VALENTINE'S DAY CHOCOLATE CHERRY SCONES


Want to start your Valentine's Day celebration at breakfast? Here's a great recipe for Valentine's Day Chocolate Cherry Scones! Or have these great scones with your Valentine's Day afternoon tea!

VALENTINE'S DAY CHOCOLATE CHERRY SCONES

Ingredients
2 cups all-purpose flour
1/3 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cut into 1/2-inch cubes
1 cup whipping cream, divided
1/4 cup dried cherries, coarsely chopped
3 ounces dark chocolate, chopped

Directions

Preheat oven to 450°.

Stir together first 4 ingredients in large bowl. Cut butter into flour mixture with pastry blender until crumbly and mixture resembles small peas. Freeze 5 minutes. Add 3/4 cup plus 2 Tbsp cream, dried cherries, and chocolate, stirring just until dry ingredients are moistened. (Do not overwork!)

Turn dough out onto wax paper; gently press or pat dough into 7-inch round (mixture will be crumbly). Cut round into 8 wedges. Place wedges 2 inches apart on a lightly greased baking sheet. Brush tops of wedges with remaining 2 Tbsp cream just until moistened.

Bake at 450° for 13 to 15 minutes or until golden. Keep your eye on them.

WINNE THE POOH CHOCOLATE CHIP HONEY SCONES: Winnie the Pooh Day

Today is Winnie the Pooh Day. We all know that Winnie the Pooh loves Honey (Hunny) Well, most bears love honey, don't they? And, Winnie the Pooh loves a good tea party, so here's a great recipe for Chocolate Chip Honey Scones to celebrate Winnie the Pooh Day!

Winnie the Pooh Chocolate Chip Honey Scones 

Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons cold, unsalted butter, cut into cubes
1/2 cup chocolate chips
1 tablespoon honey
3/4 cup ricotta cheese
2/3 cup milk or cream

Directions
Preheat oven to 425 degrees.
Line baking sheet with parchment paper. In large mixing bowl, add flour, sugar, baking powder, salt, and cinnamon. Stir to combine.
Cut in cold butter with pastry cutter (or fork), and mix with pastry cutter or fork until mixture has the texture of coarse sand.
Add chocolate chips, honey, ricotta cheese, and milk. Stir with wooden spoon until batter forms and all ingredients are combined. DO NOT OVERMIX.
Lightly flour board and place ball of dough on floured surface. Gently pat dough down into disk, about 1 inch thick. With knife, cut disk into 8 approximately equal pieces. Place pieces on prepared baking sheet.
Bake at 425 for about 15-17 minutes, or until scones are lightly golden and baked through.
Cool.

WHITE CHOCOLATE APRICOT SCONES: National Apricot Day!

Brr.. It's cold outside-- a perfect day for scones right out of the oven! I've posted many scone recipes over the years, but since today is National Apricot Day, here's a great recipe for White Chocolate Apricot Scones. There are no fresh apricots this time of year, at least not growing in my local area, so this recipe is perfect since it calls for dried apricots. I always have dried apricots in the refrigerator. I serve these scones with clotted cream (or unsalted butter if I don't have clotted cream) and a nice pot of tea!



WHITE CHOCOLATE APRICOT SCONES 

Ingredients
2/3 cup unsalted butter
3 1⁄2 cups flour
1⁄4 cup sugar
4 teaspoons baking powder
1⁄2 teaspoon salt
2⁄3 cup finely chopped dried apricots
1 cup white chocolate chips (make sure it's 'real' white chocolate!)
2 eggs
2⁄3 cup half-and-half
1 teaspoon vanilla
Optional (sugar for sprinkling)

Directions 
Preheat oven to 400 degrees.
In large bowl cut together butter, flour, sugar, baking powder, and salt using pastry blender (or use 2 table knives crisscrossing ingredients in opposite directions) until mixture is crumbly.
Stir in apricots and white chocolate chips.
Add eggs, half & half, and vanilla so dough separates from side of bowl and forms a ball.
Turn dough onto lightly floured surface and knead lightly 10 times (don't overwork).
Divide dough into two equal portions.
On greased baking sheets pat each portion of dough into an 8" circle, and cut each circle into 8 wedges.
Optional: Sprinkle with sugar
Bake about 15 minutes, until golden. Serve warm.

SCONES FOR THE HOLIDAYS!

Scones are the perfect pastry for the holiday season! There are so many varieties, but being that we're in the holiday season, I thought I'd post a great recipe for Christmas Scones.

A scone is the perfect accompaniment to a cup of tea, and I imagine you'll need lots of cuppas during the holidays. I serve my scones with clotted cream and jam, but then my grandmother spent many years in England, and we adopted some of the British ways of eating and drinking.

Scones like biscuits are made from flour, leavening, a little salt, some fat, milk, and a bit of sugar. As in making biscuits, you cut the fat into the dry ingredients, add liquid, roll, and bake. But that's where the similarity ends. The texture of a scone is completely different from that of a biscuit. Scones are denser, drier, and more crumbly. They usually contain less butter, too. One other main difference is that in the making of scones, you use your hands to massage the butter into the dry ingredients. This will help create the proper texture.

This recipe for Scones is originally from Epicurious. You can change up the nuts and fruits for different seasons, but here's one especially for the Winter holidays.

CHRISTMAS SCONES

Ingredients
1 cup plus 2 Tbsp sugar
2 Tbsp fresh lemon juice, divided
3 cups all purpose flour
1 Tbsp baking powder
1 Tbsp finely grated lemon peel
1 tsp salt
3/4 cup chilled unsalted butter, diced
1 cup dried sweetened cranberries (I use Trader Joe's unsweetened)
1/2 cup coarsely chopped walnuts
1/2 cup (or more) chilled half and half, divided

Directions
Position rack in top third of oven; preheat to 375°F.
Line baking sheet with parchment paper.
Whisk 2 Tbsp sugar and 1 Tbsp lemon juice in bowl for glaze.
In large bowl, whisk flour, baking powder, lemon peel, salt, and 1 cup sugar. Add chilled butter; using fingertips, rub in until coarse meal forms. Mix in cranberries and walnuts. Add 1/2 cup half and half and 1 Tbsp lemon juice. Toss with fork until dough comes together in moist clumps, adding more half and half if dough is dry.
Gather dough into ball; divide in half. Press out each half on floured surface to 6-inch-diameter (1-inch-high) round. Cut each round into 6 wedges.
Transfer to baking sheet; brush with glaze.
Bake scones until golden and tester comes out clean, about 18 minutes.

Maple Bacon Chocolate Chip Scones: Bacon Lovers Day

There are several Bacon Days on the holiday food calendar. Today is Bacon Lovers Day! Here's a tasty way to celebrate. 

This recipe for Maple Bacon Chocolate Chip Scones is adapted from the Bacon Today website. If you're into bacon, you'll want to check out their site for Bacon Recipes, Bacon Shop, Bacon News, and more.

MAPLE BACON CHOCOLATE CHIP SCONES

3 cups flour (plus extra for work area)
1/3 cup white sugar
1 tsp cream of tartar
1 tsp baking soda
1/2 tsp baking powder
1/2 cup butter, softened
1 Tbsp maple syrup
3/4 cup chocolate chips (semi-sweet, milk, or dark--or a mix of all)
1/2 cup bacon bits (you can also use candied bacon bits)
1 cup buttermilk or sour milk
*to make sour milk, simply combine 1 Tbsp white vinegar for every cup of milk, then let sit for 15 minutes

Directions
Preheat oven to 425° F.
Combine flour, sugar, cream of tartar, baking soda, and baking power in medium bowl. Add soft butter and cut with pastry blade or by crossing 2 knives. When mixture resembles fine crumbs, add in chocolate chips and bacon bits. Combine until chips and bits are coated in flour mixture.
Add sour milk and maple syrup. Mix well.
Turn mixture onto  floured working surface. Knead dough, adding enough extra flour to make slightly stiff dough. Shape into rectangle, about 3/4 inch thick. Cut dough into squares, then cut each square into triangles.
Place triangles on parchment paper-lined baking sheet and bake for 12-15 minutes, until lightly browned.

Chocolate Chip Orange Scones: Afternoon Tea Week

As a tea drinker, I can confirm that I love a cuppa and a scone around 4  p.m. I'm all about Afternoon Tea. So for today's post, I celebrate Anna, the seventh Duchess of Bedford and lady-in-waiting to Queen Victoria, inadvertently invented Afternoon Tea in 1840. At that time, the main meal of the day shifted from midday (luncheon) to evening. English high society didn’t dine until 8 p.m. Anna needed something to tide her over, so she ordered tea with brown bread to be brought to her room around 4 p.m. Initially this meal was brought surreptiously, but after awhile she began to invite her friends to join her, and “afternoon tea” expanded, both in what was served and the number of friends who partook. When Anna Bedford returned to London, she continued her afternoon teas, and soon Afternoon Tea became the rage of the elite. In addition to brown bread and small sandwiches, there were sweets and special “tea cakes.” The custom spread and tea rooms and tea gardens opened to serve tea to all classes. 

Afternoon Tea is not the same as High Tea. Afternoon Tea is a lighter meal, and scones are almost always served. I love clotted cream with my scones, and luckily, fresh clotted cream is readily available at my market. I enjoy 'plain' scones, but these Chocolate Chip Orange Scones are delicious! Make some for your afternoon tea today!

Chocolate Chip Orange Scones

Ingredients
2 cups all-purpose flour
1/3 cup white sugar
Victorian postcard: Afternoon Tea
1 Tbsp baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, chilled and grated (keep cold until ready)
1 -1/3 cups heavy cream
3/4 cup miniature dark chocolate chips
3 tablespoons orange juice (1 large orange and zest from 2 oranges)

Directions
Preheat oven to 400 F.
Spray baking sheet with nonstick cooking spray or smear with butter.
In large bowl, combine flour, sugar, baking powder and salt.
With pastry blender or large fork, cut in butter until mixture resembles coarse crumbs. You can also do this with your hands.
Put in freezer for 5 minutes.
Take out of freezer and add cream, chocolate chips, orange juice and orange zest.
Mix together.
Turn out dough on floured surface. Pat or roll into 9 inch circle about 3/4 inch thick.
With 2 1/2 inch fluted biscuit cutter, cut out about 12 scones, pushing dough scraps together for last few, if necessary.
Transfer scones to baking sheet.
Bake in preheated oven until golden-brown, about 10-12 minutes.
Remove from oven and cool on wire rack.

Serve with clotted cream and jam.

Teddy Bears Picnic Triple Chocolate Scones: Teddy Bear Picnic Day!

Today is National Teddy Bear Picnic Day. You may not think that's a food holiday, but when I was little I always had teddy bear tea parties, and I always served them scones. My grandparents were married in London, and I got my love of tea with milk and sugar -- and tea with scones and clotted cream -- from them. So for today's Teddy Bear Picnic Day, here's a recipe for Teddy Bear Picnic Triple Chocolate Scones. Of course you might want to add some honey on your scones. Bears love honey!

Teddy Bear Picnic Triple Chocolate Scones 

Ingredients 
1-3/4 cup flour
1/3 cup sugar
1 Tbsp baking powder
1/3 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp pure vanilla extract

7-8 Tbsp whole milk (cold)
1/2 cup chocolate chips

Bake for 10-15 minutes depending on size. Start checking at 9 minutes. Do not overbake!

Sprinkle again with large sugar crystals while scones are still hot for visual appeal.

Tip: Scones are like biscuits. To get a tender, flaky scone, dough should be handled as little as possible, and you should always use cold butter and cold milk.

TRIPLE CHOCOLATE SCONES: A Cream Tea in the Garden for Scones Day!


It's so beautiful right now in my Spring Garden. I'm a major gardener with over 150 rose bushes, multiple fruit trees, and lots of other trees and flowers. It's warm and sunny today--the perfect day for a cream tea in the garden, and it just happens to be Scones Day! No one will be having tea and scones in the garden in the nude as in this fabulous painting by Beryl Cook, one of my favorite artists. To celebrate National Scones Day, here's a great recipe for Triple Chocolate Scones. Be sure and add a heaping helping of Clotted Cream

Triple Chocolate Scones 

Ingredients
1-3/4 cup flour
1/3 cup sugar
1 Tbsp baking powder
1/3 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp pure vanilla
6 Tbsp unsalted butter  (cold)
7-8 Tbsp whole milk  (cold)
1/2 cup chocolate chips
3 Tbsp chopped dark chocolate

PUMPKIN CHOCOLATE CHIP SCONES: National Pumpkin Day!

I love scones, and they're so easy to make, and these Pumpkin Chocolate Chip Scones are perfect for National Pumpkin Day and this Fall Weekend. Mix up a batch today! 

Tip: Do not overwork the dough! Use frozen butter!

PUMPKIN CHOCOLATE CHIP SCONES

Ingredients
1 cup all-purpose flour
1 cup whole wheat pastry flour
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup salted butter frozen (frozen butter is key to a good scone!)
1/2 cup canned pumpkin (plain- not pumpkin pie)
1 egg
1 cup mini chocolate chips
Coarse sugar

Directions
Line baking sheet with parchment paper and set aside.

Combine all-purpose flour, whole wheat pastry flour, cinnamon, ginger, nutmeg, sugar, baking powder, and baking soda in bowl.
Add cold butter to flour mixture and combine with pastry cutter, two knives, or stand mixer with paddle attachment on low speed until mixture resembles coarse meal.
In bowl whisk together egg and pumpkin puree.
Add wet ingredients to flour and butter mixture and stir with rubber spatula until just combined. Be careful to not over mix!
Carefully fold in mini chocolate chips.
On floured surface, shape dough into disk about 3/4 inch thick.
Place dough on prepared pan and slice dough (like a pizza to create 8 scones)
Sprinkle with coarse sugar.
Put baking sheet in freezer for 30 minutes.
Preheat oven to 400 degrees F.
When scones are chilled, bake for 14-16 minutes until very light golden brown.
Serve warm with clotted cream!

TRIPLE CHOCOLATE SCONES: National Scone Day!

Today is National Scone Day. Everyday is scone day here! Here's an easy recipe to celebrate: Triple Chocolate Scones. These go very well with a heaping helping of Clotted Cream or Lemond Curd. Whip up a batch today.

Triple Chocolate Scones 

Ingredients
1-3/4 cup flour
1/3 cup sugar
1 Tbsp baking powder
1/3 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp pure vanilla
6 Tbsp butter  (cold)
7-8 Tbsp whole milk  (cold)
1/2 cup chocolate chips
3 Tbsp chopped dark chocolate
Sugar Crystals 

Directions
Preheat oven to 400 degrees F.
Sift together dry ingredients in large bowl (not the chocolate chips or chocolate).
Cut butter into dry ingredients and cut into dry mixture until the size of peas.
Add chocolate chips and dark chocolate.

Put vanilla into small bowl and add milk. Pour most of milk mixture into dry mix and stir to moisten. Dough should be moist enough to form a soft ball, but not sticky. If needed, additional milk can be added 1-2 teaspoons at time.
Turn dough onto lightly floured cutting board and press out with hand to approximately 1/2 inch thickness. (makes 10-12 scones or 8-12 wedges)
Do not over-knead dough. Use as little flour as possible to keep dough from sticking to board.
Cut into desired shapes and place on lightly greased baking sheet.
Lightly brush tops with milk (or not).
Sprinkle with sugar crystals (you can get this from King Arthur Flour or find it in the market in the baking section).
(If using a biscuit cutter or glass, dip the cutting edge in flour first)
Bake for 10-15 minutes depending on size. Start checking at 9 minutes. Do not overbake!
Sprinkle again with large sugar crystals while scones are still hot for visual appeal.

Scones are like biscuits. To get a tender, flaky scone, dough should be handled as little as possible, and you should always use cold butter and cold milk.

Bailey's Irish Scones with Chocolate Chips: St Patrick's Day


Planning to celebrate St Patrick's Day at home with ta and a lovely platter of Irish Scones? I do. So make a pot of Barry's Irish breakfast tea  and whip up this recipe for Bailey's Irish Scones with Chocolate Chips. Perfect for St. Patrick's Day. As always when making scones, remember to freeze the butter. It will make a huge difference in your results.


Bailey's Irish Scones with Chocolate Chips

Ingredients

4 cups all purpose flour  (sifted)
1 Tbsp + 1 tsp baking powder 
1 tsp salt 
1/2 cup sugar 
1/2 cup brown sugar 
1 tsp ground cinnamon 
3/4 lbs cold, unsalted Irish butter, cubed and or grated (leave it in the freezer until you absolutely need it)
4 large eggs 
2 tsp pure vanilla 
1/2 cup Bailey’s Irish Cream 
1 cup dark chocolate chips 
Light brown sugar for sprinkling

Directions

Preheat oven to 400 degrees. Line baking sheet with parchment. 
Place first 5 dry ingredients in food processor and pulse until combined. Add butter and continue to pulse until you have a moist crumb mixture.   (But Really, you should use a pastry cutter for this..but it's your choice. I use a pastry cutter. It's more time consuming, but makes for a perfect scone). 

In another bowl, whisk eggs. Whisk in vanilla and Baileys until well blended. Whisk wet mixture into dry ingredients, fold in chocolate chips, and stir with a wooden spoon until no flour is visible. Dough will be heavy and sticky. 

Drop by 1/2 cup scoopfuls onto lined baking sheet spacing 2” apart. Sprinkle light brown sugar over top (optional). 

 Bake 20-25 minutes or until golden brown and toothpick inserted comes out clean. 

Transfer pans to wire rack to allow scones to cool for a few minutes. Then transfer scones from baking sheet directly to wire rack.

Serve with clotted cream and jam or Irish unsalted butter and jam.  Honey is great, too, in a pinch!

WINNIE THE POOH CHOCOLATE CHIP HONEY SCONES: Winnie the Pooh Day!

Today is Winnie the Pooh Day. We all know that Winnie the Pooh loves Honey (Hunny) Well, most bears love honey, don't they? And, Winnie the Pooh loves a good tea party, so here's a great recipe for Chocolate Chip Honey Scones to celebrate Winnie the Pooh Day!

Winnie the Pooh Chocolate Chip Honey Scones 

Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons cold, unsalted butter, cut into cubes
1/2 cup chocolate chips
1 tablespoon honey
3/4 cup ricotta cheese
2/3 cup milk or cream

Directions
Preheat oven to 425 degrees.
Line baking sheet with parchment paper. In large mixing bowl, add flour, sugar, baking powder, salt, and cinnamon. Stir to combine.
Cut in cold butter with pastry cutter (or fork), and mix with pastry cutter or fork until mixture has the texture of coarse sand.
Add chocolate chips, honey, ricotta cheese, and milk. Stir with wooden spoon until batter forms and all ingredients are combined. DO NOT OVERMIX.
Lightly flour board and place ball of dough on floured surface. Gently pat dough down into disk, about 1 inch thick. With knife, cut disk into 8 approximately equal pieces. Place pieces on prepared baking sheet.
Bake at 425 for about 15-17 minutes, or until scones are lightly golden and baked through.
Cool.

WHITE CHOCOLATE APRICOT SCONES: National Apricot Day

A storm is brewing. It's a perfect day for scones right out of the oven! I've posted many scone recipes over the years, but since today is National Apricot Day, here's a great recipe for White Chocolate Apricot Scones. There are no fresh apricots this time of year, at least not growing in my local area, so this recipe is perfect since it calls for dried apricots. I always have dried apricots in the refrigerator or pantry. I serve these scones with clotted cream (or unsalted butter if I don't have the cream) and a nice pot of tea!



WHITE CHOCOLATE APRICOT SCONES 

Ingredients
2/3 cup unsalted butter
3 1⁄2 cups flour
1⁄4 cup sugar
4 teaspoons baking powder
1⁄2 teaspoon salt
2⁄3 cup finely chopped dried apricots
1 cup white chocolate chips (make sure it's 'real' white chocolate!)
2 eggs
2⁄3 cup half-and-half
1 teaspoon vanilla
Optional (sugar for sprinkling)

Directions 
Preheat oven to 400 degrees.
In large bowl cut together butter, flour, sugar, baking powder, and salt using pastry blender (or use 2 table knives crisscrossing ingredients in opposite directions)until mixture is crumbly.
Stir in apricots and white chocolate chips.
Add eggs, half & half, and vanilla so dough separates from side of bowl and forms a ball.
Turn dough onto lightly floured surface and knead lightly 10 times (don't overwork).
Divide dough into two equal portions.
On greased baking sheets pat each portion of dough into an 8" circle, and cut each circle into 8 wedges.
Optional: Sprinkle with sugar
Bake about 15 minutes, until golden. Serve warm.

SCONES FOR THE HOLIDAYS!

Scones are the perfect pastry for the holiday season! There are so many varieties, but being that we're in the holiday season, I thought I'd post a great recipe for Christmas Scones.

A scone is the perfect accompaniment to a cup of tea, and I imagine you'll need lots of cuppas during the holidays. I serve my scones with clotted cream and jam, but then my grandmother spent many years in England, and we adopted some of the British ways of eating and drinking.

Scones like biscuits are made from flour, leavening, a little salt, some fat, milk, and a bit of sugar. As in making biscuits, you cut the fat into the dry ingredients, add liquid, roll, and bake.. But that's where the similarity ends. The texture of a scone is completely different from that of a biscuit. Scones are denser, drier, and more crumbly. They usually contain less butter, too. One other main difference is that in the making of scones, you use your hands to massage the butter into the dry ingredients. This will help create the proper texture.

This recipe for Scones is originally from Epicurious. You can change up the nuts and fruits for different seasons, but here's one especially for the Winter holidays.

CHRISTMAS SCONES

Ingredients
1 cup plus 2 Tbsp sugar
2 Tbsp fresh lemon juice, divided
3 cups all purpose flour
1 Tbsp baking powder
1 Tbsp finely grated lemon peel
1 tsp salt
3/4 cup chilled unsalted butter, diced
1 cup dried sweetened cranberries (I use Trader Joe's unsweetened)
1/2 cup coarsely chopped walnuts
1/2 cup (or more) chilled half and half, divided

Directions
Position rack in top third of oven; preheat to 375°F.
Line baking sheet with parchment paper.
Whisk 2 Tbsp sugar and 1 Tbsp lemon juice in bowl for glaze.
In large bowl, whisk flour, baking powder, lemon peel, salt, and 1 cup sugar. Add chilled butter; using fingertips, rub in until coarse meal forms. Mix in cranberries and walnuts. Add 1/2 cup half and half and 1 Tbsp lemon juice. Toss with fork until dough comes together in moist clumps, adding more half and half if dough is dry.
Gather dough into ball; divide in half. Press out each half on floured surface to 6-inch-diameter (1-inch-high) round. Cut each round into 6 wedges.
Transfer to baking sheet; brush with glaze.
Bake scones until golden and tester comes out clean, about 18 minutes.

PUMPKIN CHOCOLATE CHIP SCONES

I love scones, and they're so easy to make, and these Pumpkin Chocolate Chip Scones are perfect for this Fall Weekend. Mix up a batch today! 

Tip: Do not overwork the dough! Use frozen butter!

PUMPKIN CHOCOLATE CHIP SCONES

Ingredients
1 cup all-purpose flour
1 cup whole wheat pastry flour
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup salted butter frozen (frozen butter is key to a good scone!)
1/2 cup canned pumpkin
1 egg
1 cup mini chocolate chips
Coarse sugar

Directions
Line baking sheet with parchment paper and set aside.

Combine all-purpose flour, whole wheat pastry flour, cinnamon, ginger, nutmeg, sugar, baking powder, and baking soda in bowl.
Add cold butter to flour mixture and combine with pastry cutter, two knives, or stand mixer with paddle attachment on low speed until mixture resembles coarse meal.
In bowl whisk together egg and pumpkin puree.
Add wet ingredients to flour and butter mixture and stir with rubber spatula until just combined. Be careful to not over mix!
Carefully fold in mini chocolate chips.
On floured surface, shape dough into disk about 3/4 inch thick.
Place dough on prepared pan and slice dough (like a pizza to create 8 scones)
Sprinkle with coarse sugar.
Put baking sheet in freezer for 30 minutes.
Preheat oven to 400 degrees F.
When scones are chilled, bake for 14-16 minutes until very light golden brown.
Serve warm with clotted cream!

MAD HATTER CHOCOLATE CHIP SCONES: Mad Hatter Day!

Celebrate Mad Hatter Day with Mad Hatter Chocolate Chip Scones at a Mad Hatter Tea Party.

The unofficial Mad Hatter holiday was created in 1986 in Boulder Colorado by a group of computer technicians who were inspired by the Mad Hatter and his antics in Alice in Wonderland. In the book, the Mad Hatter is an eccentric milliner for whom time is forever stuck at a tea party with his friend the March Hare.

The date for the holiday was chosen because of how John Tenniel illustrated the Hatter in Alice in Wonderland. The English illustrator who was also a political cartoonist depicted the Hatter wearing a hat with a piece of paper that has 10/6 written on it. The 10/6 refers to the cost of a hat – 10 shillings and 6 pence. The creators of the holiday who are from the United States where the date is written in the month/day (mm/dd) format took this to set the date for the holiday on October 6 (10/6). For those who write the date in the day/ month (dd/mm) format, the holiday would fall on June 10.

Planning to host a Mad Hatter Tea Party? Then be sure and serve Chocolate Chip Scones (not that the Mad Hatter offered Alice anything at all!). Add some clotted cream and jam, don your hat, and you're good to go!   

MAD HATTER CHOCOLATE CHIP SCONES

Ingredients
1 3/4 cups all-purpose flour
1/3 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
5 Tbsp unsalted butter, chilled and cubed
1/2 cup miniature semisweet chocolate chips
3 Tbsp orange juice (without pulp)

Directions
Preheat oven to 400. Spray baking sheet with nonstick cooking spray.
In large bowl, whisk together flour, sugar, baking powder, and salt. With pastry blender or large fork, cut in butter until mixture resembles coarse crumbs. Stir in chocolate chips. Mix in orange juice to form dough.
Turn out dough on floured surface. Pat or roll into 9 inch circle about 1/2 inch thick.
With 2 -1/2 inch fluted biscuit cutter, cut out 12 scones, pushing dough scraps together for last few, if necessary.
Transfer scones to baking sheet.
Bake in preheated oven until golden brown, about 12 minutes.
Move to wire racks to cool.
Serve with clotted cream and jam!

CHOCOLATE CHIP ORANGE SCONES: Afternoon Tea Week

As a tea drinker, I can confirm that I love a cuppa and a scone around 4  p.m. I'm all about Afternoon Tea. So for today's post, I celebrate Anna, the seventh Duchess of Bedford and lady-in-waiting to Queen Victoria, inadvertently invented Afternoon Tea in 1840. At that time, the main meal of the day shifted from midday (luncheon) to evening. English high society didn’t dine until 8 p.m. Anna needed something to tide her over, so she ordered tea with brown bread to be brought to her room around 4 p.m. Initially this meal was brought surreptiously, but after awhile she began to invite her friends to join her, and “afternoon tea” expanded, both in what was served and the number of friends who partook. When Anna Bedford returned to London, she continued her afternoon teas, and soon Afternoon Tea became the rage of the elite. In addition to brown bread and small sandwiches, there were sweets and special “tea cakes.” The custom spread and tea rooms and tea gardens opened to serve tea to all classes. 

Afternoon Tea is not the same as High Tea. Afternoon Tea is a lighter meal, and scones are almost always served. I love clotted cream with my scones, and luckily, fresh clotted cream is readily available at my market. I enjoy 'plain' scones, but these Chocolate Chip Orange Scones are delicious! Make some for your afternoon tea today!

Chocolate Chip Orange Scones

Ingredients
2 cups all-purpose flour
1/3 cup white sugar
Victorian postcard: Afternoon Tea
1 Tbsp baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, chilled and grated (keep cold until ready)
1 -1/3 cups heavy cream
3/4 cup miniature dark chocolate chips
3 tablespoons orange juice (1 large orange and zest from 2 oranges)

Directions
Preheat oven to 400 F.
Spray baking sheet with nonstick cooking spray or smear with butter.
In large bowl, combine flour, sugar, baking powder and salt.
With pastry blender or large fork, cut in butter until mixture resembles coarse crumbs. You can also do this with your hands.
Put in freezer for 5 minutes.
Take out of freezer and add cream, chocolate chips, orange juice and orange zest.
Mix together.
Turn out dough on floured surface. Pat or roll into 9 inch circle about 3/4 inch thick.
With 2 1/2 inch fluted biscuit cutter, cut out about 12 scones, pushing dough scraps together for last few, if necessary.
Transfer scones to baking sheet.
Bake in preheated oven until golden-brown, about 10-12 minutes.
Remove from oven and cool on wire rack.

Serve with clotted cream and jam.
