Milk Chocolate Pecan Pound Cake

Today is National Pound Cake Day. Pound Cake is so versatile. The name Pound Cake comes from the fact that the original pound cakes contained one pound each of butter, sugar, eggs, and flour. Made it easy to remember! No leaveners were used other than the air whipped into the batter. A cake made of one pound of each of butter, sugar, eggs, and flour would have been very large and would have been able to serve multiple families. As years went by, the portions of the ingredients used were adjusted to make a smaller, lighter cake. However, the name of the cake stuck. Pound cakes are generally baked in either a loaf pan or a Bundt pan. They can be iced or dusted with powdered sugar.

I know you're going to love the following recipe for Milk Chocolate Chip Pecan Pound Cake. I left the recipe pretty much as is since I did originally find it on the Hershey's Kitchens website, but, of course, feel free to substitute. It's actually quite awesome with dark chocolate chips, dark cocoa and rich dark chocolate syrup.

Milk Chocolate Chip Pecan Pound Cake

Ingredients:
 2 cups (11.5-oz. pkg.) HERSHEY'S Milk Chocolate Chips, divided
1 cup unsalted butter, softened (Margarine in original recipe as option. I don't use margarine)
1-1/4 cups granulated sugar
3 eggs
2-1/4 cups all-purpose flour
1/4 cup HERSHEY'S Cocoa
1/4 teaspoon baking soda
Dash salt
1 cup buttermilk or sour milk*
3/4 cup HERSHEY'S Syrup
2 teaspoons vanilla extract
1 cup chopped pecans
Powdered sugar(optional)

Directions:
Heat oven to 350°F. Grease and flour 12-cup fluted tube pan (bundt pan).
Place 1 cup milk chocolate chips in medium microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, until chips are melted when stirred.
Beat butter in large bowl until creamy; gradually add granulated sugar, beating on medium speed of mixer until well blended. Add eggs, one at a time, beating well after each addition. Add melted chocolate; beat until blended.
Stir together flour, cocoa, baking soda and salt; add to chocolate mixture alternately with buttermilk, beating until blended. Add syrup and vanilla; beat until blended. Stir in remaining milk chocolate chips and pecans. Spoon batter into prepard pan.
Bake 1 hour and 15 minutes or until wooden pick inserted in center of cake comes out clean, Cool 10 minutes; remove from pan to wire rack. Cool completely.

*To sour milk: Use 1 tablespoon white vinegar plus milk to equal 1 cup.

Decadent Chocolate Pudding with Espresso Whipped Cream

I love Neilsen-Massey extracts. They're pure and strong and perfect for cooking and baking. Love this recipe from their website for Decadent Chocolate Pudding with Espresso Whipped Cream. Easy and delicious.

Decadent Chocolate Pudding with Espresso Whipped Cream  

Ingredients
2 Tbsp cornstarch
2 cups whole milk
4 egg yolks
1/2 cup of powdered sugar
8 ounces semi-sweet chocolate, melted
1 1/2 tsp Nielsen-Massey Mexican Pure Vanilla Extract
1 tsp Nielsen-Massey Pure Chocolate Extract
1/2 tsp Nielsen-Massey Pure Coffee Extract

Directions
In heavy saucepan, combine cornstarch and milk. Bring to boil over moderate heat, stirring constantly. Reduce heat to low and continue cooking 3 minutes, stirring constantly. Remove from heat and let cool.
In small bowl, beat the egg yolks with powdered sugar until pale yellow and have thickened. Gradually pour into cooled milk mixture. Place saucepan back onto low heat and cook for 5 minutes, stirring constantly. Do not let simmer or boil.
Remove from heat and add melted chocolate, vanilla, chocolate, and coffee extracts.
Pour into individual serving bowls or ramekins.
Chill 3-4 hours until set.
Serve with Espresso Whipped Cream.

Espresso Whipped Cream


Ingredients
1 cup heavy whipping cream
2 tsp sugar
1 tsp Nielsen-Massey Pure Coffee Extract

Directions
In chilled bowl, combine all ingredients, and whip with an electric mixer until fluffy. Serve with Decadent Chocolate Pudding.

Peanut Butter Chocolate Banana Cream Pie

Today, March 2,  is National Banana Cream Pie Day. Last year I posted two recipes for Chocolate Banana Cream Pie. One recipe is easier than the other, but they're both good and very traditional. Since yesterday was Peanut Butter Lovers Day, I thought I'd post a recipe that includes both Food Holidays: Peanut Butter Chocolate Banana Cream Pie. It doesn't get much better than that. This recipe is from Kraft Foods. You can always substitute your own home-made ingredients.

PEANUT BUTTER CHOCOLATE BANANA CREAM PIE

Ingredients
35 Nilla Wafers, finely crushed (about 1 cup)
1/4 cup butter, melted
2 squares Baker's Semi-Sweet Chocolate, divided  (or a high quality dark chocolate)
1/2 cup Peanut Butter
2 Bananas, cut lengthwise in half, then crosswise into quarters
2 packages (3.4 ounces each) JELL-O Vanilla Flavor Instant Pudding
2 cups cold Milk
2 cups thawed COOL WHIP Whipped Topping, divided
2 Tbsp PLANTERS Salted Peanuts, coarsely chopped

Directions
HEAT oven to 350ºF.
MIX wafer crumbs and butter until well blended; press onto bottom and up side of 9-inch pie plate. Bake 5 to 8 min. or until golden brown. Cool completely. Meanwhile, make chocolate curls from 1/2 chocolate square. Refrigerate.
MICROWAVE remaining 1-1/2 chocolate squares and peanut butter in microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted and mixture is well blended. Place bananas in crust; drizzle with melted chocolate.
BEAT pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup COOL WHIP. Spread over bananas; top with remaining COOL WHIP.
REFRIGERATE 3 hours. Top with chocolate curls and nuts just before serving.

Extra Nutty Peanut Butter Fudge Brownies

Today is National Peanut Butter Lovers Day! Here's a great and easy recipe for Extra Nutty Peanut Butter Fudge Brownies adapted from a Pillsbury recipe. I don't usually use boxed mixes, but this is a good recipe. Of course you can make your own brownies and just add the layer of peanut butter fudge and 1/2 cup chopped peanuts. I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe. I also add chocolate chips to the recipe and cut down on the peanut butter chips. You can never have enough chocolate!

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES!

Ingredients
2 (15.8 oz) pkg. fudge brownie mix with chocolate syrup
1/2 cup oil
1/2 cup water
 2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
7 ounces peanut butter chips
1/2 cup peanut butter
1/2 cup chocolate chips
1/2 cup roasted salted peanuts, coarsely chopped

Directions
Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13x9-inch pan.
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.
In large saucepan, combine condensed milk, peanut butter chips and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly.
Spoon and spread peanut butter mixture over batter.
Drop remaining half of batter over peanut butter layer.
Sprinkle with chopped peanuts.
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan.
DO NOT OVERBAKE. 
Cool 2 hours.
Refrigerate 1-1/2 hours or until completely cooled before serving.
Cut into bars.
