SPUMONI DAY: Spumoni Ice Cream Cake

Today is National Spumoni Day! Spumoni, not to be confused with zamboni, is a multicolored Italian ice cream. When I was growing up, it was usually a flavorless ice cream served in Italian restaurants at the end of a meal. It wasn't until I visited Italian friends that I tasted really good Spumoni.

By definition, Spumoni is a special Italian dessert made of layers of ice cream, whipped cream, candied fruit, and nuts. Each layer contains different flavors and ingredients. In traditional dessert kitchens, spumoni is often made of three layers of flavor: chocolate, pistachio, and cherry. Each layer of Spumoni ice cream may include more than flavored ice cream. The chocolate layer, for example, may include chocolate shavings or chunks. Sometimes the chocolate layer has crushed hazelnuts inside. Not only does the hazelnut add a lovely flavor to the chocolate, but it also compliments the pistachio layer. The pistachio layer, of course, almost always includes crushed pistachio nuts. Finally, the fruit layer of spumoni is usually made with candied fruit. The cherry layer is the most traditional fruit component to the dessert.
 
Not surprisingly Ben & Jerry's has a recipe for Spumoni Ice Cream Cake. It's so easy and delicious. I've added cherries and hazelnuts.

SPUMONI ICE CREAM CAKE

Ingredients
1 pint Ben & Jerry’s Cherry Garcia
1 pint Ben & Jerry’s Pistachio Pistachio
1 pint Ben & Jerry’s Chocolate Fudge Brownie
4 large brownies (homemade or store bought)

Toppings: Chocolate *Ganache
1 cup (8 oz) chocolate chips and 1 cup heavy cream
Cookie Crumbs – 4 chocolate sandwich cookies, crushed
Maraschino Cherries
Chopped Hazelnuts

Directions
In a silicone or metal baking pan/pie plate place a layer of brownies and push down firmly to make a thin layer of crust. Soften 1 pint of ice cream so it is soft enough to spread. Spread over crust and place in the freezer for 10-15 minutes, or until it's firm.
While that’s in the freezer, pull out another pint of ice cream to soften. Repeat step 2 for the remaining flavors until you have all three layers spread in the pan. Add either cookie crumbs or ganache as a topping, and return the cake to the freezer for at least 15 minutes.
Remove cake from freezer and cut into individual slices to serve. You may need to remove the cake and let it soften before slicing if left in the freezer for 30 minutes or longer. Add chopped hazelnuts and maraschino cherries.

*Chocolate Ganache: Place heat proof (glass or stainless steel) bowl over boiling water. Add 1 cup of cream to heat the cream to a low boil and remove from heat. Slowly add cream to chocolate pieces. Let the ganache cool, but while it’s still liquid use a spoon to drizzle the ganache over the cake. Top with Maraschino Cherries.

Cherry Garcia Ice Cream Pie with Chocolate-Coconut Crust: ICE CREAM PIE DAY

Today is National Ice Cream Pie Day, and the following no-bake recipe is great to make today since it's a real scorcher out there! I love this retro 1953 Baker's Ad with recipe. "It's a dream with cherry vanilla ice cream!" Today I make this ice cream pie with Ben & Jerry's Cherry Garcia -- love the extra chocolate chunks! This ice cream pie is also good with Chunky Monkey.. bananas, coconut and chocolate.. what could be bad?

BEN & JERRY'S S'MORES ICE CREAM CAKE

I love Ben & Jerry's Ice Cream, and I love S'mores. Here's the perfect dessert for your Memorial Day Barbecue or any dayBen & Jerry's S'mores Ice Cream Cake. Following is the no-bake recipe, but be sure and watch the video. This S'mores Ice Cream Cake is a no-brainer and can be made at the drop of a hat. If you're like me, you probably have all the ingredients in your pantry and freezer! The finished cake looks and tastes amazing! I don't add the extra fudge sauce at the end because I think the S'mores Ice Cream Cake is rich enough as is. Enjoy! Thanks, Ben & Jerry's!

 

BEN & JERRY'S S'MORES ICE CREAM CAKE

Directions
Prepare the crust (see below)
Prepare the filling (see below)
Top the crust with Ice Cream filling
Spread 2 cups of marshmallow fluff over the top of the ice cream (this can be done directly after filling with ice cream, or you can chill ice cream layer first)
Freeze cake for a minimum of two hours

To serve:
Remove cake from freezer, let cake sit for 10 minutes, top with mini marshmallows and torch to golden brown
Run a knife around the edge of pan and remove side of spring-form
Slice, serve, and enjoy!

Crust: 
16 (8 oz.) whole graham crackers, crushed
1/3 cup powdered sugar
1 stick unsalted butter, melted
Combine graham crackers and sugar, add melted butter and stir to sandy, buttery consistency. Press mixture into bottom and up sides of 9” spring-form pan, using fingers or flat bottomed measuring cup. Chill for 10 minutes while you prepare ice cream.

Filling:
3 Pints Ben & Jerry’s S’mores Ice Cream (or any Ben & Jerry's Chocolate Ice Cream)
Remove Ice cream from containers and place in bowl to soften, about 10 minutes.
Stir to combine and top prepared and chilled graham crust with ice cream.

Follow directions above for marshmallow topping!

STRAWBERRIES & CREAM ICE CREAM PIE: National Strawberries & Cream Day

Today is Strawberries & Cream Day! One way to celebrate would be to stuff strawberries with whipped cream and dip in chocolate, but here's another way to celebrate the day -- Strawberries & Cream Ice Cream Pie with Chocolate Crust. This would be perfect for the upcoming Memorial Day holiday.

Strawberries & Cream Ice Cream Pie with Chocolate Cookie Crust

Ingredients
1 Chocolate Cookie Crust
3 cups Strawberry ice cream or Ben & Jerry's Strawberries & Cream ice cream, softened

Whipped Cream
1 cup Sliced fresh Strawberries

Chocolate Cookie Crust

Ingredients
30 Chocolate wafers
5 Tbsp unsalted butter, melted and cooled slightly
Pinch of salt

Directions for Cookie Crust
Whirl cookies in food processor until finely ground.
Put crumbs in mixing bowl and add butter and salt until crumbs are moistened.
Press mixture across bottom of 8-inch pie plate and up sides. Pack tightly.
Bake in 350 degree oven for 6 minutes.
Cool before filling.

Directions for Pie
Be sure and cool crust before adding ice cream.
Spread ice cream evenly over crust.
Smooth top.
Put pie in freezer until solid (or until ready to serve - for up to 3 days)
Before serving, top with whipped cream and fresh sliced strawberries.

CHOCOLATE MILK & COOKIES ICE CREAM BARK

Ice-cream has been on the menu every day at my house during this brutally hot July. What about you? 

So for today's Food holiday, National Chocolate Milk Day, have some Chocolate Milk & Cookies Ice Cream from Ben & Jerry's, one of my favorites. But if you want to take it up a notch, Chocolate Milk & Cookies Ice Cream Bark is fab. Recipe from the Ben & Jerry's. The fruit and nuts and Greek yogurt really add to this 'unique' bark! As with most recipes like this, you can 'shake it up' and add other fruits and ingredients. It's an incredibly versatile recipe. And, of course, you can always just have some Chocolate Milk & Cookies ice cream, straight from the pint to celebrate the day!



Chocolate Milk & Cookies Ice Cream Bark 

Ingredients

1 cup Greek yogurt
1 pint Topped Chocolate Milk & Cookies Ice Cream
1/4 cup halved raspberries
1/4 cup blueberries
1/4 cup mixed nuts, chopped

Directions

Remove the Chocolate Milk & Cookies Ice Cream from the freezer and let soften. Line a baking sheet with parchment or wax paper. Spread Greek yogurt into a thin layer measuring approximately 8’ x 11’ and freeze for at least 15 minutes.

Spread the softened Chocolate Milk & Cookies ice cream on top of the yogurt layer.

Prepare your toppings.

Sprinkle the raspberries, blueberries, and chopped nuts on top of the ice cream layer. Freeze until firm, at least 3 hours.

Remove from freezer, peel off parchment or wax paper, break into pieces, and serve immediately.

BROWNIE ICE CREAM SANDWICHES: National Ice Cream Sandwich Day!

I've subscribed to Sunset Magazine forever. I love this 'Western' magazine for its home and travel tips and, of course, for the recipes! Over the years the recipes have changed from using heavy ingredients to producing lighter, healthier fare. Chocolate has been a constant, and the writers and editors at Sunset are always discovering new and delicious combinations.

So, since today is National Ice Cream Sandwich Day, I thought I'd post this fabulous twist on the ice cream sandwich from Sunset -- Brownie Ice Cream Sandwiches. You can even freeze these for up to a week. If you plan to make brownies anyway, this is a great way to elevate them!

Brownie Ice Cream Sandwiches

Brownies

Ingredients
6 ounces bittersweet chocolate, chopped
1 cup unsalted butter
2 cups packed light brown sugar
4 large eggs
1 cup flour
1/2 cup Dutch-processed unsweetened cocoa powder
1 tsp salt

1 pint ice cream, softened (any flavor you like--I love Ben & Jerry's Chunky Monkey or Cherry Garcia, but vanilla is great, too)

Directions
Preheat oven to 350°.
In medium pot, bring 1 inch water to simmer. Put chocolate and butter in medium metal bowl and set bowl over pot, being careful not to let bottom of bowl touch water. Heat until chocolate is almost completely melted, then add sugar and eggs and mix thoroughly. Sift together flour, cocoa, and salt, then add to chocolate mixture, stirring well. Pour batter into a greased 10- by 15-in. baking pan. Bake until toothpick inserted in center comes out clean, about 20 minutes. Let cool completely.

Invert brownie sheet onto work surface and cut into 1 1/2-inch squares; arrange on pan.
Freeze brownies 30 minutes.
During last 10 minutes, remove ice cream from freezer to soften.

Working in batches, scoop 1 heaping Tbsp ice cream onto half of brownie squares. Set remaining squares, shiny side up, on top of ice cream and press gently.

Freeze until firm, at least 2 hours. Straighten tops of brownies and trim oozing ice cream with paring knife if you like. Freeze, covered, up to 1 week.

I love Ben & Jerry's Ice Cream, and I love S'mores. This recipe from Ben & Jerry's for S'mores Ice Cream Cake is a winner for today's National Ice Cream Cake Day celebration! It's an easy no bake make-ahead dessert that is perfect for your summer weekend dessert!

If you're like me, you probably have all the ingredients in your pantry and freezer! The finished cake looks and tastes amazing! Here are some 10 Ice Cream Tricks from Ben & Jerry's, starting with an easy way of making ice cream sandwiches without all the mess:

1. Grab a pint, get a hold of a giant knife, and cut the pint into circular slices. Because you’re obviously a dessert pro, you already have some delicious cookies ready to go. 


2. Have a half pint left in the freezer? You COULD dig in and methodically and dutifully deposit an equal number of scoops in each of your bowls. OR you could take a sturdy knife and cut that pint right down the middle lengthwise. Instant gratification.

CHOCOLATE CHIP ICE CREAM SANDWICHES: National Ice Cream Sandwich Day

I've posted lots of easy Chocolate Chip Ice Cream Sandwich recipes including one for making your own Chipwich, but here's another recipe from Martha Stewart for a very sturdy chocolate chip cookie which is essential for chocolate chip ice cream sandwiches. I'm always looking for new chocolate chip cookie recipes.

One change I would make is to use either Chocolate Chip Ice Cream or in my case Ben & Jerry's Cherry Garcia. One other TIP for making ice cream sandwiches is to soften the ice cream and use a cookie cutter to get the size you want rather than just spreading on the cookie. This is great because when you squeeze, ever so lightly, you'll have a perfect center with very little cookie crumbling.

And, of course, you can use packaged big chocolate chip cookies if you're in a hurry.

Chocolate Chip Ice Cream Sandwiches 

Ingredients

1 1/2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/4 cup granulated sugar
1/4 cup sour cream
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups mini chocolate chips
1 pint Ben & Jerry's Jerry Garcia ice cream (or whatever you like)

Directions
Preheat oven to 350 degrees, with rack in center.
In medium bowl, whisk together flour, baking soda, and salt. Using  electric mixer, beat butter and sugars until light and fluffy. Add sour cream, egg, and vanilla; beat until smooth. With mixer on low, gradually add flour mixture; mix in 1 cup chocolate chips.
Using 1 rounded tablespoon per cookie, drop mounds of dough, about 1 1/2 inches apart, onto two baking sheets. (You'll have 25 to 30 cookies.) Bake until golden, 10 to 12 minutes; transfer to a rack to cool completely.
Scatter remaining chocolate chips on a plate. Place about 2 tablespoons ice cream between 2 cookies--or cut a chunk of ice cream using a cookie cutter the approximate size-pressing slightly until ice cream exceeds or matches the size of the cookies, bottoms facing in; press gently.
Roll sides of each sandwich in chips. (If ice cream is melting, place sandwiches in freezer until firm enough to roll in chips.) Transfer sandwiches onto baking sheets. Freeze until firm, at least 2 hours; then wrap individually in plastic.
Freeze up to 2 weeks.

Chocolate Milk & Cookies Ice Cream Bark

Now that the days are warming up, my life is all about ice-cream! What about you? As you know I'm a big Ben & Jerry's fan, so I often go to their website for easy yet inspirational and tasty recipes! This recipe for Chocolate Milk & Cookies Ice Cream Bark is fab, and I've been meaning to post. The fruit and nuts and Greek yogurt really add to this 'unique' bark! As with most recipes like this, you can 'shake it up' and add other fruits and ingredients.

Chocolate Milk & Cookies Ice Cream Bark 

Ingredients

1 cup Greek yogurt
1 pint Moo-phoria Chocolate Milk & Cookies light ice cream
1/4 cup halved raspberries
1/4 cup blueberries
1/4 cup mixed nuts, chopped

Directions

Remove the Moo-phoria light ice cream from the freezer and let soften. Line a baking sheet with parchment or wax paper. Spread Greek yogurt into a thin layer measuring approximately 8’ x 11’ and freeze for at least 15 minutes.

Spread the softened Moo-phoria Chocolate Milk & Cookies light ice cream on top of the yogurt layer.

S'MORES ICE CREAM CAKE for Memorial Day!

BEN & JERRY'S S'MORES ICE CREAM CAKE

Directions
Prepare the crust (see below)
Prepare the filling (see below)
Top the crust with Ice Cream filling
Spread 2 cups of marshmallow fluff over the top of the ice cream (this can be done directly after filling with ice cream, or you can chill ice cream layer first)
Freeze cake for a minimum of two hours

To serve: Remove cake from freezer, let cake sit for 10 minutes, top with mini marshmallows and torch to golden brown
Run a knife around the edge of pan and remove side of spring-form
Slice, serve, and enjoy!

Crust: 
16 (8 oz.) whole graham crackers, crushed 1/3 cup powdered sugar
1 stick butter, melted
Combine graham crackers and sugar, add melted butter and stir to sandy, buttery consistency. Press mixture into bottom and up sides of 9” spring-form pan, using fingers or  flat bottomed measuring cup. Chill for 10 minutes while you prepare ice cream.

Filling:
3 Pints Ben & Jerry’s S’mores Ice Cream (or any Ben & Jerry's Chocolate Ice Cream).
Remove ice cream from containers and place in bowl to soften, about 10 minutes.
Stir to combine and top prepared and chilled graham crust with ice cream.

Follow directions above for marshmallow topping!

Ben & Jerry's S'mores Ice Cream Cake: Perfect for the Summer Solstice

Today is the Summer Solstice, and the temperature is hitting triple digits here, so it's the perfect day to make this S'mores Ice Cream Cake. I love Ben & Jerry's Ice Cream, and I love S'mores. Use the recipe below, and be sure and watch the video. This is a no-brainer and can be made at the drop of a hat. If you're like me, you probably have all the ingredients in your pantry and freezer! The finished cake looks and tastes amazing! I dropped the extra fudge sauce at the end from the original recipe, because I think the S'mores Ice Cream Cake is rich enough as is. Ben & Jerry's New Belgium Salted Caramel Brown-ie Ale

I've posted about chocolate beers before, but here's a great new Ben & Jerry's flavor for ice cream and beer aficionados. Ben & Jerry’s and New Belgium Brewing have come together in a sweet partnership to help fight climate change.

While pleasing beer and ice cream lovers, each pint of Salted Caramel Brown-ie Ale ice cream, and each bottle of Salted Caramel Brownie Ale Beer will benefit Protect Our Winters (POW), a group that is engaging the snow sports community to fight climate change.

Ben & Jerry's three new CORE flavors

Ben & Jerry's has added three new CORE flavors.

Brownie Batter CORE: One side chocolate, the other vanilla, both studded with fudgy brownies from Greyston Bakery and joined a brownie batter core.
 
Coconuts for Caramel Core!: A tropical treat with caramel and sweet cream-coconut ice creams split by a pillar of gooey caramel.
 
Cookies & Cream Cheesecake Core: The most decadent of the trio, it calls for chocolate and cheesecake ice creams with bits of cocoa cookies, plus a creamy cheesecake center.

Ben & Jerry's S'mores Ice Cream Cake

I love Ben & Jerry's Ice Cream, and I love S'mores. Even in the dead of winter, this Ben & Jerry's S'mores Ice Cream Cake is a winner. Here's the recipe, and be sure and watch the video. This is a no-brainer and can be made at the drop of a hat. If you're like me, you probably have all the ingredients in my pantry and freezer! The finished cake looks and tastes amazing! I dropped the extra fudge sauce at the end from the original recipe, because I think the S'mores Ice Cream Cake is rich enough as is. So here's a reminder of summer in winter. Enjoy!
