GOOBERS: National Chocolate Covered Nuts Day


Today is National Chocolate Covered Nuts Day. I don't think I've ever met a chocolate covered nut I haven't liked, especially chocolate covered macadamia nuts. However, I got to thinking about the whole chocolate covered nut thing, and I realized that my love of chocolate covered nuts goes back to Goobers at the Movies! I always bought Goobers or Raisinets from the concession stand. My favorites. Goobers, though, were the best: fresh roasted peanuts covered in milk chocolate. Goobers are still made, but I miss the original box, the smell of the box, as much as the product. I just love the crunch of these small covered peanuts. The candy used to be made of just peanuts and chocolate. 

Goobers were introduced in the United States in 1925 by the Blumenthal Chocolate Company. Nestlé acquired the brand in 1984. A large number of other chocolate covered peanut brands exist, but Goobers was the original, at least for me. Peanut M&M's, came much later, and when they were introduced, I liked them, too, but not at the movies. I was a traditionalist. Peanut M&M's are nothing like Goobers. Peanut M&M's have larger peanuts, and a hardy candy shell covers the chocolate and the peanut. Goobers are inconsistent in size which I consider part of their charm and enjoyment. Often you'll just get chocolate without the nut. Occasionally you'll even get a raisinet. Whether or not that's a quality control issue, I don't care. It was always a surprise and a good one.

I'd like to say I've moved on from Goobers, but I really haven't. Oh yes, I love dark chocolate more than milk, and, especially with chocolate covered nuts. Also, the quality of the chocolate as well as the freshness of the nut is very important. As a Judge at this year's San Francisco International Chocolate Salon, I'll be taking all this into consideration when I judge the toffees and chocolate covered nut truffles, but I'll always have a place in my heart for Goobers.

BRANDY ALEXANDER PIE: National Brandy Alexander Day


Today
is National Brandy Alexander Day. A Brandy Alexander is a sweet, brandy-based cocktail that became very popular in the early 20th century. It was supposedly created for the wedding of Mary, Princess Royal and Countess of Harewood and Viscount Lascelles, in London, in 1922The Brandy Alexander is based on an earlier, gin-based cocktail called simply an “Alexander.”

From the Brandyalexander website comes the history that Movie Stars have consumed Brandy Alexanders on sets of movies and TV shows and during celebratory events throughout  the last century.  Among the famous drink calls are by Jack Lemon in Days of Wine and Roses. In one scene Lee Remick receives a Brandy Alexander and is impressed with the chocolate flavor, yet smooth taste of the drink. In the pilot of the Mary Tyler Moore show, Mary asks for a Brandy Alexander when asked if she would like a drink at her job interview, and Peggy on a blind date in an episode of Mad Men, Indian Summer orders a Brandy Alexander

Brandy Alexander Pie
from the New York Times Magazine, January 18, 1970

Ingredients
1 envelope unflavored gelatin
1/2 cup cold water
2/3 cup sugar
1/8 teaspoon salt
3 eggs, separated
1/4 cup cognac
1/4 cup creme de cacao
2 cups heavy cream, whipped
Pie Crust: I substitute a 10 inch chocolate wafer crust for the graham cracker crust in the original recipe, but that's your choice
Chocolate curls for garnish

Directions
1. Sprinkle gelatin over cold water in saucepan. Add 1/3 cup of sugar, salt and egg yolks. Stir to blend.
2. Heat over low heat while stirring until gelatin dissolves and mixture thickens. Do not boil.
3. Remove from heat, and stir in cognac and creme de cacao. Chill until mixture starts to mound slightly.
4. Beat egg whites until stiff. Gradually beat in remaining sugar and fold into thickened mixture. Fold in 1 cup of whipped cream. Turn into crust. Chill several hours or over night.
5. Garnish with remaining cream and chocolate curls.

There are many rumors about its origins. Some sources say it was created at the time of the London wedding of Princess Mary and Viscount Lascelles in 1922. Drama critic and Algonquin Round Table member Alexander Woollcott claimed that it was named after him. Other sources say it was named after the Russian Tsar Alexander. According to historian Barry Popik, Troy Alexander, a bartender at Rector's, a New York City restaurant, created the drink in order to serve a white drink at a dinner celebrating Phoebe Snow, a character in a popular advertising campaign in the early 20th century.

The character Raj Koothrappali orders a brandy Alexander in "The Hofstadter Isotope" episode of The Big Bang Theory, after being mocked for ordering first a grasshopper and then a chocolate Martini.
In season one episode nine of Cheers, while Carla is in charge of the bar, she is asked to make a brandy Alexander.
In the Fantasy Island episode entitled "Anniversary," Cap Truman (Jim Backus) rushes outside with his butler to greet Tom (Ronny Cox) and Toni Elgin (Lucie Arnaz) with brandy Alexanders, just as he had done eight years before, the day before their wedding.

In season one episode three of Dilbert, Lena Olsen asks Dilbert to make a "Triple Brandy Alexander with an Easter Island sunset chaser" as a way of keeping him occupied while she searches his house.
In season three, episode 16 of Three's Company, a woman orders a brandy Alexander from Mr Roper. He responds, "You don't want to drink that junk. Try some bourbon. It's fresh."
In season four, episode five of American Horror Story, the Strongman Del (Michael Chiklis) orders two Brandy Alexanders at a gay bar for his paramour Andy (played by Matt Bomer).
In the Season 2 episode of Lou Grant, called "Schools", Lou asks the bartender for a "malt." When the bartender admits to not knowing how to make a malt, Lou asks, "Do you know how to make a brandy Alexander? Just leave out the brandy and give us the Alexander!"
In the TV movies "A Town Without Christmas" and "When Angels Come to Town", the Brandy Alexander is the preferred drink of the angel Max (Peter Falk).

Brandy Alexander Cheesecake
recipe adapted from Southern Living

Ingredients
1 (10-ounce) box chocolate graham crackers, crushed (about 2 1/4 cups)
6 Tbsp unsalted butter, melted
2 Tbsp sugar, divided
4 (8 ounce) packages cream cheese, softened
1 1/4 cups sugar
3 Tbsp cornstarch
4 large eggs, at room temperature
4 Tbsp Brandy, divided 4 tablespoons Kahlua, divided (you can use Creme de Cacao instead)
1 (16 ounces) container sour cream
Optional: Garnishes: blackberries, currants, raspberries, strawberries

Directions
Preheat oven to 325°. Stir together crushed graham crackers, butter, and 1 Tbsp sugar. Press mixture on bottom and halfway up sides of 9-inch springform pan. Freeze 10 minutes.
Beat cream cheese, 1 1/4 cups sugar, and cornstarch at medium speed with electric mixer 2 to 3 minutes or until smooth. Add eggs, 1 at a time, beating at low speed just until yellow disappears after each addition. Add 3 Tbsp brandy and 3 Tbsp Kahlua, and beat just until blended. Pour into prepared crust.
Bake at 325° for 1 hour or just until center is almost set.
During last 2 minutes of baking, stir together sour cream and remaining 1 Tbsp sugar, 1 Tbsp brandy, and 1 Tbsp Kahlua (or crème de cacao).
Spread sour cream mixture over cheesecake. Bake at 325° for 8 more minutes.
Remove cheesecake from oven; gently run a knife along outer edge of cheesecake, and cool completely in pan on a wire rack (about 1 1/2 hours).
Cover and chill 8 to 24 hours.
Remove sides of springform pan, and place cheesecake on serving plate.
Garnish, if desired.

A NIGHT AT THE MOVIES: Chocolate-Themed Movies

In honor of tonight's Academy Awards, I will be eating chocolate. There are a lot of great movies that involve Chocolate, and I've put together a short list. There are a lot of movies with Chocolate in the title that have nothing or little to do with chocolate, as well as movies with fabulous chocolate 'scenes', but which are also not chocolate-themed, so I've skipped those. I hope you enjoy this list. Make some Chocolate Covered Popcorn and watch! Recipe at the end of this post.

Chocolat.  2000. A woman and her daughter open a chocolate shop in a small French village that shakes up the rigid morality of the community. Based on the book by Joanne Harris with Juliette Binoche, Judi Dench and Alfred Molina.

Like Water for Chocolate. Como agua para chocolate. 1992. Based on the novel by Mexican author Laura Esquivel.

Willy Wonka and the Chocolate Factory. 1971 with Gene Wilder. Based on the book by Roald Dahl.

Consuming Passions. Cioccolato Bollente. 1988 in Italian, made in the UK. Black Comedy about a young executive who tries to modernize a chocolate factory.

Bread and Chocolate Pane e cioccolata. 1973 Italian film about an Italian immigrant in Switzerland trying to make a better life for himself while dealing with increasing bigotry and bad luck.

Charlie and the Chocolate Factory. 2005. Johnny Depp. Based on the Roald Dahl book. Not as good as the original movie.

Lessons in Chocolate. 2007. (lezioni di cioccolato) Italian film set in the chocolate world of Perugia.

Milton Hershey: The Chocolate King (documentary). 1995

Kings of Pastry.  (documentary) 2009. Sixteen French pastry chefs gathered in Lyon for three intense days of mixing, piping and sculpting everything from delicate chocolates to six-foot sugar sculptures in hopes of being declared one of the best. Prestigious Meilleurs Ouvriers de France competition. Not just chocolate, but there's a lot of chocolate!

EASY CHOCOLATE COVERED POPCORN

Make a bag of popcorn (buttered or plain) and pop it according to the directions.
Put popped popcorn into large bowl or flat baking pan (for more even distribution).
Melt dark or white chocolate or both (in separate bowls) in top of double boiler (or in microwave).
Drizzle chocolate on popcorn. You can always add more chocolate, but you can't remove it, so use sparingly.

Sunday night I'll be watching the Academy Awards, and I will be eating chocolate. So I started to think about all the great movies that involve Chocolate. Here's a short list. Marshmallow Mermaid Pie: Waitress

I recently re-watched Waitress, a smart and quirky foodie movie from 2007. Waitress was written and directed by the late Adrienne Shelly. Jenna, played by Keri Russell, is a woman trapped in a life she dreams of escaping. She plans to save money from her waitressing job to leave her controlling husband and change the course of her life. She's sharp and sassy and has a gift for making unusual pies whose recipes are inspired by the trials and circumstances of her life. Pies such as: I Don't Want Earl's Baby Pie, Baby Screamin' Its Head Off in the Middle of the Night & Ruinin' My Life Pie, I Can't Have No Affair Because It's Wrong & I Don't Want Earl to Kill Me Pie, Falling in Love Chocolate Mousse Pie, and Marshmallow Mermaid Pie.

So today I thought I'd post Jenna's recipe for Marshmallow Mermaid Pie. The recipe actually came with the DVD, but you can find variations of the recipe on the Internet.

Marshmallow Mermaid Pie was the pie Jenna brought for her doctor, Dr. Mueller, who happened to be semi-retired. Jenna ended up giving the pie to the junior doctor, Dr. Pommater. On their next meeting, Dr. Pommater exclaimed, “that pie was biblically good, that’s how good it was!” Want to try it? Here's a recipe for Marshmallow Mermaid Pie!

Marshmallow Mermaid Pie 

Ingredients
9 graham crackers
1/2 cup sweetened, flaked coconut, toasted
5 Tbsp butter, melted
34 large marshmallows (8 oz.)
1/2 cup whole milk
1-1/2 cup heavy or whipping cream
1-1/2 ounces unsweetened chocolate, grated

Directions
Preheat oven to 375 degrees.
Combine coconut and graham crackers in food processor until coarse crumbs form. Combine crumbs and butter with fork. Press to bottom and side of 9-inch pie plate. Bake 10 minutes and cool on wire rack.
Heat marshmallows and milk in 3-qt. saucepan over low heat until smooth, stirring constantly. Remove saucepan from heat. Cool completely (30 minutes.)
In large bowl with mixer at medium speed, beat cream until stiff peaks form. Fold marshmallow mixture into whipped cream with grated chocolate.
Spoon filling into cooled crust.
Refrigerate pie at least 3 hours or overnight.
Top with mini marshmallows, if desired.
