OATMEAL RAISIN CHOCOLATE CHIP COOKIES: A Two-Fer - National Oatmeal Cookie Day & National Raisin Day!

Today we celebrate two food holidays: Oatmeal Cookie Day and Raisin Day. Put the two holidays and their ingredients together, add Chocolate Chips, and make these delicious Oatmeal Raisin Chocolate Chip Cookies.

OATMEAL RAISIN CHOCOLATE CHIP COOKIES

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 cup unsalted butter, softened
1/2 cup light brown sugar, firmly packed
1 cup granulated sugar
1 large egg
1 1/2 tsp pure vanilla extract
1 cup ground walnuts
1 cup old fashioned oats
1 cup semi-sweet chocolate chips
1 cup raisins

Directions
In small bowl mix flour, baking soda, and cinnamon.
In large mixing bowl beat butter, and sugars until light and fluffy. Beat in egg and vanilla.
At low speed, beat in flour mixture until blended.
Fold in ground walnuts, oats, chocolate chips, and raisins.
Cover with plastic wrap and chill for 1 hour.
Preheat oven to 350.
Grease 2 baking sheets.
Shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Flatten each cookie slightly with fork.
Bake cookies until lightly browned around the edges, 10 to 12 minutes.
Transfer to flattened brown paper bags or wire racks to cool.

Tip: Dough also freezes well. Freeze dough balls on a cookie sheet and then put them in a ziploc bag in the freezer until ready to bake!

VANISHING OATMEAL CHOCOLATE CHIP COOKIES: National Oatmeal Cookie Day

Today is National Oatmeal Cookie Day. Traditional Oatmeal Cookies are made with raisins, but really? What's a cookie without chocolate? So, here's an adapted recipe from Quaker Oats for Vanishing Oatmeal Raisin Cookies but I've switched out the raisins with Chocolate Chips. The original recipe is found on most Quaker Oats boxes...and on the Quaker Oats website.

VANISHING OATMEAL CHOCOLATE CHIP COOKIES

Ingredients
1/2 Cup plus 6 Tbsp unsalted butter, softened
3/4 Cup firmly packed brown sugar
1/2 Cup granulated sugar
2 Eggs
1 tsp vanilla
1-1/2 Cup all-purpose flour
1 Tbsp Baking Soda
1/4 tsp salt
3 Cup Quaker® Oats (quick or old fashioned, uncooked)
1 Cup Chocolate Chips 
 (optional) 3/4 cup chopped walnuts 

Directions
Heat oven to 350°F.
In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon, and salt; mix well.
Add oats and Chocolate Chips and chopped walnuts (optional); mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 8 to 10 minutes or until light golden brown.
Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.

Alternative: Bar Cookies
Press dough onto bottom of ungreased 13 x 9-inch baking pan.

Cut into bars.

OATMEAL CHOCOLATE COVERED RAISIN COOKIES: Chocolate Covered Raisin Day!

I love oatmeal cookies, and I usually add chocolate chips rather than raisins, but this recipe for Oatmeal Dark Chocolate Covered Raisin Cookies from Gold Medal combines the best of both. It's perfect for Chocolate Covered Raisins Day! I use Raisinets!

Oatmeal Chocolate Covered Raisin Cookies

Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 cup dark brown sugar
2 large eggs
1 tsp pure vanilla
1 cup Gold Medal™ all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
2 cups old-fashioned oats
1-1/4 cup dark chocolate covered raisins (Raisinets)

Directions
Preheat oven to 375°F.
In bowl of electric mixer, beat butter and sugars until light and creamy, about 2 minutes.
Add eggs and vanilla and mix until well combined.
Add flour, baking soda, baking powder, cinnamon, and salt.
Mix until just combined.
Stir in oats and dark chocolate covered raisins.
Drop dough by heaping tablespoonfuls about 2 inches apart on ungreased cookie sheets.
Bake about 10 minutes or until light brown.
Let cookies rest on cookie sheets for 5 minutes then transfer to wire racks to cool completely.

CHOCOLATE CHIP OATMEAL COOKIE MIX in a JAR: National Oatmeal Cookie Day!

Today is Oatmeal Cookie Day! Oatmeal and Chocolate are both excellent foods to lower your cholesterol and keep your heart healthy. O.K., so there's a lot of sugar and butter in this recipe, and that's not all that healthy, but I'm making cookies, and they taste better with sugar and butter. 

I posted a recipe last year for Vanishing Oatmeal Chocolate Chip Cookies. That's a great recipe, but this recipe continues my "Cookies in a Jar" series. It's simple and easy and makes a great gift. Not into gifting this mix? Just make the cookies!

I usually use either dark Guittard or dark Ghirardelli Chocolate Chips in this recipe, but use whatever you have or like.

As I've mentioned in other Cookies in a Jar mixes, be sure and tamp down each layer of ingredients as you fill the jar. Wipe excess off the insides with a dry paper towel after each addition. When my Jar is finished, I add a piece of burlap over the top and tie with raffia. I  place a label directly on the jar, but you can make a tag and attach with raffia or ribbon.

Note: If you're worried about people with nut allergies, put the walnuts in a plastic bag, cut excess off bag and tie tightly. Attach to the jar with raffia or ribbon. Add a note about the nuts on your instructions.

Chocolate Chip Oatmeal Cookie Mix in a Jar

Ingredients
3/4 cup white sugar
3/4 cup packed brown sugar
1 cup rolled oats (I use Quaker Oats)
1 1/2  cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup dark chocolate chips
1 cup chopped walnuts (optional)

Directions
Use a 1 quart jar, layering ingredients in the order given. You can mix the baking powder, flour and salt together and make that a layer. Pack down after each addition. Put lid on, and cover with a circle of burlap and tie with raffia.

Attach the following instructions:

Preheat oven to 350° F.
In medium bowl, cream together 3/4 cup softened butter, 2 eggs, and 1 tsp vanilla.
Add the entire contents of jar.
Mix by hand until combined.

Drop dough by rounded tablespoon onto unprepared cookie sheet.
Bake for 12 to 15 minutes in preheated oven.

Makes 2 dozen.

It should come as no surprise that January is National Oatmeal Month! Cold snowy and rainy days are the perfect time to have a steaming bowl of oatmeal, but you can also have oatmeal goodness in a cookie! Traditional Oatmeal Cookies are made with raisins, but really? what's a cookie without chocolate? So, here's an adapted recipe from Quaker Oats for Vanishing Oatmeal Raisin Cookies but the raisins are switched out with Chocolate Chips. The original recipe is found on most Quaker Oats boxes...and on the website.

VANISHING OATMEAL CHOCOLATE CHIP COOKIES

Ingredients

Shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Flatten each cookie slightly with fork.
Bake cookies until lightly browned around the edges, 10 to 12 minutes.

Tip: Dough also freezes well. Freeze dough balls on a cookie sheet and then put them in a ziploc bag in the freezer until ready to bake!

OATMEAL CHOCOLATE CHIP COOKIES: Guest post by Eve Calder

Chocolate and Mysteries: The Perfect Combination  

Writing the Cookie House mystery series lets me indulge in two of my very favorite things: chocolate and mysteries. In the latest book, Sugar and Vice, pastry chef (and amateur sleuth) Kate McGuire bakes up several batches of delectable oatmeal chocolate chip cookies. This is the recipe that she (and I) use -- courtesy of Mark Bittman's cookbook classic How to Cook Everything The Basics.

Oatmeal Chocolate Chip Cookies 

Time: About 30 minutes
Makes: 3 to 4 dozen

Ingredients
About 1/2 pound chocolate -- preferably dark chocolate (or whatever kind you like to eat)
8 tablespoons (1 stick) butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 1/2 cups all-purpose flour
2 cups rolled oats (not instant oats)
1/2 teaspoon ground cinnamon pinch salt
2 teaspoons baking powder
1/2 cup milk
1/2 teaspoon vanilla extract

Directions
1. Heat the oven to 375°F. Chop the chocolate: Use a chef's knife with a rocking motion to cut the bars into pea-sized pieces. You should have about 1 1/2 cups.
2. Use an electric mixer to cream together the butter and sugars in a large bowl until light and fluffy. Crack the eggs on a flat, hard surface, add them one at a time, and beat until well blended. (If you prefer stirring by hand, you can also start with a whisk for the butter, sugar and eggs — then switch to a rubber spatula to add the dry ingredients.)
3. Mix the flour, oats, cinnamon, salt and baking powder together in a small bowl. Alternating with the milk, add the dry ingredients to the butter mixture a little at a time, mixing on low. Stir in the chocolate and vanilla.
4. Drop tablespoon-sized mounds of dough about 3 inches apart in rows and columns on ungreased baking sheets. Bake for 12-15 minutes until lightly browned. Cool for about 2 minutes on the sheets before using a metal spatula to transfer the cookies to racks to finish cooling. Store in a tightly covered container at room temperature for no more than a day or two.
Recognizing doneness: Cookies are usually soft when they're ready to come out of the oven. The best way to check is to peek underneath and see if they're golden brown.

5 DIY CHOCOLATE FACE MASKS: The Perfect Gift for Mother's Day!

Here's a personal and unique Mother's Day Gift! A Chocolate Facial for Mom! Mix up one of these recipes -- the Perfect Mother's Day gift. Be sure to make a second batch for yourself!

We all know Chocolate is good for the heart, blood pressure, and a lot more. When I was growing up, we were told that chocolate was bad for the skin. That it actually caused acne. This is not true. Chocolate is full of antioxidants that actually give the skin extra protection against free radicals and can nourish the skin. The following masks can increase hydration, support skin's defense against UV damage, decrease roughness, and actually improve blood flow. Give one or all of them a try.

Pros of Chocolate Face Mask: The skin becomes glowing and soft. The skin becomes firm and smooth. Even if the mask goes into your mouth, no problem; it tastes yummy. The final Chocolate Face Mask even has an alternative fudge recipe.

So here are 5 D-I-Y Chocolate Face Mask Recipes! They're all simple to make. Let me know which is your favorite.

1. Chocolate Mask from Household Magic: Daily Tips

Mix together a heaping Tbsp of unsweetened cocoa powder with heavy cream to form a paste.
Apply to clean, dry skin and leave paste on for 15 minutes.
Wipe off mask with washcloth.
Rinse face with lukewarm water and pat dry.

2. Chocolate Yogurt Honey Mask from Flavor Fiesta

Ingredients:
1 tsp cocoa powder
1 tsp yogurt
1 tsp honey

Directions:
Blend cocoa powder with honey and yogurt. Cocoa powder can be difficult to blend, so be patient with this step. Keep mixing until mixture looks like melted chocolate.
Clean your face with lukewarm water. Dab dry and then apply the mask evenly all over your face except the eye and lip areas. Relax for 15-20 minutes and let the mask do it’s magic.
Wash off with lukewarm water and dab dry.
Apply moisturizer.

3. Chocolate Brown Sugar Sea Salt Mask from WikiHow

Ingredients
2 bars of dark chocolate, chopped
2/3 cup of milk
Sea salt
3 Tbsp Brown Sugar

Directions
Heat dark chocolate in double boiler for about 3 minutes.
Mix sea salt, brown sugar, and 2/3 of a cup milk in a bowl.
Remove melted chocolate from heat.
Mix melted chocolate with salt/milk mixture.
Allow to cool.
Apply to face while cool but not hardened.
Leave on until it hardens.
Wash or chip off with mild cleanser and warm water.
Add moisturizer when done.

4. Chocolate Oatmeal Honey Mask from Skin Care and Remedies

Ingredients
1/3 cup cocoa powder
1/4 cup organic honey
2 Tbsp of heavy cream (or sour cream)
3 tsp oatmeal powder

Directions
Mix all ingredients until mass in consistent.
Apply to face, gently massaging so oatmeal can start exfoliating the dead skin cell layer.
Leave on for about 15-20 minutes
Rinse off with lukewarm water.

The following recipe is one of my favorites because it's so versatile.. with a tiny bit of tweaking, you can make fudge! How cool is that?

5. Chocolate Avocado, Honey, Oatmeal Face Mask (or Fudge)  
 from Meghan Telpner-Making Love in the Kitchen

Ingredients
1/3 cup cocoa powder
1/4 cup organic honey
2 Tbsp smashed avocado
3 tsp oatmeal powder (leave this out if making soft fudge, leave in if you want a harder texture)

Directions: Face Mask
Mix all ingredients until mass is consistent.
Apply on face, gently massaging so oatmeal can start exfoliating the dead skin cell layer.
Leave on for 15-20 minutes.
Rinse off with lukewarm water.

Instructions: Fudge
Mix all ingredients (except oatmeal) until mass is consistent.
Spread in small pyrex dish or into individual ramikens.
Allow to set in refrigerator for at least two hours.

OATMEAL RAISIN WALNUT CHOCOLATE CHIP COOKIES

Ingredients

OATMEAL RAISIN WALNUT CHOCOLATE CHIP COOKIES

Ingredients

1 cup old fashioned oats
1 cup semi-sweet chocolate chips
1 cup raisins

Directions

In large mixing bowl beat butter, and sugars until light and fluffy. Beat in egg and vanilla.
At low speed, beat in flour mixture until blended.
Fold in ground walnuts, oats, chocolate chips (or pieces) and raisins.
Cover with plastic wrap and chill for 1 hour.
Preheat oven to 350.

We all know that Chocolate is good for the heart, blood pressure, and a lot more. When I was growing up, we were told that chocolate was bad for the skin. That it actually caused acne. This is not true. Chocolate is full of antioxidants that actually gives the skin extra protection against free radicals and can nourish the skin. The following masks can increase hydration, support skin's defense against UV damage, decrease roughness, and actually improve blood flow. Give one or all of them a try.

Pros of Chocolate Face Mask: The skin becomes glowing and soft. The skin becomes firm and smooth. Even if the mask goes into your mouth, no problem, it tastes yummy. The final Chocolate Face Mask even has an alternative fudge recipe.

So today's Tuesday Chocolate Tip: 5 D-I-Y Chocolate Face Mask Recipes! They're all simple to make. Let me know which is your favorite.

1. Chocolate Mask from Household Magic: Daily Tips

Mix together a heaping Tbsp of unsweetened cocoa powder with heavy cream to form a paste.
Apply to clean, dry skin and leave the paste on for 15 minutes.
Wipe off mask with washcloth.
Rinse face with lukewarm water and pat dry.

2. Chocolate Yogurt Honey Mask from Flavor Fiesta

Ingredients:
1 tsp cocoa powder
1 tsp yogurt
1 tsp honey

Directions:
1. Blend cocoa powder with honey and yogurt. Cocoa powder can be difficult to blend, so be patient with this step. Keep mixing until mixture looks like melted chocolate.
2. Clean your face with lukewarm water. Dab dry and then apply the mask evenly all over your face except the eye and lip areas. Relax for 15-20 minutes and let the mask do it’s magic.
3. Wash off with lukewarm water and dab dry.
Apply moisturizer.

3. Chocolate Brown Sugar Sea Salt Mask from WikiHow

Ingredients
2 bars of dark chocolate
2/3 cup of milk
Sea salt
3 Tbsp Brown Sugar

Directions
Heat dark chocolate in a double boiler for about 3 minutes.
Mix sea salt, brown sugar, and 2/3 of a cup milk in a bowl.
Remove melted chocolate from heat.
Mix melted chocolate with salt/milk mixture.
Allow to cool.
Apply to face while cool but not hardened.
Leave on until it hardens.
Wash or chip off with mild cleanser and warm water.
Add moisturizer when done.

4. Chocolate Oatmeal Honey Mask from Skin Care and Remedies

Ingredients
1/3 cup cocoa powder
1/4 cup organic honey
2 Tbsp of heavy cream (or sour cream)
3 tsp oatmeal powder

Directions
Mix all ingredients until mass in consistent.
Apply to face, gently massaging so oatmeal can start exfoliating the dead skin cell layer.
Leave on for about 15-20 minutes
Rinse off with lukewarm water.

This is one of my favorites because it's so versatile.. with a tiny bit of tweaking, you can make fudge! How cool is that!

5. Chocolate Avocado, Honey, Oatmeal Face Mask (or Fudge)  
 from Meghan Telpner-Making Love in the Kitchen

Ingredients
1/3 cup cocoa powder
1/4 cup organic honey
2 Tbsp smashed avocado
3 tsp oatmeal powder (leave this out if making soft fudge, leave in if you want a harder texture)

Directions: Face Mask
Mix all the ingredient until mass is consistent.
Apply on face, gently massaging so oatmeal can start exfoliating the dead skin cell layer.
Leave on for 15-20 minutes
Rinse off with lukewarm water.

Instructions: Fudge
Mix all ingredients (except oatmeal) until mass is consistent.
Spread in small pyrex dish or into individual ramikens
Allow to set in refrigerator for at least two hours.

Chocolate Lovers' Oatmeal

Brr... it's cold outside, and you need to be fortified before you face the crowds or the workplace. What's better to fortify you than Chocolate Oatmeal?  I've posted chocolate oatmeal recipes before, but when I saw this one, I had to try it. As with most recipes, you can vary the ingredients to match your own taste.

I'm a big fan of Coach's Oats. If you haven't tried these yet, you're in for a treat. Coach’s Oats are prepared in a totally different way. The groats are toasted to bring the natural sugars to the surface of the oat, then cracked into small pieces. This patented Cracked n' Toasted™ process means that Coach’s Oats are always firm, never mushy. This recipe is from Coach's Oats (reprinted with permission). Always use the best ingredients. So I know that the Oats are great, and I use premium DARK cocoa. I'll be posting about various cocoas in the near future. I'm a big honey fan, so I use honey rather than sugar, maple syrup or agave, but be sure and experiment.

CHOCOLATE LOVERS' OATMEAL

INGREDIENTS
1 1/4 cups water
1/4 cup Coach Oats ® (for thicker oatmeal, add 2-3 Tbsp. more oats)
2 Tbsp. unsweetened cocoa powder
Your choice of sweetener: Raw sugar, maple syrup or agave nectar.  (I use honey)*
2% milk or almond milk (I use whole milk)*

PREPARATION
1. Bring water to a boil in saucepan. Once water is boiling, add Coach Oats® and lower heat to a simmer. Let simmer for 5 minutes (stirring occasionally). Add cocoa powder and mix well until lumps are gone. Stir in sweetener.
2. Top chocolate oatmeal with fresh fruits such as bananas, blueberries, strawberries or raisins. For an additional treat, sprinkle with chopped almonds and/or toasted grated coconut.
Optional: Stir in peanut butter and/or quick dissolving whey protein for extra protein.
3. To finish up, pour desired amount of 2% milk or almond milk over oatmeal.
