SOUR CREAM CHOCOLATE CHUNK COFFEE CAKE: National Coffee Cake Day

I am a sucker when it comes to Sour Cream Coffee Cake, so I was thrilled to find this recipe for Sour Cream Chocolate Chunk Coffee Cake on the Scharffen Berger website. I know I've posted other Sour Cream Coffee Cake recipes, but I love this one, especially for the Chocolate Streusel Topping! I use a Bundt Pan, so it looks great, too! You can use whatever chocolate you like, but since the recipe is from Scharffen Berger, I list it as the chocolate.

SOUR CREAM CHOCOLATE CHUNK COFFEE CAKE

Ingredients 

For Batter 
16 Tbsp unsalted butter
1-1/2 cups sugar
3 eggs
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup sour cream
1 tsp vanilla
5 ounces SCHARFFEN BERGER 62% Cacao Semisweet Chocolate, chopped into 1/4-inch bits, or a scant cup of SCHRAFFEN BERGER 62% Cacao Semisweet Chocolate Baking Chunks

For Streusel Topping 
 2 ounces SCHARFFEN BERGER 62% Cacao Semisweet Chocolate
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon cinnamon
1 cup toasted walnuts, chopped

Directions
Preheat oven to 350 degrees F.
Grease Bundt pan generously and dust with flour. Beat butter and sugar until light and fluffy in electric mixer (using paddle attachment if using electric mixer). Add eggs, one at a time. Add vanilla extract.
Sift flour, baking soda, baking powder and salt. Gradually add flour mixture alternately with sour cream. Fold in chocolate pieces. Set aside.

To Make Streusel 
Melt 2 ounces of chocolate in top of double boiler or in bowl placed over pan of simmering water, stirring frequently until melted. Remove bowl from heat and mix in toasted walnuts until coated. Mix in sugars and cinnamon.

Pour half batter into prepared pan. Top with half streusel mixture. Cover with remaining batter and top with the remaining streusel mixture.
Bake for 1 hour or until a toothpick inserted in the center comes out dry.
Cool on a cake rack.
Unmold and serve warm or at room temperature.

CHOCOLATE CARAMEL POKE CAKE: National Caramel Day

I love Chocolate and Caramel and since today is National Caramel Day, here's an easy recipe for Chocolate Caramel Poke Cake adapted from my good friend Elsie the Cow!

There are all kinds of Poke Cake recipes, but basically a Poke Cake is a cake that's been poked with the bottom of a wooden spoon as soon as it's hot out of the oven. Then liquid--in this case caramel sauce--is poured over it, and the cake absorbs it in varying areas. Yum! O.K. this is a real retro recipe, but if you make it, you're going to love it!

Chocolate Caramel Poke Cake

Ingredients 
1 box chocolate cake mix (Duncan Hines)
1-14 oz. can of Eagle Brand Sweetened Condensed Milk
1-14 oz. jar of caramel topping (Rechiutti Caramel sauce)
Container of Cool Whip  (or update this recipe with real whipped cream)
Bag of Toffee Bits or crumbled Heath Bars

Directions
Mix Eagle Brand sweetened condensed milk and caramel together (warm up, if you need to).
Prepare cake as instructed on box. Bake in rectangular pan.
Remove cake from oven when done and poke holes in top of cake (I use the bottom of a wooden spoon) and pour caramel mixture evenly over cake while cake is still hot.
Refrigerate for at least two hours.
Spread with Cool Whip (or whipped cream)
Sprinkle with Toffee Bits or crumbled Heath Bars.

PEEPS Chocolate Sunflower Cake

With Easter fast approaching, I'm sure you've gotten in your supply of Easter/Spring PEEPS. I certainly have. I love to use Peeps in desserts. I usually check out the Peeps website for fun Peeps Recipes. Here's an extremely easy Chocolate Sunflower Cake recipe. Perfect for Easter or Spring celebrations.

The recipe below uses shortcuts (boxed mixes and ready-made icing), but you can use any favorite from scratch recipes.

PEEPS CHOCOLATE SUNFLOWER CAKE

Ingredients
3 packages (5 ct. each) Peeps Yellow Marshmallow Chicks
1 standard box cake mix – see package for additional ingredients
2 containers of chocolate frosting
1 bag chocolate chips
1 tube green decorating icing with piping tips (optional)

Directions
Prepare cake mix according to package directions for making two 8″ round cakes.
Cut thin slice off the top of each cake to make them level.
Place one round cake on a plate or cake stand and top with chocolate frosting. Place  second round cake on top of frosting. Frost entire cake with chocolate frosting.
Place Peeps Yellow Marshmallow Chicks on top of cake around the diameter with their tails facing out. Place chocolate chips on top of cake in a circular pattern.
If desired, use a leaf-shaped tip to pipe green decorating icing at base of cake.

OLIVE OIL CHOCOLATE MOUSSE: National Chocolate Mousse Day

Today is National Chocolate Mousse Day. I often substitute olive oil for cream or butter in recipes. Also, because many DyingforChocolate readers keep kosher, olive oil dessert recipes are great to serve with meat meals. And, then we come to Passover. What to serve at the Seder or any night during Passover? Here's a new take on an old recipe.

This recipe for Olive Oil Chocolate Mousse is relatively simple, and absolutely delicious. It comes from Chef Tony Maws at Craigie on Main (Cambridge, MA). The original recipe calls for brandy, but I use Kahlua. Try whatever liqueur you'd like. Make sure your olive oil is fresh. They're nothing worse than making a terrific dessert ruined because of rancid olive oil. If you plan on going or having a Passover Seder, you may want to save this Olive Oil Chocolate Mousse recipe for the holiday, but I'll bet you'll end up making it all year round.

OLIVE OIL CHOCOLATE MOUSSE

Ingredients
11 ounces chocolate
9 egg yolks
1/2 cup sugar
1/2 cup extra virgin olive oil
2 Tbsp Kahlua
salt
9 egg whites
1/4 cup sugar

Directions
Finely chop the chocolate, and then melt over simmering water in a double boiler.
While the chocolate is melting, whisk together the yolks and ½ cup sugar until the mixture is thick in texture and a pale, lemony yellow.
Gently fold the warm (not hot--the eggs would curdle) chocolate into the yolks.
Stir in the Kahlua, olive oil and a pinch of salt.
In another bowl, whisk the whites until they are frothy and then whisk in the sugar. Keep whisking until they are at medium peaks. Fold the whipped egg whites into the chocolate, 1/2 at a time.
Pour into glasses and allow mousse to set for at least four hours before serving.
