CHOCOLATE COCA-COLA CAKE for a Retro Fourth of July!

Celebrate July 4 with a Chocolate Cake. Get out your 'Pyrex' dish and bake a Retro Chocolate Coca Cola Cake for the holiday! I've also included a recipe for Chocolate Coca-Cola Icing.

CHOCOLATE COCA-COLA CAKE

Ingredients
2 cups unsifted cake flour
2 cups sugar
2 sticks unsalted butter
2 Tbsp cocoa
1 cup Coca-Cola
1/2 cup buttermilk
1 tsp baking soda
2 eggs
1 tsp vanilla
1/4 tsp salt

Directions
Sift together flour and sugar. Heat to boiling point the butter, cocoa, and Coca-Cola. Add to flour and sugar mixture. Stir to blend. Add buttermilk, soda, eggs, salt, and vanilla. Stir with spoon until well blended. Pour into greased and floured oblong pan (Pyrex dish). Bake at 350 degrees for 30-35 minutes. Batter will be thin. Ice while hot.

COCA-COLA ICING

1/2 cup butter
6 Tbsp Coca-Cola
1 box confectioners' sugar
1 tsp vanilla
2 Tbsp cocoa

Heat to boiling point -- butter, cocoa and Cola-Cola. Add confectioners' sugar and vanilla; stir to blend. Using a fork, make holes in hot cake and pour hot icing over it.

SUMMER SOLSTICE CHOCOLATE COCA COLA ICE CREAM SODA

I love the Summer Solstice, the longest day of the year, and how perfect is it that today is also Ice Cream Soda Day? Here's an easy way to celebrate both holidays with this Mid-Century Recipe for Chocolate Coca Cola Ice Cream Soda.

SUMMER SOLSTICE CHOCOLATE COCA COLA ICE CREAM SODA

For each Chocolate Coke Ice Cream Soda, you'll need a tall glass, 3 Tbsp chocolate syrup, 2 Tbsp half & half, coca cola, chocolate ice cream, whipped cream.

Chill glass in freezer.

Pour chocolate syrup into bottom of glass. Add half & half and blend together. Add coca cola to 3/4 of glass.

Add 2-3 scoops of chocolate ice cream. Stir.

Top Ice Cream Soda with whipped cream and maraschino cherry.

DOUBLE CHOCOLATE COCA COLA CAKE: Retro Ad with Recipe for St. Nicholas Day!

Happy St. Nicholas (aka Santa) Day! I love this recipe for Double Chocolate Coca Cola Christmas Cake. It's really good and easy. So Retro to use Coca Cola, but obviously St. Nicholas aka Santa likes it!


The History of St. Nicholas Day: 

St. Nicholas derived from Nicholas of Myra and was a bishop in 4th century Greece. He was known for selling off his own items and then giving the money to the poor. He would commonly leave coins in people’s shoes and dedicated his entire life to serving people who were sick and suffering. This is how he gained his saint status, and is what inspired St. Nicholas Day (also commonly known as Feast Day or the Feast of St. Nicholas). 

One well-known story of St. Nicholas involves a dowry for a father’s three daughters. In the third century, it was common for fathers to offer money to prospective husbands. However, one poor father with three daughters did not have money to do this. St. Nicholas paid for all three daughters’ dowries by leaving gold in their shoes. 

As time passed St. Nicholas Day began in different ways. In Italy, this day was celebrated with feasts, gift-giving, and festivals. In other European countries like Germany and the Netherlands, children would leave their shoes or special St. Nicholas boot in front of the fireplace or front door at night and find presents in them in the morning. 

The history of St. Nicholas and his good deeds was part of the inspiration of the modern-day Santa Claus and Father Christmas, which is why there are some current traditions of leaving gifts in people’s boots or shoes (or stockings).

CHOCOLATE COCA COLA CAKE for a Retro Fourth of July!

Tomorrow is the Fourth of July, and what better way to celebrate than with a Retro All American Chocolate Coca Cola Cake. Get out your 'Pyrex' dish and bake this Cake for the holiday! I've also included a recipe for Chocolate Coca-Cola Icing. It's a two-fer!

CHOCOLATE COCA-COLA CAKE

Ingredients
2 cups unsifted cake flour
2 cups sugar

1 cup Coca-Cola
1/2 cup buttermilk
1 tsp baking soda

1 tsp vanilla

I love Midsummer, and how perfect is it that today is also Ice Cream Soda Day. Here's an easy way to celebrate Midsummer with this Mid-Century Midsummer recipe for Chocolate Coca Cola Ice Cream Soda.

MIDSUMMER MAGIC CHOCOLATE COCA COLA ICE CREAM SODA

For each Chocolate Coke Ice Cream Soda, you'll need a tall glass, 3 Tbsp chocolate syrup, 2 Tbsp half & half, coca cola, chocolate ice cream, whipped cream.

Chill glass in freezer.

Pour chocolate syrup into bottom of glass. Add half & half and blend together. Add coca cola to 3/4 of glass.

CHOCOLATE COCA COLA CHICKEN WINGS: Super Bowl Sunday!!!

Looking for a Savory Chocolate Super Bowl Recipe? You'll love these Chocolate Coca Cola Chicken Wings -- fabulous for SuperBowl Sunday! This recipe is adapted from Michael Siry of Duke's Original Roadhouse and Big Daddy's Restaurant and appeared on the Today Show a few years ago along with two other chicken wing recipes.

CHOCOLATE COCA COLA CHICKEN WINGS

Ingredients
4 cans Coca Cola
1/2 cup brown sugar
2 Tbsp Worchestershire sauce
1 habanera, minced
1-1/2 cups ketchup
1/2 cup aged balsamic vinegar
1/4 cup chocolate sauce
2 garlic cloves, smashed
1 tsp kosher salt
1/4 cup white sugar
1/2 tsp. orange zest
1 stick of butter
1/2 cup white vinegar

Frying
Brined chicken wings
2 cups flour
1/4 cup salt
2 Tbsp ground black pepper

Baking
Brined chicken wings
2 cups flour
1/4 cup salt
2 Tbsp ground black pepper
Vegetable cooking spray

Directions 
1. Add all ingredients (except butter and white vinegar) into 2-quart saucepan.
2. Bring to boil and simmer until 3/4 reduced.
3. Add butter and vinegar.
4. Keep sauce warm and toss with wings.

Frying recipe:
1. Drain wings from brine, toss chicken wings in flour and place on racked sheet pan.
2. Let stand for 5 minutes; during that time preheat fryer to 325 degrees.
3. Fry wings in batches for 10-13 minutes until wings start to float.
4. Place on racked sheet pan to cool.
5. Toss in sauce.

Baking recipe:
1. Drain wings from brine and toss chicken wings in flour and place on racked sheet pan.
2. Let stand for 5 minutes; during that time preheat oven to 325 degrees.
3. Spray wings with vegetable oil spray.
4. Bake wings for 20 minutes (wings should reach internal temp of 150).
5. Place on racked sheet pan to cool.
6. Toss in sauce.

CHOCOLATE COCA COLA CHICKEN WINGS

Ingredients
4 cans Coca Cola
1/2 cup brown sugar
2 Tbsp Worchestershire sauce
1 habanera, minced
1-1/2 cups ketchup
1/2 cup aged balsamic vinegar
1/4 cup chocolate sauce
2 garlic cloves, smashed
1 tsp kosher salt
1/4 cup white sugar
1/2 tsp. orange zest
1 stick of butter
1/2 cup white vinegar

Frying
Brined chicken wings
2 cups flour
1/4 cup salt
2 Tbsp ground black pepper

Baking
Brined chicken wings
2 cups flour
1/4 cup salt
2 Tbsp ground black pepper
Vegetable cooking spray

Directions 
1. Add all ingredients (except butter and white vinegar) into 2-quart saucepan.
2. Bring to boil and simmer until 3/4 reduced.
3. Add butter and vinegar.
4. Keep sauce warm and toss with wings.

Frying recipe:
1. Drain wings from brine, toss chicken wings in flour and place on racked sheet pan.
2. Let stand for 5 minutes; during that time preheat fryer to 325 degrees.
3. Fry wings in batches for 10-13 minutes until wings start to float.
4. Place on racked sheet pan to cool.
5. Toss in sauce.

So, get out your 'Pyrex' dish and bake a Retro Chocolate Coca Cola Cake for the holiday! I've also included a recipe for Chocolate Coca-Cola Icing.


CHOCOLATE COCA-COLA CAKE

4. Bake wings for 20 minutes (wings should reach internal temp of 150).
5. Place on racked sheet pan to cool.
6. Toss in sauce.
