S'mores Ice Cream Pie: Ice Cream Pie Day

Today is National Ice Cream Day, a perfect summer holiday. And, summer is all about S'mores, so put them together, and you have a great play on the traditional s'mores: S'mores Ice Cream Pie. I've posted S'mores Pie recipes before. They're usually made with frozen chocolate ice cream, but for this recipe uses Rocky Road ice-cream. You'll have lots more smores ingredients! How fun is that? I originally found this recipe on the Taste of Home website. I've tried other S'mores Ice Cream Pie Recipes, but this is my favorite! It's easy and delicious. Taste of Home has some wonderful recipes. Be sure and check them out!

S'mores Ice Cream Pie

Ingredients
2/3 cup graham cracker crumbs
2 Tbsp sugar
3 Tbsp unsalted butter, melted
2-1/2 cups Rocky Road ice cream (or Chocolate), softened 
2/3 cup marshmallow creme (or marshmallow fluff)
3/4 cup miniature marshmallows

Directions
In small bowl, combine graham cracker crumbs and sugar; stir in butter. Press onto bottom and up sides of 7-inch pie plate coated with cooking spray. Bake at 325° for 7-9 minutes or until lightly browned. Cool on a wire rack.
Carefully spread ice cream onto crust; freeze until firm. Spread marshmallow creme over ice cream. Top with marshmallows; gently press into creme. Cover and freeze for 4 hours or overnight.
Just before serving, use a mini-torch and scorch marshmallows a bit--or broil 6 in. from the heat for 1-2 minutes or until marshmallows are golden brown.

ORANGE CREAMSICLE TRUFFLES: National Creamsicle Day!


Today is National Creamsicle Day. Growing up, I was a Fudgsicle Girl, but I occasionally bought a Creamsicle from the Good Humor Truck.

What exactly is a Creamsicle? A Creamsicle is a frozen dessert with a vanilla ice cream core and a fruit sherbet coating.

The classic Creamsicle flavor combination is orange and vanilla. Officially, the term “Creamsicle” is a registered brand name owned by Unilever, and similar products cannot be labeled as Creamsicles. However, the original Creamsicle® is such a best-seller that the term is often used generically. 

So to honor National Creamsicle Day -- and to add chocolate -- make these Orange Creamsicle Truffles. I love this easy recipe.

ORANGE CREAMSICLE TRUFFLES

Ingredients 
1/4 cup unsalted butter
Zest of 1/2 orange
3 Tbsp heavy cream
1 cup 'real' white chocolate chopped (Guittard) or 'real' white chocolate chips
1/2 tsp orange extract
1/4 cup powdered sugar

Directions 
Put white chocolate in mixing bowl, set aside.
Melt butter with orange zest in small saucepan. Stir in cream and scald mixture.
Pour hot cream mixture through mesh sieve over white chocolate and using rubber spatula press zest against sieve to release orange oils into mixture. Allow mixture to rest 1 minute, add orange extract to white chocolate mixture then stir until smooth.
Cover mixture and refrigerate 2 hours or until firm enough to handle.
Scoop mixture out with small cookie scoop or teaspoon and form into balls.
Roll balls in powdered sugar.
Freeze truffles 20 minutes before eating.

CHOCOLATE STRAWBERRY ICE CREAM CAKE


Hot out? Want to cool off? Here's an easy, pretty, and delicious Chocolate Strawberry Ice Cream Cake recipe. I found the recipe on the Whole Foods Market site and adapted it slightly. Some other great summer recipes to be had there! 

CHOCOLATE STRAWBERRY ICE CREAM CAKE

Ingredients
14 Oreos
2 Tbsp unsalted butter, melted
1 quart chocolate ice cream, softened
1 1/4 cup chocolate fudge sauce, divided
1 quart strawberry ice cream, softened
2 cups sliced fresh strawberries

Directions 
Pulse cookies in bowl of food processor until ground (you should have about 1 1/2 cups crumbs). Pour in butter and pulse just until mixed.
Press mixture firmly into bottom of a 9-inch springform pan.
Freeze until chilled, about 30 minutes.
Using rubber spatula, spread chocolate ice cream over cookie crust and smooth top.
Place in freezer until firm, at least 1 hour.
Reserve 2 tablespoons of fudge sauce for decorating top of cake and spread remainder evenly over top of chocolate ice cream.
Freeze until firm, about 30 minutes. 
Spread strawberry ice cream over fudge, level top of cake, and freeze until whole cake is very firm, at least 3 hours and up to 1 day.
Remove cake from freezer. Run large knife under hot water, wipe dry, and run knife around rim of the pan to loosen ice cream from sides; repeat as necessary. Release and remove sides of springform pan. Lightly spread reserved fudge sauce over top of the cake using back of a spoon, and arrange strawberries however you like.
To serve, cut cake into wedges with knife warmed in hot water and wiped dry.

Chocolate Chip Ice Cream Sandwiches: Ice Cream Sandwich Day

I've posted lots of easy Chocolate Chip Ice Cream Sandwich recipes including one for making your own Chipwich, but here's another recipe from Martha Stewart for a very sturdy chocolate chip cookie which is essential for chocolate chip ice cream sandwiches. I'm always looking for new chocolate chip cookie recipes.

One change I would suggest is to use either Chocolate Chip Ice Cream or in my case Ben & Jerry's Cherry Garcia. One other TIP for making ice cream sandwiches is to soften the ice cream and use a cookie cutter to get the size you want rather than just spreading on the cookie. This is great because when you squeeze, ever so lightly, you'll have a perfect center with very little cookie crumbling.

And, of course, you can use packaged big chocolate chip cookies if you're in a hurry.

Chocolate Chip Ice Cream Sandwiches 

Ingredients

1 1/2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/4 cup granulated sugar
1/4 cup sour cream
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups mini chocolate chips
1 pint Ben & Jerry's Jerry Garcia ice cream (or whatever ice cream you prefer)

Directions
Preheat oven to 350 degrees, with rack in center.
In medium bowl, whisk together flour, baking soda, and salt. Using  electric mixer, beat butter and sugars until light and fluffy. Add sour cream, egg, and vanilla; beat until smooth. With mixer on low, gradually add flour mixture; mix in 1 cup chocolate chips.
Using 1 rounded tablespoon per cookie, drop mounds of dough, about 1 1/2 inches apart, onto two baking sheets. (You'll have 25 to 30 cookies.) Bake until golden, 10 to 12 minutes; transfer to a rack to cool completely.
Scatter remaining chocolate chips on a plate. Place about 2 tablespoons ice cream between 2 cookies--or cut a chunk of ice cream using a cookie cutter the approximate size-pressing slightly until ice cream exceeds or matches the size of the cookies, bottoms facing in; press gently.
Roll sides of each sandwich in chips. (If ice cream is melting, place sandwiches in freezer until firm enough to roll in chips.) Transfer sandwiches onto baking sheets. Freeze until firm, at least 2 hours; then wrap individually in plastic.
Freeze up to 2 weeks.

Irish Coffee Chocolate Milkshake: Coffee Milkshake Day

Today is National Coffee Milkshake Day, and, of course, I would make it a Chocolate Coffee Milkshake, but I decided to take it one step further and add some Irish Whiskey, making this a very special way of celebrating this food holiday. Irish Coffee Chocolate Milkshake

Ingredients
4 ounces dark chocolate, chopped
6 scoops coffee ice cream
2 Tbsp milk
1 ounce Irish Whisky

Directions
Peel chocolate to have some shavings to garnish milkshake.
Combine ice cream, milk, and whisky in blender. Process until smooth
Stir in chopped chocolate.
Garnish with chocolate curls.

Non-Alcoholic Chocolate Coffee Milkshake

Ingredients
1-1/2 cup chocolate ice cream
1/4 cup strong coffee or espresso (already made)
1/4 cup milk
Pinch cocoa powder

Directions
Put all ingredients except cocoa in blender. Blend on high until smooth and frothy. Pour into glasses. Sprinkle with cocoa.

PEACH ICE CREAM BROWNIE MUD PIE

Today is Peach Ice Cream Day. To celebrate the day, you can pour chocolate sauce over peach ice cream topped with fresh peaches. But to take it up a notch, make this great recipe from Land O Lakes. Don't forget that there are some wonderful recipes on food sites. I love this one!

PEACH ICE CREAM BROWNIE MUD PIE

Ingredients 

Brownie 

1/2 cup sugar 
1/4 cup Land O Lakes® Butter, softened 
1 (1-ounce) square unsweetened baking chocolate, melted 
1 large egg 
1/2 cup all-purpose flour 
1/4 teaspoon baking powder 

Filling
 
1 cup thick chocolate fudge sauce
1 quart peach ice cream, slightly softened 

Garnish 

Thick chocolate fudge sauce
Peach slices, if desired

DIRECTIONS

Heat oven to 350°F. Spray 9-inch pie plate with no-stick cooking spray; set aside. 

Combine sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add chocolate and egg. Continue beating until well mixed. Add flour and baking powder; beat at low speed until well mixed. 

Spread batter into prepared pie plate. Bake for 15-18 minutes or until edges just begin to pull away from sides of pan. (Do not overbake.) Cool 1 hour. 

Spread thick fudge sauce over cooled brownie. Spread softened ice cream over topping. Cover; freeze 4 hours or until firm.  

Cut into wedges while frozen. Drizzle each serving with fudge sauce and garnish with sliced fresh peaches.

THREE EASY RECIPES FOR CHOCOLATE ICE CREAM: National Ice Cream Day


I scream! You scream! We all scream for Ice Cream! Make it chocolate! To celebrate National Ice Cream Day (and Ice Cream Month), here are 3 easy recipes for Chocolate Ice Cream. As always use the very best ingredients. Be sure and try all three and let me know which is your favorite!

CHOCOLATE ICE CREAM RECIPE #1

Ingredients
1-1/2 cup whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp vanilla extract

Directions
Whisk together milk, cocoa powder, and sugar to combine.
Stir in heavy cream and vanilla extract.
Refrigerate chocolate ice cream base for at least 30 minutes before putting in your ice cream freezer, so it is completely cold. This will help freeze faster, improving texture, and allow cocoa powder to become fully hydrated by the milk and cream.

CHOCOLATE ICE CREAM RECIPE #2

Ingredients
1 cup Dutch process cocoa powder, unsweetened
1/2 cup brown sugar, firmly packed
2/3 cup white sugar
1-1/2 cups whole milk
31/4 cups heavy cream
2 Tbsp vanilla extract

Directions
In bowl, combine cocoa and both sugars, whisking to combine well. Add milk and whisk until sugars are dissolved. Stir in heavy cream and vanilla. Pour mixture into freezer bowl of ice cream maker. Let run for 30 minutes, or until mixture is thick, soft, and creamy.
Transfer to airtight container and freeze at least 2 hours.

CHOCOLATE ICE CREAM RECIPE  #3 (without ice cream maker)
This recipe is for Magic Chocolate Ice Cream -- recipe from Borden's Elsie the Cow

Ingredients
1 square unsweetened chocolate
2/3 cup Sweetened Condensed Milk
2/3 cup water
1/2 tsp vanilla
1/2 cup whipping cream

Directions
Melt chocolate in top of double boiler. Add sweetened condensed milk and stir over rapidly boiling water 5 minutes until thick. Add water, mix well. Chill. Add vanilla. Whip cream to custard-like consistency. Fold into chilled mixture. Freeze until half-frozen. Take out of container and beat until smooth but not melted. Replace in freezer until frozen.

ICE CREAM SODA DAY: Have a Brown Cow!

Today is National Ice Cream Soda Day, and, of course, I'm going to have a Brown Cow! See recipe below. Ice cream sodas, aka ice cream floats, are made by combining ice cream with soda or carbonated water and flavored syrup. Of course, mine always contain chocolate (ice cream and syrup). Many people consider root beer and vanilla ice cream to be the classic ingredients for an ice cream soda, but that's a Black Cow. I posted a recipe on National Black Cow Day. A Brown Cow is very similar, but it's made with chocolate ice cream. See below for an easy recipe for a Brown Cow to celebrate National Ice Cream Soda Day!  Serve in a "retro" glass or Mason jar for that 'out of the past' feeling. A Brown Cow is great for Fourth of July or any time!

According to Wisegeek.com, "although the recipe for an ice cream soda is quite simple, there is a trick to creating the perfect drink. Plain soda foams because it releases carbon dioxide gas, but ice cream is actually a foamy mixture of liquid, ice crystals, and air pockets. Therefore, if you want to make an ice cream soda with a lot of foam, put the ice cream in the glass before pouring the soda. If you want to make a treat with a minimal amount of foam, add the ice cream after the soda has been poured."

According to food historians, the first ice cream soda was created by accident at the Philadelphia Exposition in October 1874. It was there that pharmacist Robert M. Green invented the now-familiar ice cream soda. At that time, at soda fountains in pharmacies across America, the pharmacist or an employee known as a soda jerk (because he had to jerk back the tap of carbonated water to make a soda) would create a “cream soda” by adding a tablespoon of vanilla or other flavor of fountain syrup along with a tablespoonful of heavy cream to soda water. 

As with most stories, there are multiple variations. One version says that the fountain ran out of fresh cream. As there was no cream in the vicinity, Mr. Green got vanilla ice cream from a nearby vendor. He planned to let it melt and use it as cream, but was so busy that instead he added a frozen spoonful directly to the cream soda. In another version, he ran out of ice and used the ice cream to cool the drink. However, in his own published account, (in Soda Fountain magazine in 1910), he recounted that while operating a soda fountain at the Franklin Institute’s sesquicentennial celebration in Philadelphia in 1874, he wanted to create something that would attract customers away from another competitor. During some deliberate experimenting, he added ice cream to the soda water. 

Whatever the genesis, the ice cream soda was an instant hit and spread nationwide, where they were also called floats (for the scoop of ice cream floating at the top of the glass).

Brown Cow

Ingredients 
Chocolate syrup
Chocolate ice cream
Root beer  (or cola)
Whipped cream, for garnish
Chocolate sprinkles, for garnish
Optional: 1 ounce Godiva chocolate liqueur  (for an adult Brown Cow!)

Directions
Put approximately 2-1/2 scoops of chocolate ice cream in glass cup (depending on size of glass)
Pour optional liqueur over ice cream.
Fill glass with cola (or root beer).
Place spoon in glass and stir gently.
Top with chocolate syrup, whipped cream and sprinkles.
Add straw and serve.

CHERRY TART ICE CREAM: Vintage Ad & Contemporary Recipe!

Today is Cherry Tart Day! Last year I posted a recipe for a Cherry Tart that's easy and delicious! But here's something fun for the day from Elsie the Cow: Cherry Tart Ice Cream from Borden's. It's a great Vintage Ad.  Alas Borden's no longer makes ice cream. 

The original Borden Company completely ceased commercial production and distribution of ice cream in 2001 after facing corporate restructuring and bankruptcy. I loved the Elsie the Cow ads. There is one 'Borden' ice cream shop still operating. They're located in Lafayette, LA., just in case you're passing by.

BLACK COW DAY: History & Recipe

Today is Black Cow Day. You can go out and give Bossy a pat, but really this holiday is about a different type of black cow. A black cow aka a root beer float is made with root beer, chocolate syrup, and vanilla ice cream. Have one at your favorite Ice Cream Fountain or make one today. So easy!

The history of the Black Cow From Leites Culinaria: The first true black cow day seems to have occurred on August 19, 1893. That’s when the notion of combining root beer and ice cream into a frothy concoction is rumored to have occurred to Frank Wisner, owner of a soda fountain as well as a mining company in Cripple Creek, CO. Although soda fountains were rampant at this point in our country’s culinary evolution, iced cream sodas didn’t yet contain ice cream. Instead, they were commonly made from either syrups combined with cream and cold soda water or cream mixed with flavored syrup. As the story goes, on that particular moonlit night, Wisner was gazing at the dark Cow Mountain when its snow-capped peak inspired him to float a scoop of vanilla ice cream on top of his Myers Avenue Red root beer. Sure enough, he swapped root bear for cola, and ice cream for cream, and called the sweet creation “Black Cow Mountain.” It proved immensely popular, not just with the town’s children, but their mothers and the miners whom one might expect to find elsewhere—say, in a saloon or worse. Regulars promptly shortened the title to “Black Cow,” and since then, the term has been used interchangeably to describe root beer floats both with and without a dose of chocolate sauce. Consider trying it both ways before passing judgment.

BLACK COW

Ingredients
10 ounces root beer
2 scoops vanilla ice cream
1 Tbsp chocolate syrup
1 1⁄2 ounces whipped cream
 maraschino cherry

Directions
Pour root beer over ice cream and chocolate syrup in a large glass.
Top with whipped cream and maraschino cherry.

MALTED MILK BALL CHOCOLATE ICE CREAM PIE: Chocolate Ice Cream Day!

Yesterday was National Ice Cream Pie Day, and I meant to post a recipe. Well this Malted Milk Ball Chocolate Ice Cream Pie takes the cake--or, in this case-- the pie! If you're like me, you've always wondered about Malted Milk Balls. What are they really?

Lots of companies make them now, but when I was growing up, I only remember one: Hershey's Whoppers Malted Milk Balls. But there were actually other "old fashioned' brands such as Maltesers. Maybe they weren't available at my candy store? Ghirardelli also makes Milk Chocolate Malt Balls. (There's also a Kittymalt Hairball remedy that I have, but I won't go there).

Malt balls (interchangeable with malted balls but not moth balls!) are now also available in a variety of flavors: There are pumpkin spice malted milk balls, dark chocolate milk balls, mint malted milk balls, cookies and cream malted milk balls, peanut butter malted milk balls and yogurt malted milk balls, and many other varieties. I'm a purist, however.

Want to just have the Malt Ball center only? Nuts on Line sells them. These malt ball center only candies can be enrobed in the very best chocolate. You can do it yourself in the same way you make chocolate covered nuts. Just melt some chocolate and dip. I use two forks to make it easy. Dry them on a parchment lined baking sheet.

Malted milk balls are chocolate-coated candies often sold in milk carton packaging to promote their association with flavored milk and malted milkshakes.

The flavor of malted milk balls is often described as nutty or distinctively hearty, much like a grain cereal. The reason for this unusual flavor is the use of a grain treatment known as malting. Barley grains are allowed to germinate after harvest, which changes the sugar composition of the grain, in the same sense that germinated corn becomes more suitable for distillation. The malted barley grain is carefully dried and ground into a powder for confectionery use.

Want a fabulous use for Malted Milk Balls? Well, besides eating them at the movies? Sunset Magazine had a great recipe a few years ago for Malted Milk Ball Ice Cream Pie. I definitely love using candy in pies and cakes. This ice cream pie has crunchy malted milk balls on the bottom, malt ice cream above it, and a layer of dark chocolate frosting. Add some whipped cream and sprinkle with chopped and whole malted milk balls when you serve, and you're good to go.

MALTED MILK BALL CHOCOLATE ICE CREAM PIE

Ingredients
3 1/2 cups malted milk balls, divided
Cookie Crust, using chocolate wafers and a 9-in. cheesecake pan with removable sides (I've posted this recipe before)
1 3/4 quarts vanilla ice cream, softened
3 Tbsp Dutch-process cocoa powder
1 1/2 cups malted milk powder (Malted milk powder is made from milk, barley malt, and wheat; don't confuse it with Ovaltine, which has other ingredients added. Find it next to the chocolate milk powder in well-stocked grocery stores or online)
1 cup whipping cream, divided
6 ounces semisweet chocolate, chopped

Preparation
Arrange a tight layer of malted milk balls (3 cups) over crust. Stir ice cream with cocoa powder and malted milk powder until smooth. Spoon into crust, set on plate, and freeze 5 hours.
Heat 1/2 cup cream meanwhile until simmering. Put chocolate in small metal bowl, pour in cream, and let sit until chocolate is melted, about 2 minutes. Stir until smooth. Let cool completely.
Smooth chocolate ganache over top of pie and freeze until set, about 15 minutes.
  
To serve:
Whip remaining 1/2 cup cream and swirl onto pie. Chop some malted milk balls and drop onto pie; add a few whole balls. Remove rim and serve immediately.
 
Tips: 
Let the pie soften for 5 minutes at room temp to make slicing easier.
If you're having trouble free-ing your pie from its pan, set it over bowl of hot water for a couple of minutes and then slide a thin knife between pan edge and crust. It should pop right out.

ROCKY ROAD ICE CREAM PIE: National Rocky Road Ice Cream Day!


Happy Rocky Road Ice Cream Day! For today's holiday, I'm posting a recipe for a delicious Rocky Road Ice Cream Pie. It's a great way to cool off. 

Rocky Road Ice Cream was 'invented' in Oakland,  California. One story goes that the Rocky Road ice cream flavor was created in March 1929 by William Dreyer in Oakland, CA. He cut up walnuts and marshmallows with his wife's sewing scissors and added them to his chocolate ice cream that reflected his partner Joseph Edy's chocolate candy that used walnuts and marshmallow pieces. Later the walnuts were replaced by toasted almonds. Another story is that Fenton's Creamery in Oakland claims is that William Dreyer based his recipe on a Rocky-Road style ice cream flavor invented by his friend, Fentons' George Farren, who blended his own Rocky Road-style candy bar into ice cream. So however it came into existence, have a scoop of Rocky Road Ice Cream today... or make a Rocky Road Ice Cream Pie!

ROCKY ROAD ICE CREAM PIE

Ingredients
2 cups vanilla fudge swirl ice cream, softened
2 cups chocolate ice cream, softened
2/3 cup miniature marshmallows
3/4 cup semi-sweet chocolate, chopped and divided
1/2 cup toasted almonds, chopped (or lightly salted peanuts)
*Chocolate Pie Crust (see recipe below) Prepare first**

Directions
In large bowl stir together ice cream, marshmallows, 1/2 cup chopped chocolate, and toasted almonds or peanuts. Spoon into crust. Sprinkle with remaining 1/4 cup chopped chocolate.
Cover and freeze at least 2 hours or until firm.
Let stand at room temperature for 10 minutes before cutting.

*Chocolate Pie Crust
(good for lots of pies)
2 cups chocolate wafers (in a pinch use Oreos)
6 Tbsp butter

Directions
Melt butter.
Put chocolate wafers in plastic bag. Close bag and crush with spoon or rolling pin until you have tiny pea-sized chocolate bits. Or just whirl the cookies in a blender.
Combine melted butter with chocolate bits.
Press ingredients into 9-inch buttered pie pan. Be sure and go up the sides.
Bake 10 minutes at 325°F.
Cool completely before adding ice-cream.

How easy is this? O.K. even easier: Soften a gallon of Rocky Road Ice Cream and add to your Chocolate Pie Crust. Refreeze for two hours.

OREO BLIZZARD: Copycat Dairy Queen Recipe

Wow! A Blizzard is hitting the East Coast today. Sending positive thoughts to all my friends and anyone else who needs them to get through this crazy storm! Since I'm all about chocolate, it got me thinking about "Oreo Blizzards." You know, the famous Dairy Queen sundae! Here's a simple copy cat recipe for the Oreo Blizzard with ingredients you probably already have. You'll love it. As always, use the very best ingredients. Hope you stay warm while you make this frozen dessert.

OREO BLIZZARD

Ingredients
4 cups vanilla ice cream 
8 Oreo Cookies, double stuffed, broken into chunks (it's ok to use regular Oreos) 
8 mini Oreo Cookies (topping) --but if you only have regular, chop them up into tiny pieces.

Directions
Put frozen vanilla ice cream that you've put into a mixing bowl. Let it sit for 1-2 minutes to soften slightly, but not melt. 
Beat the ice cream: Using a hand mixer, beat the ice cream on medium speed until it becomes creamy but remains very thick (about 1-2 minutes). Avoid overmixing, (You don't want this to be too thin). 
Fold in the Oreo chunks: Addbroken Oreo chunks to the bowl. Use a spatula to gently fold them into the ice cream until evenly distributed. Be careful not to overmix to keep the chunks intact. 
Spoon into 2 serving cups. Top each with mini Oreos or chopped Oreos.

PEPPERMINT STICK ICE CREAM PIE: Perfect Christmas Dessert

When I was little, we went on long turnpike rides to visit family during the holidays. On the way, we always stopped at Howard Johnson's, the roadside retreat, and my treat was Peppermint Stick Ice Cream. It didn't matter what the weather was like outside, that Peppermint Ice Cream was delicious -- rich and creamy, filled with lots of crunchy peppermint pieces. It was served in simple cones then, but this recipe for Peppermint Stick Ice Cream Pie takes it one step further. This is a great last minute dessert when you have unexpected company during the holidays--or plan on it!

Even though it's freezing and wet outside, this shouldn't keep you from making this simple delicious Peppermint Ice Cream Pie. As a matter of fact, now's the time to make this when the Limited Edition flavors hit the frozen dairy case. Dreyer's Ice Cream (Edy's in the Midwest and on the East Coast) has a very good Peppermint Ice Cream. Fenton's, a local favorite, has terrific Peppermint Ice Cream, too. Of course, you can use any Peppermint Ice Cream you like! You can even make your own! Tip: Be sure and put the pie crust in the freezer rather than refrigerator for an hour before filling, so it doesn't get soggy.

Peppermint Ice Cream Pie

Peppermint Oreo Pie Crust

Ingredients
2 1/4 cups of crushed Trader Joe's Candy Cane Joe Joes (oreo-like with peppermint filling), finely crushed (whirl in a blender or put in plastic bag and use rolling pin)
2 1/2 ounces of melted unsalted butter

Directions
Combine cookie crumbs with melted butter in a bowl.
Pour mixture into 9 inch pie pan and press into the bottom and up the sides evenly.
Smooth surface with the back of a spoon.
Freeze pie crust for at least an hour.

Filling:
1 carton (1.5 quarts) Peppermint Ice Cream  (leave out for 10-15 minutes to soften
(or make your own: See below.)
2 candy canes, crushed

Directions:
Spread softened ice cream evenly on frozen crust.
Sprinkle with crushed candy canes.
Freeze for several hours until firm.
Cut into wedges to serve.

NO CHURN PEPPERMINT STICK ICE CREAM

Ingredients
2 cups heavy cream 
1/2 tsp peppermint extract 
Crushed candy canes
1/2 cup sugar 

Directions
Put cream, extract, and sugar in blender.  
Blend on high until smooth and creamy.
Fold in crushed candy canes.
Pour in freezer safe container. Freeze for 4-6 hours.

COFFEE ICE CREAM PIE: National Ice Cream Pie Day!


Warm where you are today? Here's an easy (20 minutes to make - and then freeze) no-bake recipe that has a great chocolate cookie crust that includes coconut and chopped nuts along with the chocolate wafers. This recipe is adapted  slightly from Pillsbury. As I've mentioned many times, the big 'food product' sites often have fabulous recipes. You can adapt and update as you like, and they're a springboard for ideas, so be sure and check them out!


COFFEE ICE CREAM PIE

Ingredients
30 chocolate wafers, crushed (about 1-1/2 cups)
1/2 cup butter, softened
1/4 cup coconut  (I like toasted coconut)
3 Tbsp finely chopped macadamia nuts (or cashews)

Filling 
1 quart coffee ice cream, slightly softened

Topping 
1 cup hot fudge sauce, warmed
Whole macadamia nuts (or cashews), if desired

Directions
In medium bowl, mix crushed chocolate wafers, butter, coconut, and finely chopped macadamia nuts.
Press mixture in bottom and side of 9-inch glass pie plate; refrigerate 15 minutes.
Carefully spoon softened ice cream into chilled crust.
Cover and freeze about 2 hours or until firm.
Top individual servings with fudge sauce, chopped macadamia nuts, and chopped chocolate covered coffee beans.
Cover and freeze any remaining pie.

To make cutting the pie easier, remove it from the freezer about 10 to 15 minutes before serving.

SPUMONI DAY: Spumoni Ice Cream Cake

Today is National Spumoni Day! Spumoni, not to be confused with zamboni, is a multicolored Italian ice cream. When I was growing up, it was usually a flavorless ice cream served in Italian restaurants at the end of a meal. It wasn't until I visited Italian friends that I tasted really good Spumoni.

By definition, Spumoni is a special Italian dessert made of layers of ice cream, whipped cream, candied fruit, and nuts. Each layer contains different flavors and ingredients. In traditional dessert kitchens, spumoni is often made of three layers of flavor: chocolate, pistachio, and cherry. Each layer of Spumoni ice cream may include more than flavored ice cream. The chocolate layer, for example, may include chocolate shavings or chunks. Sometimes the chocolate layer has crushed hazelnuts inside. Not only does the hazelnut add a lovely flavor to the chocolate, but it also compliments the pistachio layer. The pistachio layer, of course, almost always includes crushed pistachio nuts. Finally, the fruit layer of spumoni is usually made with candied fruit. The cherry layer is the most traditional fruit component to the dessert.
 
Not surprisingly Ben & Jerry's has a recipe for Spumoni Ice Cream Cake. It's so easy and delicious. I've added cherries and hazelnuts.

SPUMONI ICE CREAM CAKE

Ingredients
1 pint Ben & Jerry’s Cherry Garcia
1 pint Ben & Jerry’s Pistachio Pistachio
1 pint Ben & Jerry’s Chocolate Fudge Brownie
4 large brownies (homemade or store bought)

Toppings: Chocolate *Ganache
1 cup (8 oz) chocolate chips and 1 cup heavy cream
Cookie Crumbs – 4 chocolate sandwich cookies, crushed
Maraschino Cherries
Chopped Hazelnuts

Directions
In a silicone or metal baking pan/pie plate place a layer of brownies and push down firmly to make a thin layer of crust. Soften 1 pint of ice cream so it is soft enough to spread. Spread over crust and place in the freezer for 10-15 minutes, or until it's firm.
While that’s in the freezer, pull out another pint of ice cream to soften. Repeat step 2 for the remaining flavors until you have all three layers spread in the pan. Add either cookie crumbs or ganache as a topping, and return the cake to the freezer for at least 15 minutes.
Remove cake from freezer and cut into individual slices to serve. You may need to remove the cake and let it soften before slicing if left in the freezer for 30 minutes or longer. Add chopped hazelnuts and maraschino cherries.

*Chocolate Ganache: Place heat proof (glass or stainless steel) bowl over boiling water. Add 1 cup of cream to heat the cream to a low boil and remove from heat. Slowly add cream to chocolate pieces. Let the ganache cool, but while it’s still liquid use a spoon to drizzle the ganache over the cake. Top with Maraschino Cherries.

Cherry Garcia Ice Cream Pie with Chocolate-Coconut Crust: ICE CREAM PIE DAY

Today is National Ice Cream Pie Day, and the following no-bake recipe is great to make today since it's a real scorcher out there! I love this retro 1953 Baker's Ad with recipe. "It's a dream with cherry vanilla ice cream!" Today I make this ice cream pie with Ben & Jerry's Cherry Garcia -- love the extra chocolate chunks! This ice cream pie is also good with Chunky Monkey.. bananas, coconut and chocolate.. what could be bad?

CHIPWICH: Ice Cream Sandwich Day

August 2 is National Ice Cream Sandwich Day. There's something about an ice cream sandwich that always appeals to me. I think it's because the ice-cream is 'contained'. I'm not big on gooey hands. Tomorrow is National Chocolate Chip Day, so I decided to combine the two holidays with a post on the Chipwich--the Original Chocolate Chip Cookie Ice Cream Sandwich. Here's the history of the Chipwich, along with a recipe to make the Chipwich at home. Sadly, the Chipwich after being sold to various companies and taken off the market in 2011. But here's a blast from the past that you can create in your own kitchen.

The Chipwich was 'invented' by Richard LaMotta who turned his childhood passion for dunking cookies in milk into the Chipwich — two chocolate chip cookies embracing a chunk of vanilla ice cream dotted with chocolate chips. On May 1, 1982, Mr. LaMotta dispatched 60 street-cart vendors, each wearing pith helmets and khakis, to the streets of Manhattan to begin selling his 4 1/2-ounce concoction (including 3 1/2 ounces of ice cream) for what at the time was a pricey $1 each. A few hours later, all 25,000 Chipwiches had been gobbled — the start of something big. Within two weeks, Mr. LaMotta was selling 40,000 a day, and by the middle of that summer, the Chipwich plants in Queens, N.Y., and Lodi, N.J., were turning out 200,000 a day. Alas, as I mentioned above, the Chipwich is no more, but you make your own Chipwich at home!


Chocolate Chip Ice Cream Sandwich

Ingredients
Chocolate Chip Cookies I use the big Pepperidge Farm Chocolate Chip Cookies (or make your own)
Vanilla Ice Cream whichever you prefer (softened)
Mini-chocolate chips I use Guittard Semisweet Chocolate Mini Chips

Directions
Soften ice cream for 10 minutes before making sandwiches.
Place scoop of ice cream on flat side of 1 cookie.
Place second cookie flat side down and carefully press together until ice cream reaches edge of cookies.
Roll edges in Mini-Chocolate Chips.
Freeze for 15 minutes and serve.

Lots of variations, of course, but this recipe is pretty close to the original Chipwich.

THE DIFFERENCE BETWEEN VANILLA & FRENCH VANILLA ICE CREAM: National Vanilla Ice Cream Day

Today is Vanilla Ice Cream Day. I often serve vanilla ice cream with brownies and chocolate cake, and I often wondered "What's the Difference between Vanilla Ice Cream and French Vanilla Ice Cream?"

French Vanilla Ice Cream is a different color than Vanilla Ice Cream, and that's due to the process rather than the vanilla bean varieties, named for where they’re grown, like Madagascar, Tahiti, and Mexico. French Vanilla refers not to a vanilla variety but to the classic French way of making ice cream using an egg-custard base. The eggs give French Vanilla ice cream a smoother consistency and subtle yellow color. I definitely think that French vanilla ice cream is richer.

Vanilla Ice Cream that is made with just milk and cream, without eggs, is called Philadelphia-style vanilla ice-cream. Having grown up in Philadelphia, this was news to me.

The French Connection: Actually French Vanilla ice cream dates back to colonial times. Both Thomas Jefferson and George Washington used ice cream recipes that include egg yolks. Jefferson's family's ice cream recipe which calls for six egg yolks per quart of cream may have originated with his French butler.

Thomas Jefferson's Vanilla Ice Cream Recipe

Ingredients:
2 Bottles of Good Cream
6 Yolks of eggs
1/2 pound sugar
Stick of Vanilla

Directions
Mix the yolks and sugar put the cream on a fire in a casserole, first putting in a stick of vanilla.

When near boiling, take it off and pour it gently into the mixture of eggs and sugar. Stir it well.

Put it on the fire again, stirring it thoroughly with a spoon to prevent it from sticking to the casserole.

When near boiling, take it off and strain it through a towel. Put it in the Sabottiere [the inner canister in an ice bucket], then set it in ice an hour before it is to be served.

Put into the ice a handful of salt, put salt on the coverlid of the Sabotiere, and cover the whole [thing] with ice. Leave it still half a quarter of an hour. Then turn the Sabottiere in the ice [for] 10 minutes.

Open it ... with a spatula [and remove] the ice from the inner sides of the Sabotiere.

Shut it and replace it in the ice. Open it from time to time to detach the ice from the sides.

When well taken, stir it well with the spatula.

Put it in moulds, justling it well down on the knee. Then put the mould into the same bucket of ice. Leave it there to the moment of serving it.

To withdraw it, immerse the mould in warm water, turning it well [until] it will come out and turn it into a plate.
