Everybody dance The Black Bottom! See video clip below. I love Black Bottom Pie, but this pie is even more perfect for this time of year with the addition of pumpkin: Black Bottom Pumpkin Pie! And, if you don't make it today, bookmark it for Thanksgiving! It's a great twist on a great pie! Who doesn't love a layer of melted chocolate over a buttery crust topped by pumpkin? This recipe is from Epicurious.. and it's easy. I use a ready-made crust from Trader Joe's, but you can make your own -- either a regular buttery crust or a graham cracker crust.
BLACK BOTTOM PUMPKIN PIE
INGREDIENTS
BLACK-BOTTOM FILLING
1/3 cup heavy cream
1 tsp grated fresh ginger
8 oz good-quality semisweet chocolate, chopped
PUMPKIN FILLING
3/4 cup dark brown sugar, packed
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon cinnamon
pinch ground cloves
pinch ground ginger
1 can (15 oz) or 2 cups canned pumpkin (not pumpkin-pie filling)
2 large eggs
1 cup evaporated milk
1/8 tsp vanilla
DIRECTIONS
BLACK-BOTTOM FILLING
In saucepan over high heat, bring cream and ginger to boil. Immediately remove from heat, cover, and let steep for 30 minutes.
Put chocolate in a mixing bowl. Bring cream and ginger to a boil again, and strain cream into bowl of chocolate (discard ginger). Stir mixture until smooth.
PUMPKIN FILLING
In mixing bowl, combine sugar, flour, salt, and spices. Whisk in pumpkin and then eggs, one at a time. Stir in evaporated milk and vanilla.
TO ASSEMBLE:
Place cookie sheet in oven and preheat oven to 350 degrees.
Roll out crust, place in 9-inch metal pie pan, and pour in black-bottom filling.
Freeze for 10 minutes to firm up, then fill remainder of pie shell with pumpkin mixture.
Bake on preheated cookie sheet until crust is golden brown, about 50 minutes.
Cool for at least 2 hours before serving.
Have a piece great pie and dance The Black Bottom!

CHOCOLATE PUMPKIN PIE: Perfect for Thanksgiving

I've posted this recipe before, but I have to post again. This is by far the best and easiest Chocolate Pumpkin Pie recipe! This is from my friend Annmarie Kostyk, the Chocolate Goddess.
I love making this Easy Chocolate Pumpkin Pie for Thanksgiving. And, you can always change it up with a Chocolate Crust. You can never have too much chocolate!
CHOCOLATE PUMPKIN PIE
Ingredients
2 Tbsp flour
1 cup sugar
1 tsp cinnamon
1 can pumpkin (16 oz.)
1 unbaked pie shell (or make a chocolate cookie crust)
2 eggs, beaten
1 cup half and half
1 tsp vanilla
2/3 cup dark chocolate (chopped), melted with 1 tablespoon butter
Directions
Combine flour, sugar, cinnamon and pumpkin in a medium bowl. Mix well.
Add eggs.
Stir in half and half and chocolate.
Mix thoroughly and pour into pie shell.
Bake at 400 degrees for 10 minutes.
Reduce heat to 350 degrees and bake about 40 minutes longer, until custard tests done.

PUMPKIN PIE TRUFFLES: THANKSGIVING
If you read this blog, it shouldn't come as a surprise that I love Truffles. With Thanksgiving coming up, I was thinking about what to bring to the Feast. Pies are great, but Truffles can double as dessert as well as a hostess gift.
Luckily you have the choice of buying or making them. They're easy to make, but I am also quite fond of See's Candies Pumpkin Pie Truffle. Other premium Pumpkin Truffles are delicate with a combination of burnt caramel (Socola Chocolates Pumpkin Burnt Caramel Chocolate Truffles) or smooth 'unrobed' Pumpkin Spice Milk Chocolate Truffles from Neo Cocoa. I always have 'natural' pumpkin in the cupboard. Besides using it
for pies, truffles and cakes, it's great for doggie upset stomachs. I
also have Libby's pumpkin puree because I grew up with it, and sometimes
it's just what I want. I'm not much for making my own pumpkin puree, but don't let me stop you.
Truffles are simple to make. The first recipe is from FoodNetwork for Easy Pumpkin Truffles. They are just that--easy and delicious. The second recipe for Pumpkin Cheesecake Truffles is adapted from a recipe from Kraft. And, in case you want to experiment, I've added links to other Pumpkin Truffle and Pumpkin Pie Truffle recipes.
1. Easy Pumpkin Truffles
Ingredients
1 cup pumpkin puree
1/4 cup brown sugar
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground gloves
2 cups cream
1 pound dark chocolate, finely chopped
1 ounce unsalted butter, room temperature
1/4 cup Grand Marnier
6 ounces melted dark chocolate
3 ounces cocoa powder
Directions
In medium saucepan over low heat, combine pumpkin, brown sugar, and spices. Cook for 5 to 6 minutes, or until mixture reduces by half and pumpkin looks dry. Set aside.
In medium saucepan over high heat, add cream. When cream boils, take off heat.
In heatproof medium bowl, add chocolate and hot cream. Let mixture sit for minute, then slowly begin to stir, starting in center of bowl and working outwards.
Once chocolate and cream are evenly mixed, add pumpkin mixture and whisk to combine.
Add butter (and liqueur, if using) and whisk.
Cover tightly with plastic wrap and refrigerate until chilled.
On parchment-lined cookie sheet, scoop mixture into small balls using melon baller.
Place in refrigerator for 1 hour, or until chilled.
Remove truffles from refrigerator and dip each in melted chocolate.
Roll in cocoa powder and serve.
2. Pumpkin Cheesecake Truffles
Ingredients
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup graham cracker crumbs
1/4 cup powdered sugar
1 tsp pumpkin pie spice, divided
8 ounces Bittersweet Chocolate, chopped
Directions
Beat cream cheese in large bowl with mixer until creamy. Add graham crumbs, sugar, and 3/4 tsp. pumpkin pie spice; mix well.
Scoop cream cheese mixture into 22 (1-inch) balls, using about 1 Tbsp cream cheese mixture for each ball. Place on waxed paper-covered baking sheet. Freeze 10 min.
Melt chocolate. Dip cream cheese balls, 1 at a time, into melted chocolate, turning until evenly coated with chocolate. Return to baking sheet; sprinkle with remaining pumpkin pie spice.
Refrigerate 1 hour or until firm.

Double Layer Chocolate Pumpkin Mousse Pie: Canadian Thanksgiving
Since it's Canadian Thanksgiving, this recipe is from the Dairy Farmers of Canada website Dairy Goodness. Hope my North of the Border friends have a wonderful celebration. And, for those in the U.S., this Pie is fabulous for our Thanksgiving in late November.
The very first Thanksgiving celebration in North America took place in Canada when Martin Frobisher, an explorer from England, arrived in Newfoundland in 1578. He wanted to give thanks for his safe arrival to the New World. That means the first Thanksgiving in Canada was celebrated 43 years before the pilgrims landed in Plymouth, Massachusetts! For a few hundred years, Thanksgiving was celebrated in either late October or early November, before it was declared a Canadian National Holiday in 1879. It was then, that November 6th was set aside as the official Thanksgiving holiday. On January 31, 1957, Canadian Parliament announced that the second Monday in October would be Thanksgiving -- "a day of general thanksgiving to almighty God for the bountiful harvest with which Canada has been blessed."
Another reason for Canadian Thanksgiving taking place earlier than its U.S. counterpart is that Canada is geographically further north than the United States, causing the Canadian harvest season to arrive earlier than the American harvest season. But what are the differences between Canadian and American Thanksgiving, other than the date and history? Not much! Both Canadians and Americans celebrate Thanksgiving with parades, family gatherings, pumpkin pie and a whole lot of turkey! (Info from Kidzworld.com)
So here's a fabulous Double Layer Chocolate Pumpkin Pie for the Thanksgiving table.
Double Layer Chocolate Pumpkin Mousse Pie
Ingredients
Crust:
1-1/2 cups chocolate cookie crumbs (chocolate wafers that have been crushed)
1/4 cup unsalted butter, melted
Chocolate Ganache Layer:
8 oz bittersweet chocolate, chopped
2 Tbsp sweet butter, softened
1 cup whipping cream
Pumpkin Layer:
8 oz cream cheese, softened
1/2 cup packed light brown sugar
1 cup pumpkin puree
2 tsp pure vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp cloves
1 cup thick whipping cream
Whipped cream, to garnish
Freshly grated nutmeg
Directions
Crust:
In bowl, combine cookie crumbs and butter until moistened and pat evenly into bottom and up side of 10-inch deep pie plate. Bake in preheated 350 °F oven for about 10 minutes or until firm. Let cool.
Chocolate Ganache Layer:
Place chocolate and butter in bowl. In small saucepan bring cream to boil. Pour over chocolate and let stand for 1 minute. Slowly whisk chocolate until melted and smooth. Gently pour into cooled crust. Place in refrigerator for about 1 hour or until set.
Pumpkin Layer:
Meanwhile, in large bowl, beat cream cheese and sugar until fluffy. Beat in pumpkin, vanilla extract, cinnamon, ginger, and cloves until smooth.
Whip cream. Fold half of cream into pumpkin mixture until light. Fold in remaining whipped cream until well combined. Spread over top of chocolate layer and smooth top. Refrigerate for about 2 hours or until set and firm. (If you make ahead: you can cover and refrigerate for up to 2 days.)
Garnish with whipped cream and nutmeg before serving.

CHOCOLATE BOURBON PUMPKIN CHEESECAKE: Perfect for Thanksgiving

Chocolate Bourbon Pumpkin Cheesecake
Crust
2 cups gingersnap cookie crumbs (35 to 40 cookies)
1/4 cup butter, melted
Cheesecake
4 packages (8 oz. each) cream cheese, softened
1 1/2 cups sugar
1/4 cup all-purpose flour
4 eggs
4 Tbsp bourbon
1/2 cup canned pumpkin (not pumpkin pie mix)
1 1/2 tsp aromatic bitters
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla
3/4 cup semisweet chocolate chips, melted (or chopped dark chocolate)
Toppings (I consider topping optional..it's great without, but if you want to)
1/2 cup caramel topping (I have used Recchiuti)
2 tsp bourbon
Dash aromatic bitters
Toasted pecans (optional)
Directions
Heat oven to 300ºF. Grease 9-inch springform pan with shortening or cooking spray. Wrap outside bottom and side of pan with foil to prevent leaking. In small bowl, mix crust ingredients. Press mixture into bottom and one inch up side of pan. Bake eight to 10 minutes or until set. Cool for five minutes.
In large bowl, beat cream cheese with electric mixer on medium speed until smooth and creamy; do not overbeat. On low speed, gradually beat in sugar, then flour and then eggs (one at a time), just until blended. Remove half of cream cheese mixture (about 3 cups) into another large bowl; reserve.
Into remaining cream cheese mixture, stir 2 Tbsp bourbon, pumpkin, 1 1/2 tsp bitters, ginger, cinnamon, and nutmeg with whisk until smooth. Spoon over crust into pan. Into reserved 3 cups of filling, stir 2 Tbsp bourbon, vanilla, and melted chocolate. Pour mixture over pumpkin layer directly in middle of pan. (This will create layers so that each slice includes some of each flavor.)
To minimize cracking, place shallow pan half-full of hot water on lower oven rack. Bake cheesecake 80 to 90 minutes minutes, or until edges are set but center of cheesecake still jiggles slightly when moved.
Turn oven off, and open oven door at least four inches. Leave cheesecake in oven 30 minutes longer. Remove from oven; place on cooling rack. Without releasing side of pan, run your knife around edge of the pan to loosen cheesecake. Cool in pan on cooling rack for 30 minutes. Cover loosely; refrigerate at least six hours but no longer than 24 hours.
To release: Run knife around side of pan to loosen cheesecake again; carefully remove side of pan. Put cheesecake on serving plate.
I considered adding the rich topping, but I don't top this already rich cheesecake. Here's the original recipe in case you want it. Stir together caramel topping, 2 tsp bourbon and dash of bitters. To serve, drizzle with caramel and sprinkle with pecans. Cover and refrigerate any remaining cheesecake.

Chocolate Pumpkin Pie: Pumpkin Pie Day!

I love making this Easy Chocolate Pumpkin Pie. You can always add a chocolate crust if you want more chocolate.
Be sure and save this recipe for Thanksgiving!
CHOCOLATE PUMPKIN PIE
Ingredients
2 Tbsp flour
1 cup sugar
1 tsp cinnamon
1 can pumpkin (16 oz.)
1 unbaked pie shell (or make a chocolate cookie crust)
2 eggs, beaten
1 cup half and half
1 tsp vanilla
2/3 cup dark chocolate (chopped), melted with 1 tablespoon butter
Directions
Combine flour, sugar, cinnamon and pumpkin in a medium bowl. Mix well.
Add eggs.
Stir in half and half and chocolate.
Mix thoroughly and pour into pie shell.
Bake at 400 degrees for 10 minutes.
Reduce heat to 350 degrees and bake about 40 minutes longer, until custard tests done.

Chocolate Pecan Pie Recipe Round-Up
My husband loves Pecan Pie, especially at Thanksgiving. I'm more of a pumpkin pie kind of person. I've already posted several Chocolate Pumpkin Pie recipes (Double Layer Chocolate Pumpkin Mousse Pie, Chocolate Bourbon Pumpkin Cheesecake, and Pumpkin Pie Truffles), so today I'm posting a Pecan Pie Recipe Round-up. And, since I love Retro Ads, I'm posting this Retro Ad & Recipe for Karo Pecan Pie.

For me, Pecan Pie is all about the chocolate, corn syrup, pecans--and sometimes bourbon! I posted a Recipe Round-up of Kentucky Derby Pie in May, just in time for the Kentucky Derby. I also posted my friend Emily Stashower's Frozen Chocolate Pecan Pie. And, last November I posted a Recipe Round-up for Chocolate Pecan Pie. You see a pattern here.
Here are two more Chocolate Pecan Pie Recipes, because you should always have a few recipes to choose from.
Drunken Chocolate Pecan Pie
From the kitchen of Buddy Valastro
This recipe gives regular pecan pie an update with chocolate and chocolate liquor. The chocolate liquor is baked in the pie giving additional flavor!
Ingredients
1 cup pecans
1 cup sugar
3/4 cups corn syrup
2 Tbsp butter (melted)
2 tsp salt
3 large eggs (beaten)
1/4 cup chocolate liquor
Directions
Cover bottom of (baked) pie shell with pecans.
Mix sugar, corn syrup, salt, and eggs in double boiler.
After mixed, add melted butter, and chocolate liquor.
Fill pie shell 3/4 to rim with mixture. Pecans will float to top. Add additional pecans.
Bake 40-45 minutes at 350F
And, in case you want to take the easy way out, here's a great recipe for Pecan Pie Truffles.
This recipe is adapted from a 2012 issue of Southern Living for Kentucky Derby Truffles! I adapted the recipe slightly. This is such an easy recipe, and these are great! You have to make these! As always, use the very best ingredients for the best taste!
CHOCOLATE PECAN PIE TRUFFLES
Ingredients
12 ounces dark chocolate (70-85% cacao), chopped
1 -1/2 Tbsp sweet cold butter, cubed
2 tsp Madagascar vanilla extract
9 Tbsp heavy cream
1/4 cup good Kentucky Bourbon
1 (5.3-oz.) package pure butter shortbread cookies, crushed (I use Walker's)
2 cups finely chopped roasted, salted pecans
Directions
Combine first 3 ingredients in large glass bowl. Cook cream and bourbon in small saucepan over medium heat 3 to 4 minutes or until mixture is hot but not boiling. (Mixture will steam, and bubbles will form around edge of pan.) Pour cream mixture over chocolate. Let stand 1 minute.
Stir chocolate mixture until melted and smooth. (If mixture doesn't melt completely, microwave on HIGH 30 seconds.) Stir in crushed cookies. Cover and chill 3 hours or until firm.
Shape into 1-inch balls (about 2 tsp per ball). Roll in chopped pecans. Place on wax or parchment paper-lined baking sheets. Chill 1 hour. Store in airtight container in refrigerator up to 5 days.

Double Layer Chocolate Pumpkin Mousse Pie: Canadian Thanksgiving
I first celebrated Canadian Thanksgiving at a Bouchercon (the World Mystery Convention) that was held several years ago in Toronto. I confess, I didn't realize there was 'another' Thanksgiving. For me, Thanksgiving was about the Pilgrims, the Rock, the Turkeys. Same foods in Canada, but different date and reasons. So in case you're new to this holiday, here's some information on the origins of Canadian Thanksgiving which is more closely aligned to the traditions of Europe than those of the United States.
The very first Thanksgiving celebration in North America took place in Canada when Martin Frobisher, an explorer from England, arrived in Newfoundland in 1578. He wanted to give thanks for his safe arrival to the New World. That means the first Thanksgiving in Canada was celebrated 43 years before the pilgrims landed in Plymouth, Massachusetts! For a few hundred years, Thanksgiving was celebrated in either late October or early November, before it was declared a Canadian National Holiday in 1879. It was then, that November 6th was set aside as the official Thanksgiving holiday. On January 31, 1957, Canadian Parliament announced that the second Monday in October would be Thanksgiving -- "a day of general thanksgiving to almighty God for the bountiful harvest with which Canada has been blessed."
Another reason for Canadian Thanksgiving taking place earlier than its U.S. counterpart is that Canada is geographically further north than the United States, causing the Canadian harvest season to arrive earlier than the American harvest season. But what are the differences between Canadian and American Thanksgiving, other than the date? Not much! Both Canadians and Americans celebrate Thanksgiving with parades, family gatherings, pumpkin pie and a whole lot of turkey! (Info from Kidzworld.com)
So here's a fabulous Double Layer Chocolate Pumpkin Pie for the Thanksgiving table.
Double Layer Chocolate Pumpkin Mousse Pie
Ingredients
Crust:
1-1/2 cups chocolate cookie crumbs (chocolate wafers that have been crushed)
1/4 cup sweet butter, melted
Chocolate Ganache Layer:
8 oz bittersweet chocolate, chopped
2 Tbsp sweet butter, softened
1 cup whipping cream
Pumpkin Layer:
8 oz cream cheese, softened
1/2 cup packed light brown sugar
1 cup pumpkin puree
2 tsp Madagascar vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp cloves
1 cup thick whipping cream
Whipped cream, to garnish
Freshly grated nutmeg
Directions
Crust:
In bowl, combine cookie crumbs and butter until moistened and pat evenly into bottom and up side of 10-inch deep pie plate. Bake in preheated 350 °F oven for about 10 minutes or until firm. Let cool.
Chocolate Ganache Layer:
Place chocolate and butter in bowl. In small saucepan bring cream to boil. Pour over chocolate and let stand for 1 minute. Slowly whisk chocolate until melted and smooth. Gently pour into cooled crust. Place in refrigerator for about 1 hour or until set.

Meanwhile, in large bowl, beat Cream Cheese and Sugar until fluffy. Beat in pumpkin, vanilla extract, cinnamon, ginger and cloves until smooth.

Quadruple Chocolate Pumpkin Pie: National Pumpkin Day
This is my all time favorite Chocolate Pumpkin Pie recipe. It's from Martha Stewart, and she labels it Triple Chocolate Pumpkin Pie. I take it a step further and make a Chocolate Cookie Crust, so it's a Quadruple Chocolate Pumpkin Pie. OMG! This is sooo smooth and delicious.
QUADRUPLE CHOCOLATE PUMPKIN PIE
For the Filling
3 ounces dark chocolate (70 % cacao) finely chopped
6 ounces chocolate (60 % cacao), chopped
2 ounces (4 tablespoons) sweet butter, cut into small pieces
1 can (15 ounces) solid-pack pumpkin
1 can (12 ounces) evaporated milk
3/4 cup packed light-brown sugar
3 large eggs
1 tablespoon cornstarch
1 teaspoon pure Madagascar vanilla extract
1 1/2 teaspoons coarse salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Ground cloves
1 ounce milk chocolate, melted
Chocolate Cookie Pie Crust (yet another variation)
2 1/2 cups chocolate wafers
8 Tbsp sweet butter
Melt butter.
Put chocolate wafers in plastic bag and crush with spoon or rolling pin. Should be pea size.
Combine melted butter and ground chocolate wafers.
Press ingredients into 9-1/2 inch buttered pie pan--bottom and up the sides.
Bake for 10 minutes at 325.
Directions
Immediately after taking pie shell out of oven, sprinkle darker chocolate over bottom of crust.Return to oven to melt chocolate, about 1 minute.
Spread chocolate in thin layer on bottom and up sides.
Let cool on a wire rack. Reduce oven temperature to 325 degrees.
Make filling
In large heatproof bowl set over pot of simmering water, melt semisweet chocolate and butter, stirring until smooth. Remove from heat.
Mix pumpkin, milk, brown sugar, eggs, cornstarch, vanilla, salt, cinnamon, ginger, nutmeg, and a pinch of cloves in medium bowl.
Whisk 1/3 pumpkin mixture into chocolate mixture.
Whisk in remaining pumpkin mixture until completely incorporated.
Transfer pie dish to rimmed baking sheet, and pour pumpkin mixture into crust.
Bake until center is set but still wobbly, 55 to 60 minutes.
Let cool in pie dish on wire rack.
Refrigerate until well chilled, at least 8 hours (preferably overnight).
Before serving, drizzle melted milk chocolate on top. Serve immediately.
