CRUSHED PEPPERMINT CHEESECAKE with PEPPERMINT OREO CRUST
Here's a great dessert to make for New Year's Eve -- or any time during the holidays. It's an older recipe from Sunset Magazine for Crushed Peppermint Cheesecake! Cheesecake is one of my favorite desserts. I love peppermint and chocolate, especially during the holidays, and when you add butter, cream cheese, and sour cream..well what's not to like? This is a wonderful holiday dessert!
CRUSHED PEPPERMINT CHEESECAKE
Ingredients
12 ounces creme-filled chocolate sandwich cookies, (Oreos or Trader Joe's Candy Cane Joe Joes) broken into pieces
3 Tbsp unsalted butter, melted
1- 1/2 pounds cream cheese, room temperature
3/4 cup sugar
1/3 cup sour cream
4 eggs
2 Tbsp all-purpose flour
1 tsp vanilla
1/2 tsp peppermint extract
1/2 tsp salt
1/3 cup coarsely crushed peppermint candy
Directions
Place cookies in heavy zip-lock plastic bag and crush with rolling pin. Pour into buttered 9-inch round springform pan and pour melted butter over crumbs; mix to coat, then press evenly over bottom and about 1/2 inch up sides of pan. Bake in 300° oven until crust is slightly darker and looks a bit dry, about 10 minutes (leave oven on).
Meanwhile, in bowl, with mixer on medium speed, beat cream cheese and sugar until well blended. Beat in sour cream. Add eggs one at a time, beating to blend after each addition. Beat in flour, vanilla, peppermint extract, and salt until smooth. Pour cream cheese mixture into pan over baked crust.
Bake until edges are just golden and center jiggles slightly when pan is gently shaken, about 1 hour. Run knife around edge of pan rim. Place pan on wire rack and cool cheesecake completely in pan. Cover and chill until cold, at least 4 hours or up to 2 days. Run knife around rim again, then release rim. If any liquid has pooled on surface of cheesecake, blot dry gently with paper towel.
Decorate top of cake with crushed peppermint candy, pressing it in gently with hands.

CANDY CANE FUDGE aka CHOCOLATE PEPPERMINT FUDGE

Candy Cane Fudge aka Chocolate Peppermint Fudge
Ingredients
18 ounces dark chocolate (60-75% cacao), chopped
1-14 ounce can sweetened condensed milk
Dash of salt
1 tsp peppermint extract
4 peppermint candy canes, crushed
Directions
Line 9" pan with wax paper.
Melt chocolate with sweetened condensed milk and salt in heavy saucepan over another saucepan with simmering water (or in top of double boiler). Stir until melted.
Remove from heat; stir in peppermint extract, and half the crushed candy canes.
Spread evenly in prepared pan. Top with the rest of candy cane crumbs.
Chill 2 hours or until firm.
Remove from pan by lifting edges of wax paper.
Cut into squares.

CANDY CANE TRUFFLES: Two easy recipes for the Holidays
Candy Canes shout Christmas to me. I love chocolate and peppermint! You'll love these Candy Cane Truffles! What's better than homemade truffles? Here are two easy recipes for Candy Cane Truffles for gifts or to have around the house! And, if one recipe is good, two is better! Find the one you like best! As always, use the very best chocolate.
1. CANDY CANE TRUFFLES
Ingredients
4 ounces soft cream cheese
2 cup confectioners (powdered) sugar
1 cup dark chocolate, chopped
1/2 tsp peppermint extract
1/3 cup crushed candy canes
Directions
Beat cream cheese and powdered sugar together until smooth.
Melt chopped chocolate in top of double boiler or saucepan over a saucepan over simmering water.
Add chocolate and peppermint extract to cream cheese mixture and beat until smooth and combined. Cover and refrigerate for 20-30 minutes.
Scoop chocolate with melon baller or two spoons and hand roll into balls.
Roll balls in crushed candy canes.
And, here's a second Candy Cane Truffle recipe that I really love. It's from Hungry Girl por Vida. What's cool about it, besides the fact that the Truffles are delicious, is that it's made into little cubes rather than balls. Perfect for dropping into a hot cup of milk or cocoa!

1/2 tsp vanilla extract
1/2 tsp peppermint extract
3 candy canes, crushed

Line small loaf pan with parchment, set aside.

Heat cream in small saucepan over medium-low heat to scald (just before it boils, there will be little bubbles around the edges of the pan).
Pour hot cream over chocolate and cover for about 5 minutes.
Remove cover and stir until smooth.
Stir in vanilla and peppermint extracts until combined.
Pour chocolate mixture into loaf pan and smooth top. Sprinkle with candy cane pieces and allow to cool to room temperature.
Chill in refrigerator until firm, 30-60 minutes.
Remove from pan and cut into cubes.
Cubes can be added to hot milk to make Cocoa or eat as you would truffles..or give as a gift to friends!

CANDY CANE TRUFFLES: Two Easy Recipes
Candy Canes shout Christmas to me. I love chocolate and peppermint! You'll love these Candy Cane Truffles! What's better than homemade truffles? Here are two easy recipes for Candy Cane Truffles for gifts or to have around the house! And, if one recipe is good, two is better! Find the one you like best!. As always, use the very best chocolate.
1. CANDY CANE TRUFFLES
Ingredients
4 ounces soft cream cheese
2 cup confectioners (powdered) sugar
1 cup dark chocolate, chopped
1/2 tsp peppermint extract
1/3 cup crushed candy canes
Directions
Beat cream cheese and powdered sugar together until smooth.
Melt chopped chocolate in top of double boiler or saucepan over a saucepan over simmering water.
Add chocolate and peppermint extract to cream cheese mixture and beat until smooth and combined. Cover and refrigerate for 20-30 minutes.
Scoop chocolate with melon baller or two spoons and hand roll into balls.
Roll balls in crushed candy canes.
And, here's a second Candy Cane Truffle recipe that I really love. It's from Hungry Girl por Vida. What's cool about it, besides the fact that the Truffles are delicious, is that it's made into little cubes rather than balls. Perfect for dropping into a hot cup of milk or cocoa!

Ingredients
4 ounces heavy cream
8 ounces dark chocolate, chopped
1/2 tsp vanilla extract
1/2 tsp peppermint extract
3 candy canes, crushed
Directions
Line small loaf pan with parchment, set aside.
Put chocolate in medium bowl and set aside.
Heat cream in small saucepan over medium-low heat to scald (just before it boils, there will be little bubbles around the edges of the pan).
Pour hot cream over chocolate and cover for about 5 minutes.
Remove cover and stir until smooth.
Stir in vanilla and peppermint extracts until combined.
Pour chocolate mixture into loaf pan and smooth top. Sprinkle with candy cane pieces and allow to cool to room temperature.
Chill in refrigerator until firm, 30-60 minutes.
Remove from pan and cut into cubes.
Cubes can be added to hot milk to make Cocoa or eat as you would truffles..or give as a gift to friends!

CANDY CANE CHOCOLATE COVERED MARSHMALLOW POPS!
Today is Chocolate Covered Anything Day! So with the holidays coming up, here's a recipe for festive Candy Cane Chocolate Covered Marshmallow Pops. These chocolate covered marshmallows, and these Candy Cane Chocolate Covered Marshmallow Pops are easy and delicious and always a hit during the holidays. Everyone loves food on a stick! I used to use small candy cane for the handles, but I find the sticks are so much more manageable on many levels.
This holiday treat is a variation on S'mores on a Stick. All you do differently is use crushed candy cane pieces in place of the graham cracker crumbs. You can also use homemade marshmallows or good quality marshmallows, but I used packaged Marshmallows, as they always hit the spot for me!

Directions
Melt good quality dark chocolate in saucepan on top of another saucepan over simmering water. Remove from stove.
Crush candy canes and put in shallow bowl.
Put lollipop stick in marshmallow and dip and swirl marshmallow in melted chocolate.
Sprinkle chocolate (using spoon) with crushed candy cane bits.
If chocolate gets thick while dipping, put back on stove, heat a bit, and whisk.
Put finished Candy Cane Chocolate Covered Marshmallow Pops on parchment lined cookie sheet.
Repeat.
When you've dipped them all, put them in the refrigerator to firm up.
Bring them to room temperature before serving.
I put the Marshmallow Pops in Bonne Maman jam jars wrapped in a bit of red and white twine. Mason jars are great, too!

Candy Cane Fudge

CANDY CANE FUDGE
Ingredients
18 ounces dark chocolate (60-75% cacao), chopped
1-14 ounce can sweetened condensed milk
Dash of salt
1 tsp peppermint extract
4 peppermint candy canes, crushed
Directions
1. Line 9" pan with wax paper.
2. Melt chocolate with sweetened condensed milk and salt in heavy saucepan over another saucepan with simmering water (or in top of double boiler). Stir until melted.
3. Remove from heat; stir in peppermint extract, and half the crushed candy canes.
4. Spread evenly in prepared pan. Top with the rest of candy cane crumbs.
5. Chill 2 hours or until firm.
6. Remove from pan by lifting edges of wax paper.
7. Cut into squares.

Candy Cane Chocolate Covered Marshmallows
I go to a holiday dessert party every year. These Candy Cane Chocolate Covered Marshmallows are easy and delicious and are always a big hit. Here's what I took last year.. and what I'll probably take this year, too.
I like food on a stick, and these Candy Cane Chocolate Covered Marshmallows--the stick, of course, is a candy cane--are great! This is just a variation on Smores on a Stick. All you do differently is substitute a small candy cane for the plain stick and use crushed candy cane pieces in place of the graham cracker crumbs. These, didn't turn out very pretty, but they're incredibly tasty! I have learned a few things.. trial and error. You can also use homemade marshmallows or good quality marshmallows, but those packaged Puff Marshmallows hit the spot, too!

Holding candy cane, dip marshmallow in melted chocolate.
Immediately swirl the marshmallow in crushed candy cane bits (or spoon candy cane bits over chocolate).
Put finished Candy Cane Chocolate Marshmallow on parchment lined cookie sheet. I recommend putting them flat with the candy cane straight up. I didn't do that, and as you can see, they were wobbly.
Repeat.
When you've dipped them all, put them in the refrigerator to firm up.

Candy Cane Chocolate Covered Marshmallows
Today is National Candy Cane Day, so I thought I'd make something a little different. It actually would have been easier to just dip Candy Canes in Chocolate, great for stirring in coffee or hot chocolate) or make some Candy Cane Fudge, but since I like food on a stick, I thought I'd make Candy Cane Chocolate Covered Marshmallows--the stick, of course, is a candy cane. I've made Smores on a Stick, and they turned out great, so I essentially did the same thing substituting a small candy cane for the plain stick and using crushed candy cane pieces for the graham cracker crumbs.
