GRAND MARNIER CHOCOLATE CAKE: Bastille Day!

Tomorrow is Bastille Day, and it's also Grand Marnier Day, so I thought you might want to celebrate by baking this Grand Marnier Chocolate Cake. 

Grand Marnier is a combination of a premium blend of cognac and exotic oranges created in 1880 by Louis-Alexandre Marnier Lapostolle. Louis-Alexandre Marnier Lapostolle perfected the premium Grand Marnier blend in 1880 and at the time, his vision of combining the essence of wild tropical oranges from Haiti with premium cognac from France was seen as cutting edge and completely unexpected. The cognac found in Grand Marnier is made from Ugni Blanc grapes from five of the best crus within the Cognac region in France and is double-distilled in copper stills. The bitter, exotic orange called ‘Citrus Bigaradia’ sourced from the Caribbean, is a rare variety which offers an intense and unique flavor profile and aroma.

Grand Marnier Chocolate Cake

Ingredients

Cake
10 ounces bittersweet chocolate, chopped
1 cup sugar
3/4 cup unsalted butter, room temperature
6 large eggs, separated
2 Tbsp Grand Marnier
1 Tbsp finely grated orange peel
2 tsp pure vanilla extract
1/2 cup all purpose flour
1/4 teaspoon salt

Icing 
7 ounces bittersweet chocolate, chopped
7 Tbsp unsalted butter, cut into 1-inch cubes, room temperature
2/3 cup whipping cream

Cake Directions
Preheat oven to 350°F.
Butter 10-inch-diameter springform pan; line bottom with parchment paper round.
Stir chocolate in metal bowl set over saucepan of simmering water until melted and smooth. Cool slightly.
Using electric mixer, beat sugar and butter in large bowl 2 minutes. Beat in egg yolks, Grand Marnier, orange peel, and vanilla. Stir in lukewarm chocolate. Add flour and salt; stir to blend.
Using clean dry beaters, beat egg whites in another large bowl until peaks form. Fold whites into chocolate mixture in 3 additions.
Transfer batter to prepared springform pan.
Bake cake until top is dry and cracked and tester inserted into center comes out with a few moist crumbs attached, about 45 minutes.
Cool cake in pan on rack (top will fall slightly).
Can be made 1 day ahead.
Cool completely; cover and let stand at room temperature.

Icing Directions
Place chocolate and butter in medium metal bowl. Bring cream to boil in small saucepan. Pour hot cream over chocolate mixture; stir until mixture is melted and smooth.
Run thin knife around inside of cake pan; remove pan sides.
Invert cake onto 10-inch removable tart pan bottom or cardboard round.
Place on rack set in rimmed baking sheet.
Remove cake pan bottom and parchment.
Pour icing over cake and spread to cover top and sides (any icing that drips onto baking sheet can be reused).
Chill until glaze sets, about 30 minutes.

DO AHEAD: 
This cake can be made 1 day ahead.
Cover with cake dome and chill.
Let stand at room temperature 1 hour before serving.
Cut into wedges and serve.

CHOCOLATE PUMPKIN COCKTAILS: National Liqueur Day!

Happy Liqueur Day! Since Halloween is right around the corner, I thought I'd post a few drinks recipes using Pumpkin Liqueur. It's my opinion that pumpkin needs chocolate, so I put together two recipes for Chocolate Pumpkin Cocktail recipes for Halloween. These can be served all throughout the Fall. 

CHOCOLATE PUMPKIN COCKTAIL

3 ounces Pumpkin Liqueur
Chocolate (melted)

Shake pumpkin liqueur with ice in cocktail shaker.
Strain into chilled cocktail glass.
Slowly add melted chocolate to glass.

WHITE CHOCOLATE PUMPKIN MARTINI

Godiva White Chocolate Liqueur
2 ounces Vanilla Vodka
1/2 ounces Pumpkin Liqueur
1 tsp whipped cream

Pour white chocolate liqueur, vodka, and pumpkin liqueur into shaker filled with ice.
Shake. Pour into martini glass. Optional: Add whipped cream.

HOW TO MAKE YOUR OWN CHOCOLATE LIQUEUR: National Liqueur Day

Today is National Liqueur Day! I often make Chocolate Liqueur Truffles. They're so easy to make, and you can change the flavor of the liqueurs whenever you'd like. 

Sometimes, though, I like to make my own chocolate liqueur. You can always buy Chocolate Liqueur, and I'll have to admit that Godiva has an awesome Dark Chocolate Liqueur. You might also want to try Mozart Black Chocolate Liqueur. But if you want to make your own, try one of the following two recipes for Making Your Own Chocolate Liqueur.

As always, use the best cacao nibs or cocoa, vodka, and vanilla. You won't have the results to taste today, but it will be worth the wait!

How to Make Your Own Chocolate Liqueur

1. Chocolate Liqueur
The recipe is from Serious Eats, one of my favorite sites.

Ingredients
 2/3 cup cacao nibs
1 1/3 cup vodka
1 1/2 cups sugar
1 cup water
2 tsp pure vanilla extract

Directions
Combine cacao nibs and vodka in sealable glass jar. Shake and let steep for 8 days.
After initial steeping period, bring sugar and water to a boil. Let syrup cool, then add to jar along with vanilla extract. Let steep an additional day.
Strain out nibs through sieve and filter through a coffee filter into bottle or jar. Store in this jar.

II. Chocolate Liqueur
This Recipe from Creative Culinary uses Scharffen Berger Cocoa Powder. 

Ingredients
1/4 cup unsweetened good cocoa powder
1 cup boiling water
1 cup granulated sugar
1 cup water
1 cup vodka

Directions
In bowl, dissolve cocoa powder in boiling water.
In saucepan, bring sugar and water to simmer, stirring until sugar is dissolved.
Add sugar syrup to cocoa syrup.
Strain through fine-mesh sieve into jar with lid.
Add vodka, cover and refrigerate for one week.
To serve, stir well and strain again through fine-mesh sieve.
 
These two recipes should get you started. Want to try some variations? Use less sugar and maybe add almond extract--or use rum instead of vodka. Experiment!

You can drink your Chocolate Liqueur straight, use it in truffles, or make a martini.

Grand Marnier is a remarkable combination of a premium blend of cognac and exotic oranges created in 1880 by Louis-Alexandre Marnier Lapostolle. Grand Marnier Chocolate Cake

Ingredients

Cake

Kahlua Mexican Chocolate Cake: Cinco de Mayo

I love Kahlua. It's such a versatile liqueur. KahlĂșa is a Mexican coffee-flavored rum-based liqueur. It's dense and sweet, with the taste of coffee, from which it is made. KahlĂșa also contains sugar, corn syrup, and vanilla bean, so you see why it's often matched with chocolate in drinks, cakes, pies, and candy.  

I found a great Kahlua promotional cookbook at the Flea Market a few years ago: The Best of Kahlua: A Guide to Food and Entertaining (1970). There are some really great recipes in this book, and for Cinco de Mayo, I think this recipe for Mexican Chocolate Kahlua Cake is perfect! It's so easy and delicious!

CHOCOLATE PUMPKIN DRINKS: National Liqueur Day

Happy Liqueur Day! Since Halloween is right around the corner, I thought I'd post a few drinks recipes using Pumpkin Liqueur. It's my opinion that pumpkin needs chocolate, so I put together two recipes for Chocolate Pumpkin Cocktail recipes for Halloween. These can be served all throughout the Fall. 

CHOCOLATE PUMPKIN COCKTAIL

3 ounces Pumpkin Liqueur
Chocolate (melted)

Shake pumpkin liqueur with ice in cocktail shaker.
Strain into chilled cocktail glass.
Slowly add melted chocolate to glass.

WHITE CHOCOLATE PUMPKIN MARTINI

Godiva White Chocolate Liqueur
2 ounces Vanilla Vodka
1/2 ounces Pumpkin Liqueur
1 tsp whipped cream

Pour white chocolate liqueur, vodka, and pumpkin liqueur into shaker filled with ice.
Shake. Pour into martini glass. Optional: Add whipped cream.

CHOCOLATE MARGARITA RECIPES: National Margarita Day

I'm posting two recipes for Chocolate Margaritas for National Margarita Day. As always I recommend you use the best ingredients for the best flavor! Both recipes suggest chocolate rims. I add a little salt to the rim mixture to bring out the chocolate and make this a bit more similar to a traditional margarita.

1. CHOCOLATE MARGARITA
A simple recipe from Blenderking.com:  (Per serving)

Ingredients
1 1/2 ounces Tequila
1 ounce Godiva chocolate liquor
3/4 ounce cream or half & half
1 Tbsp Hershey’s syrup
2 ounces orange juice
Ice

Directions
Shaker, not blender: Throw the ingredients into your shaker for a few quick shakes and pour into a margarita glass with crushed oreos lining the rim! Enjoy!

2. CHOCOLATE MARGARITA
And, from Marcela Valladolid at Foodnetwork.com. This recipe is for a crowd:

To rim the glasses:
Chocolate syrup
Finely chopped Mexican or bittersweet chocolate

Margarita:
1/2 cup chocolate syrup
1 cup (8 ounces) tequila
1/2 cup (4 ounces) chocolate liqueur
1/3 cup heavy cream
1/3 cup orange liqueur
1 teaspoon almond extract
1 teaspoon ground cinnamon
Ice

Directions

To rim the glasses: Put the syrup and chopped chocolate into 2 small dishes. Moisten the rims of 4 margarita or martini glasses with the chocolate syrup. Dip them in the Mexican chocolate until coated. Set aside.

Margarita: Combine all of the ingredients, except ice, in a pitcher. Working in batches, transfer the mixture to a shaker full of ice. Shake and pour into the prepared glasses. Serve cold.

1. CHOCOLATE LIQUEUR
The recipe is from Serious Eats, one of my favorite sites.

Ingredients
 2/3 cup cacao nibs
1 1/3 cup vodka
1 1/2 cups sugar
1 cup water
2 tsp Madagascar vanilla extract

Directions
Combine cacao nibs and vodka in sealable glass jar. Shake and let steep for 8 days.
After initial steeping period, bring sugar and water to a boil. Let syrup cool, then add to jar along with vanilla extract. Let steep an additional day.
Strain out nibs through sieve and filter through a coffee filter into bottle or jar. Store in this jar.

II. CHOCOLATE LIQUEUR
This Recipe from Creative Culinary uses Scharffen Berger Cocoa Powder. 

Ingredients
1/4 cup unsweetened good cocoa powder (Scharffen Berger)
1 cup boiling water
1 cup granulated sugar
1 cup water
1 cup vodka

Directions
In bowl, dissolve cocoa powder in boiling water.
In saucepan, bring sugar and water to simmer, stirring until sugar is dissolved.
Add sugar syrup to cocoa syrup.
Strain through fine-mesh sieve into jar with lid.
Add vodka, cover and refrigerate for one week.
To serve, stir well and strain again through fine-mesh sieve.
 
These two recipes should get you started. Try less sugar and maybe add almond extract--or use rum instead of vodka. Experiment!

You can drink this straight, use it in truffles, or make a martini.
