CHOCOLATE DEPRESSION CAKE aka Wacky Cake, Crazy Cake, Vinegar Cake: National Chocolate Cake Day!

This cake is known as Depression CakeCrazy Cake, and Wacky Cake, and Vinegar Cake. It seems very appropriate for this past week, and I imagine I'll be making it a lot in the depressing days to come. Since today is Chocolate Cake Day, we all could use some chocolate! This moist Chocolate Cake is simple to make and perfect for these crazy, wacky, depressing times

During the Depression and WWII there was a shortage of eggs and butter and milk, so this cake found its way into the ovens and hearts of many. Elevate it for 2025 with chocolate butter cream frosting or whipped cream and strawberries. But this cake doesn't really need it. It's delicious the way it is! It's great to make for a pot-luck or for a last minute dessert or for your family.

CHOCOLATE DEPRESSION CAKE aka Wacky Cake, Crazy Cake, Vinegar Cake

Ingredients
2 cups sugar
3 cups flour 
1/4 tsp salt
2 tsp baking soda
10 Tbsp unsweetened DARK cocoa powder
2 Tbsp vinegar  (I like Cider Vinegar, but white distilled is fine, too)
2 tsp pure vanilla
3/4 cup vegetable oil (try sunflower oil, if you have it, but any will do)
2 cups cold water

Directions
Pre-heat oven to 350. Grease and flour 13 x 9 baking pan.
Sift dry ingredients into large mixing bowl. Add remaining ingredients. Mix with large spoon until smooth.
Pour into prepared greased and floured pan.
Bake at 350° for 30 minutes.

Optional: It doesn't need it, but you can sprinkle with powdered sugar, frost with ganache or buttercream, or top with whipped cream and strawberries!

HERSHEY'S 'PERFECTLY CHOCOLATE' CHOCOLATE CAKE

Today is National Chocolate Cake Day, and what better chocolate cake to make than Hershey's "Perfectly Chocolate" Chocolate Cake? It always works, and it's rich and chocolatey!

This "Perfectly Chocolate" Chocolate Cake  lends itself to so many variations. See below!


HERSHEY'S 'PERFECTLY CHOCOLATE' CHOCOLATE CAKE

Ingredients
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

Directions
Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.

"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING 

Ingredients
1/2 cup unsalted butter
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 tsp pure vanilla extract

Directions
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

VARIATIONS on HERSHEY'S 'PERFECTLY CHOCOLATE" CHOCOLATE CAKE 

ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.

THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.

BUNDT CAKE: Grease and flour 12-cup fluted tube pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.

CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.

HERSHEY'S 'PERFECTLY CHOCOLATE' CHOCOLATE CAKE

Ingredients

3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 tsp salt

MARSHMALLOW FUDGE CAKE: National Chocolate Cake Day!

Today is National Chocolate Cake Day! What are you making? Here's an oldie but goody 1925 recipe from Campfire Marshmallows for Campfire Marshmallow Fudge Cake.

 

Campfire Marshmallow Fudge Cake 

Ingredients
2 tablespoons butter
2 cups sugar
4 squares bitter chocolate, melted
2 eggs
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
Milk
45 Campfire marshmallows

Directions
Cream butter and sugar, add melted chocolate. Put yolks of eggs in a cup, and add milk to make 1-1/2 cups. Add milk and flour alternatively. Beat whites of eggs and fold in. Bake in 3 square pans lined with oiled paper.
While cake is baking, cut 45 marshmallows in 4 pieces each (15 marshmallows for each layer).
Remove cakes from tins as soon as they come from the oven. Place marshmallows immediately between and on top of the cakes. The heat of the cakes will cause them to melt slightly and adhere to the cake. Cover with fudge frosting (recipe below).
Fudge frosting recipe for Campfire Marshmallow Cake
Ingredients
2 squares chocolate
1 cup sugar
1 tablespoon flour
1/3 cup milk
Few grains salt
2 tablespoons butter
1/4 teaspoon vanilla

Directions
Melt chocolate over hot water, add sugar, flour, and salt mixed together, and when smooth, add milk slowly. Cook until it spins a thread one inch long.
Add butter and vanilla; cool beat until of the right consistency to spread without running, and pour over the marshmallows.
If frosting becomes too thick, set the pan of frosting over hot water and stir until frosting softens then pour over the cake.

January 27: Chocolate Cake Day

This may be the official Chocolate Cake Day, but chocolate cake day is any day for me. I've blogged recipes for flourless chocolate cake, red velvet cake, double chocolate cake, bittersweet chocolate bundt cake, brownie chocolate cake, 5 minute chocolate cake in a mug and lots of other delicious chocolate cake recipes. My company TeamBuilding Unlimited also has a Chocolate TeamBuilding event called Have Your Cake and Eat it, Too! in which participants cut up and stack and decorate chocolate cakes to reflect their company and team. Those large chocolate layers come from a local bakery.

Here's a fabulous recipe for Double Chocolate Layer Cake adapted from Gourmet Magazine (March 1999). The recipe below is for 2-10" layers, but you can do 3-7" layers. Remember to have the ganache cooled before icing. As with all chocolate recipes, use the very best chocolate, preferably organic, fair-trade.

Double Chocolate Layer Cake

For cake layers
3 ounces fine-quality semisweet chocolate such as Callebaut
1 1/2 cups hot brewed coffee
3 cups sugar
2 1/2 cups all-purpose flour
1 1/2 cups unsweetened cocoa powder (not Dutch process)
2 teaspoons baking soda
3/4 teaspoon baking powder
1 1/4 teaspoons salt
3 large eggs
3/4 cup vegetable oil
1 1/2 cups well-shaken buttermilk
3/4 teaspoon vanilla

For ganache frosting
1 pound fine-quality semisweet chocolate such as Callebaut
1 cup heavy cream
2 tablespoons sugar
2 tablespoons light corn syrup
1/4 cup unsalted butter

Special equipment
two 10- by 2-inch round cake pans

Make cake layers:
Preheat oven to 300°F. and grease pans. Line bottoms with rounds of wax paper and grease paper.

Finely chop chocolate and in a bowl combine with hot coffee. Let mixture stand, stirring occasionally, until chocolate is melted and mixture is smooth.

Into a large bowl sift together sugar, flour, cocoa powder, baking soda, baking powder, and salt. In another large bowl with an electric mixer beat eggs until thickened slightly and lemon colored (about 3 minutes with a standing mixer or 5 minutes with a hand-held mixer). Slowly add oil, buttermilk, vanilla, and melted chocolate mixture to eggs, beating until combined well. Add sugar mixture and beat on medium speed until just combined well. Divide batter between pans and bake in middle of oven until a tester inserted in center comes out clean, 1 hour to 1 hour and 10 minutes.

Cool layers completely in pans on racks. Run a thin knife around edges of pans and invert layers onto racks. Carefully remove wax paper and cool layers completely. Cake layers may be made 1 day ahead and kept, wrapped well in plastic wrap, at room temperature.

Make frosting:
Finely chop chocolate. In a 1 1/2- to 2-quart saucepan bring cream, sugar, and corn syrup to a boil over moderately low heat, whisking until sugar is dissolved. Remove pan from heat and add chocolate, whisking until chocolate is melted. Cut butter into pieces and add to frosting, whisking until smooth.

Transfer frosting to a bowl and cool, stirring occasionally, until spreadable (depending on chocolate used, it may be necessary to chill frosting to spreadable consistency).

Spread frosting between cake layers and over top and sides. Cake keeps, covered and chilled, 3 days. Bring cake to room temperature before serving.
