If you're planning a Memorial Day barbecue this weekend, you'll want to check
your stock of dark chocolate. I've posted several chocolate barbecue sauces and
chocolate rubs before, but here are three more. Both use Hershey's products-- #1
Hershey's Special Dark Syrup and #2 Scharffen Berger Dark Chocolate, but you can use what you have and enjoy! Remember, these are savory sauces.
The first recipe is from The BBQ Report. I use a different Dark Chocolate Sauce from an
artisan chocolate company, but you can always use Hershey's. The flavors
will be different, but both would be good. Season your meat with some cocoa powder (unsweetened) for double chocolate goodness.

#1 CHOCOLATE BARBECUE SAUCE
Ingredients
1 1/2 cups ketchup
1/4 cup apple cider vinegar
1/4 cup Hershey’s Special Dark syrup (or another)
1/4 cup olive oil
1 small onion, diced
2 cloves garlic, chopped
1 tbsp lemon juice
1 tsp salt
1/2 tbsp cracked black pepper
1 tsp paprika
1 tbsp prepared mustard
1/2 tsp hot sauce
Directions
In sauce pan saute onions and garlic in olive oil, cooking until tender.
Stir in lemon juice, salt, pepper, paprika, and hot sauce.
Simmer for 5 to 6 minutes and reduce heat.
Stir in ketchup, vinegar, and Hershey’s Syrup.
Simmer for 15 to 20 minutes.
#2 CHOCOLATE BARBECUE SAUCE
From the Hershey's Website comes this amazing and more complex Chocolate Barbecue Sauce recipe, utilizing Scharffen Berger 82% dark chocolate (Scharffen Berger is owned by Hershey's). Recipe adapted from Chef Ken Gladysz at the Hotel Hershey.
Ingredients
1 tablespoon unsalted butter, soft
4 each garlic cloves, minced
1/2 Spanish onion, diced small
2 each Roma tomatoes, stem removed, diced small
1 1/2 ounces dark brown sugar
4 teaspoons ancho chili powder
4 ounces. apple cider vinegar
8 ounces barbeque sauce
14 ounces vegetable stock
1/4 teaspoon ground cumin
1/4 ground cinnamon
1/8 teaspoon ground cloves
3 oz. SCHARFFEN BERGER 82% dark chocolate
2 tablespoons cilantro, fresh, chopped
3/4 teaspoon salt
1/2 teaspoon pepper, freshly ground
Directions
Melt butter in small sauce pan over medium heat.
Add garlic and onion, sauté 5 minutes until golden brown.
Add tomatoes, stir, and sauté an additional 5 minutes.
Add sugar and chili powder, mix well, and cook for 5 minutes.
Add vinegar, reduce for 5 minutes, mixture should have a paste consistency.
Add sauce, stock, cumin, cinnamon, cloves, salt and pepper. Mix well.
Bring to a boil and reduce to a slow simmer for 30 minutes.
Add SCHARFFEN BERGER chocolate and cilantro; allow to simmer for 5 minutes.
Remove sauce from heat and let stand for 10 minutes.
Puree sauce, transfer to a clean container and cool.
For best results, refrigerate for 12 hours before using.
#3 CHOCOLATE CHIPOTLE CHILI BEER BARBECUE SAUCE
This is a quick and easy one pot recipe! Use whatever beer or ale you have, although the chocolate stouts will add a lot of flavor.
Ingredients
1 Tbsp olive oil
2 large garlic cloves, minced
1/3 cup soy sauce
6 oz tomato paste
2 Tbsp Worcestershire sauce
1 tsp chipotle chili powder
2 tsp smoked paprika
1 cup Chocolate Ale (Rogue, Boulevard, Young's, Christopher Elbow)
1/3 cup brown sugar
2 ounces 75-85% dark chocolate, chopped
Directions
In saucepan over medium heat, heat olive oil.
Add garlic and saute until fragrant, about 30 seconds.
Add remaining ingredients to pot.
Simmer until thickened, about 15-20 minutes.

ANCHO CHILE CHOCOLATE RUB: National Barbecue Day
Today is National Barbecue Day. This Ancho Chile Chocolate Rub is great on Brisket or Flank Steak--or whatever! And, with Memorial Day coming up, you'll want to Bookmark this recipe. ANCHO CHILE CHOCOLATE RUB
Ingredients
1 Cup Cocoa Powder
1/2 Cup Ancho Chile, ground
1/2 Cup Sugar
1/2 Cup Kosher Salt
1/4 Cup Black Pepper, freshly ground
1/4 Cup Cumin, ground
Directions
In medium size bowl, add all ingredients and mix with whisk, until you have uniform mixture.
Put in quart size jar and seal until ready to use on brisket (or other meats). Or take the jar to the barbecue as a gift for the chef when we're all not Sheltered-in-Place!

CHOCOLATE BABY BACK RIBS: Fourth of July!
So what are you making for your Fourth of July barbecue? Chicken? Hotdogs? Burgers? Ribs? Here's a great recipe for Chocolate Flavored Ribs for Fourth of July. Don't let this fool you. These ribs are savory with a kick! I found the original recipe on the Fox News Latino site in 2011. I've made a few adjustments, but not many!
CHOCOLATE BABY BACK RIBS
Ingredients
3 pounds baby back ribs
4 Tbsp olive oil
2 tsp paprika
2 tsp ground cumin
1 1/2 tsp kosher salt
1 tsp ground black pepper
2 cloves garlic
1/2 cup apple juice
Chipotle Chocolate Sauce Ingredients
1 Tbsp sweet Butter
1/2 tsp Chipotle Chili Powder
1/2 cup Half and half
4 ounces bittersweet chocolate (65 % cacao or more), chopped
2 Tbsp apple cider vinegar
Directions
Heat cast iron skillet with 2 tablespoons of olive oil. Mix paprika, cumin, salt and pepper, and rub on all sides of baby back ribs.
Working in two batches, cut seasoned ribs in half.
Brown both sides until crispy.
Place each section in oversized piece of heavy duty aluminum foil. Place sliced garlic over ribs and divide apple juice and pour over.
Create airtight seal and place in preheated grill for 90 minutes.
Remove from foil and place directly on grill. Brush with chocolate chipotle sauce. Cover and cook for 5 minutes. Turn over and repeat, then EAT!

To make sauce, sauté butter over low heat, add cumin and half and half. Continuously stir until hot but not boiled.
Add chopped chocolate and continue to stir until smooth. Mix in apple cider vinegar. Set aside until ready to brush over ribs.

Spicy Chocolate Turkey Rub: Thanksgiving Barbecue Turkey
Three years ago we started barbecuing our turkeys with spicy chocolate rubs. Here are two great recipes. We've made some adaptations, but this first recipe is for Spicy Chocolate Rub Recipe from The BBQ Report. Just combine everything in the Cuisinart until finely ground and pat on turkey. This recipe is for chicken, so if you're planning a 20 lb. turkey, you'll need to increase the amounts.
SPICY CHOCOLATE RUB
1 cup natural unsweetened DARK cocoa powder
1/4 cup kosher salt
2 tsp dried red pepper flakes, chopped fine
1/2 tsp ground cloves
2 Tbsp granulated sugar

Want to get a little more sophisticated with the Rub? Kunde Family Estates (great wines to accompany your turkey) has a recipe for BBQ Turkey with Ancho Chile/Chocolate Rub. This recipe includes brining the turkey first. If you buy a kosher turkey it will already be brined. This recipe is for a 12-16 pound turkey, so if yours is bigger than that, you'll need to adjust the measurements.
3 Tbsp brown sugar
2 Tbsp chile powder
1 Tbsp unsweetened cocoa powder
2 tsp ground cumin
2 tsp dried oregano
2 tsp kosher salt
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. chipotle chile powder
2 tbsp. softened butter
In small bowl, combine all dry rub ingredients. Mix well. In another small bowl, mash butter together with 2 Tbsp rub – set aside.
Place turkey in large roasting pan. With fingers, gently loosen the skin over breast meat and insert butter/rub under skin; gently rub over breast meat. Rub the outside of bird well with olive oil; then sprinkle generously inside and out with rub. Loosely pack cavity with lemon and orange slices. Tie drumsticks together with kitchen string. Place in refrigerator and let sit; uncovered, 5 – 6 hours, or until ready to cook.
When ready to cook, prepare grill. If using charcoal grill, prepare for indirect cooking. For gas grills, heat to medium high. Put turkey in roasting pan on grill; add 2 cups water; cover. Turn all gas setting to low. Grill-roast turkey, basting with pan juices and rotating pan 180 degrees every hour, for 3 hours. (If using charcoal grill, add briquettes or mesquite every hour to maintain an even temperature). After 3 hours, insert instant-read thermometer in fleshy part of inner thigh to check for doneness. Thigh meat should register 175° F and the juices should run clear when thigh is pierced. If not done, cover and continue to cook; checking every 20 minutes for doneness.
When done, transfer turkey to a heated platter, cover loosely with foil and allow to sit for 20 minutes before carving.
