STARBUCKS COPY-CAT OREO FRAPPUCCINO: National Frappé Day

Today is Frappé Day. Most of us have a frappé of one kind or another in our lifetime.

A frappé is an iced beverage that has been shaken, blended, or beaten to produce a foamy cold blended drink, often with whipped cream and toppings. Ice can be added before or after beating the coffee and adding other ingredients such as sugar, milk, vanilla, and sweet sauces. It really depends on what you are shaking or blending it in - a shaker, frappe maker, or blender. According to one source, an ice-crushing blender is better than a shaker for blending a frappe. Traditionally frappés are made with coffee, but you can make other frappé drinks with tea, juice, or hot chocolate.

The word Frappé comes from the French word Frapper - which means to slap, knock, or beat. Cold coffee drinks named "café frappé" go back to the 19th century.

Which leads me to the Italian term: Frappuccino. In the last few years, I've had numerous types of Frappuccinos at Starbucks, most with chocolate. Here's a recipe for Starbucks' Oreo Frappuccino I found on StarbucksSecretMenu.net There are several 'Starbucks" secret menu recipes that you can order at Starbucks (you may need to know the recipe), but you can also make this at home. As always use the very best chocolate.

SALTED CARAMEL HOT CHOCOLATE: National Hot Chocolate Day

I love a Salted Caramel Hot Chocolate at Starbucks, but it's not always an easy drink to find. It's 'seasonal'. So I went on line a few years ago to find the perfect copycat recipe. I found a great one at Bright Green Door. As always, I made a few adjustments. Here's a recipe for Salted Caramel Hot Chocolate that's perfect for winter weather and today's National Hot Chocolate Holiday. And, you'll save $5 by not going to Starbucks--and stay out of the cold and the snow! Also, you can make this Salted Caramel Hot Chocolate any time of the year!

For this recipe, you can use what ever hot chocolate recipe you like. Make the hot chocolate/cocoa in a pot on the stove. When finished, add about 2 Tbsp Caramel Sauce (I use Recchiuti) and 2 Tbsp English Toffee or Hazelnut Syrup (or Toffee Nut from Starbucks-sometimes they'll sell it to you) right into the pot and stir. Pour into your mug and top with real whipped cream (or Redi-Whip), Caramel Drizzle, and sprinkle of Sea Salt. This recipe makes enough for 4 regular size mugs or 2 "Grandes.'

You can also make a variation on this recipe to make a Salted Caramel Mocha.

Salted Caramel Hot Chocolate

Ingredients:
4 cups whole milk
1/2 cup sugar
1/4 cup Dark Cocoa (I like Ghiradelli)
1/3 cup water
1 tsp Madagascar Vanilla
2 tsp Sea Salt
2 Tbsp Hazelnut Syrup (or Toffee Nut from Starbucks)
2 Tbsp Caramel Sauce, Caramel Drizzle
Whipped Cream (or Reddi Whip)

Directions
Mix Sugar, Cocoa, and 1 tsp Salt. Add water and boil for 1 minute. Add milk and heat until warm. Mix in Vanilla, Hazelnut Syrup, and Caramel Sauce. Pour into coffee cup and top with whipped cream, caramel drizzle, and sea salt.

Chocolate Cinnamon Bread: National Cinnamon Day

Once again my mystery and chocolate worlds collide. Today is National Cinnamon Day! I love cinnamon, so I was a disturbed to hear about the cinnamon controversy in Denmark that attempted to limit the use and ingestion of cinnamon. The Cinnamon controversy actually led to a great discussion in our mystery book group. There was a segue. Too much cinnamon can kill you! But how? Cinnamon can work as a blood thinner. The EU tried to stop the amount of cinnamon in Danish cinnamon baking to limit human consumption. Read more:  The Danish Cinnamon controversy and HERE.

But back to Chocolate and Cinnamon. If you frequent Starbucks, you may remember the chocolate cinnamon bread, a seasonal baked good. Not sure why it's seasonal, but I haven't seen it in awhile. So I went searching for the recipe. Lo and behold, I found the recipe on the Starbucks website. Yay! So you can make your own. Warning, this really isn't a quick bread. It's more like a cake, but that's o.k. with me. I've adapted the recipe a little. And, remember, always use the best cocoa and cinnamon! Question about Dutch processed cocoa? Go HERE.

CHOCOLATE CINNAMON BREAD
(makes two loaves)

Ingredients

Chocolate Batter
3 sticks sweet butter, room temperature
3 cups granulated sugar
5 large eggs, room temperature
2 cups flour
1 1/2 cup Dutch processed cocoa
1 Tbsp ground cinnamon
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk
1/4 cup water
1 tsp Madagascar vanilla

Cocoa Spice Topping
1/4 cup granulated sugar
3/4 tsp cinnamon
1/2 tsp Dutch processed cocoa
Pinch of ground ginger
Pinch of ground cloves
1/4 cup decorating (sparkle) sugar (for decorating)

Preheat oven to 350 F. Grease two 9 x 5 x 3 loaf pans and line bottom with parchment paper.

Chocolate Batter:
1. Cream together butter and sugar in electric mixer until light and creamy, around 5 minutes. Add eggs, one at a time, mixing until each is fully incorporated. Scrape down sides of bowl a few times to get them fully mixed in.
2. In a medium bowl, sift together flour, cocoa, cinnamon, salt, baking powder and baking soda. In separate bowl, whisk together buttermilk, water and vanilla. With mixer on low speed, begin adding contents of each bowl to butter mixture, alternating between the two until mixture is fully blended, but not overly whipped. Split batter between the two pans. If batter is slightly uneven, you can lightly shake the pan to even out the tops.

Make your topping.
Combine sugar, cinnamon, cocoa, ginger and cloves. Then evenly layer decorating sugar over batter, followed by spice mixture.

Bake for 45-50 minutes, or until a toothpick inserted in center comes out clean.
