THREE EASY RECIPES FOR CHOCOLATE ICE CREAM: National Ice Cream Day


I scream! You scream! We all scream for Ice Cream! Make it chocolate! To celebrate National Ice Cream Day (and Ice Cream Month), here are 3 easy recipes for Chocolate Ice Cream. As always use the very best ingredients. Be sure and try all three and let me know which is your favorite!

CHOCOLATE ICE CREAM RECIPE #1

Ingredients
1-1/2 cup whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp vanilla extract

Directions
Whisk together milk, cocoa powder, and sugar to combine.
Stir in heavy cream and vanilla extract.
Refrigerate chocolate ice cream base for at least 30 minutes before putting in your ice cream freezer, so it is completely cold. This will help freeze faster, improving texture, and allow cocoa powder to become fully hydrated by the milk and cream.

CHOCOLATE ICE CREAM RECIPE #2

Ingredients
1 cup Dutch process cocoa powder, unsweetened
1/2 cup brown sugar, firmly packed
2/3 cup white sugar
1-1/2 cups whole milk
31/4 cups heavy cream
2 Tbsp vanilla extract

Directions
In bowl, combine cocoa and both sugars, whisking to combine well. Add milk and whisk until sugars are dissolved. Stir in heavy cream and vanilla. Pour mixture into freezer bowl of ice cream maker. Let run for 30 minutes, or until mixture is thick, soft, and creamy.
Transfer to airtight container and freeze at least 2 hours.

Ingredients
1 square unsweetened chocolate
2/3 cup Sweetened Condensed Milk
2/3 cup water
1/2 tsp vanilla
1/2 cup whipping cream

Directions
Melt chocolate in top of double boiler. Add sweetened condensed milk and stir over rapidly boiling water 5 minutes until thick. Add water, mix well. Chill. Add vanilla. Whip cream to custard-like consistency. Fold into chilled mixture. Freeze until half-frozen. Take out of container and beat until smooth but not melted. Replace in freezer until frozen.

MALTED MILK BALL CHOCOLATE ICE CREAM PIE: Chocolate Ice Cream Day!

Yesterday was National Ice Cream Pie Day, and I meant to post a recipe. Well this Malted Milk Ball Chocolate Ice Cream Pie takes the cake--or, in this case-- the pie! If you're like me, you've always wondered about Malted Milk Balls. What are they really?

Lots of companies make them now, but when I was growing up, I only remember one: Hershey's Whoppers Malted Milk Balls. But there were actually other "old fashioned' brands such as Maltesers. Maybe they weren't available at my candy store? Ghirardelli also makes Milk Chocolate Malt Balls. (There's also a Kittymalt Hairball remedy that I have, but I won't go there).

Malt balls (interchangeable with malted balls but not moth balls!) are now also available in a variety of flavors: There are pumpkin spice malted milk balls, dark chocolate milk balls, mint malted milk balls, cookies and cream malted milk balls, peanut butter malted milk balls and yogurt malted milk balls, and many other varieties. I'm a purist, however.

Want to just have the Malt Ball center only? Nuts on Line sells them. These malt ball center only candies can be enrobed in the very best chocolate. You can do it yourself in the same way you make chocolate covered nuts. Just melt some chocolate and dip. I use two forks to make it easy. Dry them on a parchment lined baking sheet.

Malted milk balls are chocolate-coated candies often sold in milk carton packaging to promote their association with flavored milk and malted milkshakes.

The flavor of malted milk balls is often described as nutty or distinctively hearty, much like a grain cereal. The reason for this unusual flavor is the use of a grain treatment known as malting. Barley grains are allowed to germinate after harvest, which changes the sugar composition of the grain, in the same sense that germinated corn becomes more suitable for distillation. The malted barley grain is carefully dried and ground into a powder for confectionery use.

Want a fabulous use for Malted Milk Balls? Well, besides eating them at the movies? Sunset Magazine had a great recipe a few years ago for Malted Milk Ball Ice Cream Pie. I definitely love using candy in pies and cakes. This ice cream pie has crunchy malted milk balls on the bottom, malt ice cream above it, and a layer of dark chocolate frosting. Add some whipped cream and sprinkle with chopped and whole malted milk balls when you serve, and you're good to go.

MALTED MILK BALL CHOCOLATE ICE CREAM PIE

Ingredients
3 1/2 cups malted milk balls, divided
Cookie Crust, using chocolate wafers and a 9-in. cheesecake pan with removable sides (I've posted this recipe before)
1 3/4 quarts vanilla ice cream, softened
3 Tbsp Dutch-process cocoa powder
1 1/2 cups malted milk powder (Malted milk powder is made from milk, barley malt, and wheat; don't confuse it with Ovaltine, which has other ingredients added. Find it next to the chocolate milk powder in well-stocked grocery stores or online)
1 cup whipping cream, divided
6 ounces semisweet chocolate, chopped

Preparation
Arrange a tight layer of malted milk balls (3 cups) over crust. Stir ice cream with cocoa powder and malted milk powder until smooth. Spoon into crust, set on plate, and freeze 5 hours.
Heat 1/2 cup cream meanwhile until simmering. Put chocolate in small metal bowl, pour in cream, and let sit until chocolate is melted, about 2 minutes. Stir until smooth. Let cool completely.
Smooth chocolate ganache over top of pie and freeze until set, about 15 minutes.
  
To serve:
Whip remaining 1/2 cup cream and swirl onto pie. Chop some malted milk balls and drop onto pie; add a few whole balls. Remove rim and serve immediately.
 
Tips: 
Let the pie soften for 5 minutes at room temp to make slicing easier.
If you're having trouble free-ing your pie from its pan, set it over bowl of hot water for a couple of minutes and then slide a thin knife between pan edge and crust. It should pop right out.

THREE EASY CHOCOLATE ICE CREAM RECIPES: Summertime

I scream! You scream! We all scream for Ice Cream! Make it chocolate! It's officially summer, and time for Ice Cream. Here are 3 easy recipes for Chocolate Ice Cream. As always use the very best ingredients. Be sure and try all three and let me know which is your favorite!

CHOCOLATE ICE CREAM RECIPE #1

Ingredients
1-1/2 cup whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp vanilla extract

Directions
Whisk together milk, cocoa powder, and sugar to combine.
Stir in heavy cream and vanilla extract.
Refrigerate chocolate ice cream base for at least 30 minutes before putting in your ice cream freezer, so it is completely cold. This will help freeze faster, improving texture, and allow cocoa powder to become fully hydrated by the milk and cream.

1/2 cup brown sugar, firmly packed
2/3 cup white sugar

In bowl, combine cocoa and both sugars, whisking to combine well. Add milk and whisk until sugars are dissolved. Stir in heavy cream and vanilla. Pour mixture into freezer bowl of ice cream maker. Let run for 30 minutes, or until mixture is thick, soft, and creamy.
Transfer to airtight container and freeze at least 2 hours.

TRIPLE CHOCOLATE ICE CREAM CAKE: National Ice Cream Cake Day

I scream, you scream, we all scream for ice cream! Especially if it's chocolate. Add Chocolate Cake], and you have even more of a good thing.

This is perfect for National Ice Cream Cake Day! This recipe adapted from Silvana Nardone's recipe on Rachael Ray Everyday is for Triple Chocolate Ice Cream Cake.

Whatever you do, you won't go wrong if you use chocolate ice cream! I adapted the following recipe by using Ben & Jerry's Brownie Batter & Chocolate Fudge Brownie, mainly because I can never have enough chocolate. Another possibility is to make your own Chocolate Pound Cake. Here's a link to a favorite chocolate poundcake recipe. Marble pound cake works, too!

TRIPLE CHOCOLATE ICE CREAM CAKE

Ingredients
1 cup (1/2 pint) heavy cream
12 ounces dark chocolate --70% cacao, chopped
1 12-ounce marble pound cake, such as Entenmann's, cut into 1/2-inch-thick slices (or your own chocolate pound cake)
1 pint Ben & Jerry's Chocolate ice cream, softened
20 chocolate wafers, plus 4 crushed wafers
1 pint Ben & Jerry's Brownie Batter or Chocolate Fudge Brownie, softened

Directions:
In small saucepan, bring heavy cream to boil over medium-high heat. Put chopped chocolate in heatproof medium bowl and pour boiling cream over chocolate. Let sit until chocolate is melted, about 2 minutes. Stir mixture with fork until ganache is smooth.

Line nonstick 9 x 5 x 3 3/4 inch loaf pan with 2 overlapping sheets of plastic wrap, allowing 4-inch overhang on all sides.

Pour half of ganache (1 cup) evenly into lined pan and spread to cover base. Cover ganache with single layer of tightly packed cake slices; be sure layer is flat and even. Working quickly, spread first chocolate ice cream evenly over pound cake. Cover ice cream with layer made of half of the chocolate wafers. 

Spread remaining ganache evenly over wafers, then top ganache with another layer, using all of remaining wafers, and place cake in freezer for about 30 minutes to chill and firm up.

Remove cake from freezer and spread second chocolate ice cream over wafers. Top with another flat, single layer of tightly packed slices of pound cake, trimming 1 or 2 slices to fill in gaps (there might be a few slices left over). Cake may be slightly higher than pan. Cover cake completely with plastic overhang and freeze until firm, at least 5 hours or overnight.

To loosen ice cream cake from pan, open plastic wrap and invert pan over flat serving platter. Remove plastic wrap. Scatter crushed chocolate wafers over ice cream cake, slice, and serve immediately.

HOMEMADE MAGIC CHOCOLATE ICE CREAM: Retro Ad & Recipe for National Ice Cream Day

Today is National Ice Cream Day. In order to celebrate, I dug into my retro advertising files and found this wonderful Borden's Eagle Brand recipe from August 8, 1941 for Magic Chocolate Ice Cream. I love Elsie the Cow, and I would definitely take her advice to bring "homemade ice cream to the social." Luckily, I have an automatic refrigerator! Gotta love these 'story' ads. "If it's Borden's, it's got to be good." No need for an ice cream machine.

MIDSUMMER MAGIC CHOCOLATE COCA COLA ICE CREAM SODA

I love Midsummer, and how perfect is it that today is also Ice Cream Soda Day. Here's an easy way to celebrate Midsummer with this Mid-Century Midsummer recipe for Chocolate Coca Cola Ice Cream Soda.

MIDSUMMER MAGIC CHOCOLATE COCA COLA ICE CREAM SODA

For each Chocolate Coke Ice Cream Soda, you'll need a tall glass, 3 Tbsp chocolate syrup, 2 Tbsp half & half, coca cola, chocolate ice cream, whipped cream.

Chill glass in freezer.

Pour chocolate syrup into bottom of glass. Add half & half and blend together. Add coca cola to 3/4 of glass.

Add 2-3 scoops of chocolate ice cream. Stir.

Top Ice Cream Soda with whipped cream and maraschino cherry.

Easy Chocolate Ice Cream without a Machine

So it's summertime here in the Northern hemisphere, and what's summer without ice cream?  Today is Soft Ice Cream Day, so why not celebrate by making your own? Don't have an ice cream maker? No problem. Here are two recipes that are easy and delicious. As always, your final product will only be as good as your ingredients, so use the BEST! Think these are  new recipes? 1. Easy Chocolate Ice Cream without a Machine!

Ingredients 
2 cups heavy whipping cream
1 can sweetened condensed milk
1/2 cup unsweetened DARK cocoa powder
1 teaspoon Madagascar vanilla extract

Directions
In medium bowl, stir together sweetened condensed milk, cocoa powder, and vanilla. Set aside.
In bowl of mixer, whip heavy cream until stiff peaks form (do not over beat)
Fold sweetened milk mixture into whipped cream.
Pour into 2 quart container, cover, and freeze for 6 hours or overnight.

2. Easy Rocky Road Ice Cream without a Machine!
You can use the recipe above and just add the nuts and marshmallows--it will have a softer consistency...or try this one.. To have plain Chocolate Ice Cream using the following recipe, just omit the nuts and marshmallows.

Ingredients
4 oz dark (70-75% cacao) chocolate, chopped
1/2 cup sweetened condensed milk
1/2 teaspoon Madagascar vanilla
Pinch of Kosher Salt
1-1/2 cups heavy cream
1/2 cup chopped walnuts (or chopped roasted almonds)
1/2 cup mini-marshmallows

Directions
Combine chocolate and condensed milk in top of double boiler or saucepan over saucepan over simmering water. After chocolate has melted, take off stove and stir in vanilla and salt. Set aside to cool.
In large mixer bowl, add 1 1/2 cups of heavy cream and whip on high speed until stiff peaks form. When cream has stiffened, whip in 1/3 of chocolate mixture and fold in remaining chocolate. Then fold in nuts and mini-marshmallows.
Pour mixture into quart-sized plastic container with an air--tight lid. Freeze2 to 3 hours.
Eat the same day.

Chocolate Crunch Ice Cream Pie: National Ice Cream Pie Day

Today is National Ice Cream Pie Day. I've posted many ice cream pie recipes. They're very easy. I suggest you make a nice chocolate cookie crust, soften some ice cream and put it in the pie shell (after you've put the pie shell in the freezer for 1/2 hour). Top with sprinkles or chocolate curls and freeze.

Want to get a bit fancier? Here's a wonderful Retro Recipe from an old magazine for Chocolate Crunch Ice Cream Pie. The chocolate crust is made with chocolate, coconut, oatmeal, nuts and butter! Great combo.

I found this recipe on one of my favorite sites: Recipe Curio. This site is still up but hasn't been updated in about 6 years. Anyone know why? Or if the blogger is posting elsewhere? We share an affinity for older recipes and ads, and she has also found some great old handwritten recipes and cookbooks and pamphlets.

I use hazelnuts in the pie crust, but almonds would be great, too. This recipe is gluten-free. Always good! Also, you don't need to make the 'coffee' ice cream recipe. Buy some.. or use another type of ice cream.. or use your own recipe.




Chocolate Crunch Ice Cream Pie
(Makes one 9-inch pie)
Roll your pie and coffee into one spectacular of a dessert–a chocolate crunch shell mounded with scoops of coffee-flavored ice cream.
1/4 cup semisweet chocolate pieces
2 tablespoons butter or margarine, melted
2/3 cup coconut, toasted
2/3 cup oatmeal, toasted
1/4 cup finely chopped nuts (I like hazelnuts)

Coffee Ice Cream:
1 quart vanilla ice cream, softened
3/4 to 1 1/2 teaspoons instant coffee powder
Melt chocolate pieces and butter over hot water. In bowl, combine coconut, oatmeal, and nuts. Add chocolate mixture. Press firmly in 9-inch buttered pie plate. Freeze 30 minutes.
To make coffee ice cream, combine softened vanilla ice cream with coffee powder till well blended. Spoon into pie shell. (If mixture is too soft, return to freezer before spooning into shell.) Freeze till firm, about 2 or 3 hours, or overnight.
For easier cutting, dip bottom of pie plate in hot water for a few seconds.

3 Easy Chocolate Ice Cream Recipes: National Ice Cream Day

I scream! You scream! We all scream for Ice Cream! Make it chocolate! To celebrate the day, here are several 3 easy recipes for Chocolate Ice Cream. As always use the very best ingredients.

CHOCOLATE ICE CREAM RECIPE #1

Ingredients
1-1/2 cup whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp Madagascar vanilla extract

Directions
Whisk together milk, cocoa powder, and sugar to combine.
Stir in heavy cream and vanilla extract.
Refrigerate chocolate ice cream base for at least 30 minutes before putting in your ice cream freezer, so it is completely cold. This will help freeze faster, improving texture, and allow cocoa powder to become fully hydrated by the milk and cream.

CHOCOLATE ICE CREAM RECIPE #2

Ingredients
1 cup Dutch process cocoa powder, unsweetened
1/2 cup brown sugar, firmly packed
2/3 cup white sugar
1-1/2 cups whole milk
31/4 cups heavy cream
2 Tbsp Madagascar vanilla extract

Directions
In bowl, combine cocoa and both sugars, whisking to combine well. Add milk and whisk until sugars are dissolved. Stir in heavy cream and vanilla. Pour mixture into freezer bowl of ice cream maker. Let run for 30 minutes, or until mixture is thick, soft, and creamy.
Transfer to airtight container and freeze at least 2 hours.

CHOCOLATE ICE CREAM RECIPE  #3 (without ice cream maker)
This recipe is for Magic Chocolate Ice Cream -- recipe from Borden's Elsie the Cow

Ingredients
1 square unsweetened chocolate
2/3 cup Sweetened Condensed Milk
2/3 cup water
1/2 tsp Madagascar vanilla
1/2 cup whipping cream

Directions
Melt chocolate in top of double boiler. Add sweetened condensed milk and stir over rapidly boiling water 5 minutes until thick. Add water, mix well. Chill. Add vanilla. Whip cream to custard-like consistency. Fold into chilled mixture. Freeze until half-frozen. Take out of container and beat until smooth but not melted. Replace in freezer until frozen.

Today is National Chocolate Ice Cream Day. In order to celebrate, I dug into my retro advertising files and found this wonderful Borden's Eagle Brand recipe from August 8, 1941 for Magic Chocolate Ice Cream. I love Elsie the Cow, and I'm definitely take her advice on bringing "homemade ice cream to the social." Luckily, I have an automatic refrigerator! Gotta love these 'story' ads. "If it's Borden's, it's got to be good." No need for an ice cream machine.
