dark chocolate, chopped)
12 (1 ounce) squares German sweet chocolate
2 cups marshmallow creme

Directions
Butter two 9 x 9 inch baking pans and set aside.
Place chocolate chips, German chocolate, marshmallow creme, and nuts into a large mixing bowl. Set aside.
In 4 quart saucepan, combine sugar, salt, butter, and evaporated milk. Stir over low heat until sugar dissolves. Bring to boil, and cook for 6 minutes.
Pour boiling syrup over ingredients in bowl, beat until all chocolate is melted. Pour into prepared pans. Let stand a few hours before cutting.

2. Foolproof Dark Chocolate Fudge Recipe

Ingredients
3 cups semisweet chocolate chips (or dark chocolate, chopped)
1 can (14 oz.) sweetened condensed milk
Pinch of salt
1 cup chopped walnuts
1-1/2 tsp vanilla

Directions
In heavy saucepan over low heat, melt chocolate chips with sweetened condensed milk and salt. Remove from heat; stir in walnuts and vanilla.
Spread evenly into aluminum foil lined 8 or 9 inch square pan.
Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off foil and cut into squares.

3. Nutty Chocolate Fudge
Alton Brown had a great show on the Food Network on making fudge, so I thought I should include one of his recipes for nutty chocolate fudge (slightly adapted)

Ingredients
2- 3/4 cups sugar
4 ounces unsweetened chocolate
3 Tbsp unsalted butter, plus more for greasing pan
1 cup half-and-half
1 Tbsp corn syrup
1 Tbsp Madagascar vanilla extract
1 cup chopped, roasted nuts

Directions
Grease 8 by 8-inch pan with butter.
In heavy-bottomed saucepan, combine sugar, chocolate, 1-1/2 Tbsp  butter, half-and-half, and corn syrup. Over medium heat, stir with a wooden spoon until sugar is dissolved and chocolate is melted.
Increase heat and bring to a boil. Reduce heat to medium-low, cover, and boil for 3 minutes.
Remove cover and attach candy thermometer to pot. Cook until thermometer reads 234 degrees F.
Remove from heat and add remaining butter. Do not stir.
Let mixture cool for 10 minutes or until it drops to 130 degrees F.
Add vanilla and nuts and mix until well-blended and shiny texture becomes matte.
Pour into prepared pan.
Let sit in cool dry area until firm.
Cut into 1-inch pieces.

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES: National Peanut Butter Day!

Today is National Peanut Butter Day! Here's a great and easy recipe for Extra Nutty Peanut Butter Fudge Brownies adapted from a Pillsbury recipe. I don't usually use boxed mixes, but this is a great recipe. Of course you can make your own brownies and just add the layer of peanut butter fudge and 1/2 cup chopped peanuts. I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe. I also add chocolate chips to the recipe and cut down on the peanut butter chips. You can never have enough chocolate!

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES!

Ingredients
2 (15.8 oz) package fudge brownie mix with chocolate syrup
1/2 cup oil
1/2 cup water
2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
7 ounces peanut butter chips
1/2 cup peanut butter
1/2 cup chocolate chips
1/2 cup roasted salted peanuts, coarsely chopped

Directions
Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13x9-inch pan.
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.
In large saucepan, combine condensed milk, peanut butter chips, and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly.
Spoon and spread peanut butter mixture over batter.
Drop remaining half of batter over peanut butter layer.
Sprinkle with chopped peanuts.
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan. DO NOT OVERBAKE. 
Cool 2 hours.
Cut into bars.

Today is National Rum Day. I love Chocolate and Rum, and I use rum in lots of recipes. I love this 1941 Ronrico Rum recipe pamphlet -- "The Rum Connoisseur"-- a giveaway, I'm sure, from Ronrico Rum. Love the graphics on the cover and title page. So I'm renaming this Retro Rum Day!

PENUCHE FUDGE DAY History & Recipe

Today is Penuche Fudge Day. This tasty fudge is sometimes called Penuche Fudge, sometimes Brown Sugar Fudge, Creamy Praline Fudge, New England Fudge, and even Sucre a la Creme (in Canada)! Whatever you call it, it's fabulous.

Historically, Penuche Fudge has been attributed to New England (New England Fudge) as well as some places in the South (Creamy Praline), but there are many variations in nearly every part of the world. Milk is usually boiled down to thick fudge,  and then brown sugar is added to it to create the distinctive butterscotch taste. This fudge is very similar to Mexican Cajeta which is also a kind of sweetened thickened goat’s milk with the same dull brown color of penuche. There are also many East Indian versions of the same dish using thickened milk called as peda or milk fudge burfi. The only difference between the regional variations is the thickness of the eventual dish. Cajeta is liquidy and can be used a as a spread, while penuche is semi-soft like a fudge and pedas or milk burfis are stiffer. But the basic ingredients in the penuche fudge recipe and preparation process are the same. Dulce du leche is another very popular version where condensed milk is thickened with hours of cooking resulting in a thick paste. Different versions of this dish are very popular all over Latin America and France even though they are given different names.

Penuche Fudge

Ingredients
4 cups brown sugar
1 cup heavy cream
2 Tbsp unsalted butter
1 tsp pure vanilla extract
1-2/3 cups chopped pecans

Directions
Combine brown sugar, cream, and butter in medium saucepan. Stir until dissolved. Heat to between 234 and 240 degrees F.
Remove from heat and stir until mixture loses its gloss (or process in food processor 30 seconds) Quickly stir in vanilla and nuts and spread into 9 x 9 inch dish.
Chill before cutting into squares.

FIVE MINUTE DARK CHOCOLATE COFFEE FUDGE: National Fudge Day

Today is National Fudge Day! Over the years of writing this blog, I have posted many Fudge recipes. Well, duh! Chocolate --  Fudge! So if you're hankering for fudge to celebrate National Fudge Day, here's an incredibly quick and easy recipe for Five Minute Dark Chocolate Coffee Fudge.

This Fudge truly only takes 5 minutes to make and includes just three ingredients that are probably already in your pantry. Coffee really brings out the chocolate in this old fashioned silky smooth fudge. Soooo rich. Gluten-free, too!

FIVE MINUTE DARK CHOCOLATE COFFEE FUDGE

Ingredients
1-14-oz can Sweetened Condensed Milk
2 Tbsp espresso granules (or instant coffee)
1/2 Tbsp water
12 ounces dark chocolate (65-70% cacao), chopped

Directions
Heat condensed milk in saucepan over medium heat.
Dissolve espresso granules in water. Stir into condensed milk.
Add chopped dark chocolate, lower heat to simmer (be careful not to burn). Stir just until until melted and smooth.
Pour into oiled 8x8 inch pan. Chill in fridge until set (about 2 hours).
Cut into squares.
