CHOCOLATE FLAG STRAWBERRY SHORTCAKE: NATIONAL STRAWBERRY SHORTCAKE DAY & FLAG DAY!

Today is a Double Food holiday, at least for me.. It's National Strawberry Shortcake Day, and it's Flag Day. Why not whip up a Flag Cake made with Chocolate Shortcake and topped with Whipped Cream, Blueberries and Strawberries?

So here's what you do. Bake a chocolate shortcake (or a chocolate sponge cake) in a 9 x 13 rectangular pan. Here's a link to a great Chocolate Shortcake. When the cake is cool, cover with a thick layer of whipped cream. For the stars, use blueberries, making a small square in the upper left hand corner of the cake. Place the blueberries in rows for best results. Leave some room between blueberries (the stars). For the stripes, cut the strawberries in half and put them flat side down to make stripes. Press gently into the whipped cream. Although there are 13 stripes on the flag, you don't need to have that many on your cake (and you won't have room). It's about aesthetics more than veracity. The bottom stripe of the flag is red, so that's a good place to start.

Don't want to make a chocolate shortcake or sponge cake? Make your favorite chocolate cake and follow the decorating instructions. Or, you make a white chocolate sponge cake!

Save this recipe for Fourth of July!

Happy Flag Day! Happy Strawberry Shortcake Day!

CHOCOLATE DIPPED STRAWBERRIES: California Strawberries Day

Today is California Strawberries Day. I've posted lots of strawberry recipes, but here's an old favorite: Chocolate Dipped Strawberries. So easy. Want to get fancier? You can always stuff strawberries with chocolate cream, marscapone, chocolate chip cookie dough, cheesecake or tiramasu before dipping -- and you can drizzle some white chocolate over the finished dipped strawberries.

The Chef pictured in the photo is by Sonoma artist Cynthia Hipkiss. I love her oddball humor, and I have several of her pieces. I love this Chef, in particular, and he holds a coveted space by my stove (an early 1950s dark blue O'Keefe Merritt). I've had the Chef forever. What's particularly fun about him is what he's holding can be changed. I have a strawberry shortcake, a birthday cake, and a plate of hot dogs with all the trimmings. The smaller food sculptures are attached with velcro. Very clever! Hipkiss's work is carried in several art galleries. Many of her sculptures of women remind me of my aunts from whom I learned many baking tips. Luckily I'm not quite as full-bodied as they were, but then they were great bakers and enjoyed what they baked!

CHOCOLATE DIPPED STRAWBERRIES

Ingredients
1 quart fresh large fresh strawberries, with tops
1 cup Dark Chocolate 60-65% cacao, chopped
1/2 cup Dark Chocolate 70-85% cacao, chopped
3 Tbsp heavy cream

Directions
Rinse strawberries and dry thoroughly, keeping tops on. In top of double boiler or stainless
steel bowl on top of saucepan over simmering water, combine chocolate and heavy cream. Stir until
chocolate is melted and mixture is smooth.
Dip strawberries 1/2 to 3/4 way up in chocolate mixture and place on parchment-lined cookie sheet to allow chocolate to harden.

Hints:
Wash strawberries and pat dry with paper towels; set aside. Make sure strawberries are
completely dry. A drop of water in melted chocolate can cause it to "seize" and turn the
entire mixture into a mess.
How to Fix Seized Chocolate

How to dip:
Grasp stem of strawberry and dip into chocolate, swirling to partially cover with chocolate.
Give the strawberry a small shake as you pull it out of chocolate. When strawberry is
completely out of chocolate, swirl it in quick, clockwise motion to let excess chocolate drip off.
Place on cookie sheet lined with parchment paper.
Repeat with rest of strawberries.

STRAWBERRY CREAM PIE WITH OREO COOKIE CRUST: National Strawberry Cream Pie Day

Today is Strawberry Cream Pie Day. Strawberries are still fresh in the market, and this Strawberry Cream Pie with Oreo Cookie Crust is easy and delicious. There are lots of recipes out there, but I really recommend this one. I've adapted the recipe from allrecipes.com, and of course, I added a Chocolate Crust--and for this pie an Oreo Crust.

Strawberry Cream Pie with Oreo Cookie Crust

Crust
25 Oreo cookies
5 Tbsp unsalted butter, melted

Directions
Crush cookies or whirl in food processor. Stir cookie crumbs and melted butter together.
Press crumbs into bottom and upsides of 9" pie plate. Bake for 8 minutes at 350. Cool before filling.

Filling
1 quart strawberries, sliced
1 (13.5 ounce) container strawberry glaze  (or you can make your own by boiling down strawberry jam with a little water and straining)
1 (4 ounce) package cream cheese, softened
1/2 cup confectioners' sugar
1/4 tsp ground cinnamon
1 tsp pure vanilla extract
1 cup heavy whipping cream

Directions

CHOCOLATE BERRY SANDWICH COOKIES

Photo: Bonne Maman
I love Bonne Maman preserves and jellies. There's nothing quite like them for flavor--and I love the jars. I use the jars for layering 'Brownies in a Jar' and other fun gifts, as well as presenting various 'foods' on a stick. I also used several jars this year for flavored sugars. And, on my desk, I have a few jars filled with office supplies and pencils and pens. The jar is such a great shape (see end of post), I always find a use for them. They never end up in the recycling bin because I "recycle" them 'in-house'.

But loving the jar shouldn't take precedence over the taste of the Bonne Maman delicious preserves and jellies. They are truly fabulous. The Bonne Maman website has lots of great recipes using their products. You'll want to have a peek. One of my favorites is this recipe for Chocolate-Berry Sandwich Cookies. If you don't have time to make the cookies from scratch, just grab your favorite chocolate cookies, make the filling, and assemble. Perfect for the holidays! Very Festive.

CHOCOLATE-BERRY SANDWICH COOKIES

Ingredients

Cookies
3 cups all-purpose flour plus extra for shaping and rolling
2/3 cup natural cocoa powder, sifted
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 large egg
 1/2 teaspoon vanilla extract

Strawberry or Cherry Filling
4 tablespoons unsalted butter, room temperature
1 tablespoon confectioners’ sugar
3/4 cup Bonne Maman Strawberry Preserves or Cherry Preserves

Directions

Make the cookies:
In medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
In bowl of stand mixer fitted with paddle attachment, cream together butter and granulated sugar on medium speed until pale yellow and airy, about 5 minutes.
Add egg and vanilla and beat just until incorporated. Reduce mixer speed to low, add flour mixture and mix until evenly combined.
Turn dough onto lightly floured work surface and divide into two equal pieces. Shape each mound of dough into ball, flatten into disk, wrap in plastic wrap, and chill for at least 1 hour or overnight.

Preheat oven to 350° and line rimmed baking sheet with parchment paper.
Use rolling pin to roll one of chilled cookie dough discs into a 1/4 inch thick sheet.
Use 2 1/2 inch round cookie cutter to cut dough into circles and place them 2 inches apart on prepared baking sheet.
Bake cookies until their edges are firm and centers are slightly soft and puffed, 8 to 10 minutes.
Use metal spatula to transfer cookies to wire rack to cool completely.
Repeat with remaining cookie dough.
Cool cookies completely before filling.

Make filling:
In bowl of stand mixer fitted with paddle attachment, beat butter and confectioners’ sugar together on medium speed until light and airy, about 5 minutes.
Turn off mixer, remove bowl from the mixer stand and stir in strawberry (or cherry) preserves.
Transfer filling to a piping bag fitted with small tube tip and pipe 1 to 2 tablespoons of the filling on the center of half of the cookies (or use spoon to scoop the filling).
Top each filling-topped half with another cookie and press down slightly to evenly distribute the filling.
Serve immediately.

CHOCOLATE DIPPED STRAWBERRIES: California Strawberry Day!

Today is California Strawberry Day. Even though I'm Sheltering in Place, I was able to find fresh strawberries at my local market. I love strawberries, and they go so well with chocolate. STRAWBERRY EXTRA-CHOCOLATEY BROWNIES: California Strawberry Day

Today is California Strawberry Day. It's also the first day of Spring, so it's a great day to celebrate! California is the nation's leading producer of strawberries. The coast of California has a unique environment with its western ocean exposure with moderate temperatures year round -- warm sunny days and cool foggy nights - the perfect combination for growing delicious, beautiful strawberries!

Last year on California Strawberry Day, I posted a recipe for Strawberry Chocolate German Pancake. I've also posted recipes for Chocolate Strawberry Shortcake, Chocolate Covered Stuffed Strawberries, and 'regular' Chocolate Covered Strawberries. There have been others, too.

Visit California Strawberries for more facts, recipes, and apps.

I find that in the market, I can always depend on Driscoll's for fresh delicious California Strawberries, so it's no surprise I consult their website for special strawberry recipes (and other berries). In this recipe for Strawberry Extra-Chocolatey Brownies (recipe adapted from Driscoll's website), chopped strawberries add a fresh touch of fruity tartness to rich fudgy brownies. This is a quick and easy recipe. Use the finest ingredients-- California Strawberries, the best chocolate-- and you'll have a winner!

Strawberry Extra-Chocolatey Brownies

Ingredients
1 pkg. Driscoll’s Strawberries
4 oz. Unsweetened chocolate (I use Guittard)
1/2 cup butter (1 stick)
1- 1/4 cup Granulated sugar
2 Eggs
1 tsp Vanilla
2/3 cups All-purpose flour
1/2 cup Dark Chocolate chips or chopped Dark chocolate

Directions
Preheat oven to 350°F. Butter 12 muffin cups, or coat with cooking spray.
Rinse and dry strawberries. Stem and chop 8 ounces berries (half the container, 1-1/2 cups chopped), reserving the smallest berries for garnishing.
Place chocolate and butter in a medium mixing bowl. Microwave on medium power 2-3 minutes until butter is melted; stir until chocolate is completely melted. (or melt in a double boiler)*
Stir in sugar, eggs and vanilla.
Mix in flour, chopped strawberries, stirring just until combined.
Scoop batter into muffin cups, filling one half full.
Bake 15-17 minutes until brownies are just set on top and no longer shiny. Remove from oven and sprinkle about 1-1/2 teaspoons chocolate chips (or chopped chocolate) on tops. Return to oven 1-2 minutes until chocolate softens. Spread chocolate with the back of a teaspoon or knife.
Cool completely in pan. Run a knife around edges and lift to remove from pan. Before serving, halve remaining strawberries and place one on top of each brownie.

Pan Brownies Variation
Use an 8-inch square pan instead of muffin pan. Bake 25-30 minutes as directed above. At end of bake time sprinkle chocolate chips on top; return to oven for 1-2 minutes. Evenly spread chocolate. Cool. Cut into squares and garnish with strawberries.

STRAWBERRY MOON CHOCOLATE PIE

Last night was the June Full Moon. It's called the Strawberry Moon. Yes, all the full moons have names. This Full Moon got its name from the Algonquin tribes who used it as a signal to gather the ripening wild strawberries. To celebrate, make this easy Strawberry Moon Chocolate Pie! It will also be perfect for Fourth of July!

STRAWBERRY MOON CHOCOLATE PIE

Ingredients
1 box (9 oounces) thin chocolate wafer cookies, crushed
1/2 cup unsalted butter, melted
4 egg yolks
2/3 cup sugar
3 tablespoons cornstarch
2 cups milk
8 oz bittersweet chocolate, chopped
1 1/2 teaspoons vanilla
1/2 cup whipping cream
2 tablespoons sugar
Fresh strawberries

Directions
In medium bowl, mix cookie crumbs and butter. Press mixture firmly and evenly in bottom and up side of ungreased 9 1/2-inch glass deep-dish pie plate. Freeze 30 minutes.

In another medium bowl, beat egg yolks with fork; set aside. In 3-quart heavy saucepan, mix 2/3 cup sugar and the cornstarch. Gradually stir in milk. Heat to simmering over medium-high heat. Reduce heat to medium. Slowly stir half of hot milk mixture into egg yolks; return mixture to pan. Cook over medium heat about 5 minutes, stirring constantly, until mixture thickens and boils. Remove from heat. Immediately stir in chocolate and vanilla until chocolate is melted and mixture is smooth. Spoon filling into crust. Press plastic wrap on filling. Refrigerate at least 8 hours or until set.

In chilled small bowl, beat whipping cream and 2 tablespoons sugar with electric mixer on high speed until soft peaks form. Spread whipped cream over filling to within 1 inch of crust.

Top with ripe strawberries, point side up to fill whole whipping cream surface.

DARK CHOCOLATE PUDDING WITH STRAWBERRY ROSES: National Pudding Day

Today is National Chocolate Pudding Day, and what could be better than Chocolate Pudding with Strawberry Roses. Here's a recipe from Driscoll's, my favorite berry people for Dark Chocolate Pudding with Strawberry Roses. Being a rose afficiando (I have over 100 rose bushes in my garden), I meant to re-post this earlier. The technique for creating strawberry roses is awesome and easy. It really elevates the chocolate pudding both in beauty and taste.

These Strawberry Roses are beautiful to put on top of Strawberry Short Cake, too. There are all kinds of uses. Here's the recipe and instructions for Dark Chocolate Pudding with Strawberry Roses.

DARK CHOCOLATE PUDDING WITH STRAWBERRY ROSES

Pudding
4 ounces bittersweet chocolate, melted
2 cups whole milk
3 tablespoons cornstarch
1/2 cup sugar
2 tablespoons unsweetened cocoa powder
Pinch salt
2 teaspoons vanilla extract

Topping
1 package Driscoll's Strawberries (16 ounces)
8 fresh mint leaves

Directions

Pudding
Melt Chocolate.
Whisk together 1/2 cup milk and cornstarch.
Bring remaining 1- 1/2 cups milk, sugar, cocoa, and salt just to a simmer over medium heat. Stir cornstarch mixture then add to milk mixture in saucepan and bring to boil, whisking constantly. Cook 1 minute.
Remove from heat and stir in melted chocolate and vanilla.
Spoon into 4 glasses.
Cover surface directly with plastic wrap to prevent skin from forming. Chill.

Topping
Before serving, hull 16 strawberries by removing the green calyx.
Take 4 strawberries and cut top off of strawberries. These strawberries will be used as the center for the roses.
For the remaining strawberries, slice into 1/8: sections to use for the rose petals.
Begin arranging sliced strawberries around pudding making sure ends of slices are facing out and extend slightly beyond rim of glass.
After first circle of strawberries is placed, begin making second circle of strawberries but position slightly more forward toward the center of glass.
Continue with third layer.
Once finished add cut strawberry to center and garnish with mint leaves.
Serve immediately.

STRAWBERRY RHUBARB PIE: National Strawberry Rhubarb Pie Day

Today is National Strawberry Rhubarb Pie Day. Strawberry and Rhubarb go together like Peanut Butter and Jelly. Here's my favorite Strawberry Rhubarb Pie recipe! Strawberry Fields Forever! Of course I make this pie with a Chocolate Cookie Crust.

A little info on rhubarb: In culinary use, fresh raw petioles (leaf stalks) are crisp (similar to celery) with a strong, tart taste. Most commonly, the plant's leaf stalks are cooked with sugar and used in pies and other desserts. Rhubarb is usually considered a vegetable. In the United States, however, a New York court decided in 1947 that since it was used in the United States as a fruit, it counted as a fruit for the purposes of regulations and duties. And, a warning: Do not eat or use the leaves.

The following recipe is easy and great. Most people do a two crust pie.. the top crust being a lattice; however, I don't think this works with a chocolate crust. You can always do a regular crumble on top! Or make a traditional pie crust and add a lattice crust on top. As always, it's your choice! Enjoy and celebrate the day!

STRAWBERRY RHUBARB PIE
with CHOCOLATE COOKIE CRUST

Chocolate Cookie Crust

Ingredients
2 cups chocolate wafers
6 Tbsp unsalted butter (or salted if you're inclined), melted

Directions
Melt butter. Put chocolate wafers in plastic bag and crush with spoon or rolling pin. Should be pea-size. Combine melted butter and ground chocolate wafers. Press ingredients into 9 inch buttered pie pan--bottom and up sides. Bake for 10 minutes at 325. Let cool.

Filling
3-1/2 cups rhubarb stalks, in 1/2 inch slices
1/2 cup sugar
1/2 cup brown sugar
1-1/2 tsp orange zest
1/4 cup cornstarch
Dash of salt
3 1/2 cups strawberries, cleaned, hulled, quartered  (or thinly sliced)

Directions
Combine filling ingredients in bowl and toss well.
Spread into prepared crust and bake for 45-50 minutes at 350 degrees or until rhubarb is tender and filling is bubbly.

So easy! Make this today!

Chocolate Covered Strawberries: National Strawberry Day!

Today is National Strawberry Day! Here's an easy recipe for making the best Chocolate Covered Strawberries. These are simple to make, and they always look fabulous. You can stuff them or drizzle them--or roll them in crumbled toffee, but fresh strawberries dunked in good quality chocolate is the key.

CHOCOLATE COVERED STRAWBERRIES TO DIE FOR!

Ingredients
1 quart fresh large fresh strawberries, with tops
1 cup Dark Chocolate 60-65% cacao, chopped
1/2 cup Dark Chocolate 72-85% cacao, chopped
3 Tbsp heavy cream
White chocolate, melted for Drizzle (make sure this is 'real' white chocolate)

DIRECTIONS:
Rinse strawberries and dry thoroughly, keeping tops on.
In top of double boiler or stainless steel bowl atop pot of simmering water, combine chocolate and heavy cream. Stir until chocolate is melted and mixture is smooth.
Dip strawberries 1/2 - 3/4 way up in chocolate mixture and place on wax paper or parchment lined cookie sheet to allow chocolate to harden.
Optional: When hardened, drizzle with melted white chocolate.

Hints:
Wash strawberries and pat dry with paper towels; set aside. Make sure the strawberries are completely dry. A drop of water in melted chocolate can cause it to "seize" and turn the entire mixture into a mess. How to smooth out chocolate: add a tiny bit of honey and stir.

How to dip:
Grasp stem of strawberry and dip into chocolate, swirling to partially cover with chocolate. Give strawberry a small shake as you pull it out of the chocolate. When strawberry is completely out of chocolate, swirl it in quick, clockwise motion to let excess chocolate drip off. Place on cookie sheet lined with waxed paper or parchment. Repeat with rest of the strawberries.

CHOCOLATE FOOTBALL STRAWBERRIES

1 1/2 cup Dark Chocolate, chopped
3 Tbsp. heavy cream
White chocolate, melted

Dip strawberries 1/2-3/4 way up in chocolate mixture and place on waxpaper or parchment lined cookie sheet to allow chocolate to harden.
When hardened, decorate with melted white chocolate (see below).

Hints:
Wash strawberries and pat dry with paper towels; set aside. Make sure the strawberries are completely dry. A drop of water in melted chocolate can cause it to "seize" and turn the entire mixture into a mess. How to smooth out the chocolate: add a tiny bit of honey and stir.
