WHITE CHOCOLATE ANGEL FOOD CAKE: White After Labor Day!
White Chocolate Angel Food Cake with Whipped Cream and Fresh Berries
Cake:
1 1/2 cups sifted confectioners’ sugar
1 cup sifted cake flour
1/4 teaspoon salt
1 1/2 cups egg whites, at room temperature (about 11 to 12 large eggs)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 teaspoon vanilla extract
4 bars (1.5 ounces each) Godiva Ivory Chocolate, grated or finely chopped
Whipped Cream:
2 cups heavy cream, chilled
2 Tbsp granulated sugar
1 1/2 tsp pure vanilla extract
Berries:
1 cup fresh red raspberries
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/2 cup fresh blackberries
White chocolate curls
Make The Cake:
Position oven rack in lower third of oven. Heat oven to 350°F.
Sift together confectioners sugar, cake flour, and salt onto a sheet of waxed paper.
Place egg whites in clean, dry bowl of electric mixer. Beat egg whites at medium-low speed until frothy. Add cream of tartar and beat at medium speed until soft peaks form. Gradually add granulated sugar in steady stream, beating just until whites are thick and form slightly stiff peaks. (Do not over-beat)
Gently fold in 1/3 of sifted dry ingredients over whites just until dry ingredients are moistened. Fold in remaining dry ingredients with vanilla and grated white chocolate in two additional batches.
Gently pour batter into ungreased 10" angel food or tube pan, spreading evenly. Tap gently on counter to remove any air bubbles. Bake 35 minutes or until top is firm and springs back when lightly touched. Invert pan on a large bottle (such as wine bottle or olive oil bottle) and cool completely.
To remove cake from pan, run long knife or thin metal spatula around outside edge of cake and gently remove side portion of pan. Then, run knife around inside of center tube, loosen bottom of cake with long knife or thin metal spatula and remove cake from remaining portion of pan. Place on cake plate; cover with plastic wrap if not serving immediately.
Make Whipped Cream:
Combine heavy cream and granulated sugar in a medium, chilled bowl. Beat at medium speed with electric mixer until soft peaks form; whisk in vanilla.
Place sweetened whipping cream in refrigerator until ready to serve cake, up to 2 hours.
Combine berries in a medium bowl and toss lightly.
Assembly:
Cut cake with serrated knife using a sawing motion. Serve with sweetened whipped cream and berry mixture. Garnish with white chocolate curls.

CHOCOLATE FLAG STRAWBERRY SHORTCAKE: NATIONAL STRAWBERRY SHORTCAKE DAY & FLAG DAY!
So here's what you do. Bake a chocolate shortcake (or a chocolate sponge cake) in a 9 x 13 rectangular pan. Here's a link to a great Chocolate Shortcake. When the cake is cool, cover with a thick layer of whipped cream. For the stars, use blueberries, making a small square in the upper left hand corner of the cake. Place the blueberries in rows for best results. Leave some room between blueberries (the stars). For the stripes, cut the strawberries in half and put them flat side down to make stripes. Press gently into the whipped cream. Although there are 13 stripes on the flag, you don't need to have that many on your cake (and you won't have room). It's about aesthetics more than veracity. The bottom stripe of the flag is red, so that's a good place to start.
Don't want to make a chocolate shortcake or sponge cake? Make your favorite chocolate cake and follow the decorating instructions. Or, you make a white chocolate sponge cake!

CHOCOLATE WHIPPED CREAM: MILK, DARK, & WHITE: National Whipped Cream Day!
Today is National Whipped Cream Day. I've posted many recipes that call for whipped cream including chocolate whipped cream for National Cream Puff Day. Today I have three recipes for Chocolate Whipped Cream -- milk, dark, and white.
Chocolate Whipped Cream is terrific to add to desserts, fill cream puffs, and even add to your coffee. There are so many creative uses. Whipped Cream is easy to make, and it's delicious. You can use it as an icing or filling. You can use it with just about anything you would use regular whipped cream for, including Chocolate Strawberry Short Cake!
The first recipe for Milk Chocolate Whipped Cream is from Martha Stewart. Martha uses chocolate whipped cream for the filling of chocolate sandwich cookies. Fabulous! I love these Chocolate Sandwich Cookies with Chocolate Whipped Cream, and you can use any chocolate cookie recipe!
The second Chocolate Whipped Cream Recipe uses a lot more chocolate, and it's dark chocolate. Which chocolate you choose depends on what you like and what you have.
The third Chocolate Whipped Cream is from the Queen of Chocolate, Alice Medrich. It's for White Chocolate Whipped Cream. Of course, Medrich has great recipes for Dark and Milk chocolate, too, so check out her recipes online and in her many cookbooks.

1. CHOCOLATE WHIPPED CREAM

Ingredients
4 ounces milk chocolate, coarsely chopped
2 cups heavy cream
3 Tbsp sugar
Directions
Place chocolate in medium bowl; set aside.
Heat sugar and 1 cup cream in small saucepan over medium heat. Cook until sugar has dissolved.
Pour cream mixture over chocolate; stir until chocolate has melted. Let cool.
Transfer chocolate mixture to electric mixer fitted with whisk attachment. Add remaining cup heavy cream and beat on medium speed until thick and fluffy.
How easy is that?
2. DARK CHOCOLATE WHIPPED CREAM (from Sherry Yard)
I really love this recipe from Sherry Yard for Chocolate Whipped Cream. It's definitely more of a rich whipped ganache, but then isn't that what it's all about? Sherry Yard was the executive pastry chef at Wolfgang Puck's Spago in Beverly Hills and shared this recipe on Cookin' with Good Morning America (December 25, 2003). It's also in in her book Secrets of Baking: Simple Techniques for Sophisticated Desserts.
Ingredients
8 ounces bittersweet chocolate
2 cups heavy cream
1 Tbsp sugar
Directions
Using serrated knife, finely chop the chocolate into 1/4 inch pieces and place in medium heatproof bowl.
Bring cream and sugar to boil in small saucepan over medium heat. Immediately pour hot cream over chopped chocolate. Tap bowl on counter to settle chocolate into cream, then let sit for 1 minute.
Using rubber spatula, slowly stir in circular motion, starting from center of bowl and working out to sides. Stir until all chocolate is melted, about 2 minutes.
Pour ganache into medium container, cover, and refrigerate for 4 hours or overnight. It should be consistency of peanut butter.
Once ganache has chilled, transfer to large bowl. Using balloon whisk, whip ganache by hand until it just reaches soft peaks, about 2 minutes. Be sure to lift whisk out of cream with each pass to bring in as much air as possible. Do not overwhip. Don't worry if cream doesn't seem firm enough. It will have consistency of mustard but will solidify more after it sets in the refrigerator. You can also use a hand mixer.
Use this cream immediately to fill pastries, tarts, and cakes. After dessert is filled, refrigerate for about 1 hour to set the Chocolate Whipped Cream.
3. White Chocolate Whipped Cream from Alice Medrich
Ingredients
4 ounces white chocolate, finely chopped
3/4 cup heavy cream
3 Tbsp water
A pinch or two of salt (optional)
Directions
Put chocolate in medium bowl.
Bring cream and water to simmer in saucepan and pour over chocolate. Let stand for 30 seconds, then stir well.
Let stand for 15 minutes to finish melting chocolate, then stir again until every last bit of chocolate is melted into cream. Let cool. Taste and add salt, if desired.
Cover and refrigerate for at least several hours, or until completely chilled.
To serve, whip the cream with electric mixer until it holds a shape.
Use immediately or refrigerate until needed.
And, as always, your final product will only be as good as your ingredients. Use the best. Here's one of my favorite whipping creams!

Marshmallow Creme is a sweet marshmallow-like spread that was invented in 1917 by Archibald Query in Somerville, Massachusetts. In 1913 during World War I, Emma and Amory Curtis of Melrose, Massachusetts invented Snowflake Marshmallow Creme. Query sold his recipe for Marshmallow Creme to Durkee-Mower, Inc in 1920, who renamed it Marshmallow Fluff. CHOCOLATE PASTA WITH WHIPPED CREAM, STRAWBERRIES, & CHOCOLATE NIBS: National Pasta Day
For today's National Pasta Day, I have two different chocolate pasta recipes. You can buy chocolate Pasta online from several chocolatiers and pasta makers. My local Pasta Shop has fresh chocolate Pasta that freezes well.
The first recipe for Chocolate Pasta is from Emeril Lagasse. It's slightly more complicated than the second recipe, but has a completely different taste and is worth the effort.
Chocolate Pasta with Whipped Cream, Sliced Strawberries, and Chocolate Nibs
from Emeril Lagasse (Food Network)
Ingredients
2-3/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder3 Tablespoons confectioners' sugar plus 3 tablespoons confectioners' sugar
Pinch salt
4 large eggs
2 teaspoons pure vanilla extract (Madagascar)
2 teaspoons walnut oil or vegetable oil (go with the Walnut Oil)
1-1/2 cups cold heavy cream
1 Tablespoon Nocello or brandy
1/2 cup thinly sliced fresh strawberries
1/2 cup chocolate nibs or finely chopped semisweet chocolate
Directions
In large bowl or on work surface, sift together flour, cocoa, 3 Tbsp sugar, and salt. Make a well in center and add eggs a bit at time, working them into dry ingredients using circular motion with hands. Continue working in eggs, and add vanilla and oil, until sticky dough is formed. Knead on lightly floured surface until dough is smooth and elastic, and is no longer sticky. (Alternatively, place dry ingredients in bowl of food processor, add eggs, vanilla and oil and pulse to form ball of dough. Turn out onto work surface and work to smooth dough.) Cover with plastic wrap and let rest for 20 minutes.
Divide dough into 4 fist-sized pieces and flatten into disks. One at time, roll out each dough piece through widest setting of a pasta machine, according to manufacturer's instructions. Remove, fold into thirds and repeat. Continue rolling through machine on 4 times, dusting lightly with flour to keep from sticking. Decrease roller size down 1 notch, and roll through once, passing dough through each setting twice until desired thickness is reached. Let dry briefly while assembling "sauce."
In medium bowl, beat cream with electric mixer at medium speed until it becomes thick and frothy. Beating, add sugar and Nocello, and beat until soft peaks form, being careful not to overbeat. Set aside until ready to serve.
Bring pot of salted water to boil and cook pasta until just al dente, about 2 minutes. Drain in colander. Place drained pasta in large pasta bowl and toss with whipped cream, strawberries and nibs. Serve immediately.
And a second easier recipe.
Chocolate Pasta with White Chocolate "Cream" Sauce
Spaghetti
2 ounces dark chocolate (60%+ cacao), melted, cooled
2 eggs
1 3/4 cups flour
White Chocolate Cream Sauce
2 ounces white chocolate (Guittard or another 'real' white chocolate)
2/3 cup whipping cream
Directions for Pasta
Add melted chocolate to eggs. Make pasta using chocolate-egg mixture and flour. (follow any easy pasta recipe). Let rest for 30 minutes.
Roll out pasta. Roll pasta sheets through preferred setting on the cutter. Let spaghetti dry for 30 minutes.
In large pan of boiling water, cook pasta until al dente.
Drain pasta.
Make sauce.
Serve pasta with sauce.
Directions for Cream Sauce
Blend white chocolate and cream in a saucepan over low heat. Cook, stirring constantly, until chocolate is melted and smooth.

Irish Whiskey Chocolate Cake with Bailey's Whipped Cream: International Irish Whiskey Day
Today is World Irish Whiskey Day. Celebrate with this fabulous Chocolate Irish Whiskey Cake with Bailey's Whipped Cream.
Irish Whiskey Chocolate Cake
Ingredients
3/4 cup plus 2 tablespoons unsweetened cocoa powder
1 - 1/2 cups brewed strong coffee
1/2 cup Irish Whiskey
1 cup granulated sugar
3/4 cup light brown sugar
2 cups all-purpose flour
2 level teaspoons baking soda (make sure it's fresh)
3/4 teaspoon fine sea salt
1/4 teaspoon black pepper
1/8 teaspoon ground cloves
3 large eggs
2 teaspoons pure vanilla extract
1 cup mini semisweet chocolate chips or chopped chocolate
Powdered sugar or Bailey's Whipped Cream
In medium saucepan over low heat, warm coffee, Irish Whiskey, 12 tablespoons butter and remaining cocoa powder, wisking occasionally, until butter is melted. Whisk in sugars until dissolved. Remove from heat and cool completely.
In bowl, whisk together flour, baking soda, salt, pepper and cloves. In another bowl, whisk together eggs and vanilla. Slowly whisk egg mixture into chocolate mixture. Add dry ingredients and whisk to combine. Fold in chocolate chips.
Pour batter into prepared pan. Transfer to oven and bake until a toothpick inserted in the center emerges clean, 55 to 65 minutes. Let cool on wire rack, then remove sides of pan.

Directions
Whip heavy cream to soft peaks.
Add Baileys Irish Cream and whisk until combined.

Bailey's Irish Cream Chocolate Cheesecake: St Patrick's Day!
Here's one of my favorite recipes for St. Patrick's Day: Bailey's Irish Cream Chocolate Cheesecake It's easy to make and decidedly Irish. (recipe adapted from AllRecipes)
Ingredients
1 1/2 cups chocolate cookie crumbs (whirl them in a food processor)
1/3 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
1/4 cup unsalted butter (I used Kerrygold, an Irish butter)
3 (8 ounce) packages cream cheese, softened
1 1/4 cups white sugar
1/4 cup unsweetened Cocoa powder
3 eggs
1/2 cup sour cream
1/4 cup Bailey's Irish Cream
Directions
Crust:
Preheat oven to 350 degrees. In large bowl, mix together cookie crumbs, confectioners' sugar, and 1/3 cup cocoa. Add melted butter and stir until well mixed. Pat into bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450 degrees F.
Cheesecake:
In large bowl, combine cream cheese, white sugar, 1/4 cup cocoa, and flour. Beat at medium speed until well blended and smooth. Add eggs one at time, mixing well after each addition. Blend in sour cream and Bailey's; mixing on low speed. Pour filling over baked crust.
Bake at 450 for 10 minutes. Reduce oven temperature to 250 degrees F, and continue baking for 60 minutes.
With knife, loosen cake from rim of pan. Let cool, then remove rim of pan. Chill before serving.
Tip: If your cake cracks, dampen spatula and smooth top, then sprinkle with some chocolate wafer crumbs.
You can also top this Cheesecake with Bailey's Whipped Cream (or make some and add to your coffee!)

Ingredients
1/2 cup heavy cream
1 Tbsp Baileys Irish Cream
Directions
Whip heavy cream to soft peaks.
Add Baileys Irish Cream and whisk until combined.

1. CHOCOLATE WHIPPED CREAM
(from Martha Stewart)
Ingredients
4 ounces milk chocolate, coarsely chopped
2 cups heavy cream
3 Tbsp sugar
Directions
Place chocolate in medium bowl; set aside.
Heat sugar and 1 cup cream in small saucepan over medium heat. Cook until sugar has dissolved.
Pour cream mixture over chocolate; stir until chocolate has melted. Let cool.
Transfer chocolate mixture to electric mixer fitted with whisk attachment. Add remaining cup heavy cream and beat on medium speed until thick and fluffy.
How easy is that?
2. DARK CHOCOLATE WHIPPED CREAM (from Sherry Yard)
I really love this recipe from Sherry Yard for Chocolate Whipped Cream. It's definitely more of a rich whipped ganache, but then isn't that what it's all about? Sherry Yard was the executive pastry chef at Wolfgang Puck's Spago in Beverly Hills and shared this recipe on Cookin' with Good Morning America (December 25, 2003). It's also in in her book Secrets of Baking: Simple Techniques for Sophisticated Desserts.
Ingredients
8 ounces bittersweet chocolate
2 cups heavy cream
1 Tbsp sugar
Directions
Using serrated knife, finely chop the chocolate into 1/4 inch pieces and place in medium heatproof bowl.
Bring cream and sugar to boil in small saucepan over medium heat. Immediately pour hot cream over chopped chocolate. Tap bowl on counter to settle chocolate into cream, then let sit for 1 minute.
Using rubber spatula, slowly stir in circular motion, starting from center of bowl and working out to sides. Stir until all chocolate is melted, about 2 minutes.
Pour ganache into medium container, cover, and refrigerate for 4 hours or overnight. It should be consistency of peanut butter.
Once ganache has chilled, transfer to large bowl. Using balloon whisk, whip ganache by hand until it just reaches soft peaks, about 2 minutes. Be sure to lift whisk out of cream with each pass to bring in as much air as possible. Do not overwhip. Don't worry if cream doesn't seem firm enough. It will have consistency of mustard but will solidify more after it sets in the refrigerator. You can also use a hand mixer.
Use this cream immediately to fill pastries, tarts, and cakes. After dessert is filled, refrigerate for about 1 hour to set the Chocolate Whipped Cream.
3. White Chocolate Whipped Cream from Alice Medrich
Ingredients
4 ounces white chocolate, finely chopped
3/4 cup heavy cream
3 Tbsp water
A pinch or two of salt (optional)
Directions
Put chocolate in medium bowl.
Bring cream and water to simmer in saucepan and pour over chocolate. Let stand for 30 seconds, then stir well.
Let stand for 15 minutes to finish melting chocolate, then stir again until every last bit of chocolate is melted into cream. Let cool. Taste and add salt, if desired.
Cover and refrigerate for at least several hours, or until completely chilled.
To serve, whip the cream with electric mixer until it holds a shape.
Use immediately or refrigerate until needed.
And, as always, your final product will only be as good as your ingredients. Use the best. Here's one of my favorite whipping creams!

WHITE CHOCOLATE ANGEL FOOD CAKE: White After Labor Day!
White Chocolate Angel Food Cake with Whipped Cream and Fresh Berries
Cake:
1 1/2 cups sifted confectioners’ sugar
1 cup sifted cake flour
1/4 teaspoon salt
1 1/2 cups egg whites, at room temperature (about 11 to 12 large eggs)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 teaspoon vanilla extract
4 bars (1.5 ounces each) Godiva Ivory Chocolate, grated or finely chopped
Whipped Cream:
2 cups heavy cream, chilled
2 tablespoons granulated sugar
1 1/2 teaspoons pure vanilla extract
Berries:
1 cup fresh red raspberries
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/2 cup fresh blackberries
White chocolate curls
Make The Cake:
Position oven rack in lower third of oven. Heat oven to 350°F.
Sift together confectioners sugar, cake flour, and salt onto a sheet of waxed paper.
Place egg whites in clean, dry bowl of electric mixer. Beat egg whites at medium-low speed until frothy. Add cream of tartar and beat at medium speed until soft peaks form. Gradually add granulated sugar in steady stream, beating just until whites are thick and form slightly stiff peaks. (Do not over-beat)
Gently fold in 1/3 of sifted dry ingredients over whites just until dry ingredients are moistened. Fold in remaining dry ingredients with vanilla and grated white chocolate in two additional batches.
Gently pour batter into ungreased 10" angel food or tube pan, spreading evenly. Tap gently on counter to remove any air bubbles. Bake 35 minutes or until top is firm and springs back when lightly touched. Invert pan on a large bottle (such as wine bottle or olive oil bottle) and cool completely.
To remove cake from pan, run long knife or thin metal spatula around outside edge of cake and gently remove side portion of pan. Then, run knife around inside of center tube, loosen bottom of cake with long knife or thin metal spatula and remove cake from remaining portion of pan. Place on cake plate; cover with plastic wrap if not serving immediately.
Make Whipped Cream:
Combine heavy cream and granulated sugar in a medium, chilled bowl. Beat at medium speed with electric mixer until soft peaks form; whisk in vanilla.
Place sweetened whipping cream in refrigerator until ready to serve cake, up to 2 hours.
Combine berries in a medium bowl and toss lightly.
Assembly:
Cut cake with serrated knife using a sawing motion. Serve with sweetened whipped cream and berry mixture. Garnish with white chocolate curls.

STRAWBERRY CHOCOLATE FOOL: National Strawberries & Cream Day
What's a Fool you ask? It's a classic British dessert of fruit and whipped cream, and it's perfect for the warm summer weather. The word fool actually comes from the French word fouler which means to crush. You crush the strawberries! Then you whip the cream and add some chopped chocolate. It's kind of like a mousse. Want to elevate your presentation? Serve this Strawberry Chocolate Fool in clear individual containers such as wine glasses--either stemmed or short. Another serving option would be to serve in short clear mason jars. I have tons of those! And, FYI, bookmark this recipe for a last-minute Valentine's Day dessert.
STRAWBERRY CHOCOLATE FOOL
Ingredients
2 ounces dark chocolate, chopped finely
2 cups fresh sweet strawberries, sliced
1/4 cup sugar
1 tsp pure vanilla (optional)
Pinch of salt
3/4 cup heavy whipping cream
Directions
Put sliced strawberries in bowl (save some for layers and garnish). Add sugar, vanilla, and salt. Mash berries and chill for 30 minutes.
Whip cream to stiff peaks. Fold chilled strawberry mixture and chopped chocolate into whipped cream.
Spoon into serving dishes, alternating layers with remaining chopped strawberries. Garnish with chopped chocolate and a strawberry.

CHOCOLATE WHIPPED CREAM: Milk, Dark, & White for National Whipped Cream Day!
Today is National Whipped Cream Day. I've posted many recipes that call for whipped cream including chocolate whipped cream for National Cream Puff Day. Today I have three recipes for Chocolate Whipped Cream -- milk, dark, and white.
Chocolate Whipped Cream is terrific to add to desserts, fill cream puffs, and even add to your coffee. There are so many creative uses. Whipped Cream is easy to make, and it's delicious. You can use it as an icing or filling. You can use it with just about anything you would use regular whipped cream for, including Chocolate Strawberry Short Cake!

BLACK FOREST BUNDT CAKE with KIRSCH WHIPPED CREAM: Black Forest Cake Day
Over the years, I've posted recipes for traditional Black Forest Cake, but here's a great and easy recipe from Challenge Butter for Black Forest Bundt Cake. Want to make this more traditional? Serve with Cherry Schnapps Whipped Cream (recipe below).
As to how Black Forest Cake got its name, some historians say it's possible that the name came from the traditional costume worn by women in the Black Forest. The dress was black (just like the chocolate flakes), the blouse is white (like the cream), and the hat has red pom-poms that look just like cherries. Well, maybe??
Black Forest Bundt Cake
Ingredients
1 cup unsalted butter, room temperature
1-1/2 cups sugar
1 cup sour cream
2 eggs
2 tsp almond extract
3 cups all-purpose flour
3/4 cup unsweetened DARK cocoa powder
2 tsp baking soda
1/2 tsp salt
1 cup milk
1 can (21 ounces) cherry pie filling (I use Chukar's)
Directions
Preheat oven to 325°F. Generously butter (1-1/2 Tablespoons) a 12-cup Bundt pan (or similar sized pan).
Cream butter and sugar. Beat in sour cream, eggs, and almond extract.
Stir together flour, cocoa, baking soda and salt; add dry mix to creamed mixture alternating with the milk. Mix until well blended.
Spread 1/2 of batter into prepared Bundt pan, spreading batter slightly up the sides to form a trough. Spoon pie filling on top of batter; avoid touching sides and center of pan. Cover filling with remaining batter.
Bake 60 minutes or until cake tests done. Cool in pan 10-15 minutes; turn out onto wire rack or serving plate to complete cooling.
Sprinkle with confectioners sugar before serving.
Serve plain or with Cherry Schnapps Whipped Cream
Cherry Schnapps (Kirsch) Whipped Cream
Ingredients
1-1/2 cups chilled whipping cream
2 Tbsp sugar
1 Tbsp Kirsch
Directions
Beat cream, sugar, and kirsch in large bowl until peaks form. Cover and refrigerate up to 2 hours.

DECADENT CHOCOLATE PUDDING WITH ESPRESSO WHIPPED CREAM: National Espresso Day
Decadent Chocolate Pudding with Espresso Whipped Cream
Ingredients
2 Tbsp cornstarch
2 cups whole milk
4 egg yolks
1/2 cup of powdered sugar
8 ounces semi-sweet chocolate, melted
1 1/2 tsp Nielsen-Massey Mexican Pure Vanilla Extract
1 tsp Nielsen-Massey Pure Chocolate Extract
1/2 tsp Nielsen-Massey Pure Coffee Extract
Directions
In heavy saucepan, combine cornstarch and milk. Bring to boil over moderate heat, stirring constantly. Reduce heat to low and continue cooking 3 minutes, stirring constantly. Remove from heat and let cool.
In small bowl, beat egg yolks with powdered sugar until pale yellow and have thickened. Gradually pour into cooled milk mixture. Place saucepan back onto low heat and cook for 5 minutes, stirring constantly. Do not let simmer or boil.
Remove from heat and add melted chocolate, vanilla, chocolate, and coffee extracts.
Pour into individual serving bowls or ramekins.
Chill 3-4 hours until set.
Serve with Espresso Whipped Cream.
Espresso Whipped Cream
Ingredients
1 cup heavy whipping cream
2 tsp sugar
1 tsp Nielsen-Massey Pure Coffee Extract
Directions
In chilled bowl, combine all ingredients, and whip with an electric mixer until fluffy. Serve with Decadent Chocolate Pudding.
