Groundhog Day Chocolate Cupcakes

I love to decorate cupcakes and cakes for special occasions. February 2 is the day when Punxsutawney Phil peaks his head out, and, if he sees his shadow and returns to his hole, it means there will be another 6 weeks of winter. If he doesn't see his shadow and comes out, there will be 6 more weeks of winter.  This holiday was brought to international attention by the film Groundhog Day with Bill Murray.

Here's an adorable decorating suggestion for "Cupcakes for Young and Old" to enjoy. This is from Food.com (not my photo, but Marg's on Food.com). She did a great job, don't you think? For this holiday, you can make your own cupcakes or buy rich chocolate-y ones at your favorite bakery!

Groundhog Day Chocolate Cupcakes (decorating)

Ingredients:
12 baked chocolate cupcakes
6 Almond Joy candy bars
10 white jelly beans
3 watermelon slice candy
48 brown miniature M&Ms
4 chocolate cookies
white frosting
black decorating gel

Directions:
Remove a piece of cake the width of an Almond Joy candy from the center of a baked cupcake.
Set candy bar upright in hole, then spread a layer of white frosting on the cupcake.
For groundhog's eyes, trim ends from a white jelly bean, stick them in place with frosting, then dot them with black decorators' gel.
Add a tiny triangle cut from a watermelon slice candy for a nose, brown M&Ms Minis for ears and cheeks, and a tiny rectangular piece of white jelly bean for teeth.
Sprinkle chocolate cookie crumbs around the partially emerged groundhog, for dirt!

SNOWBALLS: Retro Ad with Recipe for National Cupcake Day

Not sure if it will be a White Christmas where you live (not here, for sure!), but this Retro Ad & Recipe for Snowballs is great for the Holidays! The Swift'ning Ad calls these cupcakes, but I grew up calling them Snowballs. I think they're perfect for today's food holiday: National Cupcake Day! Because Swift'ning is no longer being made, I've added a recipe from Betty Crocker for Snowball Cupcakes. Get  creative. 

Swiftn'ing, by the way, was a lard-based product, developed by Swift & Company during the 1940s. It was marketed as an all purpose shortening and contained a mixture of both animal and vegetable fats.

From Betty Crocker: 

SNOWBALL CUPCAKES


Cupcakes 
1 box (15.25 oz) Betty Crocker™ Super Moist™ Devil's Food Cake Mix 
2/3 cup water 
1/3 cup vegetable oil 
1/2 cup sour cream 
2 eggs 
1 package (3 oz) cream cheese, cut into 24 cubes 

Frosting 
1/2 cup sugar 
2 tablespoons water 
2 egg whites 
1 jar (7 oz) marshmallow creme 
1 teaspoon vanilla 
2 cups coconut 

Directions
Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, water, oil, sour cream and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. 

Spoon batter into muffin cups. Place 1 cube cream cheese in center of each cupcake; press down into batter almost to center (top of cream cheese will still show). 

Bake 21 to 27 minutes or until toothpick inserted near center of cupcake comes out clean (test between cream cheese and edge). Remove cupcakes from pan to cooling racks. Cool completely, about 30 minutes. 

In 2-quart stainless steel or other non-coated saucepan, mix sugar, water and egg whites. Cook over low heat, beating continuously with electric hand mixer at high speed until soft peaks form, about 4 minutes. Add marshmallow creme; beat until stiff peaks form. Remove saucepan from heat. Beat in vanilla. 5 Spread frosting evenly over cupcakes; sprinkle each with generous tablespoonful coconut. Store loosely covered in refrigerator.

What? It’s National Chocolate Cupcake Day, and I didn’t even know it! Guest Post by Sarah Husmann

A couple of days ago I decided I wanted to bake something sweet, but I didn’t want to go grocery shopping, and I had all the ingredients for chocolate cupcakes. I took out the cold ingredients last night before bed so they’d be room temperature this morning, woke up, and whipped them up after lunch. And voila!  Chocolate cupcakes with chocolate buttercream frosting in less than an hour! Sometimes making something basic is just what you need. Simple, delicious and fast. After baking them, I found it was National Chocolate Cupcake Day, and I didn’t even know it! Coincidence or fate? LOL!

I did not make any changes to the recipes I used.

TRIPLE CHOCOLATE CUPCAKES: National Chocolate Cupcake Day

Yesterday was Chocolate Cupcake Day. How did I miss it? Well, making up for it today with this recipe for Triple Chocolate Cupcakes. I like to fill my cupcakes with chocolate ganache. If you find ganache is too thick, just thin the ganache with a bit of cream. I also use the ganache for the icing. Saves a step.

TRIPLE CHOCOLATE CUPCAKES

Cupcakes

Ingredients
1/2 cup unsalted butter, room temperature
1-1/4 cups sugar
2 large eggs, room temperature
3/4 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp Kosher Salt
3/4 cup Dark cocoa powder  (Read about Natural vs. Dutch Process cocoa)
1/2 cup whole milk
1 tsp pure vanilla
2/3 cup mini dark chocolate chips

Directions
Beat butter and sugar until light and fluffy.
Add eggs, one at a time, beating until well combined.
In small bowl, place flour, baking powder, baking soda, salt, and cocoa powder and combine.
Add milk and vanilla and stir.
Add 1/3 dry ingredients to butter/sugar mixture and beat to combine.
Add half milk/vanilla mixture and beat to combine.
Continue adding, alternating between dry and wet and finishing with dry ingredients.
Fold in chocolate chips.
Scoop batter into cupcake cups between 1/2 & 3/4 full.
Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.

To make cupcakes flat on top: Bake in paper cups and flip onto flat surface when finished baking.  Leave pan sitting on top to make them flat. Allow to cool.
Freeze cupcakes and then use an apple corer to make the hole for the filling.

Ganache

Ingredients
12 ounces good quality chocolate, chopped
2 cups heavy whipping cream
2 Tbsp unsalted butter


Directions
Place chocolate in medium sized bowl. 
Heat cream over medium low heat until barely begins to boil. Remove from heat immediately. Do not over-heat! 
Pour hot cream over chocolate and let sit for minute. 
Stir mixture (gently) until chocolate is melted and blended with cream. 
Add butter and combine. 
Do not beat the mixture.
Cool before filling or spreading. (use pastry bag to fill and frost) 

Sprinkle with jimmies, chocolate curls, silver balls, or other decorations.

HOMEMADE HOSTESS CUPCAKES: National Chocolate Cupcake Day!

Today is National Chocolate Cupcake Day, so I thought I'd post a homemade recipe for a nostalgia chocolate cupcake: Hostess CupCakes. FYI: Hostess CupCakes are back on the shelves after a short hiatus, so you can also buy them today. But-- they'll taste so much better if you make your own.   

Hostess CupCakes were produced and distributed by Hostess Brands. The basic Hostess CupCake is a chocolate cupcake with chocolate icing and vanilla creme filling (Marshmallow Fluff flavor), with distinctive squiggles across the top. Hostess claims that it was the first commercially produced cupcake. Maybe. I grew up with TastyCake cakes and pies, and the Chocolate Cupcakes were my favorites. TastyCake makes the same claim about first produced.

The Hostess CupCake was first sold on May 11, 1919. According to author Andrew F. Smith, it was the first commercially produced cupcake, originally produced by the Taggart Bakery as the Chocolate Cup Cake. Hostess has also claimed that it was "the first snack cake ever introduced to the market. In 2004, rival Tastykake disputed this claim, claiming that Tastykake introduced the first snack cake.
Originally, two cupcakes were sold for five cents. Until 1950, the Hostess CupCake did not have any filling or the white squiggly line across the top.
 
In 1947, D.R. "Doc" Rice, who started his career at Hostess in 1938 with a job that entailed dumping baked cakes on a table, was given the task of developing the Hostess CupCake further. These developments culminated in an updated cupcake in 1950. A white line consisting of squiggles was added to the top in order to distinguish the Hostess CupCake from other brands. The vanilla creme filling was also added. Rice got the idea for using a creme filling when a new machine for injecting filling into Hostess Twinkies became available. Improvements were also made to the cake mix and the chocolate icing in 1950.

HOME-MADE HOSTESS CUPCAKES

Ingredients

2 sticks salted butter, softened  (8 Tbsp in a stick)
2 cups granulated sugar
2 large eggs
1 cup natural cocoa powder, (Hershey's Baking Cocoa )
2 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup whole milk
1 cup Marshmallow Fluff
1/3 cup salted butter, softened
1/2 cup powdered sugar

For Frosting and Decoration 
1/3 cup heavy cream
1 cup dark chocolate, chopped
1 1/2 Tbsp salted butter, softened
1/2 stick unsalted butter, softened
1/2 cup powdered sugar

Directions
Preheat oven to 350°F.
Line a 6- and 12-muffin tin with paper liners.

Cupcake Batter:
In bowl of heavy-duty stand mixer, cream 2 sticks of butter and granulated sugar together at medium speed, just until light and fluffy, about 1 minute. Add eggs, one at time, and mix just until combined. In measuring cup, stir 1/2 the cup of hot water and cocoa together until smooth. Add cocoa mixture to butter mixture and mix on low speed for additional 10 seconds.
In medium bowl, whisk together flour, baking soda, and salt. With mixer on low speed, gradually add flour mixture to butter mixture in batches alternating with milk, beginning and ending with flour and beating after each addition until ingredients are just blended.
Fill each prepared muffin cup half full with chocolate batter.
Bake for 22 to 25 minutes, or until toothpick inserted in middle comes out clean. Let cool completely on wire rack.

Filling: 
Using clean bowl and stand mixer or electric hand mixer, beat marshmallow fluff, 1/3 cup butter, and 1/3 cup powdered sugar together until combined and fluffy, about 1 minute. Using handle of small fork or spoon, make hole in the top center of each cake. Gently rotate the utensil in each hole to create a small cavity at each opening. Transfer the filling to a piping bag and pipe in just enough marshmallow mixture to fill each hole.
Make sure it doesn't explode; once you feel it growing in size, stop infusing. Use wet fingertip or  back of spoon to tamp down marshmallow peaks, ensuring filling is even with top of cupcake.

Frosting:
In small saucepan, heat cream over medium heat until bubbles form at edges. Add chocolate and remove pan from heat, stirring until chocolate melts. Add 1 1/2 tablespoons butter and continue to stir until smooth. Let cool for three minutes.
Transfer chocolate to large deep glass bowl. Dip top of each cupcake into chocolate to coat, letting the excess chocolate drip back into the bowl.
Let the cupcakes rest on a wire rack set over paper until chocolate is set, about 30 minutes.

Frosting decoration:
In small bowl, beat 1/4 cup butter and 1/2 cup of powdered sugar together until smooth, about two minutes. Transfer frosting to piping bag and decorate top of each cupcake with squiggles. Serve immediately. Store in an airtight container for up to 2 days.

Today is National Chocolate Day. At my house it's always Chocolate Day, and if you've been reading this blog, you'll know that I post a chocolate recipe every day.

So today to celebrate National Chocolate Day, I thought I'd post a recipe for Triple Chocolate Cupcakes. I like to fill my cupcakes with chocolate ganache. If you find it too thick, just thin a bit with some cream. I also use the ganache for the icing. Saves a step.

TRIPLE CHOCOLATE CUPCAKES

Cupcakes

Ingredients
1/2 cup sweet butter, room temperature

2/3 cup mini dark chocolate chips

In small bowl, place flour, baking powder, baking soda, salt, and cocoa powder and combine.
Add milk and vanilla and stir.
Add 1/3 dry ingredients to butter/sugar mixture and beat to combine.

Chocolate Cemetery Cupcakes for Halloween

I posted a version of this last year on my other two blogs, Murderous Musings/TeamBuilding Talk and Mystery Fanfare, but this is so relevant to this blog, because I'm always... DyingforChocolate.

Being that Halloween is one of my favorite holidays, I'll be having a lot of links and recipes. The internet is filled with great Halloween chocolate treats, but this is one of my favorites. I was pretty sure these scary tombstones was originally from a Martha Stewart article or website, but I've been making them so long, I wasn't sure. Yep! Credit Martha Stewart.

These spooky Halloween cupcakes are fun to make and eat. Use any one of the following decorating ideas on its own, or put several together to create a tray of different treats. Easy to bake, you can use any devil's food cake recipe.

To make a cupcake cemetery, spread devil's food cupcakes with chocolate icing. Dip the top of each frosted cupcake in crushed chocolate wafers to look like dirt, then insert chocolate shortbread-cookie tombstones, piping them with scary messages like "Boo!" or "R.I.P." in royal icing.
