Happy Birthday, ELVIS! Peanut Butter, Banana, Bacon, Chocolate Chip Cookies

Happy Birthday, Elvis!

We all know that Elvis loved his peanut butter and banana sandwiches, but add some bacon and chocolate chips and make these cookies to celebrate his birthday!.Elvis Cookies recipe from the CookingChannel.  Some interesting ingredients and preparation--in muffin tins!

ELVIS PEANUT BUTTER, BANANA, BACON CHOCOLATE CHIP COOKIES!

Ingredients 
10 slices bacon
2 1/4 cups all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon salt
8 ounces unsweetened butter, softened
1/4 cup mayonnaise
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
3/4 cup semisweet chocolate chunks
1/2 cup chopped salted peanuts
1/2 cup sweet dried banana chips, roughly chopped

Directions 
Cook bacon in skillet until crisp, then drain on paper towels. Once bacon is cool, roughly chop it (you should have about 1/2 cup).
Combine flour, baking soda and salt in medium bowl.
In large bowl, beat butter, mayonnaise and sugars with mixer at medium speed until fluffy, about 3 minutes. Beat in eggs, one at a time, until well blended. Add peanut butter and vanilla and beat until combined. At low speed, add  flour mixture in batches, beating until just combined.
Using wooden spoon, stir in  chocolate chunks, bacon, peanuts and banana chips.
Cover bowl with plastic wrap and chill at least 30 minutes or overnight.
Position racks in upper and lower thirds of the oven and preheat the oven to 325 degrees F.
Line 2 muffin tins with paper liners. Fill muffin tins about halfway full with batter (a 2-inch, 2-ounce ice cream scoop gives you just about the perfect amount, and helps prevent spilling).
Bake until tops are slightly golden and toothpick inserted into center comes out clean, about 30 minutes. (Keep in mind that the cookies won't rise and form a dome like a cupcake.)
Let cool in muffin tins on wire racks for about 10 minutes, then unmold cookie cups and transfer to racks to cool completely.
Cook's Notes: The mayonnaise in this recipe makes these cookies especially tender.

National Sandwich Day: BLT with Chocolate Mayonnaise

Today is National Sandwich Day. A sandwich is defined as a food item made of two or more slices of leavened bread with one or more layers of filling, typically meat or cheese, with the addition sometimes of vegetables or salad. Sometimes mustard, mayonnaise, or butter is used.

I've posted many recipes for Chocolate Panini and Chocolate Grilled Cheese Sandwiches and the like, but I love this recipe that appeared in 2009 in the Recchiuti Chocolate newsletter. Michael Recchiuti has a dynamite recipe for Brioche and Chocolate Mayo BLT. I love bacon and chocolate, and this is a most subtle pairing. There's a Recipe for brioche on the website that looks fairly easy, but if you can't wait, go out and buy a nice artisan brioche to use in this special BLT.

At the Cheese & Chocolate Taste Project, Recchiuti assembled his BLTs with his homemade brioche, applewood smoked bacon, sharp cheddar cheese, fresh butter lettuce, a thick slice of heirloom tomato and this great Chocolat-y mayonnaise.

CHOCOLATE MAYONNAISE

Ingredients
6 extra-large egg yolks
1/4 pound unsweetened chocolate, coarsely chopped (I love Recchiuti chocolate!)
3 tablespoons olive oil
pinch of salt and pepper

Directions
Place yolks in a stainless steel mixing bowl.
Combine unsweetened chocolate and olive oil in double boiler and heat mixture to 115°F.
Begin beating egg yolks on medium speed for 1 minute, then increase speed to high and whip until doubled in volume.

Reduce speed to medium and add chocolate mixture to the yolks carefully, in fine stream. The yolks will start to emulsify and thicken. If mixture becomes too thick you may add a small amount of oil to loosen the mixture. Season to taste.

Note: This mayonnaise is meant for immediate use and will not keep well in the refrigerator.

Maple Bacon Chocolate Chip Scones: Bacon Lovers Day

There are several Bacon Days on the holiday food calendar. Today is Bacon Lovers Day! Here's a tasty way to celebrate. 

This recipe for Maple Bacon Chocolate Chip Scones is adapted from the Bacon Today website. If you're into bacon, you'll want to check out their site for Bacon Recipes, Bacon Shop, Bacon News, and more.

MAPLE BACON CHOCOLATE CHIP SCONES

3 cups flour (plus extra for work area)
1/3 cup white sugar
1 tsp cream of tartar
1 tsp baking soda
1/2 tsp baking powder
1/2 cup butter, softened
1 Tbsp maple syrup
3/4 cup chocolate chips (semi-sweet, milk, or dark--or a mix of all)
1/2 cup bacon bits (you can also use candied bacon bits)
1 cup buttermilk or sour milk
*to make sour milk, simply combine 1 Tbsp white vinegar for every cup of milk, then let sit for 15 minutes

Directions
Preheat oven to 425° F.
Combine flour, sugar, cream of tartar, baking soda, and baking power in medium bowl. Add soft butter and cut with pastry blade or by crossing 2 knives. When mixture resembles fine crumbs, add in chocolate chips and bacon bits. Combine until chips and bits are coated in flour mixture.
Add sour milk and maple syrup. Mix well.
Turn mixture onto  floured working surface. Knead dough, adding enough extra flour to make slightly stiff dough. Shape into rectangle, about 3/4 inch thick. Cut dough into squares, then cut each square into triangles.
Place triangles on parchment paper-lined baking sheet and bake for 12-15 minutes, until lightly browned.

Sometimes mustard, mayonnaise, or butter is used. You're going to love this BLT with Chocolate Mayonnaise!

Ingredients

BETTER BACON BROWNIES: National Bacon Day!

Today is National Bacon Day! I've posted several chocolate bacon recipes over the years for National Bacon Day, as well as for International Bacon Day in September. Bacon provides a great saltiness that complements chocolate. This recipe for Better Bacon Brownies is adapted from AllRecipes.com.  Of course, you can add more bacon to the recipe if you'd like. I love that you caramelize the bacon first. No time to caramelize or cook the bacon? Costco has a great deal on Bacon Crumbles made from real bacon! Just throw them into your favorite Brownie recipe!

Better Bacon Brownies

Ingredients
1/4 pound bacon, cut into 1/4-inch dice
2 Tbsp honey
1/2 cup melted unsalted butter
1 cup brown sugar
1/4 cup white sugar
1 1/2 tsp vanilla extract
2 eggs, lightly beaten
3/4 cup all-purpose flour
1/2 cup DARK cocoa powder
1/4 tsp salt
1/2 cup dark chocolate chips (or chopped chocolate)

Directions
Preheat oven to 350 degrees F.
Grease 8-inch square baking dish.
Fry bacon in skillet over medium-high heat until nearly crisp, about 5 minutes. Add honey and stir until foaming subsides. Remove bacon with slotted spoon to plate to cool.
Mix melted butter, brown sugar, white sugar, and vanilla extract in a large bowl; mix in eggs.
Sift flour, cocoa powder, and salt together in bowl; add to egg mixture.
Fold bacon and chocolate chips into mixture; pour into prepared baking dish.
Bake in preheated oven until toothpick inserted into center comes out clean, 25 to 35 minutes.
Allow brownies to cool for 20 minutes before cutting into squares.

BOURBON BACON CHOCOLATE CHIP COOKIES: National Chocolate Chip Day!


Today is National Chocolate Chip Day! To celebrate the holiday, here's an easy recipe for Bourbon Bacon Chocolate Chip Cookies! These cookies contain all the food groups! You can't go wrong with bourbon, bacon, and chocolate! Bourbon Bacon Chocolate Chip Cookies are perfect for Father's Day, too, so hang on to this recipe!

Maker’s Mark has a website that gives fans more of the content and information highlighting the culinary versatility of Maker’s Mark. The site features recipes selected by chef Lee Anne Wong. Bourbon Bacon Chocolate Chip Cookies

Ingredients
3 Tbsp Maker's Mark® Bourbon
3/4 pound bacon, 1/4-inch dice*
2-1/2 cups all-purpose flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup unsalted butter, softened
1/2 cup reserved bacon fat, chilled
3/4 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup packed dark brown sugar
1 tsp pure vanilla extract
2 large eggs
8 ounces dark chocolate chips

Directions
In large sauté pan, cook out diced bacon until bacon pieces are golden and crisp. Remove bacon pieces from fat and drain on paper towel. Strain fat through fine sieve and measure out 1/2 cup of bacon fat and chill bacon fat until it congeals and sets.

Preheat oven to 375°F.

Combine flour, baking powder, baking soda, and salt in small bowl. Beat butter, chilled bacon fat, granulated sugar, light and dark brown sugars, vanilla and Maker's Mark® Bourbon in large mixer bowl until well combined. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in cooked bacon pieces and chocolate chips.

Drop by rounded tablespoon onto parchment-lined baking sheets at least 3 inches apart.
Bake in oven for 9 to 11 minutes or until golden brown.
Let stand for 2 minutes; remove to wire racks to cool completely.
Keep in dry, airtight container for up to 5 days.

* A fattier sliced bacon is preferred, as lean bacon and turkey bacon will not work for this recipe. ** Use a dark chocolate with 65% cocoa or higher. Anything from a 65%-85% chocolate will work well.

Today is National Peanut Butter Day! I recently watched the movie Elvis. I know, late to the party! But the film is brilliant. It really captured the life and times of an American icon. The film didn't go into his favorite foods, but we all know Elvis loved peanut butter and banana sandwiches. But I'm going to take it one step further today for National Peanut Butter Day. Here's Elvis' Cookie recipe for Peanut Butter, Banana, Bacon, Chocolate Chip Cookies from the Cooking Channel. Some interesting ingredients, as well as preparation in muffin tins! These are cake-like chocolate chip cookies!

ELVIS'S PEANUT BUTTER, BANANA, BACON, CHOCOLATE CHIP COOKIES!

Ingredients

CHOCOLATE BACON PEANUT BARK: International Bacon Day!

Today is International Bacon Day!

Chocolate and Bacon was the chocolate food trend several years ago, and I don't really think it's gone out of fashion. What a great pairing! Salty bacon with dark sweet chocolate is terrific. Add peanuts, and it's even better! Here's a simple recipe for Chocolate Bacon Peanut Bark. Barks are so easy to make, too.

Susan Russo  had a great article on NPR in 2010 on different pairings of bacon with different foods, but this was my favorite..

Chocolate Bacon Peanut Bark  
adapted from Susan Russo's recipe

Ingredients
8 strips bacon (or Costco Bacon crumbles)
16 ounces fair-trade organic chocolate 60-75 % cacao (chunks or chips are fine)
1 cup unsalted peanuts (you already have the salt from the bacon)

Directions
In large skillet over medium heat, cook bacon, turning several times, until browned and done, 6 to 8 minutes. Transfer to paper towel-lined plate to drain. Chop finely. (or use Costco Bacon Crumbles)
Line large baking sheet with parchment paper.
Add chocolate to double boiler (or saucepan on top of another saucepan). Once water begins to boil, add chocolate. Using spatula, stir continuously, until smooth and creamy.
Stir in bacon and peanuts. Pour onto prepared baking sheet and spread to 3/8-inch thickness. Refrigerate for minimum of one hour. Bark should be hard and chilled.
Place bark on cutting board and cut (or crack) into pieces — any size or shape you'd like.
Serve at room temperature.

Bourbon Bacon Chocolate Chip Cookies

Ingredients
3 Tbsp Maker's Mark® Bourbon
3/4 pound bacon, 1/4-inch dice*
2-1/2 cups all-purpose flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup unsalted butter, softened
1/2 cup reserved bacon fat, chilled
3/4 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup packed dark brown sugar
1 tsp pure vanilla extract
2 large eggs
8 ounces dark chocolate chips

Directions
In large sauté pan, cook out diced bacon until bacon pieces are golden and crisp. Remove bacon pieces from fat and drain on paper towel. Strain fat through fine sieve and measure out 1/2 cup of bacon fat and chill bacon fat until it congeals and sets.

Preheat oven to 375°F.

Combine flour, baking powder, baking soda, and salt in small bowl. Beat butter, chilled bacon fat, granulated sugar, light and dark brown sugars, vanilla and Maker's Mark® Bourbon in large mixer bowl until well combined. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in cooked bacon pieces and chocolate chips.

Drop by rounded tablespoon onto parchment-lined baking sheets at least 3 inches apart.
Bake in oven for 9 to 11 minutes or until golden brown.
Let stand for 2 minutes; remove to wire racks to cool completely.
Keep in dry, airtight container for up to 5 days.

* A fattier sliced bacon is preferred, as lean bacon and turkey bacon will not work for this recipe. ** Use a dark chocolate with 65% cocoa or higher. Anything from a 65%-85% chocolate will work well.

CHOCOLATE BACON PEANUT BARK: International Bacon Day

Today is International Bacon Day!

Chocolate and Bacon was the chocolate food trend several years ago, and I don't really think it's gone out of fashion. What a great pairing! Salty bacon with dark sweet chocolate is terrific. Add Peanuts, and it's even better! This is a simple recipe for Chocolate Bacon Peanut Bark. Barks are so easy to make, too.

Susan Russo  had a great article on NPR in 2010 on different pairings of bacon with different foods, but this was my favorite. It's simple to make.

Chocolate Bacon Peanut Bark  
adapted from Susan Russo's recipe

Ingredients
8 strips bacon (or Costco Bacon crumbles)
16 ounces fair-trade organic chocolate 60-75 % cacao (chunks or chips are fine)
1 cup unsalted peanuts

Directions
In large skillet over medium heat, cook bacon, turning several times, until browned and done, 6 to 8 minutes. Transfer to paper towel-lined plate to drain. Chop finely. (or use Costco Bacon Crumbles)
Line large baking sheet with parchment paper.
Add chocolate to double boiler (or saucepan on top of another saucepan). Once water begins to boil, add chocolate. Using spatula, stir continuously, until smooth and creamy.
Stir in bacon and peanuts. Pour onto prepared baking sheet and spread to 3/8-inch thickness. Refrigerate for minimum of one hour. Bark should be hard and chilled.
Place bark on cutting board and cut  (or crack) into pieces — any size or shape you'd like.
Serve at room temperature.

BETTER BACON BROWNIES: National Bacon Day

Today is National Bacon Day! I've posted several chocolate bacon recipes over the years because bacon provides a great saltiness that complements chocolate. I've even posted two Bacon Brownie recipes. But if two recipes aren't enough, here's a third. Recipe adapted from AllRecipes.com.  Of course, you can add more bacon if you'd like. I love that you caramelize the bacon in this brownie recipe. No time to caramelize or cook the bacon? Costco has a great deal on Bacon Crumbles made from real bacon! Just throw them into your favorite Brownie recipe!

Better Bacon Brownies

Ingredients
1/4 pound bacon, cut into 1/4-inch dice
2 Tbsp honey
1/2 cup melted unsalted butter
1 cup brown sugar
1/4 cup white sugar
1 1/2 tsp vanilla extract
2 eggs, lightly beaten
3/4 cup all-purpose flour
1/2 cup DARK cocoa powder
1/4 tsp salt
1/2 cup dark chocolate chips (or chopped chocolate)

Directions
Preheat oven to 350 degrees F.
Grease 8-inch square baking dish.
Fry bacon in skillet over medium-high heat until nearly crisp, about 5 minutes. Add honey and stir until foaming subsides. Remove bacon with slotted spoon to plate to cool.
Mix melted butter, brown sugar, white sugar, and vanilla extract in a large bowl; mix in eggs.
Sift flour, cocoa powder, and salt together in bowl; add to egg mixture.
Fold bacon and chocolate chips into mixture; pour into prepared baking dish.
Bake in preheated oven until toothpick inserted into center comes out clean, 25 to 35 minutes.
Allow brownies to cool for 20 minutes before cutting into squares.

BACON CHOCOLATE TRUFFLES: THE YEAR OF THE PIG: Chinese New Year

Chinese New Year starts tomorrow, February 5, and it's the Year of the Pig. Here's a very easy and delicious recipe for Bacon Chocolate Truffles to celebrate! This recipe is adapted from Kraft Foods. As always, use the very best ingredients. Gung Hay Fat Choy! 恭喜發財

BACON CHOCOLATE TRUFFLES
THE YEAR OF THE PIG

Ingredients
6 slices Thick Cut Bacon
1/4 cup packed brown sugar
1/2 cup whipping cream
2 pkg. (4 oz. each) BAKER'S GERMAN'S Sweet Chocolate, chopped
2 Tbsp butter, softened
1 Tbsp light corn syrup
4 ounces Semi-Sweet Chocolate, chopped

Directions
Heat oven to 350ºF.
Place bacon in single layer on foil-covered rimmed baking sheet; sprinkle with sugar. Bake 20 to 22 min. or until bacon is crisp. Drain bacon on paper towels. Discard all but 1 Tbsp. drippings from baking sheet; reserve for later use.
Bring cream to boil in medium saucepan on medium heat; remove from heat. Add next 3 ingredients; stir until chocolate is completely melted and mixture is well blended. Crumble bacon. Add 1/2 cup to chocolate mixture; mix well. Freeze 1 to 2 hours or until firm.
Roll chocolate mixture into 24 balls; place on waxed paper-covered rimmed baking sheet. Freeze 20 min.
Melt semi-sweet chocolate as directed on package. Stir in reserved bacon drippings. Dip chocolate balls, 1 at a time, in semi-sweet chocolate mixture, turning to evenly coat each ball. Return to prepared baking sheet. Drizzle with any remaining melted chocolate. Sprinkle with remaining bacon. Refrigerate 30 min. or until chocolate coating is firm.

This is one of my signature recipes, with two of my favorite things, bacon and bourbon, accented by chunks of rich, dark chocolate. The smoky, saltiness of the bacon pairs perfectly with the sweetness of the bourbon, chocolate and vanilla flavors. Honestly, these cookies will win you friends and admirers. No joke.

Ingredients
