S'MORES BLONDIE PIE: Memorial Day
S'mores Blondie Pie
Ingredients
6 Hershey's Milk Chocolate Bars (1.55 oz. each), divided
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 cup all-purpose flour
1 cup graham cracker crumbs
1 teaspoon baking powder
1-1/2 cups marshmallow creme or marshmallow fluff
1/4 teaspoon shortening (do not use margarine, butter, spread or oil)
Directions
Heat oven to 350°F. Grease 9-inch pie plate. Unwrap chocolate bars; break into pieces.
Beat butter and sugar until blended in medium bowl. Add egg; beat until light and fluffy. Stir in flour, graham cracker crumbs, and baking powder; beat until well blended.
Press half of dough onto bottom and up sides of pie plate. Spread marshmallow creme over bottom of crust. Set aside 1 tablespoon chocolate bar pieces; sprinkle remaining pieces evenly over marshmallow creme.
Form remaining dough into ball; place on sheet of waxed paper. With fingers, flatten and shape into 9-inch circle. Pick up waxed paper, supporting dough with hands. Flip dough onto pie surface; peel off waxed paper. Pinch edges of dough together and form crust edge.
Bake 20 to 25 minutes or until lightly browned. Cool completely in pan on wire rack. Melt remaining chocolate bar pieces with shortening; drizzle over top of pie.
Optional: torch some mini-marshmallows and put them on top of the pie!
To serve, microwave slices at HIGH (100%) 15 to 20 seconds or until slightly warm and marshmallow starts to melt.

PAN DE MUERTO DE CHOCOLATE: Day of the Dead!
Here's a great recipe for Day of the Dead. This recipe for Pan de Muerto de Chocolate comes from the Hershey's Kitchens. It's a great twist on the traditional Day of the Dead sweet yeast bread, as it adds Cocoa for a rich flavor and a bright orange glaze for an extra shiny boost and flavor. This recipe makes two loaves!
PAN DE MUERTO DE CHOCOLATE
Ingredients
1/2 cup milk
1/2 cup water
1 tsp anise extract
5 cups all-purpose flour plus flour for dusting work surface, divided
3/4 cup granulated sugar
2 packages active dry yeast
1 tsp salt
4 eggs
1/2 cup HERSHEY'S Cocoa (or a cocoa of your choice)
Directions
Line two cookie sheets or baking pans with parchment paper; set aside.
Combine butter, milk and water in small saucepan. Heat on medium heat, stirring occasionally, until mixture is very warm (do NOT boil) and butter is melted. Remove from heat; stir in anise extract.
Stir together 1/2 cup flour, 3/4 cup granulated sugar, yeast and salt. Gradually add butter mixture, beating until well blended. Add eggs, one at a time, mixing thoroughly. Stir together remaining 4-1/2 cups flour and cocoa; gradually add to butter mixture, mixing well until soft dough begins to form.
Place dough on lightly floured surface. Knead 10 minutes (dough will be smooth and elastic). Form dough into large ball. Place dough into a lightly greased bowl; flip the dough so that all sides are greased. Cover loosely with plastic wrap and let rise in a warm place until doubled in size (about 2 hours).Heat oven to 350 F. Heat oven to 350°F. Punch dough down. Cut away about 1/4 of the dough; set aside. Divide remaining dough in half; shape into two round loaves. Place one loaf on each prepared baking sheet. Divide reserved dough into 14 equal balls. Roll 12 balls into stips ("bones") and place 6 across top of each loaf. Place remaining balls in center top of each loaf. Cover loosely with plastic wrap; let rise in warm place until doubled.
Bake 30 to 35 minutes or until bread sounds hollow when tapped. Cool slightly. Make ORANGE GLAZE; brush over tops. Cool completely. Just before serving, dust tops with powdered sugar, if desired.
ORANGE GLAZE
Ingredients
2 tablespoons freshly grated orange peel
1/3 cup fresh squeezed orange juice
Directions
Combine sugar, orange peel and orange juice in small saucepan. Heat over medium heat, stirring constantly, until mixture just comes to a boil and sugar is dissolved. Remove from heat.

CHOCOLATE CARAMEL BLOSSOMS
Ingredients
1/2 cup Dark Mildly Sweet Chocolate Chips (or chopped chocolate)
1/2 cup butter, softened
1/2 cup sugar
1 egg yolk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup Cocoa
1/4 teaspoon baking soda
1/4 cup additional granulated or decorator's sugar for rolling
1/2 cup dulce de leche or HERSHEY'S Caramel Topping
24 HERSHEY'S KISSES Milk Chocolates filled with Caramel (or Hershey's Kisses)
Directions
Place chocolate chips in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir. If necessary, microwave at MEDIUM an additional 10 seconds at a time, stirring after each heating, until chips are melted and smooth when stirred. Set aside.
Beat butter and sugar in large bowl until well blended. Gradually beat in egg yolk and vanilla. Blend in melted chocolate chips. Stir together flour, cocoa and baking soda; beat into chocolate mixture, beating until thoroughly blended. Cover; refrigerate 30 minutes or until dough is easy to handle.
Heat oven to 350° F. Line two cookie sheets with parchment paper.
Shape dough into 24 equal balls (about 1-1/4 inches each). Roll in granulated or decorator's sugar, placing on prepared cookie sheets.
Bake 9 to 11 minutes or until edges are set and center is still slightly soft. Do not over bake. Remove cookie sheets from oven to wire rack. With end of wooden spoon make indentation in center of each cookie. Fill each cookie indentation with dulce de leche (or caramel topping). Cool 15 minutes; gently shift parchment paper with cookies to wire rack. Cool completely.
Remove wrappers from candies. Gently press candy onto each cookie. Makes 24 cookies.

FUDGY CHOCOLATE COOKIE BARS
Ingredients
1 3/4 cups unsifted flour
3/4 cup confectioners’ sugar
1/4 cup HERSHEY’S Cocoa
1 cup cold butter
1 (12-ounce) package HERSHEY’S Semi-Sweet Chocolate Chips
1 (14-ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon vanilla extract
1 cup chopped nuts
Directions
Preheat oven to 350°. In medium bowl, combine flour, sugar and cocoa; cut in butter until crumbly (mixture will be dry). Press firmly on bottom of 13×9-inch baking pan. Bake 15 minutes. Meanwhile, in medium saucepan, over medium heat, melt 1 cup chips with sweetened condensed milk and vanilla. Pour evenly over prepared crust. Top with nuts and remaining 1 cup chips; press down firmly. Bake 20 minutes or until set. Cool. Chill if desired. Cut into bars. Store tightly covered.

MILK CHOCOLATE PECAN POUND CAKE: National Pound Cake Day
Today is National Pound Cake Day. Pound Cake is so versatile. You can serve it plain, top with icing or glaze, or dress it up with berries and whipped cream. I like it toasted with unsalted French butter for breakfast.
The name Pound Cake comes from the fact that the original pound cakes contained one pound each of butter, sugar, eggs, and flour. Made it easy to remember! No leaveners were used other than the air whipped into the batter.
A cake made of one pound of each of butter, sugar, eggs, and flour would have been very large and would have been able to serve multiple families or last multiple days. As years went by, the portions of the ingredients used were adjusted to make a smaller, lighter cake. However, the name of the cake stuck. Pound cakes are generally baked in either a loaf pan or a Bundt pan. They can be iced or dusted with powdered sugar.
I know you're going to love the following recipe for Milk Chocolate Chip Pecan Pound Cake. I left the recipe pretty much as I originally found it on the Hershey's Kitchens website, but, of course, feel free to substitute. It's actually quite awesome with dark chocolate chips, dark cocoa and rich dark chocolate syrup.
Milk Chocolate Chip Pecan Pound Cake
from the Hershey's Kitchens
Ingredients
2 cups (11.5-oz. pkg.) Hershey's Milk Chocolate Chips, divided
1 cup unsalted butter, softened (Margarine in original recipe as option. I don't use margarine)
1-1/4 cups granulated sugar
3 eggs
2-1/4 cups all-purpose flour
1/4 cup Hershey's Cocoa
1/4 teaspoon baking soda
Dash salt
1 cup buttermilk or sour milk*
3/4 cup Hershey's Syrup
2 teaspoons vanilla extract
1 cup chopped pecans
Powdered sugar(optional)
Directions
Heat oven to 350°F. Grease and flour 12-cup fluted tube pan (Bundt pan).
Place 1 cup milk chocolate chips in medium microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, until chips are melted when stirred.
Beat butter in large bowl until creamy; gradually add granulated sugar, beating on medium speed of mixer until well blended. Add eggs, one at a time, beating well after each addition. Add melted chocolate; beat until blended.
Stir together flour, cocoa, baking soda, and salt; add to chocolate mixture alternately with buttermilk, beating until blended. Add syrup and vanilla; beat until blended. Stir in remaining milk chocolate chips and pecans. Spoon batter into prepared pan.
Bake 1 hour and 15 minutes or until wooden pick inserted in center of cake comes out clean, Cool 10 minutes; remove from pan to wire rack. Cool completely.
*To sour milk: Use 1 tablespoon white vinegar plus milk to equal 1 cup.

HERSHEY'S 'PERFECTLY CHOCOLATE' CHOCOLATE CAKE
Ingredients
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
Directions
Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.

HERSHEY'S CHOCOLATE CHEESECAKE
Ingredients
1/4 cup butter
1/2 cup HERSHEY'S Cocoa
3 packages cream cheese (8 oz. each), softened
1 can sweetened condensed milk (not evaporated milk) (14 oz.)
4 eggs
1 Tbsp pure vanilla extract
Directions
Prepare CHOCOLATE CRUMB CRUST (see below). Heat oven to 300°F.
Place butter in medium microwave-safe bowl. Microwave at HIGH (100%) 30 to 45 seconds or until melted. Stir in cocoa until smooth; set aside.
Beat cream cheese in large bowl. Add cocoa mixture; beat well. Gradually beat in sweetened condensed milk until smooth. Add eggs and vanilla; beat well. Pour batter into prepared pan.
Bake 1 hour and 5 minutes or until set. (Center will be soft.) Remove pan from oven to wire rack; loosen cake from side of pan. Cool completely; remove side of pan. To serve, garnish as desired. Cover; refrigerate leftover cheesecake. Garnish as desired. Makes 12 servings.
CHOCOLATE CRUMB CRUST:
Place 6 tablespoons butter in medium microwave-safe bowl. Microwave at HIGH (100%) 30 seconds or until melted. Stir in 1-1/2 cups vanilla wafer crumbs (about 45 wafers, crushed), 6 tablespoons powdered sugar and 6 tablespoons HERSHEY'S Cocoa; blend well. Press mixture onto bottom and 1/2 inch to 1-inch up side of 9-inch springform pan.
