SHROVE TUESDAY AKA PANCAKE DAY AKA FAT TUESDAY: History & Recipe for Chocolate Chip Pancakes

Today is Shrove Tuesday aka Pancake Day aka Fat Tuesday! Shrove Tuesday marks the last day before Lent which is traditionally a period of abstinence, associated with clearing your cupboards of goods such as sugar, fats, and eggs. The day is commonly known as Pancake Day because it represents a good opportunity to use these ingredients ahead of the fasting period.  

Pancake Day takes place 47 days before Easter Sunday. Because the date of Easter Sunday is tied to the lunar calendar, Pancake Day can occur anytime between February 3 and March 9. Easter is Sunday, April 20, this year. 

In many countries, Shove Tuesday is celebrated with pancake throwing contests and races. Not so in the U.S.

Like many other European holidays, the pancake day was originally a pagan holiday. Before the Christian era, the Slavs believed that the change of seasons was a struggle between Jarilo, the god of vegetation, fertility and springtime, and the evil spirits of cold and darkness. People believed that they had to help Jarilo fight against winter and bring in the spring. The most important part of Shrovetide week (the whole celebration of the arrival of spring lasted one week) was making and eating pancakes. The hot, round pancakes symbolized the sun.   

So to celebrate Shrove Tuesday, Fat Tuesday, and Pancake Day, you'll want to make pancakes, and I suggest one or both of the following recipes for Chocolate Chip Pancakes. I've listed two easy recipes for Chocolate Chip Pancakes, but you can also make Chocolate Chocolate Chip Pancakes and add chocolate syrup or a dollop of chocolate ice cream...if you're in a really chocolate mood. And, if you're giving up Chocolate for Lent, this will be your last chocolate treat until Easter!


1. Chocolate Chip Pancakes

Pancake batter
Chocolate chips

Make a batch of your favorite pancake batter. For every cup of dry pancake mix, add 1/4 cup chocolate chips. Mix batter. Stir in chips. Lightly grease and heat griddle or skillet. Pour a little less than 2 tablespoons of batter for each pancake. When bubbles appear all over uncooked side of the pancake, it's time to turn over. Cook the second side until light brown.

2. Chocolate Chip Pancakes


Ingredients
1 1/2 cups sifted flour

1/2 tsp salt
1 Tbsp sugar
3 eggs, separated
4 Tbsp melted unsalted butter
1 tsp baking powder
1 tsp baking soda
1 2/3 cup buttermilk
1 1/3 cup dark chocolate chips

Directions
Put dry ingredients in bowl. Combine well-beaten egg yolks with buttermilk and stir lightly into dry ingredients. Add chocolate chips. Stir in melted butter. Beat in stiffly beaten egg whites.
Cook on griddle or in skillet.
Makes 10-12 pancakes.

BLUEBERRY CHOCOLATE CHIP PANCAKES: 2 Recipes for National Blueberry Pancake Day!

Today is National Blueberry Pancake Day, so here are two recipes for Chocolate Chip Blueberry Pancakes.

This first recipe is from Cooking Light for Perfect Buttermilk pancakes. I've added blueberries and chocolate chips to enrich the recipe! I usually have fresh blueberries around, but if you don't, you can always use frozen blueberries. Trader Joe's has wild blueberries that are great in this recipe. Tip: Don't thaw frozen blueberries before adding to your pancake batter

The second recipe is for Blueberry Chocolate Chip Pancakes in a Jar.

1. BUTTERMILK BLUEBERRY CHOCOLATE CHIP PANCAKES

Ingredients
1 cup all purpose flour
2 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 tsp vegetable oil
1 large egg, lightly beaten
Cooking spray
1 cup Blueberries (less if frozen.. I like the frozen Wild Blueberries from Trader Joe's. Don't thaw, if frozen)
1/2 cup Dark Chocolate chips

Directions
Spoon flour into dry measuring cup; level with knife.
Combine flour and next 4 ingredients (flour through salt) in large bowl, and make well in center of mixture. Combine buttermilk, oil, and egg; add to flour mixture, stirring until smooth. Fold in Blueberries and Chocolate Chips.
Spoon about 1/4 cup batter onto hot nonstick griddle or nonstick skillet coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges seem cooked.

So that's what you'll make fresh today, but I'm also fond of Mixes in a Jar. Following is a quick and delicious recipe for Chocolate Blueberry Pancakes in a Jar. You can have this on hand or to give as a gift. One helpful hint, when making mixes in a jar, really pack the ingredients in. Use a tamper, if you have one...except for the dried blueberries and chocolate chips that you'll put on top.

2. BLUEBERRY CHOCOLATE CHIP PANCAKES IN A JAR

Ingredients:
2 cups all purpose flour
1/3 cup granulated sugar
4 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup dried Blueberries
2/3 cup mini dark chocolate chips

Directions
Layer flour, then sugar, then baking powder mixed with baking soda and salt in 1-quart wide-mouth jar. Tamp Down.
Add blueberries, then chocolate chips.
Seal Jar.
Cover jar with burlap or other fabric and tie with raffia or a bow.

Attach gift tag with the following instructions:

Chocolate Blueberry Pancakes 
Makes 25 pancakes
2 eggs, beaten
1/4 cup unsalted butter, melted
1-1/2 to 2 cups whole milk (or buttermilk)

Mix eggs and melted butter in large bowl. Add contents of jar. Stir until well blended.
Add 1-1/2 cups milk. Stir until dry ingredients are moistened.
Heat griddle or skillet.
Pour batter onto hot griddle 1/4 cup at a time.
Cook pancakes until golden on both sides.

BREAKFAST FOR DINNER: Red Velvet Pancakes for Valentine's Day!

Why not Breakfast for Dinner for Valentine's Day? These Red Velvet Pancakes are perfect! You can make Red Velvet Pancakes from scratch or use a mix. Add a little extra love by using a heart-shaped pancake mold! Hint: If you use a mold, use several and be sure to spray the molds, so the pancakes don't stick.

There are many Red Velvet Pancake Mixes. My favorite Red Velvet Pancake Mix is from The Griddle Cafe. My second choice which is still fab would be the Red Velvet Pancake Mix from Cost Plus World Market. If you have a favorite, let me know by commenting below.

1. RED VELVET PANCAKES WITH CREAM CHEESE GLAZE 
(Adapted from About.com)

Pancakes:
1 1/2 cup all-purpose flour
2 Tbsp sugar
2 tsp baking powder
1 Tbsp Dark cocoa powder
1 tsp salt
2 eggs
1/4 cup milk
8 ounces buttermilk
4 Tbsp unsalted butter, melted, and cooled slightly
1 tsp pure vanilla extract
1 tsp white vinegar
2 tsp red liquid food coloring
3/4 cup dark chocolate chips
Extra butter or nonstick cooking spray

Cream Cheese Glaze:
4 ounces light cream cheese, softened
1 cup powdered sugar, sifted
1 tsp pure vanilla extract
1 Tbsp milk

Directions
Preheat griddle to medium-high heat. In bowl, whisk to combine flour, sugar, baking powder, cocoa powder, and salt. Set aside.
In separate bowl, whisk eggs, then add milk, buttermilk, butter, vanilla extract, white vinegar, and food coloring, whisking to combine completely. Stir dry ingredients into wet ingredients, stirring just until combined. Do not overmix.
Brush some butter or spray nonstick cooking spray on hot griddle, and spoon batter into desired sized pancakes (or molds). Cook until bubbles form in batter, the edges are dry and underside is lightly brown, about 5 minutes, then flip over and cook other side 1 to 2 minutes more. Repeat as needed until all batter is used.

As pancakes cook, make cream cheese glaze: 
In small bowl, use fork to stir together cream cheese, powdered sugar, and vanilla extract. Add a little milk if needed to make glaze that has thin enough consistency to drizzle.

To serve, stack three pancakes on a plate and drizzle cream cheese glaze over them.

2. BISQUICK RED VELVET PANCAKES WITH CREAM CHEESE GLAZE
(recipe from Betty Crocker)

Cream Cheese Topping
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
3 Tbsp milk
2 cups powdered sugar

Pancakes 
2 cups Original Bisquick™ mix
1 Tbsp granulated sugar
1 Tbsp unsweetened cocoa
1 cup milk
1 to 1 1/2 tsp red paste food color** (Do not use liquid red food coloring in this recipe)
2 eggs
Powdered sugar, if desired

Directions 
In medium bowl, beat cream cheese, butter, and 3 Tbsp milk with electric mixer on low speed until smooth. Gradually beat in 2 cups powdered sugar, 1 cup at a time, on low speed until topping is smooth. Cover; set aside.
In large bowl, stir all pancake ingredients except powdered sugar with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary or spray with cooking spray before heating.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
Spoon cream cheese topping into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle topping over pancakes. Sprinkle with powdered sugar.

** Do not use liquid red food coloring in this recipe**

BREAKFAST FOR DINNER: RED VELVET PANCAKES for Valentine's Day

Time to plan your Valentine's Day dinner.  How about breakfast for dinner with Red Velvet Pancakes. You can make Red Velvet Pancakes from scratch or use a mix. Add a little extra love by using a heart-shaped pancake mold! Hint: If you use a mold, use several and be sure to spray the molds, so the pancakes don't stick.

1. RED VELVET PANCAKES WITH CREAM CHEESE GLAZE 
(Adapted from About.com)

Pancakes:
1 1/2 cup all-purpose flour
2 Tbsp sugar
2 tsp baking powder
1 Tbsp Dark cocoa powder
1 tsp salt
2 eggs
1/4 cup milk
8 ounces buttermilk
4 Tbsp unsalted butter, melted, and cooled slightly
1 tsp pure vanilla extract
1 tsp white vinegar
2 tsp red liquid food coloring
3/4 cup dark chocolate chips
Extra butter or nonstick cooking spray

Cream Cheese Glaze:
4 ounces light cream cheese, softened
1 cup powdered sugar, sifted
1 tsp pure vanilla extract
1 Tbsp milk

Directions
Preheat griddle to medium-high heat. In bowl, whisk to combine flour, sugar, baking powder, cocoa powder, and salt. Set aside.
In separate bowl, whisk eggs, then add milk, buttermilk, butter, vanilla extract, white vinegar, and food coloring, whisking to combine completely. Stir dry ingredients into wet ingredients, stirring just until combined. Do not overmix.
Brush some butter or spray nonstick cooking spray on hot griddle, and spoon batter into desired sized pancakes (or molds). Cook until bubbles form in batter, the edges are dry and underside is lightly brown, about 5 minutes, then flip over and cook other side 1 to 2 minutes more. Repeat as needed until all batter is used.

As pancakes cook, make cream cheese glaze: 
In small bowl, use fork to stir together cream cheese, powdered sugar, and vanilla extract. Add a little milk if needed to make glaze that has thin enough consistency to drizzle.

To serve, stack three pancakes on a plate and drizzle cream cheese glaze over them.

2. BISQUICK RED VELVET PANCAKES WITH CREAM CHEESE GLAZE
(recipe from Betty Crocker)

Cream Cheese Topping
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
3 Tbsp milk
2 cups powdered sugar

1 to 1 1/2 tsp red paste food color** (Do not use liquid red food coloring in this recipe)
2 eggs
Powdered sugar, if desired

Today is National Blueberry Pancake Day. Perfect, too, for a lazy Saturday morning. Or maybe Breakfast for Dinner? For today's holiday, here are two recipes for Chocolate Chip Blueberry Pancakes.

Bavarian Crepes: Bavarian Crepe Day

Today is Bavarian Crepe Day, and it's a perfect day for these pancake-like desserts. A Bavarian crepe is made from buckwheat flour or wheat flour. It is usually filled with Bavarian cream and then topped with fruits, chocolate, and whipped cream.

Bavarian Crepes are popular in Central and Eastern Europe and are similar to French crepes (thin pancakes). The popularity of Bavarian crepes is that they were usually filled with rich Bavarian cream.

The following recipe doesn't include Bavarian Cream, but you can easily add it before you flip the crepes. These crepes are very versatile.

CHOCOLATE BAVARIAN CREPES

Ingredients

4 eggs, beaten 

2 cups milk 

1 1⁄2 cups flour 

2 tablespoons vegetable oil 

1⁄2 teaspoon salt 

2 tablespoons sugar 

Chocolate Chips

Dark Chocolate Sauce 

Strawberries

Whipped Cream

Directions

Mix all ingredients; don't over beat. Mix may have some lumps. Heat skillet and melt butter. Pour about 1/2 cup mix in circle into skillet and fry until bubbly. Turn over and fry until light brown. Sprinkle with Chocolate Chips. Roll up and drizzle chocolate sauce. Top with fresh strawberries and whipped cream.

The most important part of Shrovetide week (the whole celebration of the arrival of spring lasted one week) was making and eating pancakes. The hot, round pancakes symbolized the sun.   

So to celebrate Shrove Tuesday and Pancake Day, you'll want to make pancakes, and I suggest one or both of the following recipes for Chocolate Chip Pancakes. I've listed two easy recipes for Chocolate Chip Pancakes, but you can also make Chocolate Chocolate Chip Pancakes and add chocolate syrup or a dollop of chocolate ice cream...if you're in a chocolate mood. And, if you're giving up Chocolate for Lent, this will be your last chocolate treat until Easter!

1. Chocolate Chip Pancakes

Pancake batter
Chocolate chips

Make a batch of your favorite pancake batter. For every cup of dry pancake mix, add 1/4 cup chocolate chips. Mix batter. Stir in chips. Lightly grease and heat griddle or skillet. Pour a little less than 2 tablespoons of batter for each pancake. When bubbles appear all over uncooked side of the pancake, it's time to turn over. Cook the second side until light brown.

Ingredients
1 1/2 cups sifted flour

1/2 tsp salt
1 Tbsp sugar
3 eggs, separated
4 Tbsp melted unsalted butter
1 tsp baking powder
1 tsp baking soda
1 2/3 cup buttermilk
1 1/3 cup dark chocolate chips

Directions
Put dry ingredients in bowl. Combine well-beaten egg yolks with buttermilk and stir lightly into dry ingredients. Add chocolate chips. Stir in melted butter. Beat in stiffly beaten egg whites.
Cook on griddle or in skillet.
Makes 10-12 pancakes.

Blueberry White Chocolate Chip Pancakes: Blueberry Pancake Day

Today is Blueberry Pancake Day. I've posted many recipes for Blueberry Chocolate Chip Pancakes, but for today's holiday I would suggest using White Chocolate Chips. My favorite white chocolate chips are from Guittard.

BLUEBERRY WHITE CHOCOLATE CHIP PANCAKES

Ingredients
1 large egg
1 cup all-purpose flour
1 cup buttermilk
1 Tbsp sugar
2 Tbsp canola oil
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
1/2 cup wild blueberries (fresh or frozen--I love Trader Joe's Frozen Wild Blueberries)
1/2 cup white chocolate chips (Guittard)

Directions
Preheat your griddle on the stove on medium or medium-low.
Crack egg into bowl of stand mixer fitted with whisk attachment. Beat on medium until light yellow and frothy, about 2 minutes. Add flour, buttermilk, sugar, oil, baking powder, baking soda, and salt to mixer. Beat on low until just combined.
Fold blueberries and white chocolate chips into batter.
Drop batter in rounds (about 1/4 cup per pancake) onto hot griddle and cook, flipping once, until golden brown on both sides.

CHOCOLATE BANANA PANCAKES: National Pancake Day

Today is National Pancake Day! There are actually several pancake days, but I celebrate them all! This recipe for Chocolate Banana Pancakes is slightly adapted from TheComfortofCooking, This recipe is special because these pancakes can be frozen. Just put a few pieces of wax paper between each pancake, throw them in a plastic bag and freeze! Take them out of the freezer, and you have pancakes on a school or work day! Add some sliced bananas and syrup, and you have a great meal! You'll love the texture of these, too!

CHOCOLATE BANANA PANCAKES

Ingredients
1 cup flour
4 Tbsp DARK cocoa powder
3 Tbsp sugar
1-1/4 tsp baking powder
1/2 tsp baking soda
Pinch of salt
2 large ripe bananas (mushy is best)
1 cup buttermilk
1 large egg
1 tsp pure vanilla extract
1 Tbsp vegetable oil
 Banana slices and syrup to add after...

Directions

Whisk together flour, cocoa powder, baking powder, baking soda, salt and sugar in large bowl.
In another bowl, mash banana. Mix in buttermilk, egg, vanilla, and vegetable oil until well combined. Pour wet ingredients into dry ingredients and mix until just combined (should be lumpy).
Spray large pan with nonstick cooking spray and set to medium heat.
Cook pancakes until bubbles form on surface and edges are just cooked, about 2 minutes.
Flip and cook for an additional minute.
Serve with sliced banana and syrup.

RED VELVET PANCAKES FOR VALENTINE'S DAY!

Red Velvet Pancakes are perfect for Valentine's Day -- either for brunch or dinner. You can make Red Velvet Pancakes from scratch or use a mix. Add a little extra love by using a heart-shaped pancake mold! Hint: If you use a mold, use several and be sure to spray the molds, so the pancakes don't stick.

1. RED VELVET PANCAKES WITH CREAM CHEESE GLAZE 
(Adapted from About.com)

Pancakes:
1 1/2 cup all-purpose flour
2 Tbsp sugar
2 tsp baking powder
1 Tbsp Dark cocoa powder
1 tsp salt
2 eggs
1/4 cup milk
8 ounces buttermilk
4 Tbsp unsalted butter, melted, and cooled slightly
1 tsp pure vanilla extract
1 tsp white vinegar
2 tsp red liquid food coloring
3/4 cup dark chocolate chips
Extra butter or nonstick cooking spray

Cream Cheese Glaze:
4 ounces light cream cheese, softened
1 cup powdered sugar, sifted
1 tsp pure vanilla extract
1 Tbsp milk

Directions
Preheat griddle to medium-high heat. In bowl, whisk to combine flour, sugar, baking powder, cocoa powder, and salt. Set aside.
In separate bowl, whisk eggs, then add milk, buttermilk, butter, vanilla extract, white vinegar, and food coloring, whisking to combine completely. Stir dry ingredients into wet ingredients, stirring just until combined. Do not overmix.
Brush some butter or spray nonstick cooking spray on hot griddle, and spoon batter into desired sized pancakes (or molds). Cook until bubbles form in batter, the edges are dry and underside is lightly brown, about 5 minutes, then flip over and cook other side 1 to 2 minutes more. Repeat as needed until all batter is used.

As pancakes cook, make cream cheese glaze: 
In small bowl, use fork to stir together cream cheese, powdered sugar, and vanilla extract. Add a little milk if needed to make glaze that has thin enough consistency to drizzle.

To serve, stack three pancakes on a plate and drizzle cream cheese glaze over them.

2. BISQUICK RED VELVET PANCAKES WITH CREAM CHEESE GLAZE
(recipe from Betty Crocker)

Cream Cheese Topping
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
3 Tbsp milk
2 cups powdered sugar

Pancakes 
2 cups Original Bisquick™ mix
1 Tbsp granulated sugar
1 Tbsp unsweetened cocoa
1 cup milk
1 to 1 1/2 tsp red paste food color**
2 eggs
Powdered sugar, if desired

Directions 
In medium bowl, beat cream cheese, butter, and 3 Tbsp milk with electric mixer on low speed until smooth. Gradually beat in 2 cups powdered sugar, 1 cup at a time, on low speed until topping is smooth. Cover; set aside.
In large bowl, stir all pancake ingredients except powdered sugar with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary or spray with cooking spray before heating.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
Spoon cream cheese topping into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle topping over pancakes. Sprinkle with powdered sugar.

** Do not use liquid red food coloring in this recipe**

BLUEBERRY CHOCOLATE CHIP PANCAKES: National Blueberry Pancake Day

Today is National Blueberry Pancake Day, and it's not too late to celebrate. I'm all for Breakfast for Dinner! There are actually two or three pancake days on the calendar! For today's holiday, here are two recipes for Chocolate Chip Blueberry Pancakes.

This first recipe is from Cooking Light for Perfect Buttermilk pancakes. I've added blueberries and chocolate chips to enrich the recipe! I usually have fresh blueberries around, but if you don't, you can always use frozen blueberries. Trader Joe's has wild blueberries that are great in this recipe. Don't thaw before adding the frozen blueberries. The second recipe is for Blueberry Chocolate Chip Pancakes in a Jar.

1. BUTTERMILK BLUEBERRY CHOCOLATE CHIP PANCAKES

Ingredients
1 cup all purpose flour
2 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 tsp vegetable oil
1 large egg, lightly beaten
Cooking spray
1 cup Blueberries (less if frozen.. I like the frozen Wild Blueberries from Trader Joe's. Don't thaw, if frozen)
1/2 cup Dark Chocolate chips

Directions
Spoon flour into dry measuring cup; level with knife.
Combine flour and next 4 ingredients (flour through salt) in large bowl, and make well in center of mixture. Combine buttermilk, oil, and egg; add to flour mixture, stirring until smooth. Fold in Blueberries and Chocolate Chips.
Spoon about 1/4 cup batter onto hot nonstick griddle or nonstick skillet coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges seem cooked.

So that's what you'll make fresh today! I'm also fond of Mixes in a Jar. Here's a quick and delicious recipe for Chocolate Blueberry Pancakes in a Jar. You can have this on hand or to give as a gift. One helpful hint, when making mixes in a jar, really pack the ingredients in. Use a tamper, if you have one...except for the dried blueberries and chocolate chips that you'll put on top.

2. BLUEBERRY CHOCOLATE CHIP PANCAKES IN A JAR

Ingredients:
2 cups all purpose flour
1/3 cup granulated sugar
4 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup dried Blueberries
2/3 cup mini dark chocolate chips

Layer flour, then sugar, then baking powder mixed with baking soda and salt in 1-quart wide-mouth jar.
Add blueberries, then chocolate chips.
Seal Jar.
Cover jar with burlap or other fabric and tie with raffia or a bow.

Attach gift tag with the following instructions:

Chocolate Blueberry Pancakes 
Makes 25 pancakes
2 eggs, beaten
1/4 cup unsalted butter, melted
1-1/2 to 2 cups whole milk (or buttermilk)

Mix eggs and melted butter in large bowl. Add contents of jar. Stir until well blended.
Add 1-1/2 cups milk. Stir until dry ingredients are moistened.
Heat griddle or skillet.
Pour batter onto hot griddle 1/4 cup at a time.
Cook pancakes until golden on both sides.

SHROVE TUESDAY, FAT TUESDAY, PANCAKE DAY & 2 Chocolate Chip Pancake Recipes

Today is Shrove Tuesday aka Pancake Day! Shrove Tuesday marks the last day before Lent which is traditionally a period of abstinence, associated with clearing your cupboards of goods such as sugar, fats, and eggs. It's commonly known as Pancake Day because it represents a good opportunity to use such ingredients ahead of the fasting period.  

Pancake Day takes place 47 days before Easter Sunday. Because the date of Easter Sunday is tied to the cycle of the moon, Pancake Day can occur anytime between February 3 and March 9. In many countries, Shove Tuesday is celebrated with pancake throwing contests and races. Not so much in the U.S.

1 tsp white vinegar
2 tsp red liquid food coloring
3/4 cup dark chocolate chips
Extra butter or nonstick cooking spray

Cream Cheese Glaze:
4 ounces light cream cheese, softened
1 cup powdered sugar, sifted
1 tsp Madagascar vanilla extract
1 Tbsp milk

Directions
Preheat griddle to medium-high heat. In bowl, whisk to combine flour, sugar, baking powder, cocoa powder, and salt. Set aside.
In separate bowl, whisk eggs, then add milk, buttermilk, butter, vanilla extract, white vinegar, and food coloring, whisking to combine completely. Stir dry ingredients into wet ingredients, stirring just until combined. Do not overmix.
Brush some butter or spray nonstick cooking spray on hot griddle, and spoon batter into desired sized pancakes (or molds). Cook until bubbles form in batter, the edges are dry and underside is lightly brown, about 5 minutes, then flip over and cook other side 1 to 2 minutes more. Repeat as needed until all batter is used.

As pancakes cook, make cream cheese glaze: 
In small bowl, use fork to stir together cream cheese, powdered sugar, and vanilla extract. Add a little milk if needed to make glaze that has thin enough consistency to drizzle.

To serve, stack three pancakes on a plate and drizzle cream cheese glaze over them.

2. BISQUICK RED VELVET PANCAKES WITH CREAM CHEESE GLAZE
(recipe from Betty Crocker)


Cream Cheese Topping
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
3 Tbsp milk
2 cups powdered sugar

Pancakes 
2 cups Original Bisquick™ mix
1 Tbsp granulated sugar
1 Tbsp unsweetened cocoa
1 cup milk
1 to 1 1/2 tsp red paste food color**
2 eggs
Powdered sugar, if desired

Directions 
In medium bowl, beat cream cheese, butter, and 3 Tbsp milk with electric mixer on low speed until smooth. Gradually beat in 2 cups powdered sugar, 1 cup at a time, on low speed until topping is smooth. Cover; set aside.
In large bowl, stir all pancake ingredients except powdered sugar with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary or spray with cooking spray before heating.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
Spoon cream cheese topping into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle topping over pancakes. Sprinkle with powdered sugar.

** Do not use liquid red food coloring in this recipe**

BLUEBERRY CHOCOLATE CHIP PANCAKES: 2 Recipes for National Blueberry Pancake Day

Yesterday was National Blueberry Pancake Day, and it's not too late to celebrate. There are actually two or three pancake days on the calendar! So for the holiday here are two ways to celebrate:  Chocolate Chip Blueberry Pancakes--two ways.

This first recipe is from Cooking Light for Perfect Buttermilk pancakes. I've added blueberries and chocolate to tweak the recipe! I usually have fresh blueberries around, but if you don't, you can use frozen blueberries. Trader Joe's has wild blueberries that go great in this recipe. Don't thaw before adding the frozen blueberries. The second recipe is for Blueberry Chocolate Chip Pancakes in a Jar.

1. BUTTERMILK BLUEBERRY CHOCOLATE CHIP PANCAKES

Ingredients
1 cup all purpose flour
2 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup low-fat buttermilk
1 tsp vegetable oil
1 large egg, lightly beaten
Cooking spray
1 cup Blueberries (less if frozen.. I like the frozen Wild Blueberries from Trader Joe's. don't thaw, if frozen)
1/2 cup Dark Chocolate chips

Directions
Spoon flour into dry measuring cup; level with knife.
Combine flour and next 4 ingredients (flour through salt) in large bowl, and make well in center of mixture. Combine buttermilk, oil, and egg; add to flour mixture, stirring until smooth. Fold in Blueberries and Chocolate Chips.
Spoon about 1/4 cup batter onto hot nonstick griddle or nonstick skillet coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges seem cooked.

So that's what you'll make fresh today! I'm also fond of Mixes in a Jar. Here's a quick and delicious recipe for Chocolate Blueberry Pancakes in a Jar. You can have this on hand or to give as a gift. One helpful hint, when making mixes in a jar, really pack the ingredients in. Use a tamper, if you have one...except for the dried blueberries and chocolate that you'll put on top.

2. BLUEBERRY CHOCOLATE CHIP PANCAKES IN A JAR

Ingredients:
2 cups all purpose flour
1/3 cup granulated sugar
4 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup dried Blueberries
2/3 cup mini dark chocolate chips

Layer flour, then sugar, then baking powder mixed with baking soda and salt in 1-quart wide-mouth jar.
Add blueberries, then chocolate chips.
Seal Jar.
Cover jar with burlap or other fabric and tie with raffia or a bow.

Attach gift tag with the following instructions:

Chocolate Blueberry Pancakes 
Makes 25 pancakes
2 eggs, beaten
1/4 cup unsalted butter, melted
1-1/2 to 2 cups whole milk (or buttermilk)

Mix eggs and melted butter in large bowl. Add contents of jar. Stir until well blended.
Add 1-1/2 cups milk. Stir until dry ingredients are moistened.
Heat griddle or skillet.
Pour batter onto hot griddle 1/4 cup at a time.
Cook pancakes until golden on both sides.

Chocolate Chip Bacon Pancakes: International Bacon Day

Today is International Bacon Day! And, since it's a holiday weekend, what could be more fun to make than Chocolate Chip Bacon Pancakes.

Vosges
has a great pancake batter mix that's simple to use and that I think is really delicious. It's a riff on their Mo Bacon Bar that I really like. There are several ways you can make Chocolate Chip Bacon Pancakes. You can buy Vosges’s Bacon Chocolate Chip buttermilk pancake mix that is dotted with chunks of Mo’s Bacon Bar. Or, you buy the candy bar directly and chop it up and put it into your own pancake recipe.

Mo's Bacon Chocolate Chip Pancake Mix combines the Mo's Bacon Bar with fluffy flapjacks. The buttermilk pancakes are spotted with chunks of their Mo's Bacon Bar Candy Bar, that combines applewood smoked bacon and Alder sea salt with deep milk chocolate. The instructions give two methods for incorporating the bacon chocolate chunks: you can either sprinkle them on top of each pancake before flipping them in the pan, or layer them between the finished pancakes before serving. Layering the chunks between the pancakes worked best for me. And, here's a heads-up. The batter itself is excellent.

Want to make your own Chocolate Chip Bacon Pancakes on your own? First make some chocolate covered bacon and consider that your chocolate chips. Cook and cool your bacon, then crumble it. Use a good smoked bacon, not bacon from a package. Melt semi-sweet chocolate in a double boiler and mix the bacon in, spread it on a cookie sheet to cool, then use it. Then use your favorite pancake recipe.

Or, you can use both chopped bacon and chocolate chips. The main difference between these two types is the mixing. The bacon should be mixed into the buttermilk batter and the chocolate chips should be dropped on top of the pancake while it is cooking on one side. Otherwise the chocolate might leak onto the grill. Very messy. Also the chocolate might burn if it is left on the heat. The worst that can happen to the bacon is that it will become more crisp, and that's great! Following the Mo's Bacon Pancake advise, you can always add the chocolate chips when you stack, but for this recipe, you can always include them right after you flip.

Buttermilk Pancakes with Bacon and Chocolate Chips

Ingredients
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
1 cup buttermilk
1 tsp melted butter
1 tsp vanilla
about 1/2 cup smoked good quality bacon, cooked until crisp, coarsely chopped
1/2 cup chocolate chips (I like dark Ghirardelli or Guittard)

Directions
Mix together flour, baking powder, baking soda, and salt.
In separate bowl, whisk together egg, buttermilk, melted butter, and vanilla. Pour wet ingredients into flour mixture along with the bacon and stir until combined but a bit lumpy to avoid over mixing.
Heat a lightly greased skillet over medium-high heat. When a drop of water sizzles on the surface, drop heaping spoonfuls of batter onto the skillet, making 3-inch pancakes. Cook until golden brown on each side, add chocolate chips after flipping the first and only time --or when stacking.

So you have lots of options:

1) Buy the delicious Mo's Bacon Chocolate Chip Pancake Mix
2) Make your own Pancakes and chop up a Mo's Bacon Bar and add it to the batter or the 1/2 cooked pancakes or when you stack.
3) Make your own chocolate covered bacon and add to batter or stacked pancakes
4) Make your own pancakes with cooked chopped bacon and add chocolate chips

Whatever you choose, you're going to have some great pancakes to celebrate National Bacon Day.
