CHOCOLATE CHOCOLATE CHIP MACADAMIA NUT COOKIES: National Macadamia Nut Day

Today is National Macadamia Nut Day, and what could be more perfect that Chocolate Chocolate Chip Macadamia Nut Cookies. These cookies are chewy, and since the nuts are slightly salted, you'll really taste the complementary chocolate! I use two kinds of chocolate chips, but you also use white chocolate chips. Macadamia Nuts remind me of Hawaii, so if you want to make these cookies more 'Hawaiian," add some dried coconut to the batter, too. Yum!

Chocolate Chocolate Chip Macadamia Nut Cookies 

Ingredients
1/2 cup unsalted butter, softened
2/3 cup brown sugar
1/3 cup white sugar
1 egg
1 1/2 tsp pure vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp espresso powder
1 cup + 2 Tbsp all purpose flour
1/3 cup dark chocolate cocoa powder
1/2 cup roasted and salted macadamia nuts, chopped
1/2 cup dark chocolate chips
1/2 cup milk chocolate chips
Dried Coconut (optional)

Directions
Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
In large bowl, beat butter (with hand mixer or standing mixer) until light and fluffy. Add in brown sugar and granulated. Beat until well combined.
Add in egg and vanilla extract. Beat until combined. Add in salt, espresso powder, and baking soda; mix until combined.
In separate bowl, mix flour and cocoa powder together. Slowly incorporate dry ingredients into wet ingredients, mixing until combined.
Add in macadamia nuts, and chocolate chips (and dried coconut, if you'd like). Mix until combined.
With medium cookie scoop, scoop dough and spread evenly on cookie sheets, about 2 inches apart. Bake 15-16 minutes.
These cookies are fudgy.

White Chocolate Day: White chocolate Brownies with Macadamias

September 22 is White Chocolate Day. White chocolate is really good.. it depends on the quality of the white chocolate, as in any chocolate. I found this recipe on CDKitchen for Insane White Chocolate Brownies with Macadamias. I haven't made this yet, but I have had other recipes for white chocolate. This combination looks divine. What a great way to celebrate the day!

I prefer Askinosie White Chocolate. You'll really taste the difference. Their White Chocolate Bar is 34% Cocoa Butter made from Davao Philippine beans. Main ingredient is their white chocolate is the non-deodorized cocoa butter which is then pressed in their factory. They combine this with goat's milk powder and organic cane juice and then craft it for days in their 85-year old German melanguer. They are one of the only single origin white chocolates in the world!

Insane White Chocolate Brownies with Macadamias

Ingredients:
1 cup unsalted butter
10 ounces white chocolate, broken into 1-in. pieces
1 cup sugar
4 teaspoons vanilla
4 eggs
2 cups flour
1 cup macadamia nuts, coarsely chopped (get the freshest*)

Directions:

After preheating oven to 325 degrees, line bottom and sides of a 13"x 9"x 2" pan with aluminum foil, and lightly grease.

Coarsely chop the butter into Tablespoon-size chunks and place along with white chocolate pieces in double boiler. Cook slowly over low heat, stirring often, until mixture is smooth and without any chocolate lumps.

Once you've removed from the heat, stir in the sugar and vanilla; blend.

Beat eggs with a fork and add to chocolate mix and blend completely. Add flour and nuts, stir until just combined. Do not overmix.

Place batter in the greased pan and bake 30-35 minutes or until toothpick stuck in the center comes out clean.
