EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES: National Peanut Butter Day!

Today is National Peanut Butter Day! Here's a great and easy recipe for Extra Nutty Peanut Butter Fudge Brownies adapted from a Pillsbury recipe. I don't usually use boxed mixes, but this is a great recipe. Of course you can make your own brownies and just add the layer of peanut butter fudge and 1/2 cup chopped peanuts. I really like the clean salty taste of plain roasted peanuts, rather than the recommended honey-roasted peanuts in the original recipe. I also add chocolate chips to the recipe and cut down on the peanut butter chips. You can never have enough chocolate!

EXTRA NUTTY PEANUT BUTTER FUDGE BROWNIES!

Ingredients
2 (15.8 oz) package fudge brownie mix with chocolate syrup
1/2 cup oil
1/2 cup water
2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
7 ounces peanut butter chips
1/2 cup peanut butter
1/2 cup chocolate chips
1/2 cup roasted salted peanuts, coarsely chopped

Directions
Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13x9-inch pan.
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.
In large saucepan, combine condensed milk, peanut butter chips, and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly.
Spoon and spread peanut butter mixture over batter.
Drop remaining half of batter over peanut butter layer.
Sprinkle with chopped peanuts.
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan. DO NOT OVERBAKE. 
Cool 2 hours.
Cut into bars.

PEANUT BUTTER BROWNIES: Retro Ad & Recipe for National Peanut Butter Day

Today is National Peanut Butter Day! Peanut Butter and Chocolate are a match made in heaven! I love Retro Ads, especially the ones that include recipes. I was a Brownie (and later a Girl Scout), so this Retro Advertisement caught my eye! You'll love this recipe for Peanut Butter Brownies. However, I would use butter and not margarine. Make these brownies for your Brownie Troop or for yourself to celebrate today's food holiday!

ELVIS'S PEANUT BUTTER, BANANA, BACON CHOCOLATE CHIP COOKIES: National Peanut Butter Day

Today is National Peanut Butter Day! We all know that Elvis loved his peanut butter and banana sandwiches, but add some bacon and chocolate chips and make these cookies to celebrate National Peanut Butter Day. Here's Elvis' Cookies recipe for Peanut Butter, Banana, Bacon Chocolate Chip Cookies from the Cooking Channel. Some interesting ingredients, as well a preparation--in muffin tins!

ELVIS'S PEANUT BUTTER, BANANA, BACON CHOCOLATE CHIP COOKIES!


Ingredients 
10 slices bacon
2 1/4 cups all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon salt
8 ounces unsalted butter, softened
1/4 cup mayonnaise
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
3/4 cup semisweet chocolate chips
1/2 cup chopped salted peanuts
1/2 cup sweet dried banana chips, roughly chopped

Directions 
Cook bacon in skillet until crisp, then drain on paper towels. Once bacon is cool, roughly chop it (you should have about 1/2 cup).
Combine flour, baking soda, and salt in medium bowl.
In large bowl, beat butter, mayonnaise, and sugars with mixer at medium speed until fluffy, about 3 minutes. Beat in eggs, one at a time, until well blended. Add peanut butter and vanilla and beat until combined. At low speed, add flour mixture in batches, beating until just combined.
Using wooden spoon, stir in chocolate chips, bacon, peanuts and banana chips.
Cover bowl with plastic wrap and chill at least 30 minutes or overnight.
Position racks in upper and lower thirds of the oven and preheat the oven to 325 degrees F.
Line 2 muffin tins with paper liners. Fill muffin tins about halfway full with batter (a 2-inch, 2-ounce ice cream scoop gives you just about the perfect amount, and helps prevent spilling).
Bake until tops are slightly golden and toothpick inserted into center comes out clean, about 30 minutes. (Keep in mind that the cookies won't rise and form a dome like a cupcake.)
Let cool in muffin tins on wire racks for about 10 minutes, then unmold cookie cups and transfer to racks to cool completely.
Cook's Notes: The mayonnaise in this recipe makes these cookies especially soft.

CHOCOLATE PEANUT BUTTER TRUFFLES: National Peanut Butter Day

January 24 is National Peanut Butter Day. I'm also paying homage today to Mr. Peanut. I grew up with Planter's Peanuts. Mr. Peanut, shaking hands with everyone, would walk the boardwalk in Atlantic City! What a treat. I also loved those hot salty peanuts, roasted right onsite. The original company was called Planters Nut and Chocolate Company, so what's not to love? Planters did make peanut butter, but I'm not sure for how long.

I've posted lots of recipes for Chocolate and Peanut Butter, but here's an easy Peanut Butter Truffle recipe to celebrate today's holiday!

Chocolate Peanut Butter Truffles
This is a simple recipe for a peanut butter ganache truffle rolled in chopped peanuts adapted from a recipe in  CountryLiving.

Ingredients
8 ounces 60-75% dark chocolate, chopped
1 cup heavy cream
1/2 cup smooth Organic peanut butter
1/2 tsp pure vanilla extract
1/4 tsp salt
3/4 cup finely chopped peanuts

Directions
Place chopped chocolate in medium heat-safe bowl. Set aside.
In medium saucepan over low heat, cook heavy cream until it just begins to boil; then immediately pour over chocolate. Let sit for 1 minute. Stir until chocolate is melted and mixture is thick and smooth. Stir in smooth peanut butter, vanilla extract, and salt. Pour into shallow baking pan and refrigerate until set, 4 to 6 hours.
Spoon chocolate–peanut butter mixture, by tablespoon, into your hand and roll into balls. Place on parchment-lined baking pan and return to refrigerator for 20 to 30 minutes.
Place finely chopped peanuts in shallow dish. Roll truffles in peanuts,  shaping each ball as you work. Keep refrigerated until serving.

Chocolate Peanut Butter Truffles

8 ounces 75-85% dark chocolate, chopped
1 cup heavy cream
1/2 cup smooth Organic peanut butter
1/2 teaspoon Madegascar vanilla extract
1/4 teaspoon salt

Directions
1. Place bittersweet chocolate, chopped, in a medium heat-safe bowl. Set aside.
2. In a medium saucepan over low heat, cook heavy cream until it just begins to boil; then immediately pour over chocolate. Let sit for 1 minute. Stir until chocolate is melted and mixture is thick and smooth. Stir in smooth peanut butter, vanilla extract, and salt. Pour into a shallow baking pan and refrigerate until set, 4 to 6 hours.

National Peanut Butter Day: Add Chocolate


January 24 is National Peanut Butter Day. I love Chocolate and Peanut Butter. Who doesn't love Hershey's Reese's Pieces? On National Peanut Butter Fudge Day (November 20), I posted a delicious and easy recipe.

Being that it's a holiday, I thought I'd post some likes to some of my other favorite chocolate and peanut butter sites:

One of my favorite recipes is Peanut Butter Chocolate Pillows on Postpunkkitchen.

Don't want to bake but still want to celebrate? Haagen-Dazs has a fabulous Chocolate Peanut Butter Ice Cream.

I also like to put peanut butter as a center in cupcakes.

Several companies make Chocolate Peanut Butter in a Jar. Want to make your own? Here's an easy recipe. You can also substitute this for peanut butter in recipes.

1/2 cup chopped dark chocolate, broken into bits
1-1/2 cups smooth peanut butter
1/4 cup butter, softened
1/4 cup confectioners sugar
1 teaspoon vanilla extract (or a good Madagascar vanilla)
1 teaspoon instant coffee granules (I have this around just for recipes)
1 teaspoon hot water

Melt chocolate chips in a saucepan over another saucepan with boiling water (double boiler, if you have it). Cool until barely warm, but still liquid.

Scrape melted chocolate into a large bowl. Add peanut butter, butter, sugar, and vanilla extract. Stir until thoroughly combined.

Mix instant coffee with hot water until completely dissolved. Add coffee to the chocolate peanut butter mixture until combined.

Place in glass jars with tight seals. Serve as a spread with cookies, crackers, or toast or use as a filling for cakes.

Great for gifts, eating out of the jar, or using in recipes (if it lasts).
