MEXICAN CHOCOLATE BREAD PUDDING: National Chocolate Custard Day & Cinco de Mayo

Today is National Chocolate Custard Day, and since Cinco de Mayo is in two days, I thought I'd post a two-for recipe for Mexican Chocolate Bread Pudding to celebrate. 

I'm a huge Bread Pudding fan. This recipe from Erika Kerekes serves 20, so it's a great treat to take to a party. You can always make less, but be sure to figure out the right measurements before you do.  Baking is rarely about halving. I thought it might be fun to use this recipe for muffins.

Mexican Chocolate Bread Pudding

Ingredients
1 large loaf challah, cut into 1-inch cubes (no need to remove crust)
1 lb dark chocolate, broken into pieces
12 eggs
3 cups heavy cream
4 cups milk
2 cups sugar
2 Tbsp cinnamon
2 Tbsp ground pure chile (not chili powder - New Mexico chile or ancho chile or California Chile)
1 tsp cayenne
1/2 tsp salt

Directions
Preheat oven to 350 degrees.

Pile bread cubes on baking sheet and toast in oven for about 15 minutes. You want them to dry out a bit before mixing them with the custard so that they absorb as much of the liquid as possible. Remove from oven cool a bit. Raise oven temperature to 375.

While bread is toasting, put chocolate pieces in  microwave-safe bowl. Microwave chocolate on high for 1 minute, let rest, then zap for 1 minute more. Remove chocolate and stir with spatula or spoon until smooth and melted.

In very large bowl, mix togethereggs, cream, milk, sugar and spices. Add melted chocolate and whisk until mixture is smooth. Put bread in bowl, toss well, and let bread soak in custard mixture at least half an hour and up to two hours, tossing occasionally to make sure all bread cubes are well coated.

Spray large baking pan (or two medium baking pans) with cooking spray (I don't use spray, so you can always butter the pans). Turn bread-custard mixture into   pan(s) and smooth out top. Bake at 375 for 45 minutes to an hour, until pudding is set. Remove pudding from oven and let sit at least 15 minutes before serving.

Chocolate Pumpkin Bread Pudding: Bread Pudding Day!

Yesterday was Bread Pudding Day, and I forgot to post this recipe for Chocolate Pumpkin Bread Pudding. It's perfect for Thanksgiving or any time! As an extra bonus this recipe is dairy and egg free, so you'll feel you've indulged, but you won't have...at least not all that much. Recipe is from Chloe Coscarelli and appeared in the NYT in 2010. I have posted other Chocolate Pumpkin Bread Pudding recipes, all of which include a thick sauce. This recipe is much lighter.

Chocolate Pumpkin Bread Pudding

Ingredients 
1 cup coconut milk
1 15-ounce can organic pumpkin (plain-no spices)
1/2 cup brown sugar
1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
10 cups cubed day-old bread of your choice (about 10 to 12 slices of sandwich bread, depending on the thickness of slices)
3/4 cup semisweet chocolate chips (Guittard and Ghirardelli are nondairy)
2 Tbsp brown sugar
Powdered sugar for dusting (optional)

Directions
Preheat oven to 350 degrees. Grease 14 4-ounce ramekins (single-serving ceramic dishes) or a 9-by-13-by-2-inch baking dish.
In blender, process coconut milk, pumpkin, brown sugar, salt, and spices until smooth.
In large bowl, toss bread cubes with pumpkin mixture and chocolate chips until each bread cube is coated.

If using ramekins:
Evenly sprinkle about 1/2 teaspoon brown sugar into the bottom of each greased ramekin. Fill each ramekin to the top with the mixture and lightly press it down with the back of a spoon.

If using 9-by-13 baking dish:
Fill baking dish with mixture and lightly press down with back of spoon. Evenly sprinkle about 2 tablespoons brown sugar over the top of the bread pudding. The brown sugar will help the pudding to caramelize on the edges.
(Steps 1 through 3 can be done up to three days in advance; store covered in the refrigerator.)
Bake for 25 to 30 minutes, until top is lightly browned.

If using ramekins:
Let pudding cool a few minutes, then carve around edges with knife to loosen and unmold.
Garnish with powdered sugar if desired and serve warm.

If using  9-by-13 baking dish:
Let pudding cool a few minutes before serving. Cut into portions, then garnish with powdered sugar if desired and serve warm.

The pudding can be baked right before serving or earlier that day and then reheated for 8 to 10 more minutes right before serving.

I found out that persimmons are harder to find elsewhere than in my area, so I thought I'd post my recipe for Chocolate Pumpkin Bread Pudding. It's perfect for Thanksgiving or any time! As an extra bonus this recipe is dairy and egg free, so you'll feel you've indulged, but you won't have...at least not all that much. Recipe is from Chloe Coscarelli and appeared in the NYT in 2010. CHOCOLATE PERSIMMON BREAD PUDDING: Bread Pudding Day!


National Bread Pudding Day! This recipe for Chocolate Persimmon Bread Pudding is the perfect Autumn dessert to celebrate today's Food Holiday. There are lots of persimmons at the farmers market (and on my neighbors' trees) right now. My favorites are Fuyu Persimmons.

Because I love Persimmon Bread Pudding, I thought I'd post this delicious and easy recipe adapted from Whole Foods for Chocolate Persimmon Bread Pudding. Be sure to use Fuyu Persimmons (not Hachiya).

CHOCOLATE PERSIMMON BREAD PUDDING

Ingredients
4 cups half-and-half
3/4 cup sugar
1/4 cup unsweetened DARK cocoa powder
4 eggs
1 Tbsp pure vanilla extract
1 loaf challah, cut into 1-inch cubes (this also works well with a Brioche loaf)
1 cup chocolate chips  (dark or milk chocolate)
2 ripe Fuyu persimmons, quartered and cut into 1/4-inch slices

Directions
Preheat oven to 350°F.
Combine half-and-half with sugar, cocoa powder, eggs, and vanilla in large mixing bowl, whisking until smooth.
Add challah, toss to coat, and set aside to let soak for 15 minutes.
Pour two-thirds of challah mixture into buttered 9 x 13 inch baking dish and sprinkle with 1/2 cup of chocolate chips (or chocolate chunks) and all of the persimmons.
Top with remaining challah mixture and remaining 1/2 cup chocolate chips.
Place dish into water bath (large roasting pan and add hot water to the roasting pan until it reaches about 1 inch up the sides of the dish).
Bake for 40 minutes, then set aside to let cool, leaving dish in water bath.
Once cool, remove dish from water bath then cut pudding into squares and serve.

CHOCOLATE IRISH SODA BREAD PUDDING with GUINNESS ICE CREAM: St. Patrick's Day!


Travel websites are a good resource for local recipes. This Chocolate Irish Soda Bread Pudding may not be served in any pub in Ireland, but it is served at my house! Celebrate St. Patrick's Day with Chocolate Irish Soda Bread Pudding! I love this vintage advertisement for Guinness.

This great recipe for Chocolate Irish Soda Bread Pudding comes from www.karott.com. Their site is all about the Irish: Guinness, Gaelic Language, Travel. I've never made the Guinness Ice Cream. I've always just added Vanilla Ice Cream or Whipped Cream to this Soda Bread Pudding, but the Guinness Ice Cream sounds great. I've included the ice cream recipe in case you have the time and inclination. This is perfect for St. Patrick's Day!

Chocolate Irish Soda Bread Pudding

Ingredients:
2 loaves of Irish soda bread
4 ounces butter, melted
6 eggs
1/2 cup brown sugar
1/4 cup raisins
1 quart heavy cream
8 ounces semi sweet chocolate (chopped)

Directions:
Cut 1 loaf or half of the bread in cubes. Process the remaining half in a food processor.
Place bread cubes and crumbs in a bowl and cover with melted butter, toss and set aside.
Place cream in a sauce pan and bring to a boil. Place chopped chocolate in a bowl and set on top of the cream and let it act as a double-boiler to melt the chocolate.
In another bowl beat eggs and sugar until pale and thick.
When the cream comes to a boil pour it over the chocolate whisking quickly. Then temper the chocolate-cream mixture into the egg mixture. this isn't as difficult as you think :-)
Mix in the raisins.
Pour this mixture over the bread, mix well, and let it soak overnight or at least 2 hours. There should be a sense of moistness. If the mixture looks dry add another 1/2 cup of heavy cream.

Preheat oven to 375 Degrees F.
Butter a 9 inch cake pan. Pour mixture into pan. Place in a hotel pan and fill 3/4 up the sides of cake pan with cold water.
Bake at 375 for 1/2 hour. Turn pan, reduce heat to 325 F and bake for another 1/2 hour or until a toothpick inserted comes out dry.

Top with Vanilla Ice Cream, Whipping Cream or Guinness Ice Cream

Guinness Ice Cream

Ingredients:
12 ounces Guinness
2 cups heavy cream
2 cups whole milk
3/4 cup granulated sugar
1 vanilla bean, split in half lengthwise
6 egg yolks

Directions
In a large saucepan, simmer the Guinness until reduced by 3/4 in volume, about 8 minutes. Combine the cream, milk, and sugar in a medium, heavy saucepan. Scrape the seeds from the vanilla bean into the pan and add the vanilla bean halves. Bring to a gentle boil over medium heat. Remove from the heat.

Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.

Remove from refrigerator and add the Guinness reduction, whisking until well blended. Pour into the bowl of an ice cream machine and freeze according to the manufacturer's instructions. Transfer to an airtight container and freeze until ready to serve.

In large bowl, toss bread cubes with pumpkin mixture and chocolate chips until each bread cube is coated.

If using ramekins:
Evenly sprinkle about 1/2 teaspoon brown sugar into the bottom of each greased ramekin. Fill each ramekin to the top with the mixture and lightly press it down with the back of a spoon.

If using 9-by-13 baking dish:
Fill baking dish with mixture and lightly press down with back of spoon. Evenly sprinkle about 2 tablespoons brown sugar over the top of the bread pudding. The brown sugar will help the pudding to caramelize on the edges.
(Steps 1 through 3 can be done up to three days in advance; store covered in the refrigerator.)
Bake for 25 to 30 minutes, until top is lightly browned.

If using ramekins:
Let pudding cool a few minutes, then carve around edges with knife to loosen and unmold.
Garnish with powdered sugar if desired and serve warm.

If using  9-by-13 baking dish:
Let pudding cool a few minutes before serving. Cut into portions, then garnish with powdered sugar if desired and serve warm.

The pudding can be baked right before serving or earlier that day and then reheated for 8 to 10 more minutes right before serving.

Chocolate Pumpkin Bread Pudding for Thanksgiving

I love Chocolate Pumpkin Bread Pudding. It's perfect for Thanksgiving or any time! As an extra bonus it's dairy and egg free, so you'll feel you've indulged, but you won't have...at least not all that much. Recipe is from Chloe Coscarelli and appeared in the NYT in 2010. I have posted other Chocolate Pumpkin Bread Pudding recipes, all of which include a thick sauce. This recipe is so much lighter.

Chocolate Pumpkin Bread Pudding

Ingredients 
1 cup coconut milk
1 15-ounce can organic pumpkin
1/2 cup brown sugar
1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
10 cups cubed day-old bread of your choice (about 10 to 12 slices of sandwich bread, depending on the thickness of slices)
3/4 cup semisweet chocolate chips (Guittard and Ghirardelli are nondairy)
2 Tbsp brown sugar
Powdered sugar for dusting (optional)

Directions
Preheat oven to 350 degrees. Grease 14 4-ounce ramekins (single-serving ceramic dishes) or a 9-by-13-by-2-inch baking dish.
In blender, process coconut milk, pumpkin, brown sugar, salt and spices until smooth.

Chocolate Persimmon Bread Pudding

I recently posted photos of persimmons on Facebook, and several people asked what you do with persimmons. Here's a great recipe I've before for Chocolate Persimmon Bread Pudding. There are lots of persimmons at the farmer's market (and on several of my neighbors' trees) right now. My favorites are Fuyu Persimmons.

Because I love Persimmon Bread Pudding, I thought I'd post this delicious and easy recipe adapted from Whole Foods for Chocolate Persimmon Bread Pudding. It's the perfect Autumn dessert! Be sure to use Fuyu Persimmons (not Hachiya).

CHOCOLATE PERSIMMON BREAD PUDDING

Ingredients
4 cups half-and-half
3/4 cup sugar
1/4 cup unsweetened DARK cocoa powder
4 eggs
1 Tbsp Madagascar vanilla extract
1 loaf challah, cut into 1-inch cubes (this also works well with a Brioche loaf)
1 cup chocolate chips (or a cup of chopped chocolate--65-70% cacao)
2 ripe fuyu persimmons, quartered and cut into 1/4-inch slices

Directions
Preheat oven to 350°F.
Combine half-and-half with sugar, cocoa powder, eggs, and vanilla in large mixing bowl, whisking until smooth.
Add challah, toss to coat, and set aside to let soak for 15 minutes.
Pour two-thirds of challah mixture into buttered 9 x 13 inch baking dish and sprinkle with 1/2 cup of chocolate chips (or chocolate chunks) and all of the persimmons.
Top with remaining challah mixture and remaining 1/2 cup chocolate chips (or chopped chocolate).
Place dish into water bath (large roasting pan and add hot water to the roasting pan until it reaches about 1 inch up the sides of the dish).
Bake for 40 minutes, then set aside to let cool, leaving dish in water bath.
Once cool, remove dish from water bath then cut pudding into squares and serve.

S'mores Bread Pudding

It's summer, and I can't have too many recipes for S'mores. So here's a new one--S'mores Bread Pudding--easy and fabulous! Recipe from AllRecipes, a great source for all recipes. Natch! This is a great ooey-gooey taste treat for breakfast or dessert. It's a great Bread Pudding that you can make in your oven at home and taste like you made it over the campfire.

S'mores Bread Pudding

Ingredients
4 hot dog buns, cut into 1-inch pieces
1 (14 ounce) can sweetened condensed milk
3/4 cup milk
4 eggs, beaten
1 tsp vanilla extract
1/4 tsp ground nutmeg
1 cup miniature marshmallows
3/4 cup miniature semisweet chocolate chips
5 graham cracker squares, crushed Honey Maid Graham Crackers
2 Tbsp miniature marshmallows, or more to taste
2 Tbsp miniature semisweet chocolate chips, or more to taste

Directions 
Preheat oven to 325 degrees F (165 degrees C).
Grease 2-quart square baking dish. Spread hot dog bun pieces on baking sheet. Bake hot dog buns in preheated oven until dry and crisp, 7 to 8 minutes. Cool completely.
Beat condensed milk, 3/4 cup milk, eggs, vanilla extract, and nutmeg together in a bowl.
Spread hot dog bun pieces out in the bottom of the prepared baking dish.
Pour milk mixture over buns. Scatter 1 cup marshmallows and 3/4 cup chocolate chips over milk mixture; let rest until mixture is slightly soaked into bread, about 5 minutes.
Sprinkle graham cracker crumbs over top.
Bake in preheated oven until  knife inserted into center of bread pudding comes out clean, about 35 minutes.
Whisk 2 tablespoons milk, 2 tablespoons marshmallows, and 2 tablespoons chocolate chips together in saucepan over medium heat until marshmallows and chocolate are melted and completely incorporated.
Pour marshmallow mixture over bread pudding and cool, 20 to 30 minutes.
