Groundhog Day Chocolate Cupcakes

I love to decorate cupcakes and cakes for special occasions. February 2 is the day when Punxsutawney Phil peaks his head out, and, if he sees his shadow and returns to his hole, it means there will be another 6 weeks of winter. If he doesn't see his shadow and comes out, there will be 6 more weeks of winter.  This holiday was brought to international attention by the film Groundhog Day with Bill Murray.

Here's an adorable decorating suggestion for "Cupcakes for Young and Old" to enjoy. This is from Food.com (not my photo, but Marg's on Food.com). She did a great job, don't you think? For this holiday, you can make your own cupcakes or buy rich chocolate-y ones at your favorite bakery!

Groundhog Day Chocolate Cupcakes (decorating)

Ingredients:
12 baked chocolate cupcakes
6 Almond Joy candy bars
10 white jelly beans
3 watermelon slice candy
48 brown miniature M&Ms
4 chocolate cookies
white frosting
black decorating gel

Directions:
Remove a piece of cake the width of an Almond Joy candy from the center of a baked cupcake.
Set candy bar upright in hole, then spread a layer of white frosting on the cupcake.
For groundhog's eyes, trim ends from a white jelly bean, stick them in place with frosting, then dot them with black decorators' gel.
Add a tiny triangle cut from a watermelon slice candy for a nose, brown M&Ms Minis for ears and cheeks, and a tiny rectangular piece of white jelly bean for teeth.
Sprinkle chocolate cookie crumbs around the partially emerged groundhog, for dirt!

SNOWBALLS: Retro Ad with Recipe for National Cupcake Day

Not sure if it will be a White Christmas where you live (not here, for sure!), but this Retro Ad & Recipe for Snowballs is great for the Holidays! The Swift'ning Ad calls these cupcakes, but I grew up calling them Snowballs. I think they're perfect for today's food holiday: National Cupcake Day! Because Swift'ning is no longer being made, I've added a recipe from Betty Crocker for Snowball Cupcakes. Get  creative. 

Swiftn'ing, by the way, was a lard-based product, developed by Swift & Company during the 1940s. It was marketed as an all purpose shortening and contained a mixture of both animal and vegetable fats.

From Betty Crocker: 

SNOWBALL CUPCAKES


Cupcakes 
1 box (15.25 oz) Betty Crocker™ Super Moist™ Devil's Food Cake Mix 
2/3 cup water 
1/3 cup vegetable oil 
1/2 cup sour cream 
2 eggs 
1 package (3 oz) cream cheese, cut into 24 cubes 

Frosting 
1/2 cup sugar 
2 tablespoons water 
2 egg whites 
1 jar (7 oz) marshmallow creme 
1 teaspoon vanilla 
2 cups coconut 

Directions
Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, water, oil, sour cream and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. 

Spoon batter into muffin cups. Place 1 cube cream cheese in center of each cupcake; press down into batter almost to center (top of cream cheese will still show). 

Bake 21 to 27 minutes or until toothpick inserted near center of cupcake comes out clean (test between cream cheese and edge). Remove cupcakes from pan to cooling racks. Cool completely, about 30 minutes. 

In 2-quart stainless steel or other non-coated saucepan, mix sugar, water and egg whites. Cook over low heat, beating continuously with electric hand mixer at high speed until soft peaks form, about 4 minutes. Add marshmallow creme; beat until stiff peaks form. Remove saucepan from heat. Beat in vanilla. 5 Spread frosting evenly over cupcakes; sprinkle each with generous tablespoonful coconut. Store loosely covered in refrigerator.

MICKEY MOUSE DAY: Cookies & Cream Mickey Mouse Cupcakes


Happy Birthday, Mickey! Mickey Mouse's
birthday is celebrated on November 18 
because he made his first appearance in the Walt Disney classic 'Steamboat Willie' on November 18, 1928. FYI, Minnie was in this cartoon, too, running along the banks 
of the river, so it's officially Mickey & Minnie Mouse Day.

From a whistling boat captain in black and white to the full color Sorcerer’s Apprentice in Fantasia, Mickey has captivated the world with his charm and his antics. Mickey Mouse Day celebrates this classic cartoon character’s birthday.

Mickey Mouse took to the screen on November 18, 1928 with slapstick, plot twists, and a full lineup of comedy gold. Walt Disney left Universal Studios with a cartoon rabbit named Oswald, who became a mouse named Mortimer, who eventually became the Mickey we know and love.

Who could have guessed a rodent would become the most well-known character in the world? Mickey may be more globally recognizable than Santa. The first Mickey Mouse Club appeared in 1929, and now kids attend these clubs across the nation. 

Mickey inhabits a world with Minnie, Pluto, Goofy, his nemesis, Pete, and many other memorable characters. It’s a world we can go back to time and time again for a good laugh.

So to celebrate National Mickey Mouse Day, here's a great recipe for Mickey Mouse Cupcakes from The Unofficial Disney Parks Cookbook. This Cookbook will bring a bit of the Walt Disney magic into your own kitchen. The cookbook features 100 Disney-inspired recipes ranging from the classic Dole Whip and Mickey Pretzels to new favorites like blue milk from Star Wars land and Jack Jack’s Cookie Num Nums from Pixar Pier.

Cookies & Cream Mickey Mouse Cupcakes

Main Street, U.S.A., Disneyland

Candy Palace on Main Street, U.S.A., was renovated in 2012 and given a very sweet interior. Many of the features are meant to look edible, such as the chandelier that seems to be dripping ice cream, and the exit sign shaped as a wrapped candy. And among its actually edible creations are delectable, supersweet Cookies and Cream Mickey Cupcakes. Topped with the iconic mouse ears, these popular treats are easy to whip up and sure to please.

 

YIELDS 24 CUPCAKES

For Cupcakes

3 tablespoons salted butter, softened
1 12 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 13 cups all-purpose flour
14 teaspoon baking soda
2 teaspoons baking powder
34 cup cocoa powder
14 teaspoon salt
1 cup whole milk

To make Cupcakes: Preheat oven to 350°F. Line two standard muffin tins with cupcake liners and set aside.

In the bowl of a stand mixer, add butter and sugar. Using the flat beater attachment, cream together well. Add eggs and vanilla. While mixer is running, add flour, baking soda, baking powder, cocoa powder, and salt; continue mixing until well combined. Add milk slowly.

‌Scoop batter into prepared muffin tins, filling cups just above halfway.

Bake 15 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and allow to cool completely, about 1 hour, before frosting.


For Frosting

12 cup salted butter, softened
4 cups confectioners’ sugar
8 ounces cream cheese, softened
2 tablespoons heavy cream
10 chocolate sandwich cookies, crushed
48 mini chocolate sandwich cookies, whole

 
To make Frosting: 

In the bowl of a stand mixer, add butter, confectioners’ sugar, cream cheese, and heavy cream. Using the flat beater attachment, whip until light and fluffy. Add crushed cookies and mix until combined.

Scoop frosting into a piping bag fitted with a large star tip. Swirl a generous amount of frosting on each cupcake, creating a pointed mound. Stand a mini sandwich cookie upright on either side of pointed mount to create Mickey Mouse ears.


MIX IT UP


Frosting swirls are adorable, but if you prefer less frosting on your cupcakes, you can just use a knife to spread a thinner layer of frosting on top of the cupcakes—enough to push in the mouse ears.

What? It’s National Chocolate Cupcake Day, and I didn’t even know it! Guest Post by Sarah Husmann

A couple of days ago I decided I wanted to bake something sweet, but I didn’t want to go grocery shopping, and I had all the ingredients for chocolate cupcakes. I took out the cold ingredients last night before bed so they’d be room temperature this morning, woke up, and whipped them up after lunch. And voila!  Chocolate cupcakes with chocolate buttercream frosting in less than an hour! Sometimes making something basic is just what you need. Simple, delicious and fast. After baking them, I found it was National Chocolate Cupcake Day, and I didn’t even know it! Coincidence or fate? LOL!

I did not make any changes to the recipes I used.

TUESDAY TIPS: 10 Ways to Dress up a Plain Cupcake

SOPHIE LEAKE: 10 Ways to Dress up a Plain Cupcake

While gourmet cupcake bakeries are on the rise, there’s no need to pay top dollar at a bakery for super cute and tasty birthday cupcakes when you can make them for much cheaper on your own.  Check out these 10 ways to dress up a plain cupcake for your child’s next birthday.
  1. Flavored frosting with fruit makes an elegant cupcake decoration. Bake up your favorite vanilla or yellow cupcake and then add a few tablespoons of a fruit puree to the mix. Take the same fruit puree and add a tablespoon full to your favorite buttercream recipe. Now take some fresh fruit and top your frosted cupcake with it. This method works well with raspberries, strawberries, blackberries, or blueberries.
  2. Plain frosting with sprinkles let you know it’s a party. Instead of adding vanilla to your buttercream frosting add 1 to 2 teaspoons of cotton candy flavoring.  Frost your cupcakes like normal and sprinkle with jimmies. Sprinkles are always a fun and festive treat.
  3. Frost the cupcakes and then dip them in melted chocolate for a special treat. These special treats are called hi-hats.  Instead of making a normal buttercream frosting, make a meringue type frosting.  In a metal bowl beat 1 ¾ C sugar, ¼ C water, 3 large egg whites, and ¼ t of cream of tartar on high until it becomes frothy. Now place it over a pan of simmering water and continue to beat on high speed until you get stiff peaks. (They will hold their shape when you lift the beater.)  This step takes 10 to 12 minutes. Stir in 1 t of vanilla extract and then put the meringue into a pastry bag and pipe the tops of the cupcakes. Now melt a bag of semi-sweet chocolate chips and 3 T. of shortening in the microwave. Put the melted chocolate in a tall narrow container for dipping. Next, dip the cupcakes into the chocolate as if they were chocolate dipped ice cream cones and then allow them to cool.
  4. Use a cookie as a cupcake topper. If your child likes the combination of chocolate and peanut butter there’s a fun way to make a cupcake for him that combines both of his loves. Make your favorite chocolate cupcakes and allow them to cool.  In the meantime, make some buttercream frosting and add in ¼ C. of peanut butter. Frost the cupcakes with the peanut butter frosting and top with a peanut butter sandwich cookie.
  5. Create small decorations out of fondant. Fondant is made of shortening and sugar.  It rolls out like dough and you can buy it at most craft or baking stores.  Using gel colors you can color your fondant any color you’d like.  Dust the counter with powdered sugar and roll out the fondant so that it’s about ¼” thick.  Using tiny cookie cutters cut out shapes that will coordinate with the theme of your party.  You can lay the fondant on top of the frosted cupcake or let the fondant dry and then stand the shape up in the frosting.
  6. Give your cupcakes the airbrushed look.  No need to buy an expensive airbrush to get the airbrushed look. The same coloring comes in an aerosol can now and can be used on cupcakes.  Frost your cupcakes like normal and allow the frosting to crust (dry to the touch). Place the cupcakes on a newspaper covered surface. Using long strokes spray the top of the frosted cupcake.  Make sure to start and stop off of the cupcake. If you’d like you can make them half and half by blocking half of the cupcake with a piece of cardboard while you are spraying.
  7. Make S’mores cupcakes using a kitchen torch.  Instead of using frosting to frost your cupcake, use marshmallow cream. Have some mini chocolate bars or broken pieces of chocolate ready to stick into the marshmallow cream. Crush some graham crackers and keep them beside you in a bowl. Take a kitchen torch and toast the marshmallow cream, sprinkle with graham cracker crumbs, and stick a piece of chocolate into the marshmallow. 
  8. Dress up cookie dough cupcakes with mini chips and mini cookies. To make cookie dough cupcakes, take some store bought chocolate chip cookie dough and roll it into 1 inch balls.  Make your chocolate or vanilla cupcake batter as usual, but before baking add the cold cookie dough to the center of the cupcake. Make the cookie dough chunks big enough so they are not fully submerged in batter. Bake the cupcakes until a toothpick comes out clean. Frost with vanilla buttercream, sprinkle with mini chocolate chips, and top with a mini chocolate chip cookie.
  9. Edible sugared flowers will add a touch of whimsy to your cupcakes. Edible flowers are available at specialty grocery stores. Buy a mixture of edible flowers and lay them out on some waxed paper. Beat up an egg white and pour it into a shallow bowl. Pour some superfine sugar into another shallow bowl. Take your flowers, one at a time, and dip them first into the egg white and then into the sugar. Place the coated flowers back on the waxed paper to dry. Frost your cupcakes like normal and top right away with a sugared flower.
  10. Add chocolate cut-out flowers for a springtime birthday. Melt a cup of candy melts with 1 T of shortening. Spread it onto a piece of waxed paper about 1/8” thick. Place onto the bottom side of a cookie sheet and place in the refrigerator for about 5 minutes. Once the chocolate is set remove from the refrigerator. Take a small metal cookie cutter in the shape of a flower and dip it into a small bowl of hot water. Dry it off and quickly use the warm cookie cutter to cut out flowers from the chocolate. Frost the cupcakes with green frosting and apply the chocolate flowers to the cupcakes. Using a little frosting you can apply M&M’s to the centers of the flowers. Do one flower or a whole bouquet on each cupcake.
