CHOCOLATE CHIP BUNDT CAKE: National Chocolate Chips Day

I love a good Chocolate Chip Bundt Cake This cake, adapted from Southern Living, May 2010, is delicious and easy -- two of the most important components of any recipe for me. It's also the perfect cake for National Chocolate Chip Day. BTW, my favorite chocolate chips are from Guittard. They're so rich that they elevate any recipe. 

The original recipe has a nut crumble 'crust', but I don't think it needs it--and it sometimes sticks to the pan. Have a look, though, and decide for yourself. I rarely garnish Bundt Cakes. I don't think they need anything more. This cake is great toasted with morning coffee or tea.

CHOCOLATE CHIP BUNDT CAKE

Ingredients
2 + 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, softened
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 Tbsp pure vanilla extract
4 large eggs
1 cup buttermilk
12 ounce semisweet chocolate chips (I do a mix of milk and bittersweet chocolate chips)

Directions
Preheat oven to 350°. Grease and flour 12-cup Bundt pan.
Whisk together flour, baking soda, and salt.
Beat butter, brown sugar, granulated sugar, and vanilla at medium speed with stand mixer 3 to 5 minutes or until fluffy. Add eggs, 1 at a time, beating just until blended. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition, stopping to scrape bowl as needed.
Fold in chocolate chips. (Mixture will be thick.)
Spoon batter into prepared pan.
Bake at 350° for 50 to 55 minutes or until long wooden pick inserted in center comes out clean.
Cool in pan on wire rack 10 minutes; remove from pan to wire rack, and cool completely (about 1 hour).

BOURBON BACON CHOCOLATE CHIP COOKIES: National Chocolate Chip Day!


Today is National Chocolate Chip Day! To celebrate the holiday, here's an easy recipe for Bourbon Bacon Chocolate Chip Cookies! These cookies contain all the food groups! You can't go wrong with bourbon, bacon, and chocolate! Bourbon Bacon Chocolate Chip Cookies are perfect for Father's Day, too, so hang on to this recipe!

Maker’s Mark has a website that gives fans more of the content and information highlighting the culinary versatility of Maker’s Mark. The site features recipes selected by chef Lee Anne Wong. She explains, “My goal in compiling this recipe collection for Maker's Mark was to show the versatility of their handcrafted whisky behind the bar and inspire people to incorporate bourbon into food in ways they may have never thought to. From soups and appetizers to entrees and desserts, I've included it all.” The collection includes appetizers, desserts, entrees, sides and soups, all created by a variety of world renowned chefs and restaurants.

Bourbon Bacon Chocolate Chip Cookies

Ingredients
3 Tbsp Maker's Mark® Bourbon
3/4 pound bacon, 1/4-inch dice*
2-1/2 cups all-purpose flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup unsalted butter, softened
1/2 cup reserved bacon fat, chilled
3/4 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup packed dark brown sugar
1 tsp pure vanilla extract
2 large eggs
8 ounces dark chocolate chips

Directions
In large sauté pan, cook out diced bacon until bacon pieces are golden and crisp. Remove bacon pieces from fat and drain on paper towel. Strain fat through fine sieve and measure out 1/2 cup of bacon fat and chill bacon fat until it congeals and sets.

Preheat oven to 375°F.

Combine flour, baking powder, baking soda, and salt in small bowl. Beat butter, chilled bacon fat, granulated sugar, light and dark brown sugars, vanilla and Maker's Mark® Bourbon in large mixer bowl until well combined. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in cooked bacon pieces and chocolate chips.

Drop by rounded tablespoon onto parchment-lined baking sheets at least 3 inches apart.
Bake in oven for 9 to 11 minutes or until golden brown.
Let stand for 2 minutes; remove to wire racks to cool completely.
Keep in dry, airtight container for up to 5 days.

* A fattier sliced bacon is preferred, as lean bacon and turkey bacon will not work for this recipe. ** Use a dark chocolate with 65% cocoa or higher. Anything from a 65%-85% chocolate will work well.

CHOCOLATE CHIP CRANBERRY SCONES: National Chocolate Chip Day

Today is National Chocolate Chip Day. I always have a few bags of chocolate chips in the pantry - milk chocolate, semi-sweet, and dark. The obvious post for today's holiday would be Chocolate Chip Cookies, but since I'm a big fan of scones, I thought I'd post this recipe for Chocolate Chip Cranberry Scones. Scones are not biscuits, and they're not cupcakes... they're something in-between. It's all about the batter. And, American scones use more butter than British scones. Just an FYI. I tend to make my scones not as sweet as most. So for today's post here's a recipe for Chocolate Chip Cranberry Scones. I'm pretty sure I adapted this recipe from one on the Recchiuti blog, but can't seem to find a link. I've made these a few times, and they're easy and delicious. You can also substitute dried cherries in this recipe, just leave out the orange zest. I serve my scones with clotted cream or unsalted butter..and sometimes a little jam. Enjoy!

CHOCOLATE CHIP CRANBERRY SCONES

Ingredients
1 cup buttermilk
1 extra large egg
1Tbsp pure vanilla extract
3 1/2 Tbsp granulated cane sugar
3 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
1 tsp orange zest, about 2 oranges
1 cup unsalted butter, very cold and cubed
1/3 cup dark chocolate chips
1/3 cup dried cranberries
3/4 cup heavy whipping cream (used for brushing tops of scones)

Directions
Preheat oven to 350 F. Line bottoms of two 12-by-18-inch sheet pans with parchment paper.
Combine buttermilk, egg, and vanilla extract in medium bowl and whisk by hand until well mixed.
Sift flour, baking powder, and baking soda into bowl of stand mixer fitted with paddle attachment. Add sugar, salt, and orange zest. Beat on low speed until combined.
Carefully add cold butter and beat on medium speed until mixture resembles coarse meal.
Switch mixer to low speed. Add liquid mixture and beat until just combined.
Turn mixer off. Add cranberries and chocolate chips. Pulse until just incorporated. Do not over-mix.
Turn out onto lightly floured work surface, and press into flat square about 1 inch thick. Cut into 2-inch squares and place on prepared pans, spacing about 2 inches apart.
Brush surface with heavy whipping cream. Bake on middle shelves of oven until tops are golden and have some spring when pressed with finger, about 20 minutes.
Serve warm or let cool on pans on wire racks.

CHOCOLATE CHIP BISCUITS: National Chocolate Chip Day

A lot of you are baking biscuits since you're still Sheltered-in-Place. I meant to post this on National Biscuit Day two days ago, but, it's never too late, and since today is National Chocolate Chip Day, I thought I'd post this fabulous Retro Ad for Bisquick. There are '6 things you and Bisquick can do with biscuits.' What's missing? Chocolate Chip Biscuits? My recipe below does not require Bisquick. You'll be making everything from scratch. Easy and fun!


CHOCOLATE CHIP BISCUITS

Ingredients
3 Tbsp sugar
2 cups self-rising flour  (*see below for easy substitute)
pinch of salt
1/3 cup unsalted butter
3/4 cup buttermilk
1/2 cup good quality dark mini-chocolate chips
1/4 cup unsalted butter, melted

Directions
Preheat oven to 425.
Combine flour and 1 Tbsp sugar in large bowl.
Cut butter into flour mixture with pastry blender until crumbly.
Add buttermilk and fold in chocolate chips. Stir just until dry ingredients are moistened (do not overstir). Turn dough out onto lightly floured surface. Knead 3 times.
Pat dough to 1/2-inch thickness
Cut with 2-1/4-inch round cutter.
Place biscuits on baking sheet.
Bake 15 minutes or until golden.
Take out and while still warm, quickly brush biscuits with 1/4 cup melted butter and sprinkle with sugar.

*Self Rising Flour Substitute:
In a separate container:
For each cup of all-purpose flour (level measure), add 1- 1/4 tsp baking powder and a 1/4 tsp salt. Then re-measure what you need (2 cups for this recipe)*

Peanut Butter Fudge: Carleen M. Loper guest post

Today is National Chocolate Chip Day, and yesterday I posted a Chocolate Chip Recipe Round-Up. My friend Carleen Loper was already in the process of maximizing the 'chocolate chip' holiday with her Godmother's recipe for Peanut Butter Fudge. I had to ask her for the recipe!

Janet happened to put up a post about National Chocolate Chip Day at the very same time I was waiting for a batch of peanut butter fudge to set in the kitchen. Needless to say, I did not wait for it to entirely set before digging a knife in for a taste test. P.S. yum.

The chocolate chip. Who among us can really count the ways we’ve added its beloved and nostalgic magic to recipes?

The recipe I made today is an old family favorite. It started with my godmother, Ma Tante Rita. A lovely French Canadian soul who was my grandmother’s sister, and the relative I loved to spend the most time with growing up. Peanut Butter Fudge would primarily be found during the holidays. My mother continued the tradition, and my husband, the peanut butter freak, has carried it on to the next generation. It makes a huge batch of candy and you can separate it into nice little packages of pieces to share with multiple friends or family as you go visiting.

Today it came to mind because our young neighbor next door is having a graduation-slash-birthday-slash-going-in-the-navy party. When he was little, I knew peanut butter cups were always the candy I had to buy at Halloween to make him happy. He’s 18 now, so he’ll get a slightly more grown up version of his favorite sweet.

Ma Tante Rita’s Peanut Butter Fudge

Ingredients:
1 16 oz jar creamy peanut butter
1 16 oz package confectioner’s sugar
2 sticks butter
1 ½ cups graham cracker crumbs
1 12 oz package semi-sweet chocolate chips

Directions:
Melt the peanut butter and butter together over medium-low heat.
Mix the confectioner’s sugar and graham crackers together in a large bowl. Pour the peanut butter and butter mixture into the dry ingredients and stir well. Press evenly into a 13x9 pan.
Melt the chocolate chips. I melt them in a glass bowl in the microwave at 30 second intervals/stirring with a rubber spatula as they melt for approximately 3 minutes.
Spread over the top. (It should cover completely in a thin layer).
Let set before slicing.
