The weather here is warm and beautiful for Memorial Day, so I thought I'd post this fun recipe for King Louie's Banana Boats from one of my 'Theme" Cookbooks: Cooking with Mickey and Friends by Pat Baird. You'll "go ape" over these. Perfect for the Barbecue -- or oven. They're fun to make with the kids.
Since we barbecue all year round, I often make these on the grill, but you can just as easily follow the directions and make them in the toaster oven.
And, as Mickey reminds us, Bananas are a good source of potassium and carbohydrates. Use a good dark chocolate (broken up) or high quality dark chocolate chips, and you're adding antioxidants. You can make your own marshmallows, too, or not :-) You'll love King Louie's Banana Boats. You'll want to make more than one!

King Louie's Banana Boats
The weather promises to be warm and beautiful this weekend and tomorrow is National Banana Lovers Day, so I thought I'd post this fun recipe for King Louie's Banana Boats from one of my 'Theme" Cookbooks: Cooking with Mickey and Friends by Pat Baird. You'll go Ape over these. They're fun to make with the kids.
Since we barbecue all year round, I often make these on the grill, but you can just as easily follow the directions and make them in the toaster oven.

Banana Boats: More chocolate for 4th of July

Banana Boats: This is a no-fuss dessert that can include chocolate or not. this is an "ooey gooey" dessert. Bay Area Bites thanks Bartender Bill from Orson for this treat!
Ingredients:
Bananas (As many as you need. Estimate 1 per person)
Chocolate chips, butterscotch chips, peanut butter chips, sweetened coconut (Or whatever other toppings you fancy.)
Foil
Preparation:
1. Choose your bananas. Ripened until perfectly spotted are sweeter.
2. Slit the banana lengthwise.
3. Stuff them with any combination of toppings you desire. Dark chocolate and butterscotch go well together.
4. Line your grill with foil, and place the bananas on top.
5. Grill with the cover on until toppings get melty and delicious.
6. Eat with a spoon.
Since I have so much dark chocolate around, I tried different chocolate in different bananas. Yowza, yowza. You're going to love this. So easy and soooo good!
