REESE'S PEANUT BUTTER NO-BAKE PIE: National Pie Day

Today is National Pie Day! I've posted Peanut Butter Chocolate Pies before, but this Reese's Peanut Butter No-Bake Pie from The Novice Chef is terrific. I adapted several things, as well as making my own chocolate cookie crust (see recipe below). I substituted my own hot fudge sauce, but as always, feel free to use what you have. I also use whipped cream rather than Cool Whip, but again, it's a choice you can make. The Novice Chef uses Smucker's Hot Fudge Topping.

REESE'S PEANUT BUTTER NO-BAKE PIE

Ingredients:

Chocolate Cookie Crust
1-1/2 cups chocolate cookie crumbs -about 25 (chocolate wafers that have been crushed)
1/4 cup unsalted butter, melted and cooled

Directions for Crust:
In bowl, combine cookie crumbs and butter until moistened and pat evenly into bottom and up side of 10-inch deep pie plate. Bake in preheated 350 °F oven for about 10 minutes or until firm. Let cool.

Pie Ingredients
24 unwrapped Reese's Peanut Butter Cups, divided
1 cup creamy peanut butter
1 (8 ounce) package cream cheese, softened
1/2 cup powdered sugar
12 ounces whipped cream (whipped into stiff peaks) or Cool Whip, divided
12 ounces hot fudge sauce

Directions
Line bottom of pie crust with whole Reese's cups in flat layer. Set aside.
In stand mixer, beat peanut butter, cream cheese, and powdered sugar until smooth.
Fold in 8 ounces of whipped cream (or cool whip) into peanut butter mixture by hand, until well combined. Spoon mixture into pie shell and smooth mixture to edges of pie using spatula or back of spoon.
Heat hot fudge topping for 1 minute in microwave. Stir. Pour on top of cake and spread until reaches the edges.
Refrigerate until set, about 2 hours.
Once pie is set, spread remaining whipped cream over hot fudge layer.
Chop up remaining Reese's Peanut Butter Cups and sprinkle on top.
Refrigerate until ready to serve!

15 MINUTE BANANA CREAM PIE: National Pie Day

Today is National Pie Day. To be fair, there are multiple Pie Days, but that makes for so many more pie celebrations. Here's a not quite retro Keebler Ad from 1994 for 15 Minute Banana Cream Pie. As always, you can make your own ingredients from scratch, but it will take more than 15 minutes! This recipe uses a Chocolate "Ready Crust" from Keebler, but you can make your own chocolate crust.

Keebler 15-minute Chocolate-Banana Cream Pie recipe

Ingredients
1 Keebler Ready-Crust Chocolate Pie Crust
1 package (4-serving size) instant vanilla pudding and pie filling
1 envelope (1-1/2 ounces) whipped topping mix
1-1/2 cups cold milk
1/2 teaspoon vanilla
2 medium bananas

Directions
In mixing bowl, combine pie filling mix, whipped topping mix, milk, and vanilla. Use an electric blender on low-speed until blended. Increase speed and beat until very thick, about 3 minutes.
Pour one-third of mixture into crust. Layer slices of banana on top, reserving 1/2 banana for garnish. Pour remaining filling into crust. Chill 2 hours.
Garnish with sliced banana and additional whipped topping (or whipped cream!), if desired.

GONE TO HEAVEN CHOCOLATE PIE: National Pie Day

Today is National Pie Day. National Pie Day was created by the American Pie Council in 1986 to commemorate Crisco's 75th anniversary of "serving foods to families everywhere." National Pie Day is a special day that is set aside to bake and cook all of your favorite pies. But most importantly, it's a day to eat pies!

A few years ago I posted an easy recipe for a Chocolate Silk Pie in my Wedding Pie article. Here's a different recipe for this pie that I've adapted from Hershey's Kitchen. It's called Gone to Heaven Chocolate Pie. I make my own chocolate crumb crust instead of a frozen or store bought, but if you don't have time, use a pre-made crust. Since this is a Hershey's recipe, I've used their dark chocolate chips. If you have other chocolate lying around, just chop it up, so you have about the same amount, and substitute.

Gone to Heaven Chocolate Pie
Pie Shell:
I would make a chocolate crumb crust. You can do this ahead to save time. Make two and freeze one, and you'll have one for next time! This one makes a 9" pie.

Ingredients
Nonstick vegetable oil spray
6 tablespoons unsalted butter
1 ounce bittersweet (not unsweetened) chocolate, chopped (70-85% cacao)
30 chocolate wafer cookies

Directions:
Spray a 9-inch-diameter glass pie dish with nonstick spray (or butter it).
Stir butter and chocolate in heavy small saucepan over low heat until melted.
Finely grind cookies in processor.
Add chocolate mixture.
Process until crumbs are moistened.
Press crumb mixture into prepared pie dish.
Freeze until firm, about 30 minutes.

Pie Filling:

Ingredients:
2/3 cup sugar
1/3 cup cornstarch
1/2 teaspoon salt
4 egg yolks
3 cups milk
2 tablespoons butter, softened
1 tablespoon pure vanilla extract
2 cups (12-oz. pkg.) Hershey's special Chocolate Chips, divided
Sweetened whipped cream (optional)

Directions:
Bake pie shell; cool. Stir together sugar, cornstarch and salt in 2 quart saucepan. Combine egg yolks and milk in container with pouring spout. Gradually blend milk mixture into sugar mixture.

Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Add 1-3/4 cups chocolate chips; stir until chips are melted and mixture is well blended. Pour into prepared pie shell; press plastic wrap onto filling. Cool.

Refrigerate several hours or until chilled and firm. Top with whipped cream and remaining chocolate chips. (optional)

FALLING IN LOVE CHOCOLATE MOUSSE PIE: National Pie Day

Today is Pie Day! Over the years, I've posted over 50 recipes for Chocolate Pies, but here's a favorite from the movie Waitress. Waitress (2007) was written and directed by the late Adrienne Shelly. Jenna, played by Keri Russell (The Americans), is a woman trapped in a life she dreams of escaping. Jenna bakes this pie--Falling in Love Chocolate Mousse Pie -- for a friend before a date, and the friend winds up marrying her date! Waitress is now a hit on Broadway, as well. This pie is easy to make and delicious. It's a great one to celebrate Pie Day! Bookmark it and make it for Valentine's Day, too!

MARSHMALLOW MERMAID PIE: National Pie Day

I recently re-watched Waitress, a smart and quirky foodie movie from 2007. Waitress was written and directed by the late Adrienne Shelly. Jenna, played by Keri Russell, is a woman trapped in a life she dreams of escaping. She plans to save money from her waitressing job to leave her controlling husband and change the course of her life. She's sharp and sassy and has a gift for making unusual pies whose recipes are inspired by the trials and circumstances of her life. Pies such as I Don't Want Earl's Baby Pie, Baby Screamin' Its Head Off in the Middle of the Night & Ruinin' My Life Pie, I Can't Have No Affair Because It's Wrong & I Don't Want Earl to Kill Me Pie, Falling in Love Chocolate Mousse Pie, and Marshmallow Mermaid Pie.

So since today is NATIONAL PIE DAY,  I thought I'd post Jenna's recipe for Marshmallow Mermaid Pie. The recipe actually came with the DVD, but you can find variations of the recipe on the Internet.

Marshmallow Mermaid Pie was the pie Jenna brought for her doctor, Dr. Mueller, who happened to be semi-retired. Jenna ended up giving the pie to the junior doctor, Dr. Pommater. On their next meeting, Dr. Pommater exclaimed, “that pie was biblically good, that’s how good it was!” Want to try it? Here's a recipe for Marshmallow Mermaid Pie!

Marshmallow Mermaid Pie

Ingredients
9 graham crackers
1/2 cup sweetened, flaked coconut, toasted
5 Tbsp unsalted butter, melted
34 large marshmallows (8 oz.)
1/2 cup whole milk
1-1/2 cup heavy or whipping cream
1-1/2 ounces unsweetened chocolate, grated

Directions
Preheat oven to 375 degrees.
Combine coconut and graham crackers in food processor until coarse crumbs form. Combine crumbs and butter with fork. Press to bottom and side of 9-inch pie plate. Bake 10 minutes and cool on wire rack.
Heat marshmallows and milk in 3-qt. saucepan over low heat until smooth, stirring constantly. Remove saucepan from heat. Cool completely (30 minutes.)
In large bowl with mixer at medium speed, beat cream until stiff peaks form. Fold marshmallow mixture into whipped cream with grated chocolate.
Spoon filling into cooled crust.
Refrigerate pie at least 3 hours or overnight.
Top with mini marshmallows.

The original recipe for this Chocolate Peppermint Pie is adapted from the Wisconsin Milk Marketing Board, so naturally there's lots of butter, cream cheese, and whipping cream. This chocolate peppermint crust is great for lots of other holiday desserts, too.

It's a beautiful Friday at the Beach with temps in the low 70s. I can't think of a better pie to celebrate the day!  Here's a recipe for Guinness Chocolate Silk Pie. You can use any stout, of course, but Guinness is easily available! I make a chocolate cookie crust, but you can use a graham cracker crust or a vanilla wafer crust. STRAWBERRY RHUBARB PIE with CHOCOLATE COOKIE CRUST

January 23 is National Pie Day.. but it's also National Rhubarb Pie Day. I love Strawberry Rhubarb Pie (actually celebrated on June 9), but I usually make it in the summer. However, here in Northern California, we grow strawberries and rhubarb all year round -- Strawberry Fields Forever! Of course I make this pie with my Chocolate Cookie Crust.

A little info on rhubarb: In culinary use, fresh raw petioles (leaf stalks) are crisp (similar to celery) with a strong, tart taste. Most commonly, the plant's leaf stalks are cooked with sugar and used in pies and other desserts. Rhubarb is usually considered a vegetable. In the United States, however, a New York court decided in 1947 that since it was used in the United States as a fruit, it counted as a fruit for the purposes of regulations and duties. And, a warning: Do not eat or use the leaves.

The following recipe is easy and great. Most people do a two crust pie.. the top crust being a lattice; however, I don't think that works with a chocolate crust.  As always, it's your choice! Enjoy and celebrate the day!

STRAWBERRY RHUBARB PIE WITH CHOCOLATE COOKIE CRUST

Chocolate Cookie Crust
Ingredients
2 cups chocolate wafers
6 Tbsp sweet butter (or salted if you're inclined), melted

Directions
Melt butter. Put chocolate wafers in plastic bag and crush with spoon or rolling pin. Should be pea-size. Combine melted butter and ground chocolate wafers. Press ingredients into 9 inch buttered pie pan--bottom and up the sides. Bake for 10 minutes-325. Let cool.

Filling
2 cups rhubarb stalks, chopped into cubes (or thinly sliced
1 cup sugar
1-1/2 tsp orange zest
1/4 tsp nutmeg
1/2 tsp cinnamon
1/3 cup flour
3 cups strawberries, cleaned, hulled, quartered  (or thinly sliced)

Directions
Combine rhubarb, sugar, orange zest, nutmeg, cinnamon, flour, and strawberries in a bowl and toss well. Spread into prepared crust and bake for 45-50 minutes at 350 degrees or until rhubarb is tender and filling is bubbly.
