Boozy Triple Chocolate Cheesecake: Cheesecake Day!
Boozy Triple Chocolate Cheesecake
Ingredients
1/4 cup sugar
1 Tbsp unsalted butter
1 Tbsp egg white
1 1/3 cups chocolate graham cracker crumbs (about 16 crackers)
Vegetable cooking spray
3 Tbsp dark Rum
1/4 cup chocolate syrup
16 ounces cream cheese, softened
1 cup sugar
2 Tbsp unsweetened cocoa
1 tsp vanilla extract
1/4 tsp salt
2 eggs
1/2 cup sour cream
1 Tbsp sugar
2 tsp unsweetened cocoa
Raspberries for decoration
Directions
Preheat oven to 350°.
Crust
Place first 3 ingredients in bowl; beat on medium speed until blended. Add crumbs; stir well. Firmly press mixture into bottom and 1 inch up sides of an 8-inch springform pan coated with cooking spray. Bake at 350° for 10 minutes; let cool on wire rack.
Filling
Combine rum and chocolate in top of double boiler (or saucepan over saucepan over simmering water). Cook over simmering water 2 minutes or until chocolate melts, stirring frequently. Remove from heat; add chocolate syrup, stirring until smooth.
Preheat oven to 300°.
Place cream cheese in large bowl; beat at medium speed of a mixer until smooth. Add 1 cup sugar, 2 tablespoons cocoa, vanilla, and salt; beat until smooth. Add rum/chocolate mixture; beat at low speed until well-blended. Add eggs, 1 at a time, beating well after each addition.
Pour cheese mixture into prepared pan; bake at 300° for 40 minutes or until almost set.
Combine sour cream, 1 Tbsp, and 2 teaspoons cocoa; stir well. Turn oven off, and spread sour cream mixture over cheesecake. Let cheesecake stand for 45 minutes in oven with door closed.
Remove cheesecake from oven, and let cool to room temperature. Cover and chill at least 8 hours.
Garnish with raspberries.

KICKED UP CHOCOLATE TAPIOCA PUDDING
Ingredients
1/2 cup sugar
3 Tbsp quick cooking tapioca
3 cups whole milk
1 large egg, beaten
1 tsp ground cinnamon
3 ounces DARK chocolate
1 tsp vanilla extract
2 tsp dark rum
Directions
In medium saucepan, combine sugar, tapioca, milk, and egg. Let stand for 5 minutes.
Add cinnamon and chocolate to saucepan and cook over medium heat until pudding comes to full boil, stirring continually to prevent burning.
Remove from heat and stir in vanilla and rum.
Cool for 20 minutes. Stir for creamy texture.
Serve warm or chilled.

HOT BUTTERED RUM COCOA: Hot Buttered Rum Day!
This recipe for Hot Buttered Rum Cocoa is from the Wisconsin Cheese Board. As I've mentioned before, Food associations have great recipes. Be sure and check them out.
If you don't have time to make Hot Buttered Rum Cocoa, you can always celebrate this food holiday with Seattle Chocolates' Hot Buttered Rum Milk Chocolate Truffle Bar. Fabulous! This bar is buttery, smooth with a light hint of rum and toffee crunch in milk chocolate.
Hot Buttered Rum Cocoa
1/4 cup unsalted butter, softened
1/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup dark rum
1/2 cup granulated sugar
1/3 cup cocoa
4 cups milk
Combine butter, brown sugar, and seasonings in small bowl, mixing until well-blended. Drop six spoonfuls onto plasticwrap-lined plate; chill while preparing beverage, then form into balls.
Combine rum, sugar, and cocoa in 2 quart saucepan. Cook over medium heat until mixture boils, stirring constantly. Simmer 1 minute; add milk. Cook until heated through; do not boil.
Pour into six mugs; place one butter ball in each cup.

MOCHA RUM CAKE: National Rum Cake!
Mocha Rum Cake!
Ingredients
3 cups all-purpose flour
1 1⁄2 tsp baking soda
1/2 tsp salt
3⁄4 lb bittersweet chocolate, chopped
1 1⁄2 cups unsalted butter, cut into pieces
1⁄3 cup dark rum
2 cups strong brewed full-bodied coffee
2 cups granulated sugar
3 large eggs, beaten lightly
1 1⁄2 tsp pure vanilla extract
Confectioners' sugar, for dusting
Sweetened whipped cream
Cocoa powder, for dusting
Directions
Preheat oven to 300°F
Butter 12-cup bundt pan. Dust with cocoa powder, knocking out excess.
In bowl, whisk together flour, baking soda, and salt.
In large metal bowl set over saucepan of simmering water, melt chocolate and butter, stirring until smooth.
Remove chocolate from heat and stir in rum, coffee, and granulated sugar.
With electric mixer, beat in flour, 1/2 cup at a time, scraping down sides, and beat in eggs and vanilla until batter is combined well.
Pour batter into the prepared pan.
Bake cake in middle of oven until tester comes out clean, about 1 hour and 40 minutes.
Let cake cool completely in pan on rack, then turn out onto rack.
Dust cake with confectioners' sugar and serve with whipped cream.

Chocolate Hot Buttered Rum Bundt Cake: National Hot Buttered Rum Day
CHOCOLATE HOT BUTTERED RUM BUNDT CAKE
Ingredients
Cake
3 cups all-purpose flour, sifted
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 sticks unsalted butter
1 1/2 cups buttermilk
1 cup strong coffee
1/2 cup rum
1 1/2 cups plus
3 Tablespoons cocoa powder, divided
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 3/4 cups brown sugar
1/2 cup granulated sugar
3 eggs, room temperature
2 teaspoons pure vanilla extract
Buttered Rum Glaze
1/2 cup brown sugar
1/2 cup heavy cream
1/2 cup rum
2 Tablespoons unsalted butter
Directions
Cake
Preheat oven to 326 degrees F. Spray a 15-cup bundt pan with baking spray, then dust with 3 Tablespoons cocoa powder; set aside
Whisk flour, baking soda and powder, and salt together in medium bowl; set aside.
In large saucepan set over medium heat, combine butter, buttermilk, coffee, rum, cocoa powder, and spices and stir. Heat until butter melts and all ingredients come together, then whisk in sugars, stirring until dissolved. Cool mixture for 5 minutes, then transfer to large mixing bowl.
In small bowl, whisk together eggs and vanilla extract, and add to cooled chocolate rum mixture, stirring until combined.
Add flour mixture and stir until just combined – batter will be rather thin but slightly lumpy/bubbly.
Pour batter into prepared bundt pan. Bake for 50-60 minutes, or until a skewer inserted to the bottom comes out clean. Remove from oven and cool for 20-30 minutes while you make glaze.
Buttered Rum Glaze
In small saucepan, dissolve brown sugar into cream over medium-low heat. When combined, add rum and set heat to low. Allow to simmer until liquid is reduced and thickens. Add butter and stir to melt, then remove from heat.
Using skewer, poke multiple holes across bottom of cake. Spoon or brush buttered rum glaze on cake, and allow to soak 5-10 minutes, then repeat with more glaze two more times. Let cake soak & cool 20-30 minutes.
When cake cools, turnonto cake plate. Brush top and sides of cake with remaining glaze until all used up.
Top with whipped cream or ice cream.

3 Chocolate Daiquiri Recipes: National Daiquiri Day
FYI: A traditional Daiquiri is a cocktail that usually combines rum, citrus (usually lime), and sugar or another sweetener.
Chocolate Daiquiri
4 parts Light Rum
2 Parts Dark Cacao Liqueur
2 parts lime juice
1 part simple syrup
Fill shaker with ice cubes. Add all ingredients. Shake and strain into chilled daiquiri glass.
Chocolate Covered Strawberry Daiquiri
3 ounces chocolate vodka
1 cup fresh strawberries
Combine ingredients in blender. Blend well. Pour into chilled daiquiri glass. Garnish with chocolate covered strawberry!
Chocolate Banana Daiquiri
2 cups ice
1 banana, chopped in pieces
2 ounces golden (or white) rum
2 ounces creme de banane (this should be on your bar shelf!)
juice of 2 limes
2 Tbsp chocolate syrup
Blend ice and banana and blend on high speed. Then add all other ingredients to blender. Pulse until everything evens out and then blend on high until smooth. Serve in daiquiri or high ball glasses.

MUD CAKE, MISSISSIPPI MUD CAKE: 4 Recipes
MUD CAKE II

Ingredients
4 ounces unsweetened chocolate, chopped
3 ounces fine-quality bittersweet chocolate, chopped
1 1/2 sticks unsalted butter, cut into pieces
1 1/2 cups strong brewed coffee
5 Tbsp bourbon (preferably 80 proof)
2 large eggs, lightly beaten
1 tsp vanilla
2 cups cake flour (not self-rising)
1 3/4 cups sugar
1 tsp baking soda
1/4 tsp salt
Directions
Preheat oven to 275°F.
Butter 2 (7-8 inch) springform pans and line bottom of each with a round of wax paper. Butter paper and dust pans with flour, knocking out excess. Wrap bottom and 1 inch up side on outside of each springform pan with foil (to catch drips).
Melt chocolates and butter with coffee in a 4-quart saucepan over moderately low heat, stirring constantly until smooth. Remove from heat and cool 10 minutes.
Beat in bourbon, eggs, and vanilla.
Sift in flour, sugar, baking soda, and salt and stir until batter is smooth (batter will be thin).
Divide batter between springform pans (about 3 cups batter in each).
Bake cakes in middle of oven 1 to 1 1/4 hours, or until a tester inserted in centers comes out with crumbs adhering. Remove from oven and cool in pans on racks 20 minutes. Run a thin knife around edge of each pan, then remove sides. When cool, remove pan bottoms and wax paper.
MUD CAKE III
Sometimes a Mud Cake is made as a sheet cake.. sometimes just a small single cake. Here's an easy recipe from Real Simple
Ingredients
7 Tbsp unsalted butter, cubed, plus more for the pan
6 Tbsp all-purpose flour, plus more for the pan
4 ounces bittersweet chocolate
1/4 tsp fine salt
3 large eggs, separated
2/3 cup granulated sugar, divided
Whipped cream, for serving
Directions
Preheat oven to 350°F. Butter and line 8-inch round cake pan or springform pan with parchment. Butter parchment and dust lightly with flour.
Melt butter and chocolate in microwave in 1-minute increments, on half power, stirring every minute, until shiny and smooth. Stir in salt and set aside.
Whisk together egg yolks and 4 tablespoons of sugar until thick and creamy.
Mix egg whites in separate, clean bowl with electric mixer on high until foamy. Gradually add remaining sugar, tablespoon at time, whipping continuously until whites are thick and glossy and hold soft peak, 3 to 5 minutes. Fold egg yolk mixture into chocolate. Add 1/3 of chocolate mixture to egg whites and fold in gently, until marbled. Taking care to keep the batter light and airy, fold in flour in 2 parts, alternating with remaining chocolate, until evenly combined.
Spoon batter into pan and bake until crispy on top and toothpick inserted in center comes out almost clean, 25 to 30 minutes.
Cut into wedges and serve slightly warm with whipped cream.
MISSISSIPPI MUD CAKE
Here's a classic Mississippi Mud Cake from Paula Deen
Ingredients
2 cups sugar
1/2 teaspoon salt
2 cups all-purpose flour
1 stick unsalted butter
1/2 cup vegetable oil
1/2 cup cocoa 1/4 cup water
2 eggs
1 teaspoon baking soda
1/2 cup buttermilk
2 teaspoons vanilla extract
1 bag miniature marshmallows
Icing
1 stick unsalted butter, softened
3 tablespoons cocoa
6 tablespoons milk
1 (1-pound) box confectioners' sugar
1 cup chopped pecans or walnuts
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F. Grease and flour 13 by 9-inch baking pan.
Combine sugar, salt, and flour in large mixing bowl.
Bring butter, oil, cocoa, and 1/4 cup water to boil in saucepan. Add to flour mixture.
Beat together eggs, baking soda, buttermilk, and vanilla. Add to chocolate mixture, mix well, and pour into prepared pan.
Bake for 25 minutes.
While cake is baking, make ticing by melting butter in cocoa and milk over low heat. Bring mixture to boil, then remove from heat. Stir in confectioners' sugar. Slowly mix in nuts and vanilla.
Take cake from oven, and when it cools a bit, cover with miniature marshmallows.
Pour warm icing over cake and marshmallows.
Cool cake before serving.

PINA COLADA FUDGE: National Piña Colada Day
PINA COLADA FUDGE
Ingredients
1 pound chopped "real" white chocolate or white chocolate chips
3/4 cup marshmallow crème or fluff
1 cup shredded coconut, (unsweetened)
4 Tablespoons unsalted butter, softened
3/4 teaspoon rum (or rum extract)
3/4 teaspoon coconut extract
7 ounces sweetened condensed milk
1/2 teaspoon salt
1/2 cup chopped dried pineapple
Directions
Line 8-by-8-inch pan with aluminum foil, and spray foil with nonstick cooking spray; set aside.
In large microwave-safe bowl, melt chocolate in microwave, stirring after every 30 seconds to prevent overheating. Stir until chocolate is smooth and completely free of lumps. Add marshmallow crème, coconut, butter, extracts, sweetened condensed milk, and salt; stir until butter melts and everything is combined. Add chopped pineapple at the end and stir to combine evenly.
Pour fudge into prepared pan, and smooth into even layer.
Allow fudge to set at room temperature overnight, or in refrigerator for 2 to 3 hours.
Once set, lift fudge from pan using foil as handles.
Use sharp knife to cut fudge into 1-inch squares to serve.

NIGHTCAP: Cocktail for cold winter nights!
It's actually snowing here in the San Francisco Bay Area. Quite a rarity. So to mark this momentous occasion, here’s a cocktail for cold winter nights (or days!) NIGHTCAP.

"Nightcap was created specifically as a dessert menu cocktail for the 630 Park Restaurant. I have always loved a boozy coffee cocktail, my mom used to make coffee with peppermint schnapps and Kahlua with creamer and whipped cream during the winter anytime we came over and visited. I always loved them, and it was always so comforting. Although hers were always extremely sweet, definitely a dessert in a cup! This one I wanted it to be sweet without losing the coffee flavor, and sophisticated enough to belong on a Steakhouse menu. This cocktail is a simple pour over, just adding each ingredient one after another, filling with coffee and topping it off with whipped cream and the chocolate shavings.”

THE NIGHTCAP
Ingredients
- 1 oz. Myers’s dark rum
- ½ oz. Mozart chocolate cream liqueur
- ½ oz. Frangelico
- Coffee
- Whipped cream
- Chocolate shavings, garnish
Directions
In a coffee mug (ours is a 12-ounce coffee glass) pour the Myers’s Dark Rum. Add the Mozart chocolate liqueur. Add the Frangelico. Fill with coffee and top with whipped cream and chocolate shavings

Add cinnamon and chocolate to saucepan and cook over medium heat until pudding comes to full boil, stirring continually to prevent burning.
Remove from heat and stir in vanilla and rum.
Cool for 20 minutes. Stir for creamy texture.
Serve warm or chilled.

HOT BUTTERED RUM COCOA: National Hot Buttered Rum Cocoa!

Hot Buttered Rum Cocoa
1/4 cup unsalted butter, softened
1/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup dark rum
1/2 cup granulated sugar
1/3 cup cocoa
4 cups milk
Combine butter, brown sugar, and seasonings in small bowl, mixing until well-blended. Drop six spoonfuls onto plastic wrap-lined plate; chill while preparing beverage, then form into balls.
Combine rum, sugar, and cocoa in 2 quart saucepan. Cook over medium heat until mixture boils, stirring constantly. Simmer 1 minute; add milk. Cook until heated through; do not boil.
Pour into six mugs; place one butter ball in each cup.
