CHOCOLATE CHIP COOKIE DOUGH TRUFFLES: National Chocolate Chip Cookie Dough Day

I love chocolate chip cookie dough.  And, since today is National Chocolate Chip Cookie Dough Day, here's a great recipe for Chocolate Chip Cookie Dough Truffles. This will be an easy favorite--and it doesn't use raw eggs, so no worries!

CHOCOLATE CHIP COOKIE DOUGH TRUFFLES

Ingredients
1/3 cup unsalted (aka sweet) butter, softened
1/3 cup brown sugar
2 1/2 tsp pure vanilla
1 cup all-purpose flour
1 cup milk chocolate chips
2 cups semi-sweet chocolate chips
Sea salt

Directions
Line baking sheet with wax paper or parchment.
In bowl mix together butter, sugar and vanilla. Add flour and mix until just combined. Fold in milk chocolate chips.
Make one inch balls with dough and place on baking sheet. Freeze for about 30 minutes.
When dough is firm, melt semi-sweet chocolate chips in microwave or top of double boiler.
Dip cookie dough in chocolate with fork, two spoons or dipping tool.
Tap off excess chocolate.
Put back on lined baking sheet. Sprinkle with sea salt.
Put back in freezer to harden.
Store in refrigerator.

RUMBLE CAKE!

I'm a big fan of Trader Joe's. I like their mixes and products...and certainly their prices. I always have frozen TJ desserts in my freezer in case I don't have time to make something.

Here's a favorite recipe I found a few years ago on the Trader Joe's website for Rumble Cake. You can buy all the ingredients at Trader Joe's or you can mix and match with your own items. The beauty of this recipe is that it's filled with all kinds of different ingredients, and you can change them out, add, or delete! Don't you just love the name? Rumble Cake!

RUMBLE CAKE

Ingredients
1 stick Sweet Butter
2  Eggs
1 box TJ’s Truffle Brownie Mix
1/4 cup TJ’s Dried Tart Montmorency Cherries (I love these)
1/4 cup Walnut Halves and Pieces
1 box TJ’s Frozen Chocolate Chip Cookie Dough

Directions
Preheat oven to 350°.
Bring butter to room temperature and combine eggs with butter and whisk/ mix.
Slowly add in brownie mix.
Once mixture is uniform, add cherries and walnuts; set aside.
Lightly grease brownie pan and put chunks of cookie dough sporadically around bottom of pan (there may be a few pieces of cookie dough left, do with them what you must).
Pour brownie mix over top, evenly coating cookie dough.
Cover with aluminum foil and bake for 45 minutes or until toothpick inserted into center comes out clean.

I love chocolate chip cookie dough. And, for me, a great way of eating cookie dough is in a truffle. I love Chocolate Chip Cookie Dough Truffles. There are many recipes out there and I've posted a few before, but here's an easy favorite--and it doesn't use raw eggs, so no worries!

Ingredients
