BLUE CHEESE CHEESECAKE WITH CHOCOLATE COOKIE CRUST: Moldy Cheese Day

Today is Moldy Cheese Day! Blue Cheese is about as moldy as I care to get, so to celebrate today's food holiday and fit it into the "Chocolate" theme of this blog, here's a recipe for Blue Cheese Cheesecake with a Chocolate Cookie Crust. It's really delicious!

Chocolate and Blue Cheese go well together. I've made Blue Cheese Truffles on numerous occasions, and I love them. If this is your first foray into the combination, choose a mild creamy blue cheese. If you're not sure, ask your cheese specialist.

BLUE CHEESE CHEESECAKE WITH CHOCOLATE COOKIE CRUST

Chocolate Cookie Crust

Ingredients
30 chocolate wafers 
5 Tbsp unsalted butter, melted and slightly cooled
1/8 tsp salt
1/2 tsp pure vanilla extract

Directions
Process cookies in food processor until finely ground.
Transfer crumbs to mixing bowl & combine crumbs, butter, salt, and vanilla. Stir until crumbs are moistened.
Press mixture evenly across bottom of 9-inch springform pan and up sides of pan. Pack tightly so crust is even.
Bake in 350° oven for 6-8 minutes or until crisp.
Let cool completely before filling. You can put it in the refrigerator while you make the filling.

For the Cheesecake

Ingredients
1 pound cream cheese, room temperature
10 ounces Blue Cheese, room temperature (I've used Humboldt Fog)
3 eggs, room temperature
1/4 cup sour cream
2 Tbsp honey
Pinch kosher salt
Pinch cracked black pepper

Directions
In large bowl, beat cream cheese until smooth. Add blue cheese; beat until creamy. Add eggs one at a time, beating after each addition. Scrape bowl. Add sour cream, honey, salt, and pepper. Beat until combined.
Pour into cooled prepared Chocolate Cookie Crust. Bake 40 to 45 minutes in a 325° oven or until set and knife inserted near center comes out clean. Cool to room temperature in pan.

NATIONAL PI DAY & St. Patrick's Day: GUINNESS CHOCOLATE SILK PIE

For the Love of Pi(e)! Today is National Pi(e) Day. In order to celebrate and keeping in mind that St. Patrick's Day is just around the corner, I've gone back into my archives for a favorite Chocolate Pie Recipe: Guinness Chocolate Silk Pie. I can't think of a better pie to celebrate both holidays! You can use any stout, of course, but Guinness is easily available! I make a chocolate cookie crust, but you can use a graham cracker crust or a vanilla wafer crust. I think the stout brings out the chocolate.

GUINNESS CHOCOLATE SILK PIE

Chocolate Cookie Crust

Ingredients
30 chocolate wafers (Nabisco Famous Chocolate Wafers)
5 Tbsp unsalted butter, melted and slightly cooled
Dash of Salt
1/2 tsp pure vanilla extract

Directions
Whirl cookies in food processor until finely ground.
Put crumbs in mixing bowl; combine crumbs, butter, salt, and vanilla; stir until crumbs are moistened.
Press mixture evenly across bottom of 9-inch pie plate and up sides of pan; pack tightly so crust is even and compacted.
Bake in 350° oven for 6 minutes until crisp.
Cool before filling.

Filling:
12 ounces dark chocolate (65-75% cacao), chopped
24 large marshmallows
Pinch of salt
2/3 cups Guinness
1/3 cup evaporated milk
1 tsp vanilla
1 Tbsp creme de cacao or Kahlua

Directions
Preheat oven to 350 F.
Make crust (see above)

Place chocolate, marshmallows, and salt in blender or food processor. Blend until well mixed and chocolate is finely ground.
In two separate pans, heat Guinness and evaporated milk until very hot, but not boiling.
Slowly pour hot Guinness over marshmallows and chocolate in blender. Add hot cream. Cover and blend for one minute.
Add vanilla and creme de cacao or Kahlua. Blend for one minute.
Pour into cooled crust and refrigerate for several hours or overnight.

Top with Whipped Cream or Guinness Ice Cream

DEEP SOUTH PEANUT PIE: Retro New Year's Ad with Recipe

O.K. this is a very creepy Retro 1940s Karo Syrup Advertisement, but since it features the Karo Kid as a New Year's baby, I thought I'd post it. I love Peanut Pies. Add a Chocolate Cookie Crust, and I'm in heaven. Peanuts and Chocolate -- great way to start the New Year.


DEEP SOUTH PEANUT PIE

Ingredients
2 eggs beaten
1 cup Karo Syrup, Blue Label (dark syrup)
1/8 tsp salt
1 tsp vanilla
1 cup sugar
2 Tbsp melted butter
1 cup shelled, roasted peanuts

Directions
Roll pastry 1/8-inch thick. Line 9-inch pie pan. Mix remaining ingredients together, adding peanuts last. Pour into pastry shell. Bake in hot oven (400˚F) 40 minutes or until a silver knife inserted in center of filling comes out clean.

To make Peanut Tarts:
Follow above recipe for De Luxe Peanut Pie using 1 recipe pastry. Line 6 to 8 individual tart shells. Pour in filling. Bake in hot oven (400˚F) 20 to 25 minutes.

CHOCOLATE CHIP PUMPKIN CHEESECAKE: National Pumpkin Cheesecake Day!

Today is National Pumpkin Cheesecake Day: Add Chocolate...I love pumpkin and chocolate... and cheesecake is my thing, so here's a repost of an easy recipe for Pumpkin Chocolate Cheesecake! Celebrate.  

Great for Pumpkin Cheesecake Day, Halloween, and Thanksgiving!

The filling for this pumpkin cheesecake is adapted from a recipe from Hershey's Kitchens. I like this recipe because it has a Chocolate Cookie Crust and Mini-Chocolate Chips in the filling! I've posted the Hershey's chocolate crust recipe, but I also posted another simple Chocolate Cookie Crust using Chocolate Wafers. The second is my favorite.

CHOCOLATE CHIP PUMPKIN CHEESECAKE BAKED IN A CHOCOLATE COOKIE CRUST

Ingredients

1 Chocolate Cookie Crust (see two possible recipes below)
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice
1 cup canned pumpkin (without spice)
4 eggs
1-1/2 cups Mini Semi-Sweet Chocolate Chips

Directions

Prepare Chocolate Cookie Crust. Bake at 400°F. Cool.
Beat cream cheese, sugar, flour, and pumpkin pie spice in large bowl until well blended. Add pumpkin and eggs; beat until well blended. Stir in mini-chocolate chips; pour batter into prepared crust. Bake 10 minutes.
Reduce oven temperature to 250°F; continue baking 60 minutes or until almost set. Remove from oven to wire rack. With knife, loosen cake from side of pan.
Cool completely; remove side of pan. Refrigerate about 5 hours before serving.

I. CHOCOLATE COOKIE CRUST

Stir together 1 cup vanilla wafer crumbs (about 30 wafers)
1/4 cup HERSHEY'S Cocoa
1/4 cup powdered sugar
1/4 cup melted butter.

Press mixture firmly onto bottom and 1/2-inch up side of 9-inch springform pan.
Bake  at 350 F for 8 minutes; cool slightly.

II. CHOCOLATE COOKIE CRUST

30 chocolate wafers (Nabisco Famous Chocolate Wafers makes about 1 1/2 cups crumbs)
5 Tbsp unsalted butter, melted and slightly cooled
1/8 tsp salt
1/2 tsp vanilla extract

Put cookies in container of food processor; process until finely ground.
Transfer crumbs to mixing bowl; combine crumbs, butter, salt, and vanilla; stir until crumbs are moistened.
Press mixture evenly across the bottom of 9-inch springform pan and all the way up sides of pan; pack tightly so crust is even and compacted.
Bake at 350° for 6-8 minutes or until crisp.
Let cool completely before filling.

CRUSHED PEPPERMINT CHEESECAKE for the Holidays!

I love cheesecake, and it's perfect for the holidays! I've made this Sunset recipe for Crushed Peppermint Cheesecake for years. Cheesecake is one of my favorite foods, and I have several spring pans. Just bought another one at an estate sale that's the best! 

This recipe is quite versatile, and you can always leave off the peppermint extract and candy for a perfect cheesecake. I love peppermint and chocolate, so making a chocolate peppermint cookie crust is awesome, especially during the holidays, and when you add butter, cream cheese, and sour cream... well what's not to like? This is a wonderful holiday dessert!

CRUSHED PEPPERMINT CHEESECAKE

Ingredients
12 ounces creme-filled chocolate sandwich cookies, (Oreos or Trader Joe's Candy Cane Joe Joes) broken into pieces
3 Tbsp unsalted butter, melted
1- 1/2 pounds cream cheese, room temperature
3/4 cup sugar
1/3 cup sour cream
4 eggs
2 Tbsp all-purpose flour
1 tsp vanilla
1/2 tsp peppermint extract
1/2 tsp salt
1/3 cup coarsely crushed peppermint candy

Directions
Place cookies in heavy zip-lock plastic bag and crush with rolling pin. Pour into buttered 9-inch round springform pan and pour melted butter over crumbs; mix to coat, then press evenly over bottom and about 1/2 inch up sides of pan. Bake in 300° oven until crust is slightly darker and looks a bit dry, about 10 minutes (leave oven on).

Meanwhile, in bowl, with mixer on medium speed, beat cream cheese and sugar until well blended. Beat in sour cream. Add eggs one at a time, beating to blend after each addition. Beat in flour, vanilla, peppermint extract, and salt until smooth. Pour cream cheese mixture into pan over baked crust.

Bake until edges are just golden and center jiggles slightly when pan is gently shaken, about 1 hour. Run knife around edge of pan rim. Place pan on wire rack and cool cheesecake completely in pan. Cover and chill until cold, at least 4 hours or up to 2 days. Run knife around rim again, then release rim. If any liquid has pooled on surface of cheesecake, blot dry gently with paper towel.

Decorate top of cake with crushed peppermint candy, pressing it in gently with hands.

STRAWBERRIES & CREAM ICE CREAM PIE: National Stawberries & Cream Day

Today is Strawberries & Cream Day! One way to celebrate would be to stuff strawberries with whipped cream and dip in chocolate. Yum! But here's another way to celebrate the day -- Strawberries & Cream Ice Cream Pie with Chocolate Crust. This would be perfect for the upcoming Memorial Day dessert.

Strawberries & Cream Ice Cream Pie with Chocolate Cookie Crust

Ingredients
1 Chocolate Cookie Crust
3 cups Strawberry ice cream or Ben & Jerry's Strawberries & Cream ice cream, softened

Whipped Cream
1 cup Sliced fresh Strawberries

Chocolate Cookie Crust
Ingredients
30 Chocolate wafers
5 Tbsp unsalted butter, melted and cooled slightly
Pinch of salt

Directions for Cookie Crust
Whirl cookies in food processor until finely ground.
Put crumbs in mixing bowl and add butter and salt until crumbs are moistened.
Press mixture across bottom of 8-inch pie plate and up sides. Pack tightly.
Bake in 350 degree oven for 6 minutes.
Cool before filling.

Directions for Pie
Be sure and cool crust before adding ice cream
Spread ice cream evenly over crust.
Smooth top.
Put pie in freezer until solid (or until ready to serve - for up to 3 days)
Before serving, top with whipped cream and fresh sliced strawberries.

NO BAKE CHOCOLATE MOUSSE PIE: National Mousse Day!

Today is National Mousse Day. Of course for me that means chocolate mousse. Chocolate Mousse is easy to make and simple to enjoy! I came across this recipe for No Bake Chocolate Mousse Pie a few years ago. What a great way to enhance chocolate mousse -- add more chocolate! The cookie crust made with Italian wafer sandwich cookies is fab and adds some zip, but you can also make a regular chocolate cookie crust if you don't have any Italian sandwich cookies! You can also make an oreo cookie crust. This recipe is adapted from Fine Cooking, a great resource for recipes.

NO BAKE CHOCOLATE MOUSSE PIE

Ingredients
1 ounce unsalted butter, melted; more for the pan
8 ounces Italian chocolate wafer sandwich cookies (Quadratini) (if you don't have these you can use Famous Chocolate Wafers or Oreos)
9 ounces semisweet chocolate, chopped (about 1-1/2 cups); more for garnish
1-1/2 tsp pure vanilla extract
Pinch kosher salt
3-3/4 cups heavy cream

Directions
Butter 9-inch springform pan.
Grind cookies in food processor until they resemble wet sand, 20 to 30 seconds; you will have about 1-3/4 cups. Transfer to small bowl and mix in butter. Spread crumbs in pan, cover with plastic wrap, and press evenly into bottom. Refrigerate.

Combine chocolate, 1/2 tsp of vanilla, and salt in large bowl. In small saucepan, bring 3/4 cup of cream to barely a simmer. Pour cream over chocolate, let sit for 1 minute, then whisk until smooth. Cover and refrigerate for about 30 minutes to cool.

Beat 1-1/2 cups of cream in medium bowl with electric mixer on medium-high speed to stiff peaks, about 2 minutes. Whisk chocolate mixture to loosen, and fold into whipped cream with large silicone spatula until no streaks remain.

Carefully peel plastic wrap off crust and scrape mousse into pan, gently spreading to edges. Cover and refrigerate for at least 6 hours.

Just before serving, beat remaining 1-1/2 cups cream and 1 tsp vanilla in medium bowl to medium-stiff peaks. Run knife around pie to loosen edges and then remove side of pan. Slide spatula under crust and transfer pie to serving plate. Mound whipped cream over mousse and top with chocolate curls, shards, or shavings. To serve, dip knife into hot water and dry before slicing.

PUMPKIN CHEESECAKE BAKED IN A CHOCOLATE COOKIE CRUST: National Pumpkin Cheesecake Day

PEACH PIE WITH CHOCOLATE CRUST: National Peach Pie Day

The other day was National Eat a Peach Day, this month is Peach Month, and today is National Peach Pie Day. Lucky for me there are so many varieties of fresh peaches at the Farmers Market.

So today in honor of the holiday (s), I'm making a Chocolate Peach Pie. I've found that adding chocolate to the peach filling is way too sweet and gooey, so I'm keeping it simple. The chocolate in the following recipe is a traditional chocolate cookie crust made with chocolate wafers. The peach filling is also simple, but feel free to substitute your favorite peach pie filling.

This peach pie is best served chilled, but there are plenty of other recipes out there for a warm peach pie, if you prefer.

PEACH PIE WITH CHOCOLATE CRUST

CHOCOLATE CRUST

Ingredients
2 cups chocolate wafers
6 Tbsp unsalted butter (or salted if you're inclined)

Directions
Melt butter.
Put chocolate wafers in plastic bag and crush with spoon or rolling pin. Should be pea-size.
Combine melted butter and ground chocolate wafers.
Press ingredients into 9 inch buttered pie pan--bottom and up the sides.
Bake for 10 minutes at 325. Let cool.

FRESH PEACH FILLING

Ingredients
1 cup sugar
3 Tbsp cornstarch
Peeled Fresh Peach halves (pitted)
1/2 pint heavy cream

Directions
Mix sugar and cornstarch.
Cover inside of chocolate cookie crust with 3/4 of mixture. Go out to sides.
Arrange peeled peach halves around outside edge (insides of peaches up).
Fill in with other peaches until full.
Sprinkle rest of mixture over peaches.
Put cream inside each peach center.
Bake at 325 for about 30-40 minutes.
Chill and serve.

FOURTH OF JULY STRAWBERRY PIE

For me, Fourth of July is all about Strawberries and Whipped Cream. Here's an easy Fourth of July Strawberry Pie, but of course I want chocolate with that, so I'm making a Chocolate Cookie Crust. Add blueberries to the whipped cream topping, and you'll have stars!

FOURTH OF JULY STRAWBERRY PIE

Chocolate Cookie Crust

25-30 chocolate cookie wafers (I use Nabisco Famous Chocolate Wafers), 4 Tbsp unsalted butter, melted and cooled. Heat oven to 350°F.  Whirl cookies in food processor until crumbs are fine. Put in medium bowl, add melted butter, and mix until combined. Press crumb mixture into a 9-inch pie plate evenly and firmly on bottom and up sides. Bake at 350 for 10 to 15 minutes. Cool (on wire rack) before filling.

Filling & Topping

Mash 2 cups of strawberries (chunky not macerated) (put aside a cup of sliced strawberries). Place strawberries in small saucepan. Add sugar (to taste-depends on strawberries-about 1/4-1/2 cup), 1/4 cup cornstarch, dash of salt, 1 tsp vanilla or 1 Tbsp  lemon juice (or both). Bring to simmer until thickened. Cool completely. Add rest of strawberries (cut up or sliced) and put in baked cooled Chocolate Cookie Crust. Put in fridge for 2 hours to set. Top with whipped cream, big whole strawberries, and blueberries!

BAILEY'S IRISH CREAM CHOCOLATE CHEESECAKE: St. Patrick's Day

Here's a great recipe for St. Patrick's Day: Bailey's Irish Cream Chocolate Cheesecake Easy to make and decidedly Irish. Be sure and check out the Bailey's Irish Cream Whipped Cream recipe at the end. It's great on this cheesecake and in your coffee on St Patrick's Day!

Bailey's Irish Cream Chocolate Cheesecake
(recipe adapted from AllRecipes)

Ingredients
1 1/2 cups chocolate cookie crumbs (whirl them in a food processor)
1/3 cup confectioners' sugar
1/3 cup unsweetened Ghirardelli or Scharffen Berger cocoa powder
1/4 cup unsalted butter (I used Kerrygold)
3 (8 ounce) packages cream cheese, softened
1 1/4 cups white sugar
1/4 cup unsweetened Ghirardelli or Scharffen Berger Cocoa powder
3 Tbsp all-purpose flour
3 eggs
1/2 cup sour cream
1/4 cup Bailey's Irish Cream

Directions
Crust:
Preheat oven to 350 degrees. In large bowl, mix together cookie crumbs, confectioners' sugar, and 1/3 cup cocoa. Add melted butter and stir until well mixed. Pat into bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450 degrees F.

Cheesecake:
In large bowl, combine cream cheese, white sugar, 1/4 cup cocoa, and flour. Beat at medium speed until well blended and smooth. Add eggs one at time, mixing well after each addition. Blend in sour cream and Bailey's; mixing on low speed. Pour filling over baked crust.
Bake at 450 for 10 minutes. Reduce oven temperature to 250 degrees F, and continue baking for 60 minutes.
With knife, loosen cake from rim of pan. Let cool, then remove rim of pan. Chill before serving.

Tip: If your cake cracks, dampen spatula and smooth top, then sprinkle with some chocolate wafer crumbs.

You can also top this Cheesecake with Bailey's Whipped Cream (or make some and add to your coffee!)

Bailey's Whipped Cream

Ingredients
1/2 cup heavy cream
1 Tbsp Baileys Irish Cream

Directions
Whip heavy cream to soft peaks.
Add Baileys Irish Cream and whisk until combined.

KEY LIME PIE DAY: Key Lime Pie with Chocolate Graham Cracker Crust

Key Lime Pie is one of my favorite pies. There seem to be several different Key Lime Pie Days (September 23, 26, and June 15). You pick... or have this easy delicious pie whenever you want. I'm going with September 26 for the purposes of this blog!

Several years ago when I visited the Florida Keys, I tasted over 25 different key lime pies. I judged them (for myself) on tartness, firmness, sweetness (too sweet is unacceptable), whipped cream vs. meringue, and more. It was a hard job, but someone had to do it. FYI: Key Lime Pie is the official pie of the Florida Keys.

I've made different variations of key lime pies, and, as I always say, you can never have too many recipes. Variety is what it's all about. One ingredient that is essential is using real key limes.

I buy key limes at my market. Key Limes are definitely different from 'regular' limes. Key limes are smaller, about the size of a ping-pong ball. They are round, think-skinned, and contain very few seeds. They're juicier than other limes, too. Green key limes are actually immature fruits. They ripen to yellow as they mature. I buy them green, probably because that's they way they sell them in my market. Just an FYI: bottled Key Lime juice is sometimes used in Key Lime Pies. This juice is not always made from key limes. Find fresh key limes, if you can. It will make a huge difference.

Key limes are also known as Mexican limes and West Indies limes. Cultivated for thousands of years in the Indo-Malayan region, this variety made its way to North Africa and the Near East via Arabian traders, and then carried on to Palestine and Mediterranean Europe by the Crusaders. Columbus is credited with bringing the Key lime to Hispaniola (Haiti), where it was carried on by Spanish settlers to Florida. Key Limes are found in in South Florida, particularly the Florida Keys, hence the current common name of Key Lime. Due to hurricane-depleted soils, locals switched from pineapple commercial crops to limes in 1906, and business boomed until a hurricane once again reared and wiped out the lime groves, never to be restored. Sadly, even if they had been, they would be gone again after Hurricane Irma. Most Key limes now come from Mexico.

And FYI: Key Lime Pies are yellow..not green (unless you add food coloring--ugh!).  And, some people top Key Lime Pie with Meringue.. some with whipped cream!

Key Lime Pie with Chocolate Graham Cracker Crust

Ingredients

Crust
1 1/2 cups crushed chocolate graham crackers
3 Tbsp sugar
1/3 cup butter, melted
Spray pan with non stick spray.

Filling
1 can (14 ounces) sweetened condensed milk
3 egg yolks
2/3 cup fresh squeezed Key Lime juice
1 Tbsp grated Key Lime zest

Directions

Crust
Mix together crumbs and sugar in bowl, add butter, and mix well. Press into bottom and up sides of  9-inch pie pan. Make it tight.
Bake 350 F for 8 minutes.
Allow to cool on a wire rack.

Filling
Beat egg yolks and grated Key Lime zest for about 5 minutes until fluffy.
Add sweetened condensed milk and beat for 4 more minutes.
Reduce speed and beat in lime juice until combined.
Pour into prepared chocolate graham cracker crust.
Bake at 350 for 15 minutes (until firm in center)
Remove from oven and cool on wire rack.
Cover and chill for 2 hours.
Top with Whipped Cream or Meringue (whichever you prefer)

EASY COFFEE ICE CREAM PIE WITH CHOCOLATE CRUST: National Coffee Ice Cream Day

Today is Coffee Ice Cream Day and here's a perfect Easy Coffee Ice Cream Pie to celebrate. This is a 20 minute (then freeze) no bake recipe that has a great chocolate cookie crust that includes coconut and chopped nuts along with the chocolate wafers. It's a very versatile crust and would be great with key lime pie, as well as any other ice cream pie

This recipe is adapted  slightly from Pillsbury. As I've mentioned many times, the big 'food product' sites often have fabulous recipes. You can adapt and update as you like, and they're a springboard for ideas, so be sure and check them out!

COFFEE ICE CREAM PIE with CHOCOLATE CRUST

Ingredients
30 chocolate wafers, crushed (about 1-1/2 cups)
1/2 cup unsalted butter, softened
1/4 cup coconut  (I like toasted coconut)
3 Tbsp finely chopped macadamia nuts

Filling 
1 quart coffee ice cream, slightly softened

Topping 
1 cup hot fudge sauce, warmed
Whole macadamia nuts

Directions
In medium bowl, mix crushed chocolate wafers, butter, coconut, and finely chopped macadamia nuts.
Press mixture in bottom and side of 9-inch glass pie plate; refrigerate 15 minutes.
Carefully spoon softened ice cream into chilled crust.
Cover and freeze about 2 hours or until firm.
Top individual servings with fudge sauce, chopped macadamia nuts, and chopped chocolate covered coffee beans.
Cover and freeze any remaining pie.

To make cutting the pie easier, remove it from the freezer about 10 to 15 minutes before serving.

PUMPKIN CHEESECAKE BAKED IN A CHOCOLATE COOKIE CRUST: National Pumpkin Cheesecake Day

Today is National Pumpkin Cheesecake Day: Add Chocolate...I love pumpkin and chocolate... and cheesecake is my thing, so here's a repost of an easy recipe for Pumpkin Chocolate Cheesecake! Celebrate.  

Great for Halloween and Thanksgiving!

The filling for this pumpkin cheesecake is adapted from a recipe from Hershey's Kitchens. I like this recipe because it has a Chocolate Cookie Crust and Mini-Chocolate Chips in the filling! I've posted the Hershey's chocolate crust recipe, but I also posted another simple Chocolate Cookie Crust using Chocolate Wafers. The second is my favorite.

PUMPKIN CHEESECAKE WITH CHOCOLATE COOKIE CRUST

Ingredients
1 Chocolate Cookie Crust (see two possible recipes below)
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice
1 cup canned pumpkin
4 eggs
1-1/2 cups Mini Semi-Sweet Chocolate Chips

Directions
Prepare Chocolate Cookie Crust. Increase oven temperature to 400°F.
Beat cream cheese, sugar, flour, and pumpkin pie spice in large bowl until well blended. Add pumpkin and eggs; beat until well blended. Stir in mini-chocolate chips; pour batter into prepared crust. Bake 10 minutes.
Reduce oven temperature to 250°F; continue baking 60 minutes or until almost set. Remove from oven to wire rack. With knife, loosen cake from side of pan.
Cool completely; remove side of pan. Refrigerate about 5 hours before serving.

I. CHOCOLATE COOKIE CRUST

Stir together 1 cup vanilla wafer crumbs (about 30 wafers)
1/4 cup HERSHEY'S Cocoa
1/4 cup powdered sugar
1/4 cup melted butter.

Press mixture firmly onto bottom and 1/2-inch up side of 9-inch springform pan.
Bake  at 350 F for 8 minutes; cool slightly.

II. CHOCOLATE COOKIE CRUST

30 chocolate wafers (Nabisco Famous Chocolate Wafers makes about 1 1/2 cups crumbs)
5 Tbsp unsalted butter, melted and slightly cooled
1/8 tsp salt
1/2 tsp vanilla extract

Put cookies in container of food processor; process until finely ground.
Transfer crumbs to mixing bowl; combine crumbs, butter, salt, and vanilla; stir until crumbs are moistened.
Press mixture evenly across the bottom of 9-inch springform pan and all the way up sides of pan; pack tightly so crust is even and compacted.
Bake at 350° for 6-8 minutes or until crisp.
Let cool completely before filling.

All About White Chocolate & White Chocolate Cheesecake Recipe

I missed posting on White Chocolate Cheesecake Day, however it's never too late to post about White Chocolate! By definition, white chocolate is not actually chocolate. White chocolate doesn't contain any cocoa solids (chocolate liquor) and does not have 'chocolate' flavor. But I like the unique creamy flavor that good white chocolate does have--of course it depends on the brand and that varies from manufacturer to manufacturer. (see below) 

White chocolate contains cocoa butter, a product of the cocoa bean used to make chocolate. White chocolate used in baking and candy making is a blend of milk, cocoa butter, sugar and often vanilla. This is what you'll find in milk chocolate, except without the cocoa. If you are using white chocolate, make sure to buy the very best. Cheap white chocolate often has the cocoa butter replaced by vegetable fat. Check the ingredients on the package. It should have a cacao percentage just as other good chocolate bars do.

Examples of good white chocolate:

E. Guittard has 31% Cacao White Chocolate wafers. Great for baking (and eating).
Green & Black's White Chocolate uses cocoa butter, pressed directly from the crushed cocoa beans. They also use a blend of milk and Bourbon vanilla. Available in 3.5oz bars.
Divine makes an awesome White Chocolate Bar. All natural without coloring or preservatives. 
Askinosie has bean to bar white chocolate and uses goat's milk instead of cow's milk. The main ingredient in their white chocolate is 34% natural, non-deodorized cocoa butter. The cocoa butter is pressed in their factory, and they are the first small-batch chocolate maker to do this. After pressing the beans to create the cocoa butter, they combine them with goat's milk powder and organic cane juice, and then craft it for days in their 85-year old German melanguer, making their white chocolate one of the only single origin white chocolates in the world. It has a very unique buttery/nutty flavor, less sweet than many other white chocolate.
Merckens chocolate makes a great 2 pound bar, terrific for baking (or eating). Available through King Arthur Flour.

Because it's comprised mainly of cocoa butter, white chocolate can be used in so many ways. Check past posts for White Chocolate Mashed Potatoes, White Chocolate Brownies, White Chocolate Coffee Cake, White Chocolate Truffles and a host of other white chocolate candies and baked goods.

My favorite White Chocolate Recipe, though, is for White Chocolate Cheesecake! Here's an easy recipe adapted from the Betty Crocker Cookbook. I changed the original graham cracker crust to a Chocolate Cookie Crust (see below)... much better, I think, but then I like chocolate.

WHITE CHOCOLATE CHEESECAKE WITH CHOCOLATE COOKIE CRUST

Ingredients for Filling:
1 cup chopped white chocolate (make sure it's good white chocolate that's made with cocoa butter)
3/4 cup sugar
2 Tbsp flour
16 ounces cream cheese, softened
2 egg yolks
2 eggs
1/2 cup sour cream

Directions
Move oven rack to lowest position. Heat oven to 350°F. Lightly grease bottom and side of springform pan, 8 x 3 inches.
Prepare Chocolate Cookie Crust (see below). Baking 6-8 minutes and cooling.
Place chopped white chocolate in top of double boiler (or saucepan on top of another saucepan over simmering water). Heat over low heat, stirring frequently, until white chocolate is melted. Remove from saucepan.
Increase oven temperature to 475ºF.
Beat melted white chocolate, 3/4 cup sugar, and flour in large bowl with electric mixer on medium speed until blended. Beat in cream cheese and egg yolks until smooth. Continue beating, adding eggs one at a time, then add sour cream until blended.
Pour batter carefully into crust. Cover pan with aluminum foil.
Bake 20 minutes; remove foil. Reduce oven temperature to 300°F. Bake 1 hour. (If cheesecake browns too quickly, cover loosely with aluminum foil during last 30 minutes of baking.)
Turn off oven and leave cheesecake in oven 15 minutes.
Cool on wire rack 15 minutes.
Run metal spatula along side of cheesecake to loosen before and after refrigerating.
Cover tightly and refrigerate at least 8 hours, but no longer than 5 days.
Run metal spatula along side of cheesecake to loosen; remove side of pan.
Place cheesecake on serving plate. Refrigerate if you plan to serve later.

I like my cheesecake unadorned, but you can always add fruit or chocolate sauce.

Chocolate Cookie Crust:

Ingredients
30 chocolate wafers (to yield about 1-1/2 cups crumbs)
5 Tbsp unsalted butter, melted and slightly cooled
1/8 tsp salt
1/2 tsp pure vanilla extract

Directions
Put cookies in food processor; process until finely ground.
Transfer crumbs to mixing bowl; combine crumbs, butter, salt, and vanilla; stir until crumbs are moistened.
Press mixture evenly across the bottom of a 9-inch spring form pan and all the way up the sides of the pan; pack tightly so crust is even and compacted.
Bake in 350° oven for 6-8 minutes or until crisp.
Let cool completely before filling.
