Individual Chocolate Soufflés: Chocolate Souffle Day
Individual Chocolate Soufflés
Prep and Cook Time: 25 minutes. You can fill the soufflé dishes up to 1 day before baking and chill them (allow up to 5 extra minutes to bake).
Here's a helpful hint from Sunset: increase or decrease the number of soufflés with this simple formula: For each soufflé, use 1/2 tsp. butter, 1 tbsp. sugar, 1 oz. chocolate, 1 tbsp. milk, 1/2 egg yolk, 1 egg white, and a small pinch of both salt and cream of tartar.
Ingredients
1 Tbsp unsalted butter, plus more for dishes
6 Tbsp sugar, plus more for dishes
6 ounces bittersweet chocolate, chopped (use the very best quality)*
6 Tbsp milk
3 egg yolks
6 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
The Sunset recipe tops the soufflés with Vanilla Bean Cream, but I use fresh whipped cream or just eat as is.
Directions
Preheat oven to 375°. Generously butter six 8-oz. soufflé dishes. Sprinkle butter with sugar to coat. Put dishes on baking sheet and set aside.
Bring 1 inch of water to boil in medium frying pan. Put chocolate, milk, and 1 Tbsp butter in small metal bowl. Put bowl in water and take pan off heat. Stir occasionally until chocolate melts. Remove bowl from water, mix in egg yolks, and set aside. (You can melt chocolate in a different way, if you'd like, but this is an interesting technique and controls the heat well.)
In large clean bowl, beat egg whites, salt, and cream of tartar until soft peaks form. Sprinkle in 6 Tbsp sugar and beat until stiff peaks form.
Whisk 1/4 of beaten egg whites into chocolate mixture. Fold chocolate mixture into remaining egg whites. Divide mixture evenly among prepared soufflé dishes and bake until set but still soft in center, 15 to 20 minutes. Serve immediately, with whipped cream.
Serve with demitasse spoons to savor every bite.
Remember, you can fill the soufflée dishes up to 1 day before baking and chill them (allow up to 5 extra minutes to bake).

EASY KAHLUA TRUFFLES: National Kahlua Day!
EASY KAHLUA TRUFFLES
Ingredients
8 oz dark chocolate (the better the chocolate, the better these will taste!)
3 Tbsp Kahlua
2 Tbsp unsalted butter
1/2 cup cocoa powder
Directions
Melt chocolate and butter in top of double boiler.
Mix Kahlua into chocolate and butter and beat until smooth.
Put chocolate in refrigerator until semi-soft (but not rock hard).
Put 1/2 cup cocoa powder on flat plate.
With melon baller, form small balls of chocolate (or roll by hand) and drop onto plate of cocoa powder. Roll around so completely covered.
Put on parchment lined plate or cookie sheet.
Repeat with all chocolate.
When truffles are set and hardened, shake off excess cocoa powder and store in sealed container or EAT!!

SUGARED CHOCOLATE BEIGNETS: Mardi Gras
Coffee with Chicory is so New Orleans, and you'll want to make David Guas & Raquel Pelzel's fabulous recipe for Chocolate Cupped Cakes with Coffee & Chicory.
What goes with Coffee with Chicory? Well, Beignets, of course, and they should definitely be Chocolate! Might not find these chocolate ones at Cafe du Monde, but they could be on your breakfast table. These Sugared Chocolate Beignets are easy to make, and so delicious. Beignets are usually fried in vegetable oil (cottonseed oil at Cafe du Monde), but this recipe calls for baking (healthier and easier). Recipe is from Sunset's Best Recipes of 2010.
SUGARED CHOCOLATE BEIGNETS
Time: 1 hour, plus freezing time. These doughnuts can be prepared ahead, requiring only a quick baking once your guests arrive.
Ingredients:
2 Tbsp corn syrup

4 ounces chopped bittersweet chocolate
2 sheets (17 ounces total) cold thawed puff pastry dough
1 large egg
1/2 cup sugar
Directions
Combine corn syrup and cream in microwave-safe container. Heat in 30-second intervals until boiling. Put chocolate in bowl and pour hot cream on top. Stir chocolate until smooth, then chill, stirring often, until firm, about 20 minutes.
Meanwhile, line 2 baking sheets with parchment paper. On lightly floured surface with lightly floured rolling pin, roll each pastry dough sheet into a 12-inch square. Cut each square into 16 smaller squares and transfer to baking sheet.
In bowl, lightly whisk egg and 1 Tbsp water to blend, then brush over pastry squares. Spoon about 1 tsp chocolate into center of each square. Fold 1 corner of each square over to meet opposite corner, forming triangle. Press edges to seal. Use a 2 1/2-inch round cutter to trim corners of triangle and form shape that resembles three-quarter moon. Wrap trays with plastic wrap and freeze at least 1 hour and up to 1 week. (To save space, after 30 minutes of freezing, put pastries in resealable plastic bags in freezer.)
Preheat oven to 400°. Bake pastries, switching pan positions once, until golden brown, about 15 minutes. Let cool 5 minutes. Put sugar in a bowl and turn beignets in sugar to coat.
Serve immediately.

GOOBERS: National Chocolate Covered Nuts Day
Goobers were introduced in the United States in 1925 by the Blumenthal Chocolate Company. Nestlé acquired the brand in 1984. A large number of other chocolate covered peanut brands exist, but Goobers was the original, at least for me. Peanut M&M's, came much later, and when they were introduced, I liked them, too, but not at the movies. I was a traditionalist. Peanut M&M's are nothing like Goobers. Peanut M&M's have larger peanuts, and a hardy candy shell covers the chocolate and the peanut. Goobers are inconsistent in size which I consider part of their charm and enjoyment. Often you'll just get chocolate without the nut. Occasionally you'll even get a raisinet. Whether or not that's a quality control issue, I don't care. It was always a surprise and a good one.
I'd like to say I've moved on from Goobers, but I really haven't. Oh yes, I love dark chocolate more than milk, and, especially with chocolate covered nuts. Also, the quality of the chocolate as well as the freshness of the nut is very important. As a Judge at this year's San Francisco International Chocolate Salon, I'll be taking all this into consideration when I judge the toffees and chocolate covered nut truffles, but I'll always have a place in my heart for Goobers.

MARDI GRAS CHOCOLATE-FILLED KING CAKE
Epiphany comes from a Greek word that means "to show." Jesus first showed himself to the three wisemen and to the world on this day. As a symbol of this Day, a tiny plastic baby is placed inside each King Cake. Whoever gets the baby is considered lucky and has to keep the tradition going by bringing a king cake to nthe next party. The King Cake tradition is thought to have been brought to New Orleans from France in 1870.
Each cake is decorated in the traditional Mardi Gras colors - purple representing justice, green representing faith, and gold representing power. The varieties of King Cake range from cinnamon to cream cheese to guava, and I've heard there's event a cricket-based king cake made by a New Orleans insectarium. That might not be for you, but a King Cake filled with Chocolate. Yes!
Here's a really easy recipe for Chocolate-Filled King Cake. Don't forget the Baby!
Chocolate Filled King Cake
INGREDIENTSCAKE
1 cup whole milk
1/4 cup unsalted butter, melted
2 (.25 ounce) packets active dry yeast
2/3 cup warm water
1/2 cup white sugar
2 large eggs
1/2 teaspoon nutmeg
1 1/2 teaspoons salt
5 1/2 cups all-purpose flour
CHOCOLATE FILLING
1/3 cup granulated sugar
1/2 teaspoon salt
3 tablespoons flour
3/4 cup half & half
5 egg yolks
2 teaspoons pure vanilla extract
1/4 cup chocolate chips
FROSTING
4 cups confectioners' sugar
2/3 cup melted butter
2 teaspoons pure vanilla extract
3-6 Tbsp hot water
Purple, Green, and Yellow sugar crystals for decoration
DIRECTIONS
CAKE
Heat milk until steaming, not boiling. Immediately remove from heat and stir in 1/4 cup of melted butter. Allow mixture to cool to room temperature. In large bowl, dissolve 2 packets of yeast in warm water with 1 tablespoon white sugar. Let stand about 10 minutes. Mixture will look slightly creamy and begin bubbling.
When yeast mixture starts bubbling, add cooled milk mixture. Whisk in eggs. Stir in remaining white sugar, nutmeg, and salt. Beat flour into milk/egg mixture about one cup at a time. When dough pulls together, turn out onto lightly floured surface and knead until elastic and smooth. (about 10 minutes)
Lightly oil large bowl, place dough in tbowl and turn to coat with oil. Cover with damp cloth or plastic wrap and let rise in warm place until doubled in volume. (about 2-3 hours) When dough has doubled in size, turn out on lightly floured surface, and punch dough down to remove air. Divide dough in half.
CHOCOLATE FILLING
Whisk sugar, salt, flour, half and half, and egg yolks together in small saucepan on medium heat. Stir constantly for about 5 minutes, or until mixture thickens. Remove from heat. Stir in vanilla extract and chocolate until chocolate melts. Let chocolate filling cool for 5 minutes.
On floured surface, roll dough halves out into large rectangles (about 10x15 inches). Brush dough with melted butter. Spread chocolate filling evenly over dough and roll up each half tightly, beginning atwide side. Bring ends of each roll together to form 2 oval shaped rings. Place each ring on prepared cookie sheet.
With scissors, make cuts about 1/3 of way through rings at 1 inch intervals. Let cakes sit and rise in warm spot until double in size. (about 30-45 minutes)
Preheat oven to 375 degrees F.
Bake cakes in preheated oven for about 25-30 minutes.
FROSTING
While king cake is baking, mix powdered sugar, melted butter, and vanilla extract. Add hot water, one tablespoon at time, until desired consistency.
When you take king cake out of oven, push small plastic 'baby into bottom of cake.
Frost while warm.
Finish with sprinkles of purple, green, and yellow sugar crystals.

CHOCOLATE CHIP BANANA BREAD: Go Bananas!

I have several recipes for Banana Bread, and every time I make banana bread, I change it up a bit. It usually depends on what's in the pantry, but mostly it doesn't matter. Two musts: baking soda and over ripe bananas--black and squishy, if possible!
The other day I was out of whole milk, so I used 1/2 -half and half and 1/2 -two percent. I actually prefer buttermilk, but use what you have. Oil or butter? Well, I used butter this last time, but oil works just as well, and I think I might even prefer it. I did think about olive oil, but opted for butter! French butter vs. domestic in baking? I think regular butter works better. I know, that may be a surprise, but French butter has more fat and changes the banana bread, so I save my French butter for buttering the bread after it's baked. As always, I add chocolate chips. Oh, and this is a one bowl recipe! How easy is that?
CHOCOLATE CHIP BANANA BREAD
Makes 1 loaf--easily doubled!
Ingredients
1/2 cup unsalted butter, melted
1 cup sugar
2 large eggs
3 medium-sized bananas (I used 4 smaller ones), very ripe
1/4 cup milk
1 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1/2 cup chopped nuts (I used walnuts)
1/2 cup + chocolate chips
Directions
Preheat oven to 350°F. Line 8 x 5 loaf pan with parchment, letting excess hang over sides. Spray inside with nonstick cooking spray. (this last time I buttered the pan and then used some flour)
Whisk together melted butter and sugar in mixing bowl until combined. (If you cream the sugar and butter, you'll have a more cake-like banana bread--always a choice!)
Add eggs and whisk until combined and mixture is smooth.
Whisk milk and vanilla into batter.
Peel bananas and add to bowl. Using fork, mash them into batter. Leave bananas as chunky or as smooth as you prefer.
Add flour, baking soda, and salt to bowl. Switch to spatula and stir until ingredients are just barely combined and no more dry flour is visible. (Don't overstir)
Fold in nuts and chocolate chips.
Pour batter into prepared loaf pan. Smooth top of batter.
Bake 55 to 65 minutes: Bake until top of banana bread is dark brown with some yellow insides showing (there's usually a crack down the top) and toothpick inserted into middle comes out clean. Baking time varies, so start checking around 50 minutes or so.
Cool in pan on rack for 10 minutes.
Lift loaf out of pan and set on cooling rack to cool for another 10 minutes before slicing.

FLOURLESS CHOCOLATE MARGARITA CAKE: National Margarita Day!
Flourless Chocolate Margarita Cake
Ingredients
6 ounces bittersweet chocolate, chopped
10 Tbsp unsalted butter, softened
6 eggs
1 1/4 cups superfine sugar*
1 cup almond meal/flour
4 tsp unsweetened cocoa powder, sifted
1 lime, zest and juice
Confectioner's sugar to dust (optional)
1 recipe Margarita Cream (recipe below)
Directions
Preheat oven to 350 degrees F, line bottom of a 9-inch springform pan with parchment paper, and butter sides of pan.
Melt chocolate and butter together either in a heatproof bowl suspended over a saucepan of simmering water or in a microwave 30 seconds at a time until melted. Set aside to cool slightly.
With electric mixer, beat eggs and sugar together until about tripled in volume, pale, and mousse-like. Mix almond meal with the cocoa powder. Gently fold into egg mixture, followed by the slightly cooled chocolate mixture. Fold in lime zest and juice.
Pour and scrape into prepared pan.
Bake 40 to 45 minutes.
Cake will be just firm on top but still have a bit of a shake below.
Remove from oven.
Cool cake in pan on a wire rack.
Once slightly cool, drape clean kitchen towel over cake to stop it from getting too crusty, though a cracked and cratered surface is to be expected.
When completely cool, loosen cake edges from pan using a metal spatula or knife.
Unmold and dust with confectioner's sugar.
Serve with Margarita Cream.
Margarita Cream
Ingredients
1/4 cup lime juice
1 tablespoon Tequila
1 tablespoon Triple sec or Cointreau
3/4 cup confectioners sugar
1 cup heavy cream
Directions
Whip heavy cream in separate bowl until it holds its shape. Whisk in margarita mixture and keep whisking until mixture is light and aerated.
Stir lime juice, tequila, and triple sec or Cointreau together in large bowl. Whisk in confectioner's sugar and let it dissolve in the liquid.
*Superfine sugar is not powdered sugar. It's granulated sugar that is ground even finer than regular sugar. It's also known as castor sugar. To make your own, put the amount of granulated white sugar called for, plus 2 extra tsp, in the recipe and put in food processor. Process for 1-2 minutes until it feels like fine sand. Be sure and let it rest before opening your food processor.

CHOCOLATE STICKY BUNS: National Sticky Buns Day
Chocolate Sticky Buns aka Chocolate Cinnamon Buns
Ingredients
3/4 cup warm water (not hot - 110 to 115 degrees)
1 package active dry yeast
1/4 cup shortening
1 teaspoon salt
1/4 cup sugar
1 egg
1/3 cup cocoa (use DARK cocoa for richness)
2 and 1/4 cups sifted flour
1 Tablespoon soft unsalted butter
1 - 1/2 teaspoons cinnamon
3 Tablespoons sugar
chopped pistachio nuts (or almonds or pecans)
Directions
In mixer bowl, dissolve yeast in warm water. Add shortening, salt, sugar, egg, cocoa, and 1 cup flour. Beat 2 minutes, medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl. Stir in remaining flour; blend well. Scrape sides of bowl.
Cover with cloth; let rise in warm place (85 degrees) until double in bulk, about 1 hour. (If kitchen is cool, place dough on rack over bowl of hot water; cover completely with towel.)
Stir down by beating 25 strokes. Turn soft dough out on well floured cloth-covered board.
Roll into rectangle, 12 x 9". Spread with butter; sprinkle with cinnamon-sugar mixture. Roll up, beginning at wide side. Pinch edge into roll. Cut 12 pieces.
Place in greased 9" square pan. Let rise in warm place (85 degrees) until double, about 40 minutes.
Heat oven to 375 degrees. Bake 25 minutes.
Remove from pan, frost top immediately with icing (3/4 cup sifted confectioners' sugar moistened with cream or milk to spreading consistency.) Sprinkle with chopped nuts.
Serve warm.

COCOA-RAISIN CUFFINS aka Cocoa-Raisin Cake Muffins
Ingredients
1/4 cup butter, melted
1/4 cup cocoa
3/4 cup apple sauce
1-1/4 cups flour
1 cup granulated sugar
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 egg, slightly beaten
1/2 cup raisins
Directions
Preheat oven to 375 degrees F. In large bowl, mix together flour, sugar, baking soda, cinnamon, nutmeg, and salt. In another bowl, blend together butter and cocoa. Add applesauce and pour into flour mixture. Add egg, stirring just until moistened and blended.
Fold in raisins. Spoon batter into greased or Pam-sprayed medium-size muffin cups, filling each about half-full.
Bake at 350 F for 20 minutes.

JUNIOR MINTS CHEESECAKE: National Chocolate Mint Day!

Junior Mints are a candy consisting of small rounds of mint filling (with a dimple on one side) inside a dark chocolate coating. They are currently produced by Tootsie Roll Industries.
History: Junior Mints were introduced in 1949 by the James O. Welch Company, manufacturers of candies and candy bars such as Sugar Babies, Welch's Fudge, and Pom Poms. The name of the product is a pun on Sally Benson's Junior Miss, a collection of her stories from The New Yorker, which were adapted by Jerome Chodorov and Joseph Fields into a successful play, directed by Moss Hart. Junior Miss ran on Broadway from 1941 to 1943. In 1945, the play was adapted to film, with George Seaton directing Peggy Ann Garner in the lead role. The Junior Miss radio series, starring Barbara Whiting, was being broadcast weekly on CBS at the time Junior Mints were first marketed in 1949. Welch created a product sold at movie theater concession stands and identified with a specific movie and radio series and displaying a name that sounded almost exactly like that property–yet different enough that it avoided any fees for licensing and merchandising. Junior Mints quickly became a popular candy, and one product in the line is the three oz. box marketed as the "Theater Size Junior Mints Concession Candy."

JUNIOR MINTS CHEESECAKE
Ingredients
6 ounces Junior Mints (two 3 ounce packages)
3 (8 ounce) packages of cream cheese, softened
2/3 cup sugar
3 eggs
1 tsp vanilla extract
Chocolate crumb crust for a 9 inch springform pan (see below)
Directions
Put Junior Mints in freezer.
In electric mixer, combine cream cheese and sugar until smooth.
Add eggs, one at a time, beating well after each addition.
Stir in vanilla.
Pour into crust.
Chop cold Junior Mints and sprinkle on cheesecake.
Bake at 350 degrees for 40-45 minutes or until just set.
Cool on wire rack, then chill several hours or overnight. Makes 8 servings.
Chocolate Crust:
Combine 2 cups crushed chocolate wafers (I whirl them in the blender) with 6 Tbsp melted butter.
Press into bottom and up sides of pan.

HELLMAN'S CHOCOLATE MAYONNAISE CAKE: Retro Ad with Recipe
HELLMANN'S CHOCOLATE MAYONNAISE CAKE
Ingredients
1 box (18 oz.) chocolate cake mix
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 cup water
3 eggs
1 tsp ground cinnamon (optional)
Directions
Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.
Beat cake mix, Hellmann's® or Best Foods® Real Mayonnaise, water, eggs and cinnamon 30 seconds in large bowl with electric mixer on low speed. Beat on medium speed, scraping sides occasionally, 2 minutes.
Pour batter into prepared pans.
Bake 30 minutes or until toothpick inserted in centers comes out clean.
Cool 10 minutes on wire rack; remove from pans and cool completely.
Sprinkle with confectioners sugar or fill and frost.
*Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.
VARIATIONS: For A PECAN COCONUT TOPPED CAKE...combine 1 cup flaked coconut, 2/3 cup firmly packed brown sugar and 1/2 cup chopped pecans, then sprinkle over cake batter in 13 x 9-inch baking pan. Bake 1 hour or until toothpick inserted in center comes out clean.
For A BLACK FOREST CHOCOLATE CAKE...do not flour baking pan. Evenly spread 2 cans (21 oz. ea.) cherry pie filling over bottom of 13 x 9-inch baking pan, top with prepared cake batter and bake 1 hour or until toothpick inserted in center comes out clean. Cool completely, then turn upside down onto serving platter.
For A DECADENT CHOCOLATE LAVA CAKE...combine 2 packages (3.4 ounces each) instant pudding, 2 cups water, 2 cups milk and 1/3 cup sugar until blended, then pour over cake batter in 13 x 9-inch baking pan. Bake 1 hour or until toothpick inserted along edge comes out clean and serve warm.

Café Au Lait Coffee Cake: National Café Au Lait Day
To celebrate today, go to your local cafe or brew a cup at home, or you can make this sensational Café au Lait Coffee Cake from Nicole at MadebyNicole. Her recipe is fool-proof, and it's filled with Chocolate Chips. What better way to celebrate coffee with milk than with a Coffee Cake? As always, you can use any good quality chocolate, chopped into small chunks in place of chocolate chips.
For those of you lucky enough to live in New Orleans, pop on over to the Café du Monde today for a Café Au Lait. They make it with chicory, which gives it a strong, bitter taste. Café Au Lait Coffee Cake

1 tsp instant coffee
1/2 cup brown sugar
2/3 cup flour
1 1/2 tsp cinnamon
6 Tbsp cold unsalted butter
1 cup chocolate chips
1 1/4 cup pecans
Cake
1/2 cup softened butter
1 cup sugar

1 cup sour cream
2 Tbsp instant coffee
2 Tbsp warm water
2 3/4 cup flour
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk
Glaze:
1/2 cup icing sugar
milk or cream to desired consistency
vanilla (optional)
Directions
Preheat oven to 350 degrees. Grease 9 x 13 pan
Make crumb topping: Stir together dry ingredients, cut in butter, add chocolate chips and nuts.
In large bowl beat sugar and butter until light. Add eggs, then sour cream, and then coffee dissolved in water.
In small bowl, whisk together dry ingredients. Gradually stir into moist ingredients starting with 1/3 of dry mixture, 1/2 of milk, 1/3 dry, 1/2 milk, and final 1/3 dry mixture.
Spread half of batter into pan. Sprinkle with 1 1/2 cups of topping. Cover with remaining batter and finish with crumb topping.
Bake for 60 – 65 minutes
(Optional) Cool and drizzle glaze off a fork onto top of cake.

I CANNOT TELL A LIE CHOCOLATE CHERRY PIE: Presidents Day
So here it is Presidents Day Weekend, and National Cherry Pie Day is only a few days off. Who can't help but remember the story about George Washington cutting down his father's Cherry Tree? He couldn't tell a lie, and for telling the truth -- that he did it -- his father forgave him. No punishment for cutting down the tree. O.k., we learned this at school..Alas, it's a myth that was perpetuated after Washington's death. Be sure and click the link. Still, for the sake, of this blog, I am combining the two holidays!
I'm not sure why National Cherry Pie Day shows up in February. Many markets
carry fresh cherries from Mexico and countries in South America, so check around. Or, you can always wait and bookmark this recipe to make in the summer.
But, if you can get fresh cherries, I suggest you make Chocolate Cherry Pie. This recipe is from Allison Arevalo who posted this on Local Lemons several years ago.
This Chocolate Cherry Pie features fabulous cherries, rich dark chocolate, and a butter pie
crust. I cannot tell a lie. It is positively sinful.The directions and photos on Local Lemons are
outstanding.
I use pre-made pie crusts from Trader Joe's, but check the link if you want to make your own pie crust that includes graham cracker crumbs as well as a good flour. It definitely gives the pie crust more texture.
CHOCOLATE CHERRY PIE
Ingredients
2 pre-made deep dish pie crusts
2 1/2 pounds fresh cherries (about 2 pounds pitted)
1/2 cup agave nectar
4 Tbsp all-purpose flour
1/2 cup shredded chocolate (Mostly dark, with some milk chocolate mixed in, also chopped in food processor)
Directions
Filling
Pit cherries using cherry-pitter and put in large bowl. Add chopped chocolate, 4 Tbsp flour, and agave nectar. Gently toss until cherries are well coated.
Preheat oven to 400F.
With pre-made pie dough that's been rolled out. Fit into 9 inch pie dish. Carefully pick up and place in dish, cutting off overhang.
Fill dough with cherry mixture.
Roll out second piecrust and place on top of pie. Pinch sides closed with thumb and forefinger, and use sharp knife to cut three vents into top of crust. Brush with egg wash.
Bake for 25 minutes in middle of oven. Lower heat to 350F and bake for 25 more minutes.

BREAKFAST FOR DINNER: Red Velvet Pancakes for Valentine's Day!

1. RED VELVET PANCAKES WITH CREAM CHEESE GLAZE
(Adapted from About.com)
Pancakes:
1 1/2 cup all-purpose flour
2 Tbsp sugar
2 tsp baking powder
1 Tbsp Dark cocoa powder
1 tsp salt
2 eggs
1/4 cup milk
8 ounces buttermilk
4 Tbsp unsalted butter, melted, and cooled slightly
1 tsp pure vanilla extract
1 tsp white vinegar
2 tsp red liquid food coloring
3/4 cup dark chocolate chips
Extra butter or nonstick cooking spray
Cream Cheese Glaze:
4 ounces light cream cheese, softened
1 cup powdered sugar, sifted
1 tsp pure vanilla extract
1 Tbsp milk
Directions
Preheat griddle to medium-high heat. In bowl, whisk to combine flour, sugar, baking powder, cocoa powder, and salt. Set aside.
In separate bowl, whisk eggs, then add milk, buttermilk, butter, vanilla extract, white vinegar, and food coloring, whisking to combine completely. Stir dry ingredients into wet ingredients, stirring just until combined. Do not overmix.
Brush some butter or spray nonstick cooking spray on hot griddle, and spoon batter into desired sized pancakes (or molds). Cook until bubbles form in batter, the edges are dry and underside is lightly brown, about 5 minutes, then flip over and cook other side 1 to 2 minutes more. Repeat as needed until all batter is used.
As pancakes cook, make cream cheese glaze:
In small bowl, use fork to stir together cream cheese, powdered sugar, and vanilla extract. Add a little milk if needed to make glaze that has thin enough consistency to drizzle.
To serve, stack three pancakes on a plate and drizzle cream cheese glaze over them.

Cream Cheese Topping
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
3 Tbsp milk
2 cups powdered sugar
Pancakes
2 cups Original Bisquick™ mix
1 Tbsp granulated sugar
1 Tbsp unsweetened cocoa
1 cup milk
1 to 1 1/2 tsp red paste food color** (Do not use liquid red food coloring in this recipe)
2 eggs
Powdered sugar, if desired
Directions
In medium bowl, beat cream cheese, butter, and 3 Tbsp milk with electric mixer on low speed until smooth. Gradually beat in 2 cups powdered sugar, 1 cup at a time, on low speed until topping is smooth. Cover; set aside.
In large bowl, stir all pancake ingredients except powdered sugar with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary or spray with cooking spray before heating.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
Spoon cream cheese topping into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle topping over pancakes. Sprinkle with powdered sugar.
** Do not use liquid red food coloring in this recipe**

Valentine's Day Chocolate Truffle Recipe and Vintage Heart-Shaped Chocolate Molds!
So here's yet another recipe for Truffles--this time for Valentine Heart-shaped Chocolate Truffles. Of course, you can use any basic truffle recipe and just press into the mold. I usually melt my chocolate and butter in a double boiler, but the microwave works, too.
And, if you don't have time to make your own heart shaped truffles, buy Coeurs de truffes from Guyaux! Guyaux was founded in 1931. They produce traditional French-style truffles-in heart shape this time of year--covered with cocoa powder. Guyaux is a family run company, headed by second and third generation chocolate makers in Paris. It's now run by the grand-daughter of the founder. And, if you want to give a really special gift, buy Guyaux truffles in the traditional French Truffle Box! The basket is a replica of the one used historically to store Perigord truffles… which explains the open-weave lid. Ooo-la-la! So rich and decadent!
Valentine Chocolate Truffle Recipe
Makes 24 chocolate truffles
Ingredients
2 Tbsp unsalted butter, chopped coarsely
9 oz dark chocolate, chopped
1/3 cup whipping cream
1 tsp corn syrup
1/2 cup cocoa powder, sifted for dusting the finished chocolate truffles
You are only limited by your imagination or heart on decorating ideas!
Directions
Melt chocolate and butter in double boiler or in saucepan on top of saucepan over simmering water.
Remove from heat and add cream and corn syrup. Mix until combined and smooth. If you are adding flavorings add them with the cream (kirsch, bourbon, kahlua, etc???).
Pour chocolate truffle filling into heart shaped chocolate mold. Level top with scraper. Put in refrigerator to set.
Once firm, place in freezer for 5 minutes then push out of mold. Dust with sifted cocoa powder.
Store in cool dry place until ready to eat or give as a Valentine's Day gift.

MOLTEN CHOCOLATE MUG CAKE: Valentine's Day for One
Molten Chocolate Mug Cake: Valentine's Day for One
Ingredients
1/4 cup all purpose flour
1/4 cup sugar
2 Tbsp unsweetened cocoa powder
1/2 tsp baking powder
Pinch of salt
3 Tbsp unsalted butter, melted
3 Tbsp whole milk
1 egg
1/4 tsp pure vanilla extract
1 ounce chopped chocolate (whatever you have--truffles, chocolate bars, etc..and dark or milk chocolate--your preference)
1 Tbsp water
Directions
In 2-cup capacity microwave-safe mug or bowl, whisk together with fork, flour, sugar, cocoa powder, baking powder, and salt until well combined. Add in melted butter, milk, egg, and vanilla. Whisk well to combine, making sure to mix in flour mixture in bottom. Put chopped chocolate in center of mug. Do not push down; it sinks as it bakes. Drizzle tablespoon of water on top of batter.
Cook in microwave on full power for 1 minute and 15 seconds until cake rises to top, edges look set but surface of center is a little wet and shiny and sticks to finger when touched. It will set up as it sits. Do NOT overbake. If the center still looks raw then give it another 5 to 10 seconds. Cake will fall after it comes out of microwave (like a soufflé). Let cool for 5 minutes to help thicken sauce in bottom.
Optional: Sprinkle with powdered sugar or add ice cream or whipped cream!
TIP: Short mug with wide mouth works best. If not available, use a small bowl instead. I use a vintage Pyrex Bowl. To know if your mug/or bowl is the right size, pour 2 cups of water into it and this should fill it to the top.
VALENTINE'S DAY CHOCOLATE CHERRY SCONES
Ingredients
2 cups all-purpose flour
1/3 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cut into 1/2-inch cubes
1 cup whipping cream, divided
1/4 cup dried cherries, coarsely chopped
3 ounces dark chocolate, chopped
Directions
Stir together first 4 ingredients in large bowl. Cut butter into flour mixture with pastry blender until crumbly and mixture resembles small peas. Freeze 5 minutes. Add 3/4 cup plus 2 Tbsp cream, dried cherries, and chocolate, stirring just until dry ingredients are moistened. (Do not overwork!)
Turn dough out onto wax paper; gently press or pat dough into 7-inch round (mixture will be crumbly). Cut round into 8 wedges. Place wedges 2 inches apart on a lightly greased baking sheet. Brush tops of wedges with remaining 2 Tbsp cream just until moistened.
Bake at 450° for 13 to 15 minutes or until golden. Keep your eye on them.

RED VELVET CHEESECAKE BROWNIES
Ingredients
1 tablespoon unsalted butter, for pan
Parchment paper
Red Velvet Brownie Layer
8 Tbsp (1/2 cup) unsalted butter
1 cup sugar
1 tsp pure vanilla extract
1/4 cup high grade cocoa powder
Dash of salt
1 Tbsp red food coloring (or Wilton natural red)
1 tsp vinegar
2 eggs
3/4 cup all-purpose flour
1/4 cup chopped toasted walnuts
Cream Cheese Layer
8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/8 tsp pure vanilla extract
Directions
Preheat oven to 350 degrees F.
Butter 8 by 8 inch baking pan.
Put long piece of parchment paper in bottom of pan, extending up two side--overhanging slightly on both ends (easy to remove brownies after baked)
Brownie layer:
In saucepan, melt butter on medium heat. Put butter in large bowl and add sugar, vanilla, cocoa powder (or melted chocolate), salt, food coloring, and vinegar, in that order, mixing between additions.
Whisk eggs in small bowl and stir into cocoa mix. Fold in flour until lightly combined. Stir in walnuts and pour batter into prepared baking pan, saving 1/4 cup of batter for the top.
Cream cheese layer:
Blend together cream cheese, sugar, egg, and vanilla in medium bowl. Gently spread cream cheese layer on top of brownie batter in pan. Drop remaining brownie batter over cream cheese layer. Using skewer or tip of knife, drag tip through cream cheese mixture to create swirl pattern.
Bake brownies for 30 minutes.
Remove to cooling rack and cool completely before cutting.

DOUBLE CHOCOLATE CREAM CHEESE BROWNIES: National Cream Cheese Brownie Day
Double Chocolate Cream Cheese Brownies
Brownies
1/2 cup unsalted butter
4 ounces 65-70% good quality chocolate, coarsely chopped
1 cup sugar
1 tsp pure vanilla extract
2 large eggs
1/2 cup all purpose flour
1/4 tsp salt
1/2 cup dark chocolate chunks or dark chocolate chips
Cream Cheese Layer
8 ounces cream cheese, room temperature
1/3 cup sugar
1 tsp vanilla extract
1 large egg
Directions
Preheat oven to 325 degrees F.
Line 9 x 9 inch square baking pan with aluminum foil across the bottom and up two opposite sides of the pan.
In stainless steel bowl placed over a saucepan of simmering water, melt butter and chocolate.
Remove from heat and stir in sugar and vanilla. Add eggs, one at a time, beating well after each addition. Use a spoon. Stir in flour and salt and beat, until batter is smooth and glossy and comes away from the sides of the pan (about a minute).
Remove 1/2 cup of the brownie batter and set aside.
Fold chocolate chips (or chopped chocolate) into remainder of brownie batter and then pour batter evenly onto bottom of prepared pan.
Using mixer or food processor, whip cream cheese until smooth. Add sugar, vanilla, and egg and process just until smooth.
Spread cream cheese mix over brownie layer. Spoon small clumps of reserved brownie batter on top of cream cheese filling. Then with knife or wooden skewer, swirl two batters without mixing them.
Bake in preheated oven for 25 minutes or until brownies start to pull away from sides of pan and edges just begin to brown.
Remove from oven and place on wire rack to cool.
Refrigerate brownies until firm enough to cut into squares (at least two hours).
Once chilled, remove brownies from pan by lifting with ends of foil and transfer to cutting board.
Cut into squares.

EASY NUTELLA PIZZA
Ingredients
Pizza Dough (I use Trader Joe's)
1/2 cup Nutella
1/3 cup toasted chopped hazelnuts
1/3 cup grated (or chopped) white chocolate
Directions
Preheat oven to 425.
Spray baking sheet. Set aside.
Prepare dough.
Flatten dough on baking sheet. Make it thin. This is a 'thin crust' pizza. Bake dough for 10 minutes.
Spread NUTELLA over pizza dough.
Top with toasted chopped hazelnuts and grated chocolate (to look like cheese) or chopped white chocolate (or both).
Put pizza back into the oven for 3-5 minutes, until chocolate just starts to melt.
Cool before cutting.

SWEET STORY CAKE FOR VALENTINE'S DAY: Vintage Ad with Recipe
Here's the original recipe on the Ad
- For Cake:
- 2½ cups sifted cake flour
- 1½ cups of sugar
- 3½ teaspoons baking powder
- 1 teaspoon salt
- ½ cup shortening
- ¾ cup milk
- ¼ cup maraschino cherry juice
- 1 teaspoon vanilla
- 2 teaspoons almond extract
- 4 egg whites, unbeaten
- 18 maraschino cherries, well drained and finely chopped
- ½ cup walnuts or pecans, finely chopped
- For Frosting: (I doubled this)
- 2 Tablespoons shortening
- 2 Tablespoons butter
- 1 teaspoon vanilla
- ½ teaspoon almond extract
- ½ teaspoon salt
- 4 cups sifted confectioner's sugar
- 9 Tablespoons scalded cream
- Red or pink food coloring
- Sift flour, sugar, baking powder and salt into mixing bowl. Drop in shortening. Combine milk and maraschino cherry juice and add ¾ cup of this liquid. Add flavoring extracts and mix with mixer on low for 2 minutes (100 strokes by hand).
- Add remaining liquid and egg whites and beat for another 2 minutes. Fold in cherries and nuts. Bake in two 9-inch pans or two heart-shaped pans at 375 degrees for 20 to 25 minutes. (If you pour all the batter in one pan, bake at 350 degrees for 45-50 minutes)
- When cool, cut layers with heart shaped pattern, if you didn't use a heart-shaped pan. Spread with frosting, and outline a short Valentine's message with a toothpick and fill in letters and outline of cake with sugar pearls.
- For Frosting:
- Combine shortening, butter, flavorings and salt and blend well. Beat in ½ cup sugar. Add hot cream alternating with remaining sugar, beating well after each addition. Add only enough cream to make a nice spreading consistency. Add a few drops of red or pink food coloring to tint frosting a delicate pink before spreading on cake.

CHOCOLATE BEER PRETZEL TRUFFLES
Ingredients
3/4 cup Beer (Guinness or another Beer you favor)
1 pound dark chocolate (65-75% cacao)--I really like to use Guittard Chocolate in my truffles
3/4 cup heavy whipping cream
Crushed salted pretzels
Directions
Melt chocolate in top of double boiler or saucepan over saucepan with simmering water.
Stir in cream.
Slowly add Guinness, stirring to blend.
Cover and chill overnight.
Shape mixture into 3/4 inch balls using small scoop or melon baller or your hands - using about tablespoon of ganache for each.
Roll in crushed Salted Pretzels (or crushed peanuts or beer nuts).

NUTELLA BANANA CAKE: World Nutella Day
Nutella is an amazing chocolate hazelnut spread. It's great on just about anything. You should have it in your pantry.
NUTELLA BANANA CAKE
Ingredients
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
4 medium (or 3 large) over-ripe bananas, mashed
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/3 cup vegetable oil
1 1/2 tsp vanilla extract
1/2 cup pecans (optional)
1 cup Nutella, divided
powdered sugar for dusting
Directions
Preheat oven to 350°F.
Spray bundt cake pan with cooking spray. In large bowl, whisk together banana, sugar, brown sugar. Beat in egg, vegetable oil, and vanilla extract. Slowly whisk in the flour, baking soda, and baking powder, until there are no lumps. Fold in pecans.
Fill pan with half batter. Add 2/3 of the Nutella, trying not to let it come in contact with pan. Add rest of batter on top, covering all the Nutella.
Bake 40-50 minutes, or until toothpick inserted in center comes out clean. Cool and flip onto dish.
Dust with powdered sugar.

CHERRY PORT HEART-SHAPED BROWNIES: Valentine's Day
Want to make these special? Use a 3" heart-shaped cookie cutter to make Brownie Hearts. The photo is from Betty Crocker, and their recipe uses the Betty Crocker Brownie Mix. That's a big shortcut. It's up to you. You can always use the mix and add some dried cherries soaked in port. Another festive touch is to sprinkle with powdered cocoa or red crystallized sugar or drizzle with red icing after the brownies have cooled.
CHERRY PORT HEART-SHAPED BROWNIES
Ingredients
2 Tbsp port
1/2 cup dried cherries
5 Tbsp unsalted butter, cut into pieces
6 ounces semisweet chocolate, coarsely chopped
3/4 cup sugar
2 large eggs, cold
1/4 tsp salt
1/3 cup all-purpose flour
4 1/2 ounces dark chocolate, chopped (about 3/4 cup)
Directions
Position oven rack in center of oven; preheat to 325 degrees F.
Line 8x8x2-inch pan with foil. Butter foil; set aside.
In small saucepan, bring port and water to boiling. Add dried cherries; cook and stir over low heat until fruit is soft and plump and liquid evaporates. Using spatula, scrape cherries into bowl; set aside to cool.
Set heatproof bowl over saucepan of barely simmering water (be sure water doesn't touch bottom of bowl). Place butter in bowl; scatter 6 ounces chocolate over butter. Heat until chocolate is almost melted (you do not want to heat the mixture so much that the butter and chocolate separate). Remove bowl from heat. Stir until butter and chocolate are smooth. Whisk in sugar until fully incorporated. Add eggs one at a time, stirring until batter is smooth and glossy. Whisk in salt. Gently whisk in flour, stirring only until it disappears into the batter.
Using spatula, stir in port-soaked cherries (and any liquid that accumulated) and remaining 4 1/2 oz. chopped chocolate.
Scrape batter into prepared pan and smooth top as much as possible.
Bake 35 minutes.
Transfer pan to wire rack; cool to room temperature.
Invert brownies onto cutting board; gently peel away foil
Turn brownies over. Cut into squares or use 3" heart shaped cookie cutter.

HEAVENLY HASH CAKE: Heavenly Hash Day!
Since I'm into Chocolate, I'm posting a Heavenly Hash Cake recipe to celebrate the day. Warning: this is very sweet, but it's really good since it has three layers. It's also simple to make!
HEAVENLY HASH CAKE
Ingredients:
2 sticks butter
4 Tbsp cocoa
4 eggs
2 cups sugar
1 1/2 cups flour
1 1/2 cups nuts, chopped
1 tsp pure Vanilla
1 bag mini marshmallows
Dash of salt
Directions
Melt butter and cocoa together.
Beat eggs and sugar.
Add flour, salt and vanilla.
Fold in butter and cocoa mixture. Mix well.
Fold in nuts.
Pour into a 13 x 9 inch greased pan and bake at 350 degrees for 35 minutes.
Remove from oven.
Distribute marshmallows evenly over warm cake top.
Return to oven for 5 minutes (just until marshmallows puff a bit)
Let cool.
Top with chocolate icing layer (this can be thick-take one pass over the cake and add rather than swirling)
ICING:
1/4 cup milk
3 Tbsp butter, melted
1 lb confectioners sugar
1/2 cup cocoa
1 tsp vanilla
Heat milk and butter together. Beat in confectioners sugar, cocoa and vanilla.
Groundhog Day Chocolate Cupcakes
Here's an adorable decorating suggestion for "Cupcakes for Young and Old" to enjoy. This is from Food.com (not my photo, but Marg's on Food.com). She did a great job, don't you think? For this holiday, you can make your own cupcakes or buy rich chocolate-y ones at your favorite bakery!
Groundhog Day Chocolate Cupcakes (decorating)
Ingredients:
12 baked chocolate cupcakes
6 Almond Joy candy bars
10 white jelly beans
3 watermelon slice candy
48 brown miniature M&Ms
4 chocolate cookies
white frosting
black decorating gel
Directions:
Remove a piece of cake the width of an Almond Joy candy from the center of a baked cupcake.
Set candy bar upright in hole, then spread a layer of white frosting on the cupcake.
For groundhog's eyes, trim ends from a white jelly bean, stick them in place with frosting, then dot them with black decorators' gel.
Add a tiny triangle cut from a watermelon slice candy for a nose, brown M&Ms Minis for ears and cheeks, and a tiny rectangular piece of white jelly bean for teeth.
Sprinkle chocolate cookie crumbs around the partially emerged groundhog, for dirt!
