Peanut Butter and Chocolate is such a great combination. So for today's holiday, I give you a Trader Joe's Recipe for Preposterously Peanut Butter Cup Cookies!

I always say you can find recipes in the most unsuspected places. Well, here's one for the books--or bag! I, like everyone else, use a lot of old bags for grocery shopping. Some I've had, some I've picked up over my travels, many are book bags. But--I don't think I've ever paid for a nice grocery bag at Trader Joe's. So you can imagine my surprise when I picked up this bag from my pile, only to find this great recipe for Preposterously Peanut Butter Cup Cookies on the back of this Trader Joe's bag. I had to make these cookies! Yum!!! You'll love them. Easy and delicious.

Extra Nutty Peanut Butter Fudge Brownies: National Peanut Lovers Day!

Here's a great  recipe for Extra Nutty Peanut Butter Fudge Brownies adapted from Pillsbury using their box Brownie Mix.  I don't usually use boxed mixes, but this is a good recipe. Of course you can make your own brownies and just add the layer of peanut butter fudge and 1/2 cup chopped peanuts.

I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe.

I also add chocolate chips to the recipe and cut down on the peanut butter chips. You can never have enough chocolate!

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES

Ingredients
2 (15.8 oz) pkg. fudge brownie mix with chocolate syrup
1/2 cup oil
1/2 cup water
 2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
7 ounces peanut butter chips
1/2 cup peanut butter
1/2 cup chocolate chips
1/2 cup roasted salted peanuts, coarsely chopped

Directions
Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13 x 9-inch pan.
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.
In large saucepan, combine condensed milk, peanut butter chips and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly.
Spoon and spread peanut butter mixture over batter.
Drop remaining half of batter over peanut butter layer.
Sprinkle with chopped peanuts.
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan.
DO NOT OVERBAKE.
Cool 2 hours.
Refrigerate 1-1/2 hours or until completely cooled before serving.
Cut into bars.

Happy Birthday, ELVIS! Peanut Butter, Banana, Bacon, Chocolate Chip Cookies

Happy Birthday, Elvis!

We all know that Elvis loved his peanut butter and banana sandwiches, but add some bacon and chocolate chips and make these cookies to celebrate his birthday!.Elvis Cookies recipe from the CookingChannel.  Some interesting ingredients and preparation--in muffin tins!

ELVIS PEANUT BUTTER, BANANA, BACON CHOCOLATE CHIP COOKIES!

Ingredients
10 slices bacon
2 1/4 cups all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon salt
8 ounces unsweetened butter, softened
1/4 cup mayonnaise
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
3/4 cup semisweet chocolate chunks
1/2 cup chopped salted peanuts
1/2 cup sweet dried banana chips, roughly chopped

Directions
Cook bacon in skillet until crisp, then drain on paper towels. Once bacon is cool, roughly chop it (you should have about 1/2 cup).
Combine flour, baking soda and salt in medium bowl.
In large bowl, beat butter, mayonnaise and sugars with mixer at medium speed until fluffy, about 3 minutes. Beat in eggs, one at a time, until well blended. Add peanut butter and vanilla and beat until combined. At low speed, add  flour mixture in batches, beating until just combined.
Using wooden spoon, stir in  chocolate chunks, bacon, peanuts and banana chips.
Cover bowl with plastic wrap and chill at least 30 minutes or overnight.
Position racks in upper and lower thirds of the oven and preheat the oven to 325 degrees F.
Line 2 muffin tins with paper liners. Fill muffin tins about halfway full with batter (a 2-inch, 2-ounce ice cream scoop gives you just about the perfect amount, and helps prevent spilling).
Bake until tops are slightly golden and toothpick inserted into center comes out clean, about 30 minutes. (Keep in mind that the cookies won't rise and form a dome like a cupcake.)
Let cool in muffin tins on wire racks for about 10 minutes, then unmold cookie cups and transfer to racks to cool completely.
Cook's Notes: The mayonnaise in this recipe makes these cookies especially tender.

Elvis has left the building, and he took these cookies with him!

RIBBON FANTASY FUDGE: Retro Ad with Recipe for National Peanut Butter & Chocolate Day!

Tomorrow is National Peanut Butter & Chocolate Day, and you're going to love this recipe for Ribbon Fantasy Fudge. Here's a great Retro Ad & Recipe from Kraft for Ribbon Fantasy Fudge using Marshmallow Creme. I usually use Marshmallow Fluff which I think has a better flavor, but whatever works for you. What I like most about this Fudge recipe is that there are two distinct layers. Easy to make, and oh so pretty! And, you can always throw in some walnuts for more texture, if you want.

Ribbon Fantasy Fudge

Ingredients
3 cups sugar
3/4 cup butter (original retro recipe calls for Parkay margarine)
2/3 cup (5-1/3 fl oz can) evaporated milk
6 ounce pkg semi-sweet chocolate pieces (I substitute chopped good dark chocolate)
7 ounce jar Kraft marshmallow creme (I prefer marshmallow Fluff)
1 tsp pure vanilla
1/2 cup peanut butter (crunchy or creamy style)

Directions
Combine 1-1/2 cups sugar, 6 Tbsp butter, and 1/3 cup milk in heavy 1-1/2 quart sauce pan; bring to full rolling boil, stirring constantly. Continue boiling 4 minutes over medium heat; stirring constantly to prevent scorching. Remove from heat; stir in chocolate pieces until melted. Add 1 cup (1/2 jar) marshmallow creme and 1/2 tsp vanilla; beat until well blended. Pour into 13 x 9 inch pan. Repeat with remaining ingredients, substituting peanut butter for chocolate pieces. Spread over chocolate layer. Cool at room temperature; cut into squares.

If you're like me, you love Reese's Peanut Butter Cups. The combination of milk chocolate and rich sweet peanut butter can't be beat! I consider Reese's Peanut Butter Cups a comfort food.

I love this Vintage Ad for Frozen Reese's. I always keep my Reese's in the freezer. Want to take it a step further? Following is a great recipe for Frozen Reese's Banana Pops from Melissa Roberts on Real Simple. Frozen Reese's is a treat in itself!

Frozen Reese's Banana Pops

Reese's Peanut Butter Cup Cheesecake: I Love Reese's Day!

Don't you just love Reese's Peanut Butter Cups? Here's a great Retro 1950s Ad for Reese's Peanut Butter Cups for I Love Reese's Day.

And here's a bit of history about Reese's Peanut Butter Cups from The Nibble:  Harry Burnett Reese, a former dairy employee of Milton S. Hershey, was so inspired by Mr. Hershey that he left to start his own candy business. The H.B. Reese Candy Company had some success with Johnny Bars and Lizzie Bars (caramel-like molasses and coconut candy) and also had its share of adversity.

By the mid-1920s, it was manufacturing a product made with specially-processed peanut butter and chocolate from the local Hershey Chocolate Company. Introduced simply as peanut butter cups, as its popularity grew the candy became known as Reese’s Peanut Butter Cups. Fast-forward to 1963: Reese returns to Hershey’s when The H.B. Reese Candy Company, Inc. was sold for $23.5 million to the Hershey Chocolate Company (then known as Hershey Foods Corporation).

So for today's recipe for I Love Reese's Day is a recipe for Reese's Peanut Butter Cup Cheesecake from  Peggy Lynn  (March 31, 2005) on Food.com This recipe was originally based on one from the Ruggles Grill in Houston. You will need to cook this cheesecake a bit longer than the original recipe directions (I've made the change for you in the directions). Make sure the cheesecake is cooked through. I also use fewer oreos in the crust or you'll have a lot left over. Adding the peanuts to the crust is a fabulous addition, too! I usually leave off the sour cream topping, but I'm including it in the recipe below, in case you want to try! You could always add a chocolate ganache as a topping. Just a thought.

Decorating the top of the cheesecake: I'm a purist, but you can add pieces of Reese's on the top or drizzle with chocolate or sprinkle with peanuts... whatever!

Reese's Peanut Butter Cup Cheesecake

Ingredients

For the Crust
4 cups crushed Oreos
1 cup chopped roasted peanuts
1/2 cup unsalted butter, melted

For the Filling
2 lbs cream cheese, softened
5 eggs, at room temperature
1-1/2 cups firmly packed brown sugar
1 cup smooth peanut butter
1/2 cup whipping cream
1 teaspoon pure vanilla extract
12 Reese's Peanut Butter cups, broken into pieces (maybe 4 per piece/your preference?)

(Optional) For the Topping
3 ounces sour cream
1/2 cup sugar

Plan ahead--cheesecake needs to chill for at least 4 hours.

To Make the Crust
Combine crushed Oreo cookies and peanuts that have been ground in a food processor with the melted butter.
Pat the crust mixture onto bottom and sides of a 10-inch springform pan.

To Make the Filling
Beat cream cheese in bowl of electric mixer until smooth.
Add eggs, one at a time, beating well after each addition.
Add sugar, peanut butter and cream; mix until smooth.
Stir in vanilla, then fold in peanut butter cup pieces with a rubber spatula.
Pour filling into prepared crust.
Place springform pan into a larger baking pan.
Pour hot water into the larger pan so that the water comes 1 inch up the sides of the springform pan.
Bake at 275°F almost 2 hours (check at 1 hour 45--keep checking if not done in 2 hours), or until firm (but slightly springy--it will firm up a bit as it cools) and lightly browned.
Remove from oven and allow to cool on a wire rack for one hour.
You may run a knife along the edge of the cake to loosen it from the pan.
Refrigerate for at least 4 hours.

(Optional) For the Topping
Combine the sour cream and sugar and spread on the cheesecake.
Return the cake to the oven for 5 minutes.

Chocolate Peanut Butter Truffles: Peanut Butter Lover's Day

Today is National Peanut Butter Lover's Day. I'm also paying homage today to Mr. Peanut. I grew up with Planter's Peanuts. Mr. Peanut, shaking hands with everyone, would walk the boardwalk in Atlantic City! What a treat. I also loved those hot salty peanuts, roasted right onsite. The original company was called Planters Nut and Chocolate Company, so what's not to love? Planters did make peanut butter, but for a short time. We always had Skippy at our house.

I've posted lots of recipes for Chocolate and Peanut Butter, but here's an easy Peanut Butter Truffle recipe to celebrate today's holiday!

Chocolate Peanut Butter Truffles
This is a simple recipe for a peanut butter ganache truffle rolled in chopped peanuts adapted from a recipe in  CountryLiving.

Ingredients
8 ounces 60-75% dark chocolate, chopped
1 cup heavy cream
1/2 cup smooth Peanut Butter
1/2 tsp pure vanilla extract
1/4 tsp salt
3/4 cup finely chopped peanuts

Directions
Place chopped chocolate in medium heat-safe bowl. Set aside.
In medium saucepan over low heat, cook heavy cream until it just begins to boil; then immediately pour over chocolate. Let sit for 1 minute. Stir until chocolate is melted and mixture is thick and smooth. Stir in smooth peanut butter, vanilla extract, and salt.
Pour into shallow baking pan and refrigerate until set, 4 to 6 hours.
Spoon chocolate–peanut butter mixture, by tablespoon, into your hand and roll into balls. Place on parchment-lined baking pan and return to refrigerator for 20 to 30 minutes.
Place finely chopped peanuts in shallow dish. Roll truffles in peanuts,  shaping each ball as you work. Keep refrigerated until serving.

What's your favorite Peanut Butter and Chocolate recipe?

FLUFFERNUTTER DAY: Fluffernutter Sandwiches

I post about Fluffernutter Sandwiches every year, mostly because I meet people who don't know what a Fluffernutter Sandwich is, and I feel I should enlighten them. LOL. The Fluffernutter sandwich—a classic New England treat-- is made with white bread, peanut butter, and Marshmallow Fluff.

Today is National Fluffernutter Day. Fluffernutter sandwiches must contain Marshmallow Fluff. I always have a jar in my pantry.

Marshmallow Fluff is not just any marshmallow crème. Fluff has been manufactured by Durkee-Mower of Lynn, Massachusetts since 1920, and is the preferred brand of the northeast. This gooey, spreadable, marshmallow-infused confection is used in countless recipes and found in a variety of baked goods—from Whoopie Pies and Rice Krispies Treats to chocolate fudge and beyond.

And beyond that lies the best concoction of all: the Fluffernutter sandwich—a classic New England treat made with white bread, peanut butter, and Fluff.

History of Marshmallow Fluff:

A sweet marshmallow-like spread called Marshmallow Creme was invented in 1917 by Archibald Query in Somerville, Massachusetts. In 1913 during World War I, Emma and Amory Curtis of Melrose, Massachusetts invented Snowflake Marshmallow Creme and published a recipe for a peanut butter and marshmallow creme sandwich, which is the earliest known example of a Fluffernutter. Query sold his recipe for Marshmallow Creme to Durkee-Mower, Inc in 1920, who renamed it Marshmallow Fluff. Over 100 years later they continue to sell it under that name today.

It was in 1960 that the term Fluffernutter was created by an advertising agency for Durkee-Mower in an attempt to effectively market the peanut butter and marshmallow sandwich. See the 1960s ad and jingle explaining the recipe below. How Retro!

So if the Fluffernutter sandwich is a classic New England treat made with white bread, peanut butter, and Marshmallow Fluff, it can only be better if you add chocolate. And, for me, press the sandwich in a panini press!

PEANUT BUTTER & JELLY BROWNIES: Three Recipes for National Peanut Butter & Jelly Day!

Today is National Peanut Butter & Jelly Day. This all American combination is usually thought of as the ultimate kid's sandwich. Not by me. I was a fussy eater as a kid... so glad that's behind me. At summer camp, if a camper didn't like lunch or dinner food, they were given peanut butter and jelly sandwiches. Well, I didn't like peanut butter and jelly sandwiches. Of course, if they had added chocolate, it might have been a different story!

I still don't like peanut butter and jelly sandwiches, but I always grab the chance to pair up these foods with chocolate. So here are three recipes for Peanut Butter & Jelly Brownies. As always, you can substitute the very best ingredients to achieve that perfect brownie!

PEANUT BUTTER & JELLY BROWNIES

#1 Peanut Butter & Jelly Brownies
from the Nestle Very Best Baking site: 1st Prize winning recipe created in the kitchen of Jim Bradley of Chicago, IL

Ingredients
1/2 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/4 cup sweet butter
1 cup packed light brown sugar
1/2 cup creamy or chunky peanut butter
2 large eggs
1 tsp vanilla extract
1/2 cup all-purpose flour
1/2 cup NESTLÉ® TOLL HOUSE® Premier White Morsels
1/2 cup NESTLÉ® TOLL HOUSE® Peanut Butter & Milk Chocolate Morsels
1/3 cup strawberry jam

Directions
Preheat oven to 350°F. Grease 9-inch-square baking pan.
Place semi-sweet morsels and butter in large, microwave-safe bowl. Microwave on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until mixture is melted. Add brown sugar and peanut butter to chocolate mixture; beat on medium speed for 1 minute or until well mixed. Beat in eggs and vanilla extract. Gradually stir in flour. Stir in white and peanut butter & milk chocolate morsels. Spread into prepared pan. Drop jam by spoonfuls onto batter. Swirl with a knife.
Bake for 35 to 40 minutes or until wooden pick inserted in center comes out still slightly sticky. Cool completely in pan on wire rack. Cut into bars.

#2 Peanut Butter & Jelly Brownies
From Kraft Recipes

Ingredients
1 cup firmly packed brown sugar
1/2 cup crunchy peanut butter
1/4 cup butter, softened
2 eggs
1 tsp vanilla
1/2 cup flour
1/4 tsp salt
6 squares BAKER'S Semi-Sweet Chocolate, chopped
1/2 cup strawberry jam

Directions:
Preheat oven to 350°F. Beat sugar, peanut butter and butter in large bowl with electric mixer on medium speed until well blended. Add eggs and vanilla; mix well. Add flour and salt; beat until well blended. Stir in chocolate.
Line 9-inch square baking pan with foil, with ends of foil extending over sides of pan. Grease foil. Spread batter into prepared pan. Drop jam by spoonfuls over batter; swirl with knife to marbleize.
Bake 35 to 40 minutes or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan. Lift dessert from pan, using foil handles. Cut into 24 squares to serve.

#3 Peanut Butter & Jelly Brownies
from James Boyce, chef-owner of Cotton Row, Huntsville, Alabama. His brownies and jam are homemade, and he uses chunky peanut butter for crunch. This recipe appeared in Spirit Magazine, Southwest Airlines

Ingredients:
2 sheets frozen phyllo dough, thawed melted butter
4 two-inch square brownies
4 Tbsp peanut butter (crunchy is best!)
4 Tbsp strawberry jam
4 Tbsp chocolate chips

Directions:
Lay one sheet of dough on work surface and brush with butter. Top with another sheet, brush with butter, then cut into four 8-by-8 inch squares. Place one brownie on each square.
Top each brownie with one tablespoon each of peanut butter and jam, then sprinkle with chocolate chips. Cinch dough around brownies and refrigerate for at least 30 minutes.

I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe.

Reese's Peanut Butter No-Bake Pie: National Pie Day

Today is National Pie Day! I've posted Peanut Butter Chocolate Pies before, but this Reese's Peanut Butter No-Bake Pie from The Novice Chef is terrific. I adapted several things, as well as making my own chocolate cookie crust (see recipe below). I substituted my own hot fudge sauce, but as always, feel free to use what you have. I also use whipped cream rather than Cool Whip, but again, it's a choice you can make. The Novice Chef uses Smucker's Hot Fudge Topping.

REESE'S PEANUT BUTTER NO-BAKE PIE

Ingredients:

Chocolate Cookie Crust
1-1/2 cups chocolate cookie crumbs -about 25 (chocolate wafers that have been crushed)
1/4 cup sweet butter, melted and cooled

CHOCOLATE MILKSHAKE DAY: 5 Quirky Recipes

Today is National Chocolate Milkshake Day. Here are 5 unique and quirky chocolate milkshake recipes.

The easiest way to celebrate is to mix a little Milk with Chocolate Ice Cream and Chocolate Syrup and put it in the blender. Or you can mix Milk with Vanilla Ice cream and Chocolate syrup and blend. Measurements are up to you, but I have a few quasi-measurements below for Special Chocolate Milkshakes.

If you're absolutely Dying for Chocolate, use 1 cup chocolate ice cream, 1/4 cup chocolate syrup, and 1/2 cup chocolate milk. Mix in Blender.

A Chocolate Malted Milkshake is a variation on your traditional chocolate milkshake. Add a Tbsp of malted milk powder to milk, chocolate syrup, and chocolate ice cream, and blend.

Like bananas? Make a Chocolate Banana Milk Shake: 1 cup milk, 1 scoop banana ice-cream, 1 scoop chocolate ice cream, 1/2 ripened banana, and some chocolate syrup, and blend.

And, if you really want to be daring, celebrate with a Chocolate Peanut Butter Milkshake. Blend 1 cup creamy peanut butter, 1/2 cup chocolate syrup, 1/4 cup milk, 12 cubes ice. Blend until smooth. (Ice cubes instead of ice-cream).

Have a great day!
