THE DIFFERENCE BETWEEN VANILLA & FRENCH VANILLA ICE CREAM: National Vanilla Ice Cream Day

Today is Vanilla Ice Cream Day. I often serve vanilla ice cream with brownies and chocolate cake, and I often wondered "What's the Difference between Vanilla Ice Cream and French Vanilla Ice Cream?"

French Vanilla Ice Cream is a different color than Vanilla Ice Cream, and that's due to the process rather than the vanilla bean varieties, named for where they’re grown, like Madagascar, Tahiti, and Mexico. French Vanilla refers not to a vanilla variety but to the classic French way of making ice cream using an egg-custard base. The eggs give French Vanilla ice cream a smoother consistency and subtle yellow color. I definitely think that French vanilla ice cream is richer.

Vanilla Ice Cream that is made with just milk and cream, without eggs, is called Philadelphia-style vanilla ice-cream. Having grown up in Philadelphia, this was news to me.

The French Connection: Actually French Vanilla ice cream dates back to colonial times. Both Thomas Jefferson and George Washington used ice cream recipes that include egg yolks. Jefferson's family's ice cream recipe which calls for six egg yolks per quart of cream may have originated with his French butler.

Thomas Jefferson's Vanilla Ice Cream Recipe

Ingredients:
2 Bottles of Good Cream
6 Yolks of eggs
1/2 pound sugar
Stick of Vanilla

Directions
Mix the yolks and sugar put the cream on a fire in a casserole, first putting in a stick of vanilla.

When near boiling, take it off and pour it gently into the mixture of eggs and sugar. Stir it well.

Put it on the fire again, stirring it thoroughly with a spoon to prevent it from sticking to the casserole.

When near boiling, take it off and strain it through a towel. Put it in the Sabottiere [the inner canister in an ice bucket], then set it in ice an hour before it is to be served.

Put into the ice a handful of salt, put salt on the coverlid of the Sabotiere, and cover the whole [thing] with ice. Leave it still half a quarter of an hour. Then turn the Sabottiere in the ice [for] 10 minutes.

Open it ... with a spatula [and remove] the ice from the inner sides of the Sabotiere.

Shut it and replace it in the ice. Open it from time to time to detach the ice from the sides.

When well taken, stir it well with the spatula.

Put it in moulds, justling it well down on the knee. Then put the mould into the same bucket of ice. Leave it there to the moment of serving it.

To withdraw it, immerse the mould in warm water, turning it well [until] it will come out and turn it into a plate.

ICE CREAM CAKE ROLL: National Ice Cream Day

Today is Ice Cream Day! Be sure and grab an ice cream cone, an ice cream sandwich, or --an ice cream cake. That's what I'm doing! 

When I was growing up we didn't have local ice cream shops making specialty ice cream cakes, but we did have store-bought Ice Cream Cake Rolls at the supermarket. I loved the spongy chocolate cake that contrasted with the cold solid vanilla ice cream. You can make this easy recipe today or any day. The following recipe for this Classic Retro Recipe for Ice Cream Cake Roll -- "a Double Treat" -- is adapted from Family Circle Magazine.

ICE CREAM CAKE ROLL 

Ingredients
3/4 cup all-purpose flour
1/3 cup cocoa powder
1 teaspoon baking powder
pinch of salt
4 eggs
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 Tablespoons confectioners' sugar
3 cups vanilla ice cream, softened

Directions 
Heat oven to 350 degrees F. Coat 15 x 10 x 1-inch jelly-roll pan with nonstick cooking spray. Line bottom of pan with parchment or waxed paper. Spray paper.
Stir together flour, cocoa powder, baking powder, and salt. In large bowl, beat eggs with electric mixer on medium speed for 5 minutes, until very light yellow. Gradually add granulated sugar, beating until smooth. Beat in vanilla extract.
Fold flour mixture into egg mixture until no lumps remain. Pour into prepared pan, spreading level. Bake at 350 degrees F for 12 minutes or until cake springs back when lightly touched.
Dust clean kitchen towel with confectioners sugar. Turn cake out onto towel. Roll up towel and cake from short end; cool completely.
Unroll; spread with softened ice cream to within 1 inch of edges.
Re-roll cake without towel; wrap in plastic wrap. Freeze at least 4 hours or overnight.
If frozen overnight, let stand at room temperature 20 minutes before serving.
To serve, carefully remove plastic wrap.

One-Ingredient Banana Ice Cream: National Ice Cream Day!

Today is National Ice Cream Day. Our temps are in the 100s, so it's the perfect food for today! My favorite ice cream when I was little was Banana Ice Cream. We used to stop at the Howard Johnson's on the Highway, and I was always thrilled that they had 28 flavors! As amazed as I was by all the flavors, I usually picked banana. Here's an unbelievably easy One Ingredient Banana Ice Cream recipe. It's healthier, too, since there's no cream, no sugar ... just bananas. And, since this is a chocolate blog, just pour some chocolate sauce over it when you're ready to eat! This pure banana 'ice cream' is really creamy, too, because bananas are high in pectin.

One-Ingredient Banana Ice Cream 

Large ripe bananas.
Peel bananas and chop into evenly sized small pieces.
(Optional but good step) Put bananas in airtight container: freezer bag. Freeze banana pieces for at least 2 hours to overnight.
In small food processor, blend frozen banana pieces. Keep blending —  banana will look crumbly. Scrape down food processor. Keep blending —  banana will look gooey: like banana mush. Scrape down food processor. Keep blending — banana will look like oatmeal: It will get smoother but still have chunks of banana in it. Scrape down food processor. Suddenly, as the last bits of banana smooth out, you'll see mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate ice cream.
Transfer to airtight container and freeze until solid: You can eat the ice cream immediately, but it will be quite soft. You can also transfer it back into airtight container and freeze until solid, like traditional ice cream.

Food processor vs. blender: Food processor works best since it has enough room for the banana to get fully creamy and a little bit aerated. Some people do make it in a blender, but be careful; make sure your blender is powerful enough to process the frozen bananas. 

Making a bigger batch: Make sure your food processor is big enough (and powerful enough).

MAGIC CHOCOLATE ICE CREAM: Retro Ad from Elsie the Cow for National Chocolate Ice Cream Day!

Today is National Chocolate Ice Cream Day. To celebrate, here's a great Borden's Elsie the Cow Recipe Ad from August 1941. I love these Retro 'Story' Advertisements, and I love Elsie the Cow! In this story Ad, Elsie's Magic Chocolate Ice Cream wins at the County Fair -- judged the Smoothest and Creamiest Home-made Ice Cream. This really is an easy recipe that doesn't require an ice-cream maker. Still great today, in case you have an "automatic refrigerator."

THREE RECIPES FOR CHOCOLATE ICE CREAM: National Ice Cream Day

I scream! You scream! We all scream for Ice Cream! Make it chocolate! To celebrate National Ice Cream Day (and Ice Cream Month), here are 3 easy recipes for Chocolate Ice Cream. As always use the very best ingredients. Be sure and try all three and let me know which is your favorite!

CHOCOLATE ICE CREAM RECIPE #1

Ingredients
1-1/2 cup whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp vanilla extract

Directions
Whisk together milk, cocoa powder, and sugar to combine.
Stir in heavy cream and vanilla extract.
Refrigerate chocolate ice cream base for at least 30 minutes before putting in your ice cream freezer, so it is completely cold. This will help freeze faster, improving texture, and allow cocoa powder to become fully hydrated by the milk and cream.

CHOCOLATE ICE CREAM RECIPE #2

Ingredients
1 cup Dutch process cocoa powder, unsweetened
1/2 cup brown sugar, firmly packed
2/3 cup white sugar
1-1/2 cups whole milk
31/4 cups heavy cream
2 Tbsp vanilla extract

Directions
In bowl, combine cocoa and both sugars, whisking to combine well. Add milk and whisk until sugars are dissolved. Stir in heavy cream and vanilla. Pour mixture into freezer bowl of ice cream maker. Let run for 30 minutes, or until mixture is thick, soft, and creamy.
Transfer to airtight container and freeze at least 2 hours.

CHOCOLATE ICE CREAM RECIPE  #3 (without ice cream maker)
This recipe is for Magic Chocolate Ice Cream -- recipe from Borden's Elsie the Cow

Ingredients
1 square unsweetened chocolate
2/3 cup Sweetened Condensed Milk
2/3 cup water
1/2 tsp vanilla
1/2 cup whipping cream

Directions
Melt chocolate in top of double boiler. Add sweetened condensed milk and stir over rapidly boiling water 5 minutes until thick. Add water, mix well. Chill. Add vanilla. Whip cream to custard-like consistency. Fold into chilled mixture. Freeze until half-frozen. Take out of container and beat until smooth but not melted. Replace in freezer until frozen.

NO CHURN COFFEE ICE CREAM WITH CHOCOLATE CHIPS: National Ice Cream Day

Happy Ice Cream Day! I'm not a coffee drinker, but I do like Coffee Ice Cream. And what could be better than Coffee Ice Cream with Chocolate Chips? Don't have an ice cream maker? No worries. This is a recipe for you. 

No Churn Coffee Ice Cream with Chocolate Chips

Ingredients
1 can (14 ounce) sweetened condensed milk
1 Tbsp vanilla extract
1/2 cup strong cold coffee
2 cups cold heavy cream
1/3 cup chocolate chips

Directions
In medium bowl, stir together condensed milk, vanilla, coffee, and chocolate chips.
In separate bowl of standing mixer, whip cream until soft peaks form.
Whisk one third of whipped cream into coffee mixture.
Fold remaining whipped cream into coffee mixture until incorporated.
Pour into 9 × 5-inch loaf pan, cover with plastic wrap, and freeze until firm -- about 6 hours or overnight.

How easy is that?

Today is Ice Cream Day, but if you're like me, every day is Ice Cream Day. Check out your local ice cream shop for specials and freebies!

Here are some 10 Ice Cream Tricks from Ben & Jerry's, starting with an easy way of making ice cream sandwiches without all the mess:

1. Grab a pint, get a hold of a giant knife, and cut the pint into circular slices. Because you’re obviously a dessert pro, you already have some delicious cookies ready to go.

TRIPLE CHOCOLATE ICE CREAM PIE: National Chocolate Ice Cream Day!

Today is National Chocolate Ice Cream Day, so I plan to make Triple Chocolate Ice Cream Pie! I have two recipes: One Retro and One Modern.

The first recipe is a Retro Jell-O Chocolate Ice Cream Pie Ad & Recipe from Good Housekeeping, 1959. O.K. this is not how I would make it. Why not just use some chocolate ice cream? Scroll down for an easy recipe for a more 'modern' Triple Chocolate Ice Cream Pie!



'Modern' Triple Chocolate Ice Cream Pie

Since I'm all about Chocolate, the pie shell can be made with chocolate wafers or oreos.. either works well.

To make the crust, crumb up the wafers or oreos either by putting them in a plastic bag and running a rolling pin over them or by whirling them in your food processor. Add 1/2 stick of melted butter (or a bit more) and press into a 9" pie plate, going up the side. Bake for 5-10 minutes at 350 -- or not. Since this is an ice-cream pie, it's not really going to matter if you bake it or not!

After the pie shell is cooled (if you bake it), spoon in the softened chocolate ice cream. Now here's where you can get creative--either a chocolate or a chocolate brownie ice cream such as Haagen Daz Chocolate or Ben & Jerry's Chocolate or Chocolate Fudge Brownie would be perfect! Then freeze!  
Helpful hint: make sure to position the pie flat in your freezer.

And finally, top with Hot Fudge Sauce!

Where to Get Free Ice Cream Today: Ice Cream Day!

In 1984, President Ronald Reagan named July National Ice Cream Month and named the third Sunday of July as National Ice Cream Day. The ice cream industry in the United States contributes more than $39 billion to the economy and creates more than 188,000 jobs, according to the International Dairy Foods Association. When Reagan made the proclamation, he called for people in the United States to observe National Ice Cream Day with “appropriate ceremonies and activities.”

So celebrate. Here's a round-up of places to get free or reduced cost ice cream today! Be sure and check with the location. Times and freebies will vary.

Fenton’s Creamery (Oakland and Vacaville): Fenton’s Creamery is celebrating its 123rd birthday Sunday by offering junior Black & Tan sundaes for $1.23. The sundaes are usually $9.25.

Magic Chocolate Ice Cream: Retro Elsie the Cow Ad & Recipe

It's going to be a scorcher this weekend, and what's more refreshing than chocolate ice cream? And, it's National Ice Cream Day! Here's an August 8, 1941 Retro ad and Recipe from Borden's Eagle Brand for Magic Chocolate Ice Cream. And, it's no-churn. I love Elsie the Cow, and I'm definitely take her advice on bringing "homemade ice cream to the social." Luckily, I have an automatic refrigerator! Gotta love these 'story' ads. "If it's Borden's, it's got to be good."
