LEMON CHOCOLATE CHIP POUND CAKE: National Chocolate Chip Day!

Lemon Chocolate Chip Pound Cake is perfect to celebrate National Chocolate Chip Day. I use chocolate chips in just about every bake. I always have them in my pantry!

I have an abundance of Meyer lemons in my garden all year round, and I'm always looking for new recipes. Here's a great recipe that combines citrus and chocolate, a favorite taste combo. And, if you want to make this 'look' fancy, you can make these pound cakes in one of these three NordicWare pans. The pans will create a luscious loaf (loaves) with 3-D citrus or citrus fruit blossoms. Amazing! If you want to decorate, just add a simple glaze or sprinkling of confectioners sugar to define the design. Pans are made of cast-aluminum. Great for baking! Available at Williams Sonoma, Amazon, and other baking supply places.

Lemon Chocolate Chip Pound Cake

Ingredients
1-1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup sugar
1 tsp pure vanilla extract
2 large eggs
2 Tbsp grated lemon peel (lemon zest)
1/2 cups buttermilk
1 cup dark chocolate chips (use mini-chips if you're using the small pans)
1 1/2 Tbsp fresh lemon juice

Directions
Preheat oven to 350° F.  Butter and flour any of above pans (or regular 9 x 5 x 3 loaf pan).
Sift dry ingredients (not including chocolate chips).
In large bowl, cream butter, sugar, and lemon zest in mixer. Add eggs, one at a time, beating well after each addition. Add vanilla and lemon juice mix until blended. Gradually (on low) beat in flour mixture alternately with buttermilk.
Stir in chocolate chips.
Pour into prepared pan.
Bake for 50 minutes or until wooden pick inserted in cake comes out clean.
Cool in pan on wire rack for 10 minutes.
Let stand for 5 minutes. Invert onto plate.

Glaze or sprinkle with powder sugar, if desired.

CHOCOLATE CHIP COOKIE PIE: Chocolate Chip Day

Today is National Chocolate Chip Day. Obviously I've blogged many different Chocolate Chip Recipes from cookies to ice cream to truffles to pound cake to cheesecake to pancakes...and a lot more. I usually throw chocolate chips in most of my recipes. It's almost always appropriate because you can never have enough chocolate!

My favorite cookies are Chocolate Chip. No surprise there! So for National Chocolate Chip Day, here's a very easy recipe for Chocolate Chip Cookie Pie! You can add a cup of walnuts if you're a walnut chocolate chip cookie person. This is a gooey pie, but if you want it to be firmer, just let it set for awhile. It's a one crust pie, but you'll love the way the 'cookie dough' makes its own 'crust' on top. I like ice cream or whipped cream with this pie.

Chocolate Chip Cookie Pie

Ingredients
1 unbaked 9" pie shell (I use frozen Trader Joe's pie crust. Defrost first)
2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar (packed)
1 cup unsalted butter, melted but cooled
1 cup CHOCOLATE CHIPS  (Here's where you can get creative. What kind of chocolate chips do you like?)
1 cup chopped walnuts-optional

Directions
Preheat oven to 325.
In large bowl, beat eggs until foamy.
Beat in flour, sugar, and brown sugar until well blended.
Blend in melted butter.
Stir in chocolate chips (and nuts if you're using them).
Pour into pie shell.
Bake for 60 minutes.

You can serve this warm with ice cream or whipped cream... or just eat it plain!

Chipwich: Ice Cream Sandwich Day and Chocolate Chip Day

August 2 was National Ice Cream Sandwich Day! Perfect for these hot summer days. There's something about an ice cream sandwich that always appeals to me. I think it's because the ice-cream is 'contained'. I'm not big on gooey hands. Tomorrow is National Chocolate Chip Day, so I decided to combine the two holidays with a post on the Chipwich--the Original Chocolate Chip Cookie Ice Cream Sandwich. Here's the history of the Chipwich, along with a recipe to make the Chipwich at home.

The Chipwich was 'invented' by Richard LaMotta who turned his childhood passion for dunking cookies in milk into the Chipwich — two chocolate chip cookies embracing a chunk of vanilla ice cream dotted with chocolate chips. On May 1, 1982, Mr. LaMotta dispatched 60 street-cart vendors, each wearing pith helmets and khakis, to the streets of Manhattan to begin selling his 4 1/2-ounce concoction (including 3 1/2 ounces of ice cream) for what at the time was a pricey $1 each. A few hours later, all 25,000 Chipwiches had been gobbled — the start of something big. Within two weeks, Mr. LaMotta was selling 40,000 a day, and by the middle of that summer, the Chipwich plants in Queens, N.Y., and Lodi, N.J., were turning out 200,000 a day.

Chocolate Chip Ice Cream Sandwich

Ingredients
Chocolate Chip Cookies I use the big Pepperidge Farm Chocolate Chip Cookies (or make your own)
Vanilla Ice Cream whichever you prefer (softened)
Mini-chocolate chips I use Guittard Semisweet Chocolate Mini Chips

Directions
Soften ice cream for 10 minutes before making sandwiches.
Place scoop of ice cream on flat side of 1 cookie.
Place second cookie flat side down and carefully press together until ice cream reaches edge of cookies.
Roll edges in Mini-Chocolate Chips.
Freeze for 15 minutes and serve.

Lots of variations, of course, but this recipe is pretty close to the original Chipwich.

Chocolate Chip Cookie Pie: National Chocolate Chip Day
