ROCKY ROAD ICE CREAM PIE: National Rocky Road Ice Cream Pie Day!
Rocky Road Ice Cream was 'invented' in Oakland, CA. One story goes that the Rocky Road ice cream flavor was created in March 1929 by William Dreyer in Oakland, CA. He cut up walnuts and marshmallows with his wife's sewing scissors and added them to his chocolate ice cream that reflected his partner Joseph Edy's chocolate candy that used walnuts and marshmallow pieces. Later the walnuts were replaced by toasted almonds. Fenton's Creamery in Oakland claims that William Dreyer based his recipe on a Rocky-Road style ice cream flavor invented by his friend, Fentons' George Farren, who blended his own Rocky Road-style candy bar into ice cream. However it came into existence, have a scoop of Rocky Road Ice Cream today... or make a Rocky Road Ice Cream Pie!
ROCKY ROAD ICE CREAM PIE
Ingredients
2 cups vanilla fudge swirl ice cream, softened
2 cups chocolate ice cream, softened
2/3 cup miniature marshmallows
3/4 cup semi-sweet chocolate, chopped and divided
1/2 cup toasted almonds, chopped (or lightly salted peanuts)
*Chocolate Pie Crust (see recipe below) Prepare first**
Directions
In large bowl stir together ice cream, marshmallows, 1/2 cup chopped chocolate, and toasted almonds or peanuts. Spoon into crust. Sprinkle with remaining 1/4 cup chopped chocolate.
Cover and freeze at least 2 hours or until firm.
Let stand at room temperature for 10 minutes before cutting.
*Chocolate Pie Crust (good for lots of pies)
2 cups chocolate wafers (in a pinch use Oreos)
6 Tbsp butter
Directions
Melt butter.
Put chocolate wafers in plastic bag. Close bag and crush with spoon or rolling pin until you have tiny pea-sized chocolate bits. Or just whirl the cookies in a blender.
Combine melted butter with chocolate bits.
Press ingredients into 9-inch buttered pie pan. Be sure and go up the sides.
Bake 10 minutes at 325°F.
Cool completely before adding ice-cream.
How easy is this? O.K. even easier: Soften a gallon of Rocky Road Ice Cream and add to your Chocolate Pie Crust. Refreeze for two hours.

S'mores Ice Cream Pie: National Ice Cream Pie Day!
Today is National Ice Cream Day, a perfect summer holiday. And, summer is all about S'mores, so put them together, and you have a great play on the traditional s'mores: S'mores Ice Cream Pie. I've posted S'mores Pie recipes before. They're usually made with frozen chocolate ice cream, but for this recipe uses Rocky Road ice-cream. You'll have lots more smores ingredients! How fun is that? I originally found this recipe on the Taste of Home website. I've tried other S'mores Ice Cream Pie Recipes, but this is my favorite! It's easy and delicious.
S'mores Ice Cream Pie
Ingredients
2/3 cup graham cracker crumbs
2 Tbsp sugar
3 Tbsp unsalted butter, melted
2-1/2 cups Rocky Road ice cream (or Chocolate), softened
2/3 cup marshmallow creme (or marshmallow fluff)
3/4 cup miniature marshmallows
Directions
In small bowl, combine graham cracker crumbs and sugar; stir in butter. Press onto bottom and up sides of 7-inch pie plate coated with cooking spray. Bake at 325° for 7-9 minutes or until lightly browned. Cool on a wire rack.
Carefully spread ice cream onto crust; freeze until firm. Spread marshmallow creme over ice cream. Top with marshmallows; gently press into creme. Cover and freeze for 4 hours or overnight.
Just before serving, use a mini-torch and scorch marshmallows a bit--or broil 6 in. from the heat for 1-2 minutes or until marshmallows are golden brown.

PEPPERMINT ICE CREAM PIE: Perfect for the Holidays!
When I was little, we went on long turnpike rides to visit family during the holidays. On the way, we always stopped at Howard Johnson's, the roadside retreat, and my treat was Peppermint Stick Ice Cream. It didn't matter what the weather was like outside, that Peppermint Ice Cream was delicious -- rich and creamy, filled with lots of crunchy peppermint pieces. It was served in simple cones then, but this recipe for Peppermint Ice Cream Pie takes it one step further. This is a great last minute dessert when you have unexpected company during the holidays--or plan on it!
Even though it's freezing outside, this shouldn't keep you from making this simple delicious Peppermint Ice Cream Pie. As a matter of fact, now's the time to make this when the Limited Edition flavors hit the frozen dairy case. Dreyer's Ice Cream (Edy's in the Midwest and on the East Coast) has a very good Peppermint Ice Cream. Fenton's, a local favorite, has terrific Peppermint Ice Cream, too. Of course, you can use any Peppermint Ice Cream you like! You can even make your own! Scroll down for an easy no-churn recipe for Peppermint Stick Ice Cream.
Tip: Be sure and put the pie crust in the freezer rather than refrigerator for an hour before filling, so it doesn't get soggy.
Peppermint Ice Cream Pie
Peppermint Oreo Pie Crust
Ingredients
2 1/4 cups of crushed Trader Joe's Candy Cane Joe Joes (oreo-like with peppermint filling), finely crushed (whirl in a blender or put in plastic bag and use rolling pin)
2 1/2 ounces of melted unsalted butter
Directions

Combine cookie crumbs with melted butter in a bowl.
Pour mixture into 9 inch pie pan and press into the bottom and up the sides evenly.
Smooth surface with the back of a spoon.
Freeze pie crust for at least an hour.

Put cream, extract, and sugar in blender.
Blend on high until smooth and creamy.

Pour in freezer safe container. Freeze for 4-6 hours.

MALTED MILK BALL CHOCOLATE ICE CREAM PIE: History and Recipe for National Ice Cream Pie Day
Lots of companies make them now, but when I was growing up, I only remember one: Hershey's Whoppers Malted Milk Balls. But now I know there were other "old fashioned' brands such as Maltesers. Maybe they weren't available at my candy store? Ghirardelli also makes Milk Chocolate Malt Balls. (There's also a Kittymalt Hairball remedy that I have, but I won't go there).
Malt balls (interchangeable with malted balls but not moth balls!) are also available in a variety of flavors: There are pumpkin spice malted milk balls, dark chocolate milk balls, mint malted milk balls, cookies and cream malted milk balls, peanut butter malted milk balls and yogurt malted milk balls, and many other varieties.
Want to just have the Malt Ball center only? Nuts on Line sells them for $3.99 a pound. These malt ball center only candies can be enrobed in the very best chocolate. You can do it yourself in the same way you make chocolate covered nuts. Just melt some chocolate and dip. I use two forks to make it easy. Dry them on a parchment lined baking sheet.

Malted milk balls are chocolate-coated candies often sold in milk carton packaging to promote their association with flavored milk and malted milkshakes.
The flavor of malted milk balls is often described as nutty or distinctively hearty, much like a grain cereal. The reason for this unusual flavor is the use of a grain treatment known as malting. Add some whipped cream and sprinkle with chopped and whole malted milk balls when you serve, and you're good to go.
MALTED MILK BALL CHOCOLATE ICE CREAM PIE
Ingredients
3 1/2 cups malted milk balls, divided
Cookie Crust, using chocolate wafers and a 9-in. cheesecake pan with removable sides (I've posted this recipe before)
1 3/4 quarts vanilla ice cream, softened
3 Tbsp Dutch-process cocoa powder
1 1/2 cups malted milk powder (Malted milk powder is made from milk, barley malt, and wheat; don't confuse it with Ovaltine, which has other ingredients added. Find it next to the chocolate milk powder in well-stocked grocery stores or online)
1 cup whipping cream, divided
6 ounces semisweet chocolate, chopped

Arrange a tight layer of malted milk balls (3 cups) over crust. Stir ice cream with cocoa powder and malted milk powder until smooth. Spoon into crust, set on plate, and freeze 5 hours.
Heat 1/2 cup cream meanwhile until simmering. Put chocolate in small metal bowl, pour in cream, and let sit until chocolate is melted, about 2 minutes. Stir until smooth. Let cool completely.
Smooth chocolate ganache over top of pie and freeze until set, about 15 minutes.
To serve:
Whip remaining 1/2 cup cream and swirl onto pie. Chop some malted milk balls and drop onto pie; add a few whole balls. Remove rim and serve immediately.
Tips:
Let the pie soften for 5 minutes at room temp to make slicing easier.
If you're having trouble free-ing your pie from its pan, set it over bowl of hot water for a couple of minutes and then slide a thin knife between pan edge and crust. It should pop right out.

Cookie Crust, using chocolate wafers and a 9-in. cheesecake pan with removable sides (I've posted this recipe before)
1 3/4 quarts vanilla ice cream, softened
3 Tbsp Dutch-process cocoa powder
1 1/2 cups malted milk powder (Malted milk powder is made from milk, barley malt, and wheat; don't confuse it with Ovaltine, which has other ingredients added. Find it next to the chocolate milk powder in well-stocked grocery stores or online)
1 cup whipping cream, divided
6 ounces semisweet chocolate, chopped

Arrange a tight layer of malted milk balls (3 cups) over crust. Stir ice cream with cocoa powder and malted milk powder until smooth. Spoon into crust, set on plate, and freeze 5 hours.
Heat 1/2 cup cream meanwhile until simmering. Put chocolate in small metal bowl, pour in cream, and let sit until chocolate is melted, about 2 minutes. Stir until smooth. Let cool completely.
Smooth chocolate ganache over top of pie and freeze until set, about 15 minutes.
To serve:
Whip remaining 1/2 cup cream and swirl onto pie. Chop some malted milk balls and drop onto pie; add a few whole balls. Remove rim and serve immediately.
Tips:
Let the pie soften for 5 minutes at room temp to make slicing easier.
If you're having trouble free-ing your pie from its pan, set it over bowl of hot water for a couple of minutes and then slide a thin knife between pan edge and crust. It should pop right out.

Today is Strawberries & Cream Day! One way to celebrate would be to stuff strawberries with whipped cream and dip in chocolate. Yum! But here's another way to celebrate the day: Strawberries & Cream Ice Cream Pie with Chocolate Crust. This is also perfect for your Memorial Day dessert.
Strawberries & Cream Ice Cream Pie with Chocolate Cookie Crust
Ingredients
1 Chocolate Cookie Crust
3 cups Strawberry ice cream or Ben & Jerry's Strawberries & Cream ice cream, softened
Whipped Cream
1 cup Sliced fresh Strawberries
Chocolate Cookie Crust
Ingredients
30 Chocolate wafers
5 Tbsp unsalted butter, melted and cooled slightly
Pinch of salt
Directions for Cookie Crust
Whirl cookies in food processor until finely ground.
Put crumbs in mixing bowl and add butter and salt until crumbs are moistened.
Press mixture across bottom of 8-inch pie plate and up sides. Pack tightly.
Bake in 350 degree oven for 6 minutes.
Cool before filling.
Directions for Pie
Be sure and cool crust before adding ice cream
Spread ice cream evenly over crust.
Smooth top.
Put pie in freezer until solid (or until ready to serve - for up to 3 days)
Before serving, top with whipped cream and fresh sliced strawberries.

ICE CREAM PIE DAY: Retro Ad & Recipe
Today is Ice Cream Pie Day! Perfect weather to celebrate! This Baker's Ads with recipe is from 1953, and the recipe is still great. I've made it. Love that "It's a dream with cherry vanilla ice cream!" That's a blast from the past. Today I make it with Ben & Jerry's Cherry Garcia--love the extra chocolate chunks! Also good with Chunky Monkey.. Bananas, coconut and chocolate.. what could be wrong? Also, you'll love the Chocolate-Coconut Crust.

S'MORES ICE CREAM PIE: National S'mores Day
Today is National S'mores Day. Frozen chocolate ice cream is always great, but this recipe, my favorite by far for S'mores Ice Cream Pie, uses Rocky Road ice-cream, but you can always use chocolate. I originally found this recipe on the Taste of Home website. I've tried other S'mores Ice Cream Pie Recipes, but this is really the best one! It's easy and delicious.
S'mores Ice Cream Pie
Ingredients
2/3 cup graham cracker crumbs
2 Tablespoons sugar
3 Tablespoons unsalted butter, melted
2-1/2 cups Rocky Road ice cream (or Chocolate), softened
2/3 cup marshmallow creme
3/4 cup miniature marshmallows
Directions
In small bowl, combine cracker crumbs and sugar; stir in butter. Press onto bottom and up sides of 7-inch pie plate coated with cooking spray. Bake at 325° for 7-9 minutes or until lightly browned. Cool on a wire rack.
Carefully spread ice cream into crust; freeze until firm. Spread marshmallow creme over ice cream. Top with marshmallows; gently press into creme. Cover and freeze for 4 hours or overnight.
Just before serving, use a mini-torch and flash-burn a bit--or broil 6 in. from the heat for 1-2 minutes or until marshmallows are golden brown.

Triple Chocolate Ice Cream Pie: Retro & Modern Recipes
Today is National Ice Cream Pie Day! I love Ice Cream Pie! Here's a Retro Jell-O Chocolate Ice Cream Pie Ad & Recipe from Good Housekeeping, 1959. O.K. this is not how I make Ice Cream Pie. Why not just use some chocolate ice cream? Scroll down for an easy recipe for a more 'modern' Triple Chocolate Ice Cream Pie!
'Modern' Triple Chocolate Ice Cream Pie
Since I'm all about Chocolate, the pie shell can be made with chocolate wafers or oreos.. either works well.
To make the crust, crumb up the wafers or oreos either by putting them in a plastic bag and running a rolling pin over them or by whirling them in your food processor. Add 1/2 stick of melted butter (or a bit more) and press into a 9" pie plate, going up the sides. Bake for 5-10 minutes at 350 -- or not. Since this is an ice-cream pie, it's not really going to matter if you bake it or not!
Next, spoon in the softened chocolate ice cream. Now here's where you can get creative--either a chocolate or a chocolate brownie ice cream such as Haagen Daz Chocolate or Ben & Jerry's Chocolate or Chocolate Fudge Brownie would be perfect! Then freeze!
Helpful hint: make sure to position the pie flat in your freezer.
And finally, top with Hot Fudge Sauce!
