CHOCOLATE PASTA WITH WHIPPED CREAM, STRAWBERRIES, & CHOCOLATE NIBS: National Pasta Day

Today is National Pasta Day, and what can be better than Chocolate Pasta? Great flavor, great texture, and oh so versatile. 

For today's National Pasta Day, I have two different chocolate pasta recipes. You can buy chocolate Pasta online from several chocolatiers and pasta makers. My local Pasta Shop has fresh chocolate Pasta that freezes well.

The first recipe for Chocolate Pasta is from Emeril Lagasse. It's slightly more complicated than the second recipe, but has a completely different taste and is worth the effort.

Chocolate Pasta with Whipped Cream, Sliced Strawberries, and Chocolate Nibs 
from Emeril Lagasse (Food Network)

Ingredients
2-3/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
3 Tablespoons confectioners' sugar plus 3 tablespoons confectioners' sugar
Pinch salt
4 large eggs
2 teaspoons pure vanilla extract (Madagascar)
2 teaspoons walnut oil or vegetable oil (go with the Walnut Oil)
1-1/2 cups cold heavy cream
1 Tablespoon Nocello or brandy
1/2 cup thinly sliced fresh strawberries
1/2 cup chocolate nibs or finely chopped semisweet chocolate

Directions
In large bowl or on work surface, sift together flour, cocoa, 3 Tbsp sugar, and salt. Make a well in center and add eggs a bit at time, working them into dry ingredients using circular motion with hands. Continue working in eggs, and add vanilla and oil, until sticky dough is formed. Knead on lightly floured surface until dough is smooth and elastic, and is no longer sticky. (Alternatively, place dry ingredients in bowl of  food processor, add eggs, vanilla and oil and pulse to form ball of dough. Turn out onto work surface and work to smooth dough.) Cover with plastic wrap and let rest for 20 minutes.

Divide dough into 4 fist-sized pieces and flatten into disks. One at time, roll out each dough piece through widest setting of a pasta machine, according to manufacturer's instructions. Remove, fold into thirds and repeat. Continue rolling through machine on 4 times, dusting lightly with flour to keep from sticking. Decrease roller size down 1 notch, and roll through once, passing dough through each setting twice until desired thickness is reached. Let dry briefly while assembling "sauce."

In medium bowl, beat cream with electric mixer at medium speed until it becomes thick and frothy. Beating, add sugar and Nocello, and beat until soft peaks form, being careful not to overbeat. Set aside until ready to serve.

Bring pot of salted water to boil and cook pasta until just al dente, about 2 minutes. Drain in colander. Place  drained pasta in large pasta bowl and toss with whipped cream, strawberries and nibs. Serve immediately.

And a second easier recipe.

Chocolate Pasta with White Chocolate "Cream" Sauce
 
Spaghetti
2 ounces dark chocolate (60%+ cacao), melted, cooled
2 eggs
1 3/4 cups flour

White Chocolate Cream Sauce
2 ounces white chocolate (Guittard or another 'real' white chocolate)
2/3 cup whipping cream

Directions for Pasta

Add melted chocolate to eggs. Make pasta using chocolate-egg mixture and flour. (follow any easy pasta recipe). Let rest for 30 minutes.

Roll out pasta. Roll pasta sheets through preferred setting on the cutter. Let spaghetti dry for 30 minutes.
In large pan of boiling water, cook pasta until al dente.
Drain pasta.
Make sauce.
Serve pasta with sauce.

Directions for Cream Sauce
Blend white chocolate and cream in a saucepan over low heat. Cook, stirring constantly, until chocolate is melted and smooth.

CHOCOLATE SPAGHETTI WITH WHIPPED CREAM, STRAWBERRIES, & CHOCOLATE NIBS: National Spaghetti Day

Today is National Spaghetti Day, and what can be better than Chocolate Spaghetti? Great flavor, great texture, and oh so versatile. On National Pasta Day several years ago, I posted a very easy recipe for making Chocolate Pasta. I also posted a Pasta with Sage and Chocolate recipe. That recipe can be made with plain spaghetti but with cheese and chocolate in the sauce, so it's a savory dish.

For today's National Spaghetti Day, I have two different chocolate spaghetti recipes. You can buy chocolate spaghetti online from several chocolatiers and pasta makers. My local Pasta Shop has fresh chocolate spaghetti that freezes well.

CHOCOLATE PASTA: National Pasta Day!

Today is National Pasta Day. I used to make my own pasta, but not so much anymore. It's so easy to find fresh pasta at shops in my neighborhood. However, since it is National Pasta Day, I thought I'd post a few recipes for Chocolate Pasta.
 

Chocolate Pasta

Ingredients
1 3/4 cup Flour
1/4 cup Cocoa powder
2 Egg
4 Tbsp Water

Directions
Mix flour and cocoa well. Mound on work surface or in large bowl. Make deep well in center of mound and break the eggs into it. Beat eggs in with fork, adding about 2 Tbsp water. Using circular motion, draw flour and cocoa into center. Toss in another Tbsp of Water. Stir with fork until all flour is moistened. Add more water as needed. Finish mixing by hand. Pat dough into ball. Clean off work surface, and flour it. Knead dough for about 10 minutes, or until dough becomes silky and elastic. Cover dough and let rest for half hour. Roll out 1/4 of dough at time. A machine makes this easy. Allow pasta to dry a little before cooking. Makes 4 to 5 cups of cooked pasta---plenty for dessert.

You can always buy some great dark chocolate pasta. There are many brands. My market sells fresh chocolate pasta!

Here are two recipes from Pappardelle (Dark Chocolate Pasta)

Dark Chocolate Pasta with Chocolate Sauce

Ingredients
1 pound Pappardelle’s Dark Chocolate Pasta
1 cup semi-sweet chocolate chips (or chopped dark chocolate)
1/2 cup unsalted butter
2 cups powdered sugar, sifted
1 1/2 cups evaporated milk
1 teaspoon vanilla

Directions
Cook pasta in pot of rapidly boiling salted water until al dente (about 8-10 minutes). Drain and rinse with cool water.
Melt chocolate chips and butter together in small saucepan. Add powdered sugar and milk. Stir constantly and bring to boil. Reduce heat to low simmer. Cook for 8 minutes, continuing to stir constantly. Add vanilla.
In serving dishes, add pasta, top with chocolate sauce. Garnish with favorite topping.

Chocolate Noodle Kugel

Ingredients
1 pound Pappardelle’s Dark Chocolate Noodles (these really are quite good)
1 stick butter, cut into pieces
1 cup whole milk
5 large eggs, lightly beaten
1/2 cup sugar
2 tsp vanilla
1 tsp salt
1 pound container of sour cream
1 pound container of small curd cottage cheese

Topping:
2 cups cornflakes, coarsely crushed
2 Tbsp sugar
2 tsp cinnamon
2 Tbsp butter, cut into pieces

Directions
Preheat oven to 350 degrees. Butter a 13 x 9 inch baking dish (lasagna style pan).
Meanwhile, cook pasta in 6-8 quarts of rapidly boiling salted water until al dente (about 8-10 minutes). Drain, then return to cooking pot and add butter. Toss until noodles are well coated and butter is completely melted.
Whisk together milk, eggs, sugar, vanilla, and salt until combined, then whisk in sour cream. Stir in cottage cheese and add to noodles. Spoon gently into baking dish.
For topping, stir together cornflakes, sugar, and cinnamon and sprinkle over noodles. Dot with butter and bake kugel until edges are golden brown, about 40-50 minutes. Let stand before serving.

CHOCOLATE PASTA RECIPES: NATIONAL PASTA DAY

Today is National Pasta Day, and I hope you're out there having some great pasta dishes at your favorite restaurant or cooking up a storm in the kitchen. I used to make my own pasta a lot, but not so much anymore. There are so many fresh pasta vendors in my neighborhood. However, since it is National Pasta Day, I thought I'd post a few recipes for Chocolate Pasta.
 

Chocolate Pasta

Ingredients
1 3/4 cup Flour
1/4 cup Cocoa powder
2 Egg
4 Tbsp Water

Directions

Melt: The Art of Macaroni and Cheese//Chocolate Pasta with Bucherondin, Hazelnuts, and Cherries

Today is World Pasta Day, and what better way to celebrate than with this great recipe from a fabulous new cookbook: Melt: The Art of Macaroni and Cheese by Stephanie Stiavetti and Garrett McCord (Little Brown).

I have been waiting for this cookbook! I adore Mac and Cheese, and I knew that Stephanie Stiavetti and Garrett McCord had been collaborating on this fabulous new cookbook that reinvents the American classic of macaroni and cheese. Their recipes showcase gourmet ingredients with handcrafted artisan cheeses. Each recipe is composed of very unique flavor combinations and profiles. You MUST buy this cookbook.

I've posted Chocolate Pasta recipes before, but none compare to the nuances in the cheese/hazelnut/cherries sauce on this one. Chocolate pasta does not have to fall into the sweet category. This is a wonderful savory dish. I'm thrilled that Steph gave the o.k. to include this recipe here. Enjoy!

Chocolate Pasta with Bucherondin, Hazelnuts, and Cherries

Ingredients

2 to 4 ¼ cup plus 2 tablespoons hazelnut oil
2 tablespoons red wine vinegar
2 tablespoons maple syrup
¼ teaspoon mustard powder
1 heaping tablespoon cocoa nibs
Pinch of sea salt
Pinch of freshly ground black pepper
½ cup hazelnuts
12 ounces chocolate pasta (preferably linguine, but use what you can find)
5 ounces Bucherondin, roughly broken apart
1 cup pitted cherries (Bing, Brooks, or Rainier are all lovely varieties)
2 cups whole arugula leaves, washed and dried

You need at least one superbly esoteric recipe in your repertoire, something easy to put together using one or two chic ingredients that will take your culinary reputation up a peg and make you a champion in the kitchen. This is that dish. Bitter chocolate pasta, whole cherries, toasted hazelnuts, and a hazelnut–cocoa nib vinaigrette conspire to produce a savory treat that will amaze your guests.

All this comes together around a Loire cheese called Bucherondin. Bucherondin sounds like the name of a French superhero; taste this lovely goat cheese, and you may very well decide that’s exactly what it is. Smooth and chalky at first, it sheds its mild-mannered identity and reveals an astonishing tang and spice.

1. Preheat the oven to 350°F.
Place the hazelnut oil, red wine vinegar, maple syrup, ground mustard, cocoa nibs, salt, and pepper in a jar with a tight-fitting lid and shake vigorously to combine. (A bowl and whisk will do this job just fine too.) Taste and adjust seasonings as desired. Set aside.
2. Place the hazelnuts on a baking sheet and toast in the oven for 10 to 15 minutes, or until the skins darken and blister, and the nuts are hauntingly fragrant. Wrap the hazelnuts in a clean dishtowel and leave them to steam for 1 minute. Rub the nuts in the dishtowel to scrub the skins off. Don’t worry if some of the skins stay; you just want the bulk of them removed. Roughly chop the nuts and set aside.
3. While the hazelnuts are roasting, cook the pasta until al dente. Drain through a colander and divide the pasta evenly among four bowls.
4. Scatter the Bucherondin over the top of the pasta, followed by the cherries and hazelnuts. Top each bowl joyfully with a carefree handful of arugula, dress with the vinaigrette, and serve.

Alternative cheeses: Bûcheron, Zingerman’s Lincoln Log, Caña de Cabra

Wine pairings: rosés, California Pinot Noirs

Additional pairings for the cheese: preserved cherries, tea preserves, fresh figs, mangoes
