TRIPLE CHOCOLATE PEANUT CLUSTERS: National Peanut Cluster Day

Happy Peanut Cluster Day! Seems like we just had another Chocolate Covered Nut Day, but I don't mind celebrating again--this time with Peanuts. This recipe is so easy, and you make it in a Slow Cooker! The recipe is from from the Southern Living Slow Cooker Cookbook (2006). Of course, you can substitute any higher quality chocolate in this recipe! I love that there are three types of chocolate!

TRIPLE CHOCOLATE PEANUT CLUSTERS

Ingredients
1 (16-ounce) jar dry-roasted peanuts
1 (16-ounce) jar unsalted dry-roasted peanuts
18 (2-ounce) chocolate bark coating squares, cut in half
2 cups (12-ounce package) semisweet chocolate morsels
1 (4-ounce) package German chocolate baking squares, broken into pieces
1 (9.75-ounce) can salted whole cashews
1 tsp vanilla extract

Directions
Combine first 5 ingredients in a 3 1/2- or 4-quart slow cooker.
Cover and cook on LOW 2 hours or until melted.
Stir chocolate mixture.
Add cashews and vanilla, stirring well to coat cashews.
Drop nut mixture by heaping tablespoonfuls onto wax paper.
Let stand until firm.
Store in airtight container.

OREO RICE KRISPIES TREATS: National Cereal Day!

Today is National Cereal Day, so why not combine the two and make the ultimate cereal treat -- Rice Krispies Treats? Snap! Crackle! and Pop! They were very special at my house when I was growing up. We didn't have them a lot, but I loved them. I like this recipe because it takes it up a notch and adds chopped Oreos (you can use other cookies, too, but this is a chocolate blog!) Perfect, too, because yesterday was Oreo Day, so it's another two-for. 

This quick and easy recipe for Oreo Rice Krispies Treats is from Kraft, the maker of Rice Krispies, and it only takes 10 minutes. O.K., this may not be the healthiest of treats, but its certainly delicious! You can always substitute your own puffed rice cereal, sandwich cookies, and homemade marshmallows. Happy National Cereal Day!

OREO RICE KRISPIES TREATS

Ingredients
3 Tbsp unsalted butter
1 pkg (10 oz.) JET-PUFFED Marshmallows
5 cups KELLOGG’S® RICE KRISPIES® cereal
16 OREO Cookies, coarsely chopped, divided

Directions
Microwave butter in large microwaveable bowl on HIGH 45 seconds or until melted. Add marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec.
Add cereal and 1 cup chopped cookies; mix well.
Press onto bottom of 13 x 9 inch pan sprayed with cooking spray. Sprinkle with remaining chopped cookies; press lightly into cereal mixture to secure. Cool completely before cutting into squares.

ONE BOWL OREO BROWNIES: National Oreo Day!

Today is Oreo Day! The Oreo is America's Favorite Cookie! This cookie debuted on March 6, 1912 by the National Biscuit Company (Nabisco, now owned  by Kraft). The original Oreo was packaged as a Trio: the Mother Goose, the Veronese, and the Oreo Biscuit. Oreo was the most popular, and soon was a stand-alone, well as far as cookies go, because you always need milk with Oreos!

In 1921, Nabisco dropped 'Biscuit' from the name and called it 'Oreo Sandwich.' In 1948 it was called the 'Oreo Creme Sandwich' and today it's marketed as the Oreo Chocolate Sandwich Cookie. Over the years there have been many variations -- Mini Oreos, Double Delight, Triple stuffed, Lemon-Cream, Chocolate Covered Mint Oreos, Halloween Oreos, Green Tea Oreos--even Oreo O's Cereal made by Post. For those who are interested in cookie history, the Hydrox chocolate sandwich cookie predated Oreos by four years. Read more here.

So how do you eat your Oreos? Do you dunk them? Do you open them and lick the filling and then eat the cookies?

ONE BOWL OREO BROWNIES

Ingredients 
1 cup unsalted butter, melted
1 cup granulated sugar
1-1/2 cups light brown sugar, packed
1 Tbsp pure vanilla
4 eggs
1 tsp salt
1- 1/2 cups flour
1 cup DARK cocoa powder
1 cup chocolate chips
25 Oreo cookies, coarsely chopped

Directions
Preheat oven to 350°F
Line 9 x13 pan with foil and spray with nonstick spray. Set aside.
In bowl of stand mixer fitted with paddle attachment combine butter, sugar, vanilla, and eggs. Mix on medium speed until combined, about 1 minute. Add in salt and cocoa powder and mix on medium until combined, 30 seconds to minute.
Turn mixer to low and add in flour until incorporated.
Stir in chocolate chips.
Spread half of batter into pan.
Top with Oreos and spread remaining batter on top.
Bake 35-40 minutes until center is almost set.

Chocolate Orange Marmalade Grilled Cheese Sandwich: Marmalade Day!

Today is National Marmalade Day. Celebrate by making a Chocolate Orange Marmalade Grilled Cheese Sandwich. I've posted many different variations on Chocolate Grilled Cheese Sandwiches, but here's a real favorite: A Chocolate Orange Marmalade Grilled Cheese Sandwich! Grilled Bread, Butter, Cheese, Chocolate, Orange Marmalade! What could be better?

I love my Panini Press, but this grilled cheese sandwich should be made on the stove in an iron skillet. My mother used to make her fabulous grilled cheese sandwiches in an old iron skillet with the top of a smaller iron lid pressing down on the sandwiches. Both were inherited from my grandmother. I have the lid (with a 1950s era blue enamel handle), but not the original skillet. Interesting what we hold on to.

This recipe is great for Sunday Brunch. It's sweet-- a bar of chocolate, some goat or brie cheese--some orange marmalade--a bit or mascarpone--and place in between buttered challah or another soft bread. This recipe is too creamy (and oozing) for the panini press, so make it, too, in a big skillet. Reduce amounts if it's only two of you. 

Chocolate Orange Marmalade Grilled Cheese Sandwich

Ingredients
6 ounces Mascarpone
2 Tbsp Orange Marmalade
2 Tbsp unsalted Butter (room temperature)
8 slices Challah or Brioche (sandwich size)
8 ounces Brie (sliced 1/4 inch thick)
14 ounces Dark Chocolate (65-70%), chopped

Directions
Combine orange marmalade and mascarpone.
Butter one side of each slice of bread. Place 4 slices, buttered side down on work surface. Spread mascarpone on bread. Place brie slices over mascarpone mixture and sprinkle with chocolate chunks.
Top with remaining slices of bread, buttered side up.
Heat large skillet over medium heat for 2 minutes. Put sandwiches in pan, cover and cook for 2-3 minutes until golden brown. Watch carefully.
Turn sandwiches, pressing each firmly with spatula or heavy pot lid (smaller than the skillet).
Cover and cook for 2-3 minutes until undersides are browned.
Remove cover, turn sandwiches over and press firmly with spatula or pot lid again.
Cook until cheese has melted completely.
Remove from pan and let cool 2-3 minutes.

SHROVE TUESDAY aka PANCAKE DAY aka FAT TUESDAY

Today is Shrove Tuesday aka Pancake Day aka Fat Tuesday! Shrove Tuesday marks the last day before Lent which is traditionally a period of abstinence, associated with clearing your cupboards of goods such as sugar, fats, and eggs. The day is commonly known as Pancake Day because it represents a good opportunity to use such ingredients ahead of the fasting period.  

Pancake Day takes place 47 days before Easter Sunday. Because the date of Easter Sunday is tied to the lunar calendar, Pancake Day can occur anytime between February 3 and March 9. Easter is Sunday, April 20 this year. 

In many countries, Shove Tuesday is celebrated with pancake throwing contests and races. Not so in the U.S.

Like many other European holidays, the pancake day was originally a pagan holiday. Before the Christian era, the Slavs believed that the change of seasons was a struggle between Jarilo, the god of vegetation, fertility and springtime, and the evil spirits of cold and darkness. People believed that they had to help Jarilo fight against winter and bring in the spring. The most important part of Shrovetide week (the whole celebration of the arrival of spring lasted one week) was making and eating pancakes. The hot, round pancakes symbolized the sun.   

So to celebrate Shrove Tuesday, Fat Tuesday, and Pancake Day, you'll want to make pancakes, and I suggest one or both of the following recipes for Chocolate Chip Pancakes. I've listed two easy recipes for Chocolate Chip Pancakes, but you can also make Chocolate Chocolate Chip Pancakes and add chocolate syrup or a dollop of chocolate ice cream...if you're in a really chocolate mood. And, if you're giving up Chocolate for Lent, this will be your last chocolate treat until Easter!


1. Chocolate Chip Pancakes

Pancake batter
Chocolate chips

Make a batch of your favorite pancake batter. For every cup of dry pancake mix, add 1/4 cup chocolate chips. Mix batter. Stir in chips. Lightly grease and heat griddle or skillet. Pour a little less than 2 tablespoons of batter for each pancake. When bubbles appear all over uncooked side of the pancake, it's time to turn over. Cook the second side until light brown.

2. Chocolate Chip Pancakes


Ingredients
1 1/2 cups sifted flour

1/2 tsp salt
1 Tbsp sugar
3 eggs, separated
4 Tbsp melted unsalted butter
1 tsp baking powder
1 tsp baking soda
1 2/3 cup buttermilk
1 1/3 cup dark chocolate chips

Directions
Put dry ingredients in bowl. Combine well-beaten egg yolks with buttermilk and stir lightly into dry ingredients. Add chocolate chips. Stir in melted butter. Beat in stiffly beaten egg whites.
Cook on griddle or in skillet.
Makes 10-12 pancakes.

Irish Whiskey Chocolate Cake with Bailey's Whipped Cream: International Irish Whiskey Day


Today is World Irish Whiskey Day. Celebrate with this fabulous Chocolate Irish Whiskey Cake with Bailey's Whipped Cream

Irish Whiskey Chocolate Cake

Ingredients

12 Tbsp unsalted butter, more for pan
3/4 cup plus 2 tablespoons unsweetened cocoa powder
1 - 1/2 cups brewed strong coffee
1/2  cup Irish Whiskey
1 cup granulated sugar
3/4 cup light brown sugar
2 cups all-purpose flour
2 level teaspoons baking soda (make sure it's fresh)
3/4 teaspoon fine sea salt
1/4 teaspoon black pepper
1/8 teaspoon ground cloves
3 large eggs
2 teaspoons pure vanilla extract
1 cup mini semisweet chocolate chips or chopped chocolate
Powdered sugar or Bailey's Whipped Cream

Directions

Pre-heat oven to 325°F. Butter 10-inch spring form pan. Dust with 2 tablespoons cocoa powder.
In medium saucepan over low heat, warm coffee, Irish Whiskey, 12 tablespoons butter and remaining cocoa powder, wisking occasionally, until butter is melted. Whisk in sugars until dissolved. Remove from heat and cool completely.
In bowl, whisk together flour, baking soda, salt, pepper and cloves. In another bowl, whisk together eggs and vanilla. Slowly whisk egg mixture into chocolate mixture. Add dry ingredients and whisk to combine. Fold in chocolate chips.
Pour batter into prepared pan. Transfer to oven and bake until a toothpick inserted in the center emerges clean, 55 to 65 minutes. Let cool on wire rack, then remove sides of pan. 
Dust with powdered sugar or Bailey's Whipped Cream (see below) before serving.

Ingredients
1/2 cup heavy cream
1 Tbsp Baileys Irish Cream

Directions
Whip heavy cream to soft peaks.
Add Baileys Irish Cream and whisk until combined.

BANANA CHOCOLATE CREAM PIE: Retro Ad with Recipe for Banana Cream Pie Day

I've posted several recipes for Banana Cream Pie over the years, always with chocolate, of course. So for today's "Food Holiday," here's a recipe from Chiquita Banana for Banana Chocolate Cream Pie. FYI: This recipe appears in the Chiquita Banana Recipe Book (as well as this Ad). Although you can no longer order the recipe book (LOL), you can often find a copy on eBay, at flea markets, and at garage sales. I found one at the Oakland Museum's White Elephant Sale ( a city block - month long curated sale). You can always update the ingredients in this recipe to meet today's sensibilities, tastes, and looks!

Chocolate Peanut Butter Truffles: Peanut Butter Lover's Day

Today is National Peanut Butter Lover's Day. I'm also paying homage today to Mr. Peanut. I grew up with Planter's Peanuts. Mr. Peanut, shaking hands with everyone, would walk the boardwalk in Atlantic City! What a treat. I also loved those hot salty peanuts, roasted right onsite. The original company was called Planters Nut and Chocolate Company, so what's not to love? Planters did make peanut butter, but for a short time. We always had Skippy at our house. 

I've posted lots of recipes for Chocolate and Peanut Butter, but here's an easy Peanut Butter Truffle recipe to celebrate today's holiday!

Chocolate Peanut Butter Truffles
This is a simple recipe for a peanut butter ganache truffle rolled in chopped peanuts adapted from a recipe in  CountryLiving.

Ingredients
8 ounces 60-75% dark chocolate, chopped
1 cup heavy cream
1/2 cup smooth Peanut Butter
1/2 tsp pure vanilla extract
1/4 tsp salt
3/4 cup finely chopped peanuts

Directions
Place chopped chocolate in medium heat-safe bowl. Set aside.
In medium saucepan over low heat, cook heavy cream until it just begins to boil; then immediately pour over chocolate. Let sit for 1 minute. Stir until chocolate is melted and mixture is thick and smooth. Stir in smooth peanut butter, vanilla extract, and salt. 
Pour into shallow baking pan and refrigerate until set, 4 to 6 hours.
Spoon chocolate–peanut butter mixture, by tablespoon, into your hand and roll into balls. Place on parchment-lined baking pan and return to refrigerator for 20 to 30 minutes.
Place finely chopped peanuts in shallow dish. Roll truffles in peanuts,  shaping each ball as you work. Keep refrigerated until serving.
