BLACK FOREST MUG CAKE: National Black Forest Cake Day

Yesterday was Black Forest Cake Day, and I posted a recipe for a variation: Black Forest Pie. It's a very retro recipe. But maybe you do want Black Forest Cake, but you only want a single serving, not a whole cake. Well here's a super easy recipe for Black Forest Mug Cake from Cake on the Run via the Great British Bake-Off newsletter. I love Mug Cakes. Quick and Easy..and delicious! Make this tonight! 

BLACK FOREST MUG CAKE
(serves 1) 

Ingredients 
For the Cake.
3 heaped Tbsp plain flour 
1/3 tsp baking powder 
1 Tbsp butter 
3 tbsp milk 
1 tsp cocoa powder or drinking chocolate 
2 Tbsp sugar 

For the Filling. 2 Tbsp thick cream or yoghurt 
For the Filling 1 Tbsp cherry jam 

Directions
Put all of the cake ingredients into a large mug. 
Mix until smooth and creamy. 
Microwave on high for 90 seconds. 
Slice in half and sandwich with jam and cream. 
Stack sponges on top of each other and top with more jam and cream.

BLACK FOREST BUNDT CAKE: National Black Forest Cake Day!

Today is Black Forest Cake Day. A traditional Black Forest cake has multiple (usually 4) layers of chocolate sponge cake, cherries, frosted with whipped cream, and covered with chocolate shavings and cherries for decoration. Kirschwasser (cherry schnapps) is used to flavor the whipped cream. The bottom layers of sponge cake are also brushed with Kirschwasser (cherry schnaps) to provide moisture and a little extra flavor.

Over the years, I've posted recipes for traditional Black Forest Cake, but here's a great and easy recipe from Challenge Butter for Black Forest Bundt Cake. Want to make this more traditional? Serve with Cherry Schnapps Whipped Cream (recipe below) 

As to how Black Forest Cake got its name, some historians say it's possible that the name came from the traditional costume worn by women in the Black Forest. The dress was black (just like the chocolate flakes), the blouse is white (like the cream), and the hat has red pom-poms that look just like cherries. Well, maybe??

Black Forest Bundt Cake

Ingredients
1 cup unsalted butter, room temperature
1-1/2 cups sugar
1 cup sour cream
2 eggs
2 tsp almond extract
3 cups all-purpose flour
3/4 cup unsweetened DARK cocoa powder
2 tsp baking soda
1/2 tsp salt
1 cup milk
1 can (21 ounces) cherry pie filling  (I use Chukar's)

Directions
Preheat oven to 325°F. Generously butter (1-1/2 Tablespoons) a 12-cup Bundt pan (or similar sized pan).
Cream butter and sugar. Beat in sour cream, eggs, and almond extract.
Stir together flour, cocoa, baking soda and salt; add dry mix to creamed mixture alternating with the milk. Mix until well blended.
Spread 1/2 of batter into prepared Bundt pan, spreading batter slightly up the sides to form a trough. Spoon pie filling on top of batter; avoid touching sides and center of pan. Cover filling with remaining batter.
Bake 60 minutes or until cake tests done. Cool in pan 10-15 minutes; turn out onto wire rack or serving plate to complete cooling.
Sprinkle with confectioners sugar before serving.
Serve plain or with Cherry Schnapps Whipped Cream

Ingredients
1-1/2 cups chilled whipping cream
2 Tbsp sugar
1 Tbsp Kirsch

Directions
Beat cream, sugar, and kirsch in large bowl until peaks form. Cover and refrigerate up to 2 hours.

Black Forest Cake

Today is Black Forest Cake Day! Yes, another fabulous food holiday.

Black Forest cake is the English name for the German dessert Schwarzwälder Kirschtorte, literally "Black Forest cherry-torte".

When I think of cherries, especially at this time of year, I think of Chukar Cherries. Chukar is a great company with all natural products with great flavor.

Here's an easy recipe for Black Forest Cake from Alison at Chukar Cherries. Perfect to make to celebrate the Holiday! This recipe uses Chukar's Cherries Jubilee Dessert Sauce and Chukar's Black Forest Cherries. I use Chukar Cherries Jubilee Dessert Sauce in lots of chocolate confections and baked goods.

No time to bake? Pick up a bag of Chukar Black Forest Cherries at Pike's Place Market in Seattle or order online.

Don't want to make a cake from scratch? You can always substitute a Duncan Hines or Betty Crocker Devil's Food Cake Mix.

CHUKAR CHERRIES BLACK FOREST CAKE

Ingredients
1-3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1-1/2 tsp baking soda
1-1/2 tsp baking powder
1 tsp salt
1/2 cup vegetable oil
2 cups sugar
2 eggs
1 cup milk
3 tsp pure Madagascar vanilla extract
1 cup boiling water
1 pint heavy whipping cream
5 Tbsp powdered sugar
1 jar Chukar Cherries Jubilee Dessert Sauce
dark chocolate shavings
Chukar Black Forest Cherries 

Directions
Preheat oven to 350°F (325°F for dark pans).
Line two 9-inch round cake pans with parchment paper.
Mix flour, cocoa, baking soda, baking powder and salt together in one bowl. In separate bowl, mix  oil, sugar, eggs, milk and two teaspoons of vanilla together. Slowly fold dry ingredients into wet ingredients. Once mixed, add boiling water and stir together. Do not overmix. Divide batter between two cake pans and bake in middle rack of oven for 30-35 minutes or until toothpick inserted in middle comes out clean. Allowcakes to cool completely in pans.

In meantime, make whipped cream filling and frosting. Whip tcream, powdered sugar and one teaspoon of vanilla until stiff peaks form.

Once cakes have cooled, remove from pans and parchment paper. Flip first cake over so top is now the bottom. Spread an even and thin layer of whipped cream over top of the cake. Next, spoon on jar of Cherries Jubilee Dessert Sauce. Then spread another thin layer of whipped cream over Cherries Jubilee Dessert Sauce. Finally, take  second cake and place on the stack, right side up. Take remaining whipped cream and cover entire cake. Decorate cake with chocolate shavings and top each slice with a Black Forest Cherry.
