MINCEMEAT: History & Recipe for Chocolate Mincemeat Pie!

There's something very odd about the notion of mincemeat pie, but it's all in the name. For many, Mincemeat Pie is a holiday tradition. My sister's Mother-in-Law always made mincemeat pies for the holidays, so when I saw this Retro Advertisement with a tip from Elsie, the Borden Cow, I just had to post it. And, here's a little history on Mincemeat Pies -- and a recipe for individual Chocolate Mincemeat Pies!

What exactly is mince meat? Mincemeat (one word or two) is a mixture of currants, raisins, sugar, apples, candied citrus peel, spices, and suet, typically baked in a pie. No meat, minced or otherwise.

Mincemeat developed as a way of preserving meat without salting or smoking some 500 years ago in England, where mince pies are still considered an essential accompaniment to holiday dinners just like the traditional plum pudding. This pie is a remnant of a medieval tradition of spiced meat dishes, usually minced mutton, that have survived because of its association with Christmas. These pies have also been known as Christmas Pies. Mince pie as part of the Christmas table had long been an English custom. Today, we are accustomed to eating mince pie as a dessert, but actually "minced" pie and its follow-up "mincemeat pie" began as a main course dish with with more meat than fruit (a mixture of meat, dried fruits, and spices). As fruits and spices became more plentiful in the 17th century, the spiciness of the pies increased accordingly. Read more HERE.

And what's a chocolate blog without chocolate? Here's a great recipe from the BBC for individual Chocolate Mincemeat Pies.

CHOCOLATE MINCEMEAT PIES

Ingredients
10 ounces plain flour, sifted
4½ ounces icing sugar, sifted (powdered/confectioners sugar)
2 oz cocoa powder, sifted
pinch salt
7 oz cold butter, diced
2 free-range egg yolks
1 lb 2 ounces ready-made mincemeat
2 clementines, zest and juice
2 Tbsp milk
1 free-range egg, beaten

Directions
Mix flour, icing sugar, cocoa powder and salt together in a bowl. Mix in butter with fingertips until mixture resembles breadcrumbs. Stir in egg until the mixture comes together in clumps (you may need to a little cold water).
Knead the dough briefly until smooth, wrap in plastic wrap and leave to chill in refrigerator for one hour.
Preheat oven to 400F.
Mix mincemeat, clementine zest, and juice together in bowl.
Remove pastry from fridge, and roll out to thickness of 1/4 inch.
Using a 3 inch fluted cutter, stamp out 12 discs from the pastry and use them to line a 12-hole bun tin.
Fill each hole with two teaspoons of mincemeat mixture and brush edges with a little milk.
Using a 2 1/2 inch fluted cutter, cut out 12 circles and use them to top the mince pies, pressing the edges together with your fingertips.
Re-roll any remaining pastry and cut out snowflakes or star shapes to decorate top.
Brush top of each mince pie with beaten egg and gently place the decorations on top, then brush again with egg.
Bake in oven for 20-25 minutes, or until pastry is cooked through.

CHOCOLATE BAVARIAN CREAM PIE: Bavarian Cream Pie Day

Today is National Bavarian Cream Pie Day. Here's a great Retro Ad from 1968 for Bavarian Pudding with Recipe.

But for today's Bavarian Cream Pie Day holiday, I'm posting a better recipe for Chocolate Bavarian Cream Pie with an Oreo Crust! Be sure and scroll down for the recipe!

CHOCOLATE BAVARIAN CREAM PIE WITH OREO COOKIE CRUST

 Ingredients
 2 ounces dark chocolate (65-85% cacao)
 2/3 cup sugar
1/2 cup hot whole milk
1 Tbsp gelatin
1/4 cup cold water
1 pint whipping cream
1 tsp pure vanilla
Pinch of salt

Oreo Pie Crust
24 Oreo Cookies
1/4 cup unsalted butter, melted

Put cookies in food processor and pulse until crumbs.
Add melted butter and blend until combined.
Put crumb mixture in 9" pie pan and press on bottom and up sides (evenly)
Refrigerate crust for an hour before adding filling.

Filling
Soak gelatin in cold water.
Melt chocolate in double boiler (or saucepan over saucepan) over simmering water.
Add sugar, salt, and hot milk. Stir.
Add gelatin to chocolate mixture.
Remove from heat and cool until mixture begins to thicken.
Beat with hand mixer until very light.
Fold in whipped cream.
Add vanilla.
Pour Chocolate Bavarian Cream mixture into Oreo Cookie Pie Crust.
Place in refrigerator to cool.

1-2-3 FUDGE SAUCE: Retro Ad & Recipe for National Hot Fudge Sundae Day!

Today is National Hot Fudge Sundae Day! I really like Hot Fudge Sauce on cold ice cream.

This Retro Ad & Recipe for 1-2-3 Fudge Sauce is from Carnation Evaporated Milk, September 7, 1953. You can follow the recipe, or you can modify as you see fit. I just love these Retro Ads, don't you? So here's a way to beat the heat! I would use 4 squares, of course.. and probably substitute some excellent artisan chocolate!

Today is National Ice Cream Day, and Elsie the Cow has the perfect recipe to celebrate. A few days ago I posted a fun Borden's Elsie the Cow Ad from July 1941. Here's another of the Retro 'Story' Advertisements from the same summer (August 1941). This time Elsie's Magic Chocolate Ice Cream wins at the County Fair--judged the Smoothest and Creamiest Home-made Ice Cream. Happy Ice Cream Day and Ice Cream Month! CHOCOLATE ALMOND CREAM ROLL: 'Recipe for getting yourself talked about this summer'- Retro Recipe/Story Ad!

Summer is here, so I thought I'd take you back to another summertime with a Retro Baker's Chocolate Ad. My parents bought a new house in suburbia in the late 50s. Since neither of my parents grew up with air conditioning, they didn't choose that option from the builder upgrades. What were they thinking? Philadelphia? In the summer? My grandmother lived with us, so there was always a hot oven going since she loved to bake. Needless to say, a few years down the road, my parents added air conditioning. Thank goodness. O.K. I know it's a #firstworldproblem, but still.

So here's a great "Recipe for Getting Yourself Talked About this Summer." Gotta love the Baker's Chocolate Story/Recipe Ads. This really is a great recipe for Chocolate Almond Cream Roll (with a variation for Chocolate Tier Cake). Want to bring it into 2021? Just substitute your favorite dark chocolate and cut down a bit on the sugar.

TOASTED ALMOND TRUFFLES: Retro Ad with Recipe for National Chocolate with Almonds Day

Today is National Chocolate with Almonds Day, and what better way to celebrate than to make  Toasted Almond Truffles. I love this Retro 1985 Carnation/Nestle Recipe Advertisement. It's so easy. Of course, you can substitute your own very best chocolate in this recipe. Personally I prefer dark chocolate in these truffles.


TOASTED ALMOND TRUFFLES

Ingredients
1/2 cup undiluted CARNATION Evaporated Milk
1/4 cup sugar
One 11 1/2 oz. pkg. (2 cups) NESTLE Milk Chocolate Morsels (or your favorite chocolate)
1/2 to 1 teaspoon almond extract
1 cup finely chopped almonds, toasted

Directions
Combine evaporated milk and sugar in small heavy-gauge saucepan. Cook over medium heat until mixture comes to a full rolling boil. Boil 3 minutes; stir constantly. Remove from heat. Stir in morsels and almond extract until morsels melt and mixture is smooth. Chill 45 minutes. Shape into 1-inch balls. Roll in almonds. Chill until ready to serve. Makes about 2 1/2 dozen truffles.

FATHER'S DAY BUTTER CAKE WITH CHOCOLATE FROSTING: Retro Ad & Recipe

Love this Retro Father's Day Ad for Buttercake. I don't think I've ever posted a Butter Cake recipe. A good Butter Cake should be in every baker's repertoire, especially with chocolate butter frosting! As always use the very best butter and chocolate!

The following recipe for Butter Cake with Chocolate Frosting is from Betty Crocker, tweaked slightly. This cake is perfect for Father's Day!

FATHER'S DAY BUTTER CAKE WITH CHOCOLATE FROSTING

Ingredients

Cake
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 eggs
2 teaspoons vanilla
3/4 cup milk
1/2 cup sour cream

Frosting 
1 1/2 cups unsalted butter, softened
3 cups powdered sugar
3/4 cup unsweetened cocoa
2 tablespoons milk
1 teaspoon vanilla

Cake:
Heat oven to 350°F.
Grease bottom and sides of 2 (8-inch) round cake pans with shortening; lightly flour.
In small bowl, mix flour, baking powder, and salt; set aside.
In large bowl, beat 3/4 cup butter and the granulated sugar with electric mixer on medium speed, scraping bowl occasionally, about 2 minutes or until fluffy. Beat in eggs, one at a time, just until smooth. Stir in 2 teaspoons vanilla. On low speed, beat flour mixture into sugar mixture alternately with 3/4 cup milk, beating after each addition, until smooth. Scrape side of bowl occasionally. Beat in sour cream. Pour evenly into pans. Tap pans on counter 2 to 3 times to eliminate air bubbles from batter.
Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.

Frosting:
In medium bowl, beat frosting ingredients with electric mixer on medium speed until smooth and spreadable. Place first cake layer on plate, and spread 1 cup frosting over top. Place second cake layer on top of first. Frost side and top of cake with remaining frosting. Store loosely covered at room temperature.

RIBBON FANTASY FUDGE: Retro Ad & Recipe for National Fudge Day

Today is National Fudge Day. I love Fudge. Who doesn't? I love both the texture and the taste. What makes it special for you?

To celebrate this food holiday, here's a great Retro Ad & Recipe from Kraft for Ribbon Fantasy Fudge using Marshmallow Creme. I usually use Marshmallow Fluff which I think has a better flavor, but whatever works for you. What I like most about this Fudge recipe is that there are two distinct layers. Easy to make, and oh so pretty! And, you can always throw in some walnuts for more texture.


Ribbon Fantasy Fudge

Ingredients
3 cups sugar
3/4 cup butter (original retro recipe calls for Parkay margarine)
2/3 cup (5-1/3 fl oz can) evaporated milk
6 ounce pkg semi-sweet chocolate pieces (I substitute chopped good dark chocolate)
7 ounce jar Kraft marshmallow creme (I prefer marshmallow Fluff)
1 tsp pure vanilla
1/2 cup peanut butter (crunchy or creamy style)

Directions
Combine 1-1/2 cups sugar, 6 Tbsp butter, and 1/3 cup milk in heavy 1-1/2 quart sauce pan; bring to full rolling boil, stirring constantly. Continue boiling 4 minutes over medium heat; stirring constantly to prevent scorching. Remove from heat; stir in chocolate pieces until melted. Add 1 cup (1/2 jar) marshmallow creme and 1/2 tsp vanilla; beat until well blended. Pour into 13 x 9 inch pan. Repeat with remaining ingredients, substituting peanut butter for chocolate pieces. Spread over chocolate layer. Cool at room temperature; cut into squares.

MOTHER'S DAY CHOCOLATE CAKE: Retro Ad & Recipe

I adore Retro Advertisements, and this one is particularly close to my heart. My mother had a Sunbeam Mixmaster. So many cookies, cakes, and brownies were made with that Mixmaster. I don't have my mother's Sunbeam Mixmaster, but I have my Mother-in-Law's -- the same model with all the attachments. I use my Kitchenaid Mixer mostly, but I love the functionality of that old Mixmaster War Horse. It still works, and I'll bet my mother-in-law got it in the early 1950s.

So, for Mother's Day, here's a Sunbeam Mixmaster Mother's Day Advertisement from Life Magazine, May 1, 1950, complete with Chocolate Cake recipe. What are you making for Mother's Day?

HERSHEY'S PRIZE CHOCOLATE CAKE: Retro Ad & Recipe

Can you ever have enough recipes for Chocolate Cake? I don't think so. Here's another Retro recipe from the 70s from Hershey's for Hershey's Prize Chocolate Cake. This recipe uses cocoa, and, of course, specifically Hershey's cocoa. If you have a cocoa you favor, feel free to use it instead. And, don't miss the note: How to Bake with Cocoa. FYI, I usually decrease the amount of sugar in this recipe.

CHOCOLATE PECAN BARS: National Pecan Day

Today is National Pecan Day! Although there are so many ways to celebrate, I thought I'd return to a great recipe from the past. I love when I find recipes like this in the newspaper or magazine, or tucked in or on the back of the product! Here's a great Retro Recipe for Chocolate Pecan Bars. These are so easy to make, and I always have the ingredients in the pantry. Given that it's retro, I would upgrade with the very best cocoa, real butter, and pure vanilla.


CHOCOLATE PECAN BARS

Ingredients:
1-1/4 cups unsifted flour
1 cup confectioners’ sugar
1/2 cup DARK Cocoa
1 cup cold butter
1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)
1 egg
2 tsp pure vanilla extract
1-1/2 cups chopped pecans

Directions
Preheat oven to 350° (325° for glass dish).
In large bowl, combine flour, sugar, and cocoa; cut in butter until crumbly (mixture will be dry). Press firmly on bottom of 13×9-inch baking pan. Bake 15 minutes.
Meanwhile, in medium bowl, beat sweetened condensed milk, egg, and vanilla; mix well. Stir in nuts. Spread evenly over crust.
Bake 25 minutes or until lightly browned. Cool. Cut into bars.
Store covered in refrigerator.

Retro Easter Egg Cake Ad & Recipe

I love this Retro Advertisement and recipe from 3/30/53. "Quick Like a Bunny Make this Gay Easter Egg Cake."

This is a "Golden Yellow" Cake with Chocolate Icing. Easy and pretty. You can, of course, update the recipe to make your own yellow cake and your own icing. Most kitchen and craft stores will have special pans to create an egg shape, but if you want to go retro, follow this recipe and cut the egg into shape!

RIBBON FANTASY FUDGE: Retro Ad & Recipe

I love Fudge. Well who doesn't? I love both the texture and the taste. What makes it special for you?

CHOCOLATE STICKY BUNS: National Sticky Bun Day: Retro Ad & Recipe

Today is National Sticky Bun Day! I love Cinnamon Buns, and what could be better than Chocolate Sticky Buns! Here's a great Retro Betty Crocker Gold Medal Flour Advertisement and Recipe for Chocolate Cinnamon Buns aka Chocolate Sticky Buns.

Chocolate Sticky Buns aka Chocolate Cinnamon Buns

Ingredients
3/4 cup warm water (not hot - 110 to 115 degrees)
1 package active dry yeast
1/4 cup shortening
1 teaspoon salt
1/4 cup sugar
1 egg
1/3 cup cocoa  (use DARK cocoa for richness)
2 and 1/4 cups sifted flour
1 Tablespoon soft unsalted butter
1 and 1/2 teaspoons cinnamon
3 Tablespoons sugar
chopped pistachio nuts (or almonds or pecans)

Directions
In mixer bowl, dissolve yeast in warm water. Add shortening, salt, sugar, egg, cocoa, and 1 cup flour. Beat 2 minutes, medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl. Stir in remaining flour; blend well. Scrape sides of bowl.
Cover with cloth; let rise in warm place (85 degrees) until double in bulk, about 1 hour. (If kitchen is cool, place dough on rack over bowl of hot water; cover completely with towel.)
Stir down by beating 25 strokes. Turn soft dough out on well floured cloth-covered board.
Roll into rectangle, 12 x 9". Spread with butter; sprinkle with cinnamon-sugar mixture. Roll up, beginning at wide side. Pinch edge into roll. Cut 12 pieces.
Place in greased 9" square pan. Let rise in warm place (85 degrees) until double, about 40 minutes.
Heat oven to 375 degrees (quick mod.). Bake 25 minutes.
Remove from pan, frost top immediately with icing (3/4 cup sifted confectioners' sugar moistened with cream or milk to spreading consistency.) Sprinkle with chopped nuts.
Serve warm.

PEANUT BRITTLE COOKIES: National Peanut Brittle Day

Happy Peanut Brittle Day! Here's a 1953 ad from French's for the $1,000 Peanut Brittle Cookies Recipe (1953)

Fill your cookie jar today with these really different, prize-winning cookies made with French’s pure vanilla and fresh-ground cinnamon. Best of Class Winner in Pillsbury’s Bake-Off!

PEANUT BRITTLE COOKIES

Ingredients 

1 cup sifted flour 

1/2 teaspoon baking soda 

1/2 teaspoon cinnamon 

1/2 cup butter or other shortening 

1/2 cup brown sugar, firmly-packed 

3 tablespoons beaten egg 

1 teaspoon French's vanilla extract 

1 cup salted peanuts 

Instructions 

Sift together flour, soda, cinnamon. 

Cream butter, add sugar gradually, creaming well. 

Add 2 tablespoons of egg and vanilla. 

Beat well.

Blend in dry ingredients and 1/2 cup peanuts, finely-chopped. 

Mix thoroughly. 

Spread or pat dough on a greased baking sheet to a 14- by 10-inch rectangle. 

Brush with remaining egg. 

Sprinkle on 1/2 cup peanuts. 

Bake in slow oven (325 F) for 20 to 25 minutes. Do not overbake. 

Cut or break into pieces while warm.
