Perfect for your Easter Egg Hunt, this Easter BunnyTail Cocktail recipe comes from Drink of the Week.


Easter BunnyTail Cocktail

1 1/2 oz. Dark Creme de Cacao
1/2 oz. Vodka
1 tsp. Chocolate Syrup
1 tsp. Cherry Brandy

Shake creme de cacao and vodka with ice. Strain over ice in a cocktail glass.
Top with a float of chocolate syrup and cherry brandy.

Today is Brandy Alexander Day. A Brandy Alexander is a cocktail made with brandy, chocolate liqueur, and cream

There are many rumors about its origins. Some sources say it was created at the time of the London wedding of Princess Mary and Viscount Lascelles in 1922. Drama critic and Algonquin Round Table member Alexander Woollcott claimed that it was named after him. Other sources say it was named after the Russian Tsar Alexander. According to historian Barry Popik, Troy Alexander, a bartender at Rector's, a New York City restaurant, created the drink in order to serve a white drink at a dinner celebrating Phoebe Snow, a character in a popular advertising campaign in the early 20th century.

I've posted many recipes for Brandy Alexanders - - cocktails, brownies and Brandy Alexander Pie, but today I'm posting a recipe for Brandy Alexander Cheesecake. Be sure to scroll down. And for the TV addicts out there, here's a list of the Brandy Alexander as it appeared on different TV series. This list is a bit dated, so I'd appreciate any updates!

The Brandy Alexander on Television 

The character Raj Koothrappali orders a brandy Alexander in "The Hofstadter Isotope" episode of The Big Bang Theory, after being mocked for ordering first a grasshopper and then a chocolate Martini.
In season one episode nine of Cheers, while Carla is in charge of the bar, she is asked to make a brandy Alexander.
In the Fantasy Island episode entitled "Anniversary," Cap Truman (Jim Backus) rushes outside with his butler to greet Tom (Ronny Cox) and Toni Elgin (Lucie Arnaz) with brandy Alexanders, just as he had done eight years before, the day before their wedding.
In season one episode eleven of Mad Men, Peggy Olson expresses disappointment with her Brandy Alexander while on a blind date.
The drink was included as the Cocktail Moment on the 29 March 2013 episode of The Rachel Maddow Show.
Lance White's hypnotist friend in "Nice Guys Finish Dead", an episode of The Rockford Files, is named after the drink.
In the pilot episode of The Mary Tyler Moore Show, Mary Richards asks for a Brandy Alexander at her first job interview.
In season four episode twenty-three of Chuck, "Big Mike" orders a Brandy Alexander at a wedding rehearsal dinner.
In episode one of Brideshead Revisited, Anthony Blanche orders four Brandy Alexanders in a bar: two for himself and two for Charles Ryder.
In season one episode three of Dilbert, Lena Olsen asks Dilbert to make a "Triple Brandy Alexander with an Easter Island sunset chaser" as a way of keeping him occupied while she searches his house.
In season three, episode 16 of Three's Company, a woman orders a brandy Alexander from Mr Roper. He responds, "You don't want to drink that junk. Try some bourbon. It's fresh."
In season four, episode five of American Horror Story, the Strongman Del (Michael Chiklis) orders two Brandy Alexanders at a gay bar for his paramour Andy (played by Matt Bomer).
In the Season 2 episode of Lou Grant, called "Schools," Lou asks the bartender for a "malt." When the bartender admits to not knowing how to make a malt, Lou asks, "Do you know how to make a brandy Alexander? Just leave out the brandy and give us the Alexander!"
In the TV movies "A Town Without Christmas" and "When Angels Come to Town," the Brandy Alexander is the preferred drink of the angel Max (Peter Falk).

Brandy Alexander Cheesecake
recipe adapted from Southern Living

Ingredients
1 (10-ounce) box chocolate graham crackers, crushed (about 2 1/4 cups)
6 Tbsp unsalted butter, melted
2 Tbsp sugar, divided
4 (8 ounce) packages cream cheese, softened
1 1/4 cups sugar
3 Tbsp cornstarch
4 large eggs, at room temperature
4 Tbsp Brandy, divided 4 tablespoons Kahlua, divided (you can use Creme de Cacao instead)
1 (16 ounces) container sour cream
Optional: Garnishes: blackberries, currants, raspberries, strawberries

Directions
Preheat oven to 325°. Stir together crushed graham crackers, butter, and 1 Tbsp sugar. Press mixture on bottom and halfway up sides of 9-inch springform pan. Freeze 10 minutes.
Beat cream cheese, 1- 1/4 cups sugar, and cornstarch at medium speed with electric mixer 2 to 3 minutes or until smooth. Add eggs, 1 at a time, beating at low speed just until yellow disappears after each addition. Add 3 Tbsp brandy and 3 Tbsp Kahlua, and beat just until blended. Pour into prepared crust.
Bake at 325° for 1 hour or just until center is almost set.
During last 2 minutes of baking, stir together sour cream and remaining 1 Tbsp sugar, 1 Tbsp brandy, and 1 Tbsp Kahlua (or crème de cacao).
Spread sour cream mixture over cheesecake. Bake at 325° for 8 more minutes.
Remove cheesecake from oven; gently run a knife along outer edge of cheesecake, and cool completely in pan on a wire rack (about 1 1/2 hours).
Cover and chill 8 to 24 hours.
Remove sides of springform pan, and place cheesecake on serving plate.
Garnish, if desired.

Hurricane Tips and Recipe for Chocolate Hurricane Cocktail!


Hope all my friends in the path of Hurricane Helene have their hurricane supplies on hand as Helene heads your way. Here are a few tips. 

Hurricane Tips:

1. Make sure you have enough emergency supplies such as water (fill jugs and bathtub), batteries, a battery powered radio (retro?), flashlights, first aid kit, canned goods, extra cash, toilet paper,  matches, medicines, can opener, Swiss army knife.

2. Since you might lose power, transfer essential foods to a small mini-fridge if you have one, so you won't lose the cold in the main refrigerator by not having to open it as much--or at all.

3. Get important papers and special photos together and secure in plastic.

4. If you have time, video or photograph your property (this will help with insurance later).

5. Make sure you have pet supplies, crate, carriers in easy reach. If you need medication for your pets, have it handy.

6. Have clothes and sleeping gear together in a closet in case you need to go to a shelter.

7. If you can, put plywood on windows that will get the brunt of the storm. If you don't have any plywood, criss-cross windows with duct tape. Take in or tie down any objects outside that might fly around--patio furniture, toys, garbage cans, garden tools, etc.

8. To keep the kids calm (without power), have board games and cards ready, play charades or other non-electrical dependent games. Do arts and crafts projects.

9. Make sure you have an emergency plan to contact other family members to check on safety.

10. Stay inside!

After the All-Clear Signal:

1. Check for power lines that are down and stay away from them.

2. Drink bottled water until you know your water is safe.

3. Check on neighbors.

4. Replenish your emergency supplies in case there's a next time.

CHOCOLATE HURRICANE COCKTAIL

1 oz Captain Morgan® Parrot Bay coconut rum
1 oz Godiva® chocolate liqueur
1 3/4 oz orange juice
1 splash lemon juice

Pour all ingredients into cocktail shaker half-filled with ice cubes. 
Shake well, strain into a cocktail glass, and serve.

3 Chocolate Daiquiri Recipes: National Daiquiri Day

Today is National Daiquiri Day, and how better to celebrate than with Chocolate Daquiris! And, instead of one recipe...here are three recipes with different fruits and flavors. Perfect for the summer.

FYI: A traditional Daiquiri is a cocktail that usually combines rum, citrus (usually lime), and sugar or another sweetener.

Chocolate Daiquiri 

4 parts Light Rum
2 Parts Dark Cacao Liqueur
2 parts lime juice
1 part simple syrup

Fill shaker with ice cubes. Add all ingredients. Shake and strain into chilled daiquiri glass.

Chocolate Covered Strawberry Daiquiri

3 ounces chocolate vodka
1 cup fresh strawberries

Combine ingredients in blender. Blend well. Pour into chilled daiquiri glass. Garnish with chocolate covered strawberry!

Chocolate Banana Daiquiri

2 cups ice
1 banana, chopped in pieces
2 ounces golden (or white) rum
2 ounces creme de banane (this should be on your bar shelf!)
juice of 2 limes
2 Tbsp chocolate syrup

Blend ice and banana and blend on high speed. Then add all other ingredients to blender. Pulse until everything evens out and then blend on high until smooth. Serve in daiquiri or high ball glasses.
OMG.. this is fabulous!!

CHOCOLATE STRAWBERRY SHORTCAKE: Strawberry Shortcake Day!

Today is National Strawberry Shortcake Day. There's something about strawberries, whipped cream, and shortcake that screams Summer! This recipe for Chocolate Strawberry Shortcake is the bomb!

Definition of Shortcake:  There are several different types of shortcake or pastries known as shortcake. First there are scones and biscuits -- perfect for Strawberry Shortcake. And, then there are sponge cakes like those little spongy cups you get at the supermarket, also good, just different. And, of course, there's just plain cake which can be chocolate! All these 'cakes' are quick to make and taste great with strawberries and whipping cream. Of course, for me, the shortcake should be chocolate. As always, your cakes are only as good as the chocolate you use!

A bit of history... No one really knows exactly when the first strawberry shortcake was made. Shortcake, itself, is a European invention that goes back at least to the late 1500s. Strawberries have been around for over 2000 years. But putting strawberries and shortcake together is an American tradition. Strawberry Shortcake parties became popular in the United States around 1850 with the earliest recipe in 1847. Strawberries were so popular that people talked about strawberry fever. Advertisements and articles about strawberry shortcake, caused more and more demand. Harpers Magazine in 1893 said, "They give you good eating, strawberries and short-cake-- Ohh My!"

Here's a great recipe for Chocolate Strawberry Shortcake adapted from Rhoda Peacher at Hobbyfarms.com

A tip from Lynda King at Hobbyfarms: one of the best ways to prepare berries for shortcake is to bruise them with a potato masher. You don’t want all the berries mashed, but you want most of them bruised sufficiently to yield their juice into the mixture. If needed, add sugar or honey to taste, depending on your preference, and chill for a few hours before serving.

CHOCOLATE STRAWBERRY SHORTCAKE

Ingredients

Shortcake
2 cups all-purpose flour
1/2 cup sugar
2/3 cup Dutch process cocoa powder
3 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup + up to 2 Tbsp milk

Filling
4 to 5 cups fresh strawberries
1/4 cup sugar
1 cup whipping cream, whipped

Directions
Preheat oven to 400 degrees F.
Grease two 8-inch round cake pans.

In large bowl, combine flour, 1/2 cup sugar, cocoa powder, baking powder, and salt.
Using pastry blender, cut butter into mixture until consistency resembles coarse crumbs.
Stir in 1 cup milk with fork until mixture is just moistened (you may need to add extra milk for the mixture to blend evenly).
Using your fingers, spread into prepared pans.
Bake at 400 degrees F for 15 minutes, or until cake begins to pull away from sides of pans.
Cool 15 minutes; remove cakes from pans. Cool completely.
Reserve five whole strawberries for garnish.
Wash, hull, and halve remaining strawberries.
In large bowl, combine halved strawberries and 1/4 cup sugar.
Place 1 shortcake bottom-side up on serving plate.
Top with half of strawberries and half of whipped cream.
Drizzle with a few tablespoons of chocolate sauce, to taste.
Place the other shortcake on top of this, right-side up.
Top with remaining prepared strawberries and whipped cream.
Garnish with reserved whole strawberries.

CHOCOLATE STRAWBERRY SHORTCAKE COCKTAIL


1 shot amaretto
1 shot creme de cacao
2 double shots of fresh strawberry puree
2 double shots of cream

Add several ice cubes, 2 double shots of fresh strawberry puree, 2 double shots of cream, add one shot of amaretto and one shot of creme de cacao. Blend for 1 min until mixture is thick. Pour into a martini glass.

Garnish with a whole strawberry or rim the glass with crushed chocolate--or both!

FLOURLESS BOURBON BROWNIES: National Brownie Day!

I don't know about you, but I can never have too many Brownie recipes. So to celebrate National Brownie Day (and any other day you want), here's an easy and tasty recipe from Maker's Mark for Flourless Bourbon Brownies!

FLOURLESS BOURBON BROWNIES

Ingredients
1¼ sticks unsalted butter, plus more for the pan
¼ cup Maker's Mark® Bourbon
¼ cup unsweetened cocoa powder
2 cups semi-sweet chocolate chips
4 large eggs
½ cup confectioners' sugar

Directions
Preheat oven to 325°F. 
Butter an 8-inch square baking pan, line with parchment paper or foil, and butter the parchment.
In large saucepan, heat butter and bourbon over medium heat, stirring occasionally, until butter melts. Stir in cocoa powder until smooth. Remove from heat and immediately add 1½ cups chocolate chips. Stir until smooth. Let cool slightly.
Add eggs, one at a time, beating well after each addition. Stir in confectioners' sugar until well-combined. Transfer to prepared pan and spread in even layer. Sprinkle remaining ½ cup chocolate chips on top.
Bake until top is glossy and toothpick inserted 1 inch from the edge comes out clean, about 20 minutes. Cool completely in pan on wire rack.
Lift from pan using the parchment paper. 
Cut into 12 bars.

HOW TO MAKE YOUR OWN CHOCOLATE LIQUEUR: National Liqueur Day

Today is National Liqueur Day! I often make Chocolate Liqueur Truffles. They're so easy to make, and you can change the flavor of the liqueurs whenever you'd like. 

Sometimes, though, I like to make my own chocolate liqueur. You can always buy Chocolate Liqueur, and I'll have to admit that Godiva has an awesome Dark Chocolate Liqueur. You might also want to try Mozart Black Chocolate Liqueur. But if you want to make your own, try one of the following two recipes for Making Your Own Chocolate Liqueur.

As always, use the best cacao nibs or cocoa, vodka, and vanilla. You won't have the results to taste today, but it will be worth the wait!

How to Make Your Own Chocolate Liqueur

1. Chocolate Liqueur
The recipe is from Serious Eats, one of my favorite sites.

Ingredients
 2/3 cup cacao nibs
1 1/3 cup vodka
1 1/2 cups sugar
1 cup water
2 tsp pure vanilla extract

Directions
Combine cacao nibs and vodka in sealable glass jar. Shake and let steep for 8 days.
After initial steeping period, bring sugar and water to a boil. Let syrup cool, then add to jar along with vanilla extract. Let steep an additional day.
Strain out nibs through sieve and filter through a coffee filter into bottle or jar. Store in this jar.

II. Chocolate Liqueur
This Recipe from Creative Culinary uses Scharffen Berger Cocoa Powder. 

Ingredients
1/4 cup unsweetened good cocoa powder
1 cup boiling water
1 cup granulated sugar
1 cup water
1 cup vodka

Directions
In bowl, dissolve cocoa powder in boiling water.
In saucepan, bring sugar and water to simmer, stirring until sugar is dissolved.
Add sugar syrup to cocoa syrup.
Strain through fine-mesh sieve into jar with lid.
Add vodka, cover and refrigerate for one week.
To serve, stir well and strain again through fine-mesh sieve.
 
These two recipes should get you started. Want to try some variations? Use less sugar and maybe add almond extract--or use rum instead of vodka. Experiment!

You can drink your Chocolate Liqueur straight, use it in truffles, or make a martini.

NINE CHOCOLATE VODKA DRINK RECIPES: National Vodka Day!

October 4 is National Vodka Day. In honor of the holiday, I've put together Nine Chocolate Vodka Drink Recipes. There are several good quality chocolate vodkas out there. Try them all. Celebrate!

Chocolate Raspberry Martini 
(A Drink of the Week Original Cocktail)
1 1/2 ounce Stoli Raspberry Vodka
1/2  ounce  Godiva Chocolate Liqueur
Splash Soda

Combine Vodka and Liqueur in a shaker with ice. Shaken and strain into a cocktail glass. Top with a splash of soda. Garnish with a fresh raspberry.

Chocolate Covered Strawberry Daiquiri
3 ounces chocolate Goldenbarr chocolate vodka
1 cup fresh strawberries

Combine ingredients in a blender, and blend well. Pour into chilled daiquiri/margarita glass, garnish with a chocolate covered strawberry, and serve.

Cherry Cordial Recipe
Chocolate Vodka
Cherry Liqueur

Pour in Shot Glass

Chocolate to Die For
6 ounce cream soda
1 1/2 ounce Chocolate Vodka

Pour the chocolate vodka over ice in an old-fashioned glass. Add cream soda and serve.

Fudge Slide
1 ounce Goldenbarr Chocolate Vodka
1 ounce  Kahlua coffee liqueur
1 ounce Bailey's Irish cream

Pour each ingredient into a cocktail shaker half-filled with ice cubes. Shake well, strain into a cocktail glass, and serve.

Chocolate Chocolate Martini
1 1/2 ounce Vincent Van Gogh Dutch Chocolate Vodka
1/2 ounce Creme de Cacao

Pour both ingredients into cocktail shaker with ice cubes. Shake well, strain into cocktail glass and serve. Garnish with grated chocolate. You can also rim the chilled glass with cocoa powder but pour slowly. Even better: Rim chilled glass with chocolate sauce and put in freezer until you're ready to serve the drink!

Desperate Housewife
1 1/2 ounce Players Extreme caramel-infused vodka
1 1/2 ounce white chocolate liqueur

Shake with ice. Strain into cocktail glass. Drizzle with chocolate sauce, and serve.

Starry Night Martini
1 1/2 ounce chocolate Vodka
1 1/2 ounce vanilla Vodka
1 ounce Bailey's Irish cream
1 ounce Kahlua coffee liqueur
1 splash cream

Fill shaker-strainer with ice. Pour chocolate and vanilla vodka into shaker simultaneously for three counts. Pour Bailey's and Kahlua into shaker for two counts. Add splash of cream. Cover shaker, shake, and strain into cocktail glass.

Tootsie Roll Shooter
 (recipe from Three Olives Chocolate Vodka)
2/3 ounce Three Olives Chocolate Vodka
1/3 ounce amaretto
Chocolate Syrup

Pour ingredients into cocktail shaker filled with ice. Shake well. Strain into shot glass.

NATIONAL BOURBON DAY: BOURBON BALL MARTINI & DOLLY APPEL'S BOURBON BALLS

Today is National Bourbon Day, and with Father's Day coming up this weekend, why not make Dad a  Bourbon Ball Martini and celebrate both holidays? Better than a necktie!

BOURBON BALL MARTINI

2 ounces Bourbon
2 ounces Crème de Cacao
1 oz. hazelnut liqueur

Fill shaker with cracked ice and blend bourbon, creme de cacao & hazelnut liqueur.
Strain into a martini glass.
Garnish with two Bourbon balls on a mini-skewer.

O.K., maybe you want to give Dad a home-made gift. Make these fabulous Bourbon Balls! 

DOLLY APPEL’S BOURBON BALLS

Ingredients
1 ½ pounds pecans
8 ounces of Maker’s Mark Bourbon
2 ounces water
2 pounds confectioners’ sugar
3 pounds semisweet chocolate
3 ounces paraffin

Directions
Break and combine pecans with bourbon, cover and set aside for 4 hours or more. Sift confectioners’ sugar and add pecans, adding sugar gradually to a working consistency until a small ball can be made ½ to ¾ inch in diameter. Water is to be used only to bring mixture to desired consistency. Add water only to prevent ball from falling apart. Mixture should be semi-dry. Prepare balls and place on a waxed papered cookie sheet. Place in freezer to cool. (Approx. 2 hours)

Melt chocolate and paraffin and mix well. Chocolate should not be too hot, just warm enough to work up. The warmer the mix, the thinner coating the bourbon balls will have.

Remove formed balls from the freezer when ready to coat with chocolate. With fingers dip each ball to cover half of ball and return to cookie sheet. After this step return to refrigerator to harden chocolate. (Approx. 1 hour)

To coat top half of ball when ready insert toothpick in the bottom that has already been coated and dip top in chocolate. Remove toothpick and return ball to cookie sheet. Refrigerate again to harden chocolate.

Store bourbon balls in refrigerator until ready to eat!

NIGHTCAP: Cocktail for cold winter nights!

It's actually snowing here in the San Francisco Bay Area. Quite a rarity. So to mark this momentous occasion, here’s a cocktail for cold winter nights (or days!) NIGHTCAP.

NIGHTCAP 

"Nightcap was created specifically as a dessert menu cocktail for the 630 Park Restaurant. I have always loved a boozy coffee cocktail, my mom used to make coffee with peppermint schnapps and Kahlua with creamer and whipped cream during the winter anytime we came over and visited. I always loved them, and it was always so comforting. Although hers were always extremely sweet, definitely a dessert in a cup! This one I wanted it to be sweet without losing the coffee flavor, and sophisticated enough to belong on a Steakhouse menu. This cocktail is a simple pour over, just adding each ingredient one after another, filling with coffee and topping it off with whipped cream and the chocolate shavings.”

THE NIGHTCAP


Ingredients

  • 1 oz. Myers’s dark rum
  • ½ oz. Mozart chocolate cream liqueur
  • ½ oz. Frangelico
  • Coffee
  • Whipped cream
  • Chocolate shavings, garnish


Directions

In a coffee mug (ours is a 12-ounce coffee glass) pour the Myers’s Dark Rum. Add the Mozart chocolate liqueur. Add the Frangelico. Fill with coffee and top with whipped cream and chocolate shavings

CHOCOLATE PUMPKIN DRINKS: National Liqueur Day

Happy Liqueur Day! Since Halloween is right around the corner, I thought I'd post a few drinks recipes using Pumpkin Liqueur. It's my opinion that pumpkin needs chocolate, so I put together two recipes for Chocolate Pumpkin Cocktail recipes for Halloween. These can be served all throughout the Fall. 

CHOCOLATE PUMPKIN COCKTAIL

3 ounces Pumpkin Liqueur
Chocolate (melted)

Shake pumpkin liqueur with ice in cocktail shaker.
Strain into chilled cocktail glass.
Slowly add melted chocolate to glass.

WHITE CHOCOLATE PUMPKIN MARTINI

Godiva White Chocolate Liqueur
2 ounces Vanilla Vodka
1/2 ounces Pumpkin Liqueur
1 tsp whipped cream

Pour white chocolate liqueur, vodka, and pumpkin liqueur into shaker filled with ice.
Shake. Pour into martini glass. Optional: Add whipped cream.

S'MORES SHOTS: Glamping!

Here's an easy recipe to take your Glamping Drinks up a notch: S'mores Shots!  These are great for glamping... or serve S'mores Shots in small tin mugs at home for that fun glamping experience or in shot glasses! This is not the only recipe for S'mores Shots, but it's easy and delicious. As always, experiment. Change it up as it pleases you! And, of course, make some S'mores to accompany your S'mores Shots!

S'MORES SHOTS!

Ingredients:
1/2 ounce Vodka
1/2 ounce Chocolate Liqueur
3/4 ounce cream or half and half
Chocolate syrup
Graham cracker crumbs
Mini-marshmallows

Directions:
Pour 1/4 chocolate syrup into bottom of glass.
Combine vodka, half and half, and chocolate liqueur in shaker with ice and shake for 15 seconds. Pour into glass. Add graham cracker crumbs and mini-marshmallows.

Optional: You can also do marshmallow/graham cracker rim (dip in marshmallow creme and roll in graham cracker crumbs) You can also add a skewered marshmallow over the top (take a torch to the marshmallows for authenticity!)

BRANDY ALEXANDER PIE: National Brandy Alexander Day


Today
is National Brandy Alexander Day. A Brandy Alexander is a sweet, brandy-based cocktail that became very popular in the early 20th century. It was supposedly created for the wedding of Mary, Princess Royal and Countess of Harewood and Viscount Lascelles, in London, in 1922The Brandy Alexander is based on an earlier, gin-based cocktail called simply an “Alexander.”

From the Brandyalexander website comes the history that Movie Stars have consumed Brandy Alexanders on sets of movies and TV shows and during celebratory events throughout  the last century.  Among the famous drink calls are by Jack Lemon in Days of Wine and Roses. In one scene Lee Remick receives a Brandy Alexander and is impressed with the chocolate flavor, yet smooth taste of the drink. In the pilot of the Mary Tyler Moore show, Mary asks for a Brandy Alexander when asked if she would like a drink at her job interview, and Peggy on a blind date in an episode of Mad Men, Indian Summer orders a Brandy Alexander

So for this exciting alcoholic Food Holiday, break out the Brandy and Creme de Cacao

Brandy Alexander Pie
from the New York Times Magazine, January 18, 1970

Ingredients
1 envelope unflavored gelatin
1/2 cup cold water
2/3 cup sugar
1/8 teaspoon salt
3 eggs, separated
1/4 cup cognac
1/4 cup creme de cacao
2 cups heavy cream, whipped
Pie Crust: I substitute a 10 inch chocolate wafer crust for the graham cracker crust in the original recipe, but that's your choice
Chocolate curls for garnish

Directions
1. Sprinkle gelatin over cold water in saucepan. Add 1/3 cup of sugar, salt and egg yolks. Stir to blend.
2. Heat over low heat while stirring until gelatin dissolves and mixture thickens. Do not boil.
3. Remove from heat, and stir in cognac and creme de cacao. Chill until mixture starts to mound slightly.
4. Beat egg whites until stiff. Gradually beat in remaining sugar and fold into thickened mixture. Fold in 1 cup of whipped cream. Turn into crust. Chill several hours or over night.
5. Garnish with remaining cream and chocolate curls.

HOT BUTTERED RUM COCOA: National Hot Buttered Rum Cocoa!

Today is National Hot Buttered Rum Day. It's cold and crisp today, and I know some areas of the U.S. are blanketed with snow, so this is the perfect drink to celebrate the day!

This recipe for Hot Buttered Rum Cocoa is from the Wisconsin Cheese Board. So many Food associations have great recipes. Be sure and check them out.

If you don't have time to make Hot Buttered Rum Cocoa, you can always celebrate this food holiday with Seattle Chocolates' Hot Buttered Rum Milk Chocolate Truffle Bar. Fabulous! This bar is buttery, smooth with a light hint of rum and toffee crunch in milk chocolate.

Hot Buttered Rum Cocoa

Ingredients
1/4 cup unsalted butter, softened
1/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup dark rum
1/2 cup granulated sugar
1/3 cup cocoa
4 cups milk

Directions
Combine butter, brown sugar, and seasonings in small bowl, mixing until well-blended. Drop six spoonfuls onto plastic wrap-lined plate; chill while preparing beverage, then form into balls.
Combine rum, sugar, and cocoa in 2 quart saucepan. Cook over medium heat until mixture boils, stirring constantly. Simmer 1 minute; add milk. Cook until heated through; do not boil.
Pour into six mugs; place one butter ball in each cup.

CHOCOLATE MILK AND CHOCOLATE MILK COCKTAILS: National Milk Day!

Today is National Milk Day. Make Chocolate Milk! Everyone knows that chocolate milk is a sweetened, cocoa-flavored milk drink that can be purchased pre-mixed or made at home, but there are lots of ways to make chocolate milk, and lots of different ingredients can be added to give it a special flavor. As always, remember it's the quality of the chocolate  that will make a big difference. That goes for the milk, too: 2%, whole, skim, soy, almond milk, etc.

So to celebrate the day, I have Three Chocolate Milk recipes and two Chocolate Milk Cocktail Recipes! Take your choice!

Basically you make a chocolate syrup first, then add the milk.

1. Chocolate Milk

11 ounces milk
1 ounce water
1-1/2 teaspoons cocoa
2 tablespoons sugar

Put sugar, cocoa, and water in microwavable 12 oz glass.
Microwave for 30 seconds or until sugar and cocoa dissolve.
Add cold milk and stir.

Want something a little more unusual? Sunset (1994) had a wonderful Ultimate Chocolate Milk Recipe (Nicaraguan Chocolate Milk). This is not a classic, but it might soon be for you. Preparation takes some time, so you won't be drinking this today.

2. Nicaraguan Chocolate Milk (Orchata de cacao)

1-1/2 cups long-grain white rice
2 cups (about 2/3 lb) cocoa beans
4 cups water
3 cinnamon sticks (each about 3 in.), broken into 1-inch pieces
8 cups whole, low-fat, or nonfat milk
1 1/2 tablespoons vanilla
1 cup sugar
Ice (optional)

Place rice in bowl, cover with cool water, and let stand to soften somewhat, up to 24 hours; drain.
Place cocoa beans in 9-inch metal baking dish. Bake in 500 degree oven 5 minutes. Shake beans. Continue to bake until beans smoke and some skins have split, 5 to 8 minutes longer.
In blender, place half rice, cocoa beans, water, and cinnamon. Whirl until ingredients are very finely pureed. Place large, fine strainer over a bowl; pour cocoa mixture into strainer and stir to extract liquid. Discard residue. Repeat with remaining rice, cocoa, water, and cinnamon.

Rinse strainer, then line with a double thickness of damp cheesecloth. Pour cocoa liquid through strainer into bowl, stirring to extract all liquid; discard residue.

To cocoa liquid, add milk, vanilla, and sugar; stir until sugar dissolves. Serve plain or over ice. If making ahead, chill, covered, up to 3 days. Stir to serve Makes about 10 1/2 cups, 10 servings.

3. Salted Chocolate Milk

A few years ago, I paid homage to one of my favorite TV sitcoms, Modern Family. In the premier episode Manny is studying with a girl he has a crush on. She comes to his house where Manny's doting Columbian Mama Gloria (Sofia Vergara) makes the kids chocolate milk. The young girl with whom Manny is smitten says that they always add salt to chocolate milk at her home. Gloria, threatened by another 'woman' in Manny's life, says she doesn't like it that way. Of course, when Gloria tries it without the two in the room, she really loves it.

I've posted lots of reviews and recipes that call for salt and chocolate. Salt gives chocolate a certain pop, and I think you'll find it very refreshing in chocolate milk. Just don't add too much. A pinch will do.

The Modern Family Chocolate Milk with Salt Showdown:
Gloria: So how is it going?
Manny: Great, Kelly's moving her stuff into my notebook.
Gloria: This is sudden.
Kelly: It just felt right. Oh, you know what you should do, put a pinch of salt in the chocolate milk, it really brings out the flavor.
Gloria: Salt is for the popcorn.
Manny: Sounds good.
Gloria: You wouldn't like it.
Kelly: Maybe we should let Manny decide.
Gloria: Okay, here's the salt. We'll see what he likes.
Manny tries both:
Manny: Wow! It's great! Try it, Mom.
Gloria: I don't care for it.

Her best line of the episode, defeated and with her accent, she tells the camera and the viewers, "It was delicious."

So moving from the youngsters to the oldsters, here are two very easy cocktail recipes for Adult Chocolate Milk Cocktails!

1. Chocolate Milk Cocktail

Glass of Chocolate Milk
Couple Splashes Kahlua
2 or 3 ice cubes

Add Kahlua to chocolate milk and add ice

2. Chocolate Milk Cocktail

1/2 shot Kahlua
1/2 shot milk
Dash of Amaretto

Put milk in bottom, pour liqueur on top and add dash of amaretto. Do not mix.
Serve in tumbler.

BAILEY'S IRISH CREAM S'MORES: St Patrick's Day!

Happy St Patrick's Day! Here's a great and easy way to celebrate the day. As always, it includes Chocolate! Who doesn't love S'mores? And, these S'mores Indoors are filled with Bailey's Irish Cream! Erin Go Bragh!

Bailey's Irish Cream S'mores!

Ingredients
3 ounces Baileys® Original Irish Cream
Crushed graham crackers
Mini marshmallows
Chocolate sauce (see recipe below or use your favorite!)
Large marshmallows

Directions
Crush and then layer graham crackers at the bottom of a mason jar.
Add a layer of mini marshmallows and chocolate sauce (proportion and layer to your taste).
Top with a few large marshmallows.
Brown marshmallows with a kitchen torch.

Drizzle 3 oz. of Baileys Original Irish Cream on top for a sweet finish.

Easy Chocolate Hot Fudge Sauce 

Ingredients 
1/2 cup unsalted butter
1 can (14 ounces) sweetened condensed milk
1 cup semi-sweet chocolate chips or chopped chocolate

Directions 
In medium sized saucepan, melt butter over medium-low heat. Once butter is melted, add sweetened condensed milk. Use whisk to combine. Add chocolate, and stir continuously with whisk until melted and smooth. Immediately remove from heat.

HOW TO MAKE YOUR OWN CHOCOLATE LIQUEUR: National Liqueur Day

Today is National Liqueur Day! I often make Chocolate Liqueur Truffles. They're so easy to make, and you can change the flavor of the liqueurs whenever you'd like. But sometimes I make my own chocolate liqueur. It's simple, and you should try it. Of course you can always buy Chocolate Liqueur, and I'll have to admit that Godiva has an awesome Dark Chocolate Liqueur. You might also want to try Mozart Black Chocolate.

But if you want to make your own, try one of the following two recipes for Making Your Own Chocolate Liqueur.

As always, use the best cacao nibs or cocoa, vodka, and vanilla. You won't have the results to taste today, but it will be worth the wait!

How to Make Your Own Chocolate Liqueur

1. Chocolate Liqueur
The recipe is from Serious Eats, one of my favorite sites.

Ingredients
 2/3 cup cacao nibs
1 1/3 cup vodka
1 1/2 cups sugar
1 cup water
2 tsp pure vanilla extract

Directions
Combine cacao nibs and vodka in sealable glass jar. Shake and let steep for 8 days.
After initial steeping period, bring sugar and water to a boil. Let syrup cool, then add to jar along with vanilla extract. Let steep an additional day.
Strain out nibs through sieve and filter through a coffee filter into bottle or jar. Store in this jar.

II. Chocolate Liqueur
This Recipe from Creative Culinary uses Scharffen Berger Cocoa Powder. 

Ingredients
1/4 cup unsweetened good cocoa powder
1 cup boiling water
1 cup granulated sugar
1 cup water
1 cup vodka

Directions
In bowl, dissolve cocoa powder in boiling water.
In saucepan, bring sugar and water to simmer, stirring until sugar is dissolved.
Add sugar syrup to cocoa syrup.
Strain through fine-mesh sieve into jar with lid.
Add vodka, cover and refrigerate for one week.
To serve, stir well and strain again through fine-mesh sieve.
 
These two recipes should get you started. Want to try some variations? Use less sugar and maybe add almond extract--or use rum instead of vodka. Experiment!

You can drink your Chocolate Liqueur straight, use it in truffles, or make a martini.

NINE CHOCOLATE VODKA RECIPES: National Vodka Day!

October 4 is National Vodka Day. In honor of the holiday, I've put together Nine Chocolate Vodka Drink Recipes. There are several good quality chocolate vodkas out there. Try them all. Celebrate!

Chocolate Raspberry Martini 
(A Drink of the Week Original Cocktail)
1 1/2 ounce Stoli Raspberry Vodka
1/2  ounce  Godiva Chocolate Liqueur
Splash Soda

Combine Vodka and Liqueur in a shaker with ice. Shaken and strain into a cocktail glass. Top with a splash of soda. Garnish with a fresh raspberry.

Chocolate Covered Strawberry Daiquiri
3 ounces chocolate Goldenbarr chocolate vodka
1 cup fresh strawberries

Combine ingredients in a blender, and blend well. Pour into chilled daiquiri/margarita glass, garnish with a chocolate covered strawberry, and serve.

Cherry Cordial Recipe
Chocolate Vodka
Cherry Liqueur

Pour in Shot Glass

Chocolate to Die For
6 ounce cream soda
1 1/2 ounce Chocolate Vodka

Pour the chocolate vodka over ice in an old-fashioned glass. Add cream soda and serve.

Fudge Slide
1 ounce Goldenbarr Chocolate Vodka
1 ounce  Kahlua coffee liqueur
1 ounce Bailey's Irish cream

Pour each ingredient into a cocktail shaker half-filled with ice cubes. Shake well, strain into a cocktail glass, and serve.

Chocolate Chocolate Martini
1 1/2 ounce Vincent Van Gogh Dutch Chocolate Vodka
1/2 ounce Creme de Cacao

Pour both ingredients into cocktail shaker with ice cubes. Shake well, strain into cocktail glass and serve. Garnish with grated chocolate. You can also rim the chilled glass with cocoa powder but pour slowly. Even better: Rim chilled glass with chocolate sauce and put in freezer until you're ready to serve the drink!

Desperate Housewife
1 1/2 ounce Players Extreme caramel-infused vodka
1 1/2 ounce white chocolate liqueur

Shake with ice. Strain into cocktail glass. Drizzle with chocolate sauce, and serve.

Starry Night Martini
1 1/2 ounce chocolate Vodka
1 1/2 ounce vanilla Vodka
1 ounce Bailey's Irish cream
1 ounce Kahlua coffee liqueur
1 splash cream

Fill shaker-strainer with ice. Pour chocolate and vanilla vodka into shaker simultaneously for three counts. Pour Bailey's and Kahlua into shaker for two counts. Add splash of cream. Cover shaker, shake, and strain into cocktail glass.

Tootsie Roll Shooter
 (recipe from Three Olives Chocolate Vodka)
2/3 ounce Three Olives Chocolate Vodka
1/3 ounce amaretto
Chocolate Syrup

Pour ingredients into cocktail shaker filled with ice. Shake well. Strain into shot glass.

Raise a glass to National Vodka Day!
