Chocolate Chocolate Chip Apple Cake for a Sweet New Year!


I love Fall with its infinite variety of apples. Here's a great way to make the most of your Autumn Apple Harvest. This fabulous Chocolate Chip Apple Cake (recipe originally from Sunset Magazine) is also a great cake to make to celebrate the Jewish New Year  which begins Friday night. Here's to a Sweet New Year!

I use tart apples in this recipe because I like the combination of tart and sweet. Try different apple varieties. You can use your favorite dark chocolate instead of chocolate chips. Chop it into chunks. This cake tastes great toasted for breakfast.

Chocolate Chocolate Chip Apple Cake

Ingredients 
1 cup unsalted butter, softened
1 1/2 cups white sugar
3 eggs
1/2 cup water
1 Tbsp pure vanilla extract
2 1/2 cups all-purpose flour
2 Tbsp unsweetened cocoa powder
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
2 cups apples - peeled, cored and diced
1 cup semisweet chocolate chips (or chocolate chunks)

Directions
Preheat oven to 325 degrees F.
Grease and flour one 9 or 10 inch Bundt Pan.
In large bowl, cream butter with sugar. Beat in eggs. Add water and vanilla.
Stir flour, cocoa, baking soda, ground cinnamon, and ground nutmeg together. Beat this mixture into creamed mixture.
Fold in chopped apples and semisweet chocolate chips (or chocolate chunks).
Pour batter into prepared pan. I used a Bundt pan.
Bake at 325 degrees F for 1 hour and 15 minutes or until cake tests done when toothpick is inserted near center. Do not overbake. Start checking at one hour.
Transfer to a rack to cool.

CHOCOLATE CARAMEL APPLES: National Apple Day!


Today is National Apple Day, and since it's so close to Halloween, I was thinking about Caramel Apples. Not just any caramel apple, though, but Chocolate Caramel Apples. You can buy Chocolate Caramel Apples from many different purveyors, but it's really easy to make your own. 

And, there are so many ways to dress up your Chocolate Caramel Apples  -- drizzle techniques or rolling in nuts or chopped candy bars or sea salt, sprinkles, mini-marshmallows, candy corn. Have a look at this Retro advertisement from Kraft for inspiration. For your chocolate, you can use milk, dark, or white chocolate or a mixture of all three. Experiment! Chocolate Caramel Apples are great to serve for Halloween!

Be sure and choose a firm round tart apple to go with your sweet toppings.

CHOCOLATE CARAMEL APPLES

Ingredients:
4 ripe firm apples
4 wooden skewers
14 ounces soft caramel candy
2 tbsp water
10 ounces dark chocolate, chopped
2 tbsp shortening
2 cups chopped candy bars, nuts, coconut, sea salt, M&Ms, or ??

Preparation:
1. Line baking sheet with waxed paper and and spray with nonstick cooking spray.
2. Wash and dry the apples carefully or dip in boiling water for under a minute to remove any wax. Cool. Remove stems, and stick the skewers firmly in stem ends.
3. Place unwrapped caramels and the water in a microwave-safe bowl. Microwave for 1 minute, then stir, then microwave for additional minute until completely melted and smooth (and liquidy)
4. Hold apple by skewer and dip in caramel, tilting bowl at an angle and rotating  apple to cover  completely with smooth, even layer. Set on wax paper. Repeat with remaining apples.
5. Refrigerate caramel-covered apples for 30 minutes to set.
6. Heat chocolate and shortening in  microwave-safe bowl and microwave until melted and smooth.
7. Dip caramel-covered apple in chocolate. Spoon  chocolate over top to cover apple completely.
8. While chocolate is still wet, dip bottom half in chopped candy bars, nuts, sprinkles, mini-marshmallows, or seasalt (or whatever!) and roll until bottom half is covered. Place back on baking sheet and repeat with remaining apples.
9. Chill apples in refrigerator until completely set-45 minutes.

Here's to a Sweet New Year!

CHOCOLATE APPLE BUNDT CAKE: National Bundt Day!

I love Bundt Cake molds. So many choices, and Bundt Cake molds always elevate the presentation of cakes. For National Bundt Day, here's an easy recipe for Chocolate Apple Cake recipe that I found on the Piedmont Grocery site. Piedmont Grocery is a local market. As always use the very best cocoa and chocolate and apples in this bundt cake recipe. The apples make this cake moist. You can never have too many apple cake recipes, especially in the Fall. This is a great cake for Thanksgiving, too. And, you can make it ahead and serve for breakfast over the Thanksgiving weekend. It's especially good toasted with cream cheese.

Chocolate Apple Cake

Ingredients
2 cups sugar
3 eggs
1 cup butter, softened
1/2 cup water
2 1/2 cups all-purpose flour
2 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon allspice
1 cup nuts, chopped
1/2 cup semisweet chocolate pieces (3 ounces), chopped (or dark Chocolate Chips)
2 cups apples, raw grated (about 2 large)
1 tablespoon vanilla

Powdered sugar for dusting

Directions
Preheat oven to 325°F. Grease and flour a 10-inch tube pan.

In large bowl, beat sugar, eggs, butter, and water until fluffy. Combine flour, cocoa powder, baking soda, cinnamon, and allspice in separate bowl and beat dry mixture into sugar mixture. Stir in nuts, chocolate, apples, and vanilla.

Carefully spoon batter into prepared tube pan. Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean.

Cool for 10 minutes on a rack. Then, with long spatula, gently loosen cake from pan and turn out onto serving plate to cool completely. Optional: Sift powdered sugar over the cake.
