WORLD CHOCOLATE DAY: GUITTARD'S BEST EVER BROWNIES

Today
is World Chocolate Day! So many great chocolate is grown and processed all over the world, but for today's holiday, I'd like to tell you about Guittard, my favorite baking chocolate, a company close to home.

The Guittard Chocolate Company, a San Francisco company now based in Burlingame, CA, has been in business for over 150 years, so it's not surprising that they have developed some fabulous chocolate. They've been crafting chocolate for five generations, using  time-tested craft, innovative techniques, long-standing relationships, and an obsession with making a premium chocolate that delivers a spectrum of flavors for a variety of uses.

I often use their cocoa, bars, chips, and wafers in my baked goods. I really love their Collection Etienne Chocolate. Their 100 percent cacao bars are amazing, but they also make 64 and 70% bars--all fair trade-certified, non-GMO, kosher, and whatever else you want from your chocolate. Did I say I love this company? Here are two recipes from Guittard for their incredible Collection Etienne Brownies. You will marvel at the intense chocolate flavor in both. The first recipe is my favorite, since it's fudgy. The second recipe is more cake-like, but equally fabulous-just different. Let me know which you prefer.

Happy Birthday to Me! See's Decadent Chocolate Cake

Today's my Birthday, and I just had to post this decadent recipe from See's Candies! I love See's, not only because it's a local company, but because See's really makes fabulous candy. One of the main ingredients in their chocolate candies is Guittard Chocolate, another local company. I'm on See's email list, and See's sent me a birthday email a few years ago with a recipe for Scotchmallow & Bordeaux Decadent Chocolate Cake. OMG. This is one rich and outstanding Birthday Cake.  Perfect for this chocoholic!

Here's the recipe and See's photo! I know what chocolate cake I'm making for my birthday!

Scotchmallow® & Bordeaux™ Decadent Chocolate Cake
Makes 1 Cake (8–10 Servings)

Chocolate Cake Ingredients

• 2 cups boiling water
• 1 cup unsweetened cocoa powder
• 2 ¾ cups all-purpose flour
• 2 teaspoons baking soda
• ½ teaspoon baking powder
• ½ teaspoon salt
• 1 cup butter, softened
• 2 ¼ cups white sugar
• 4 eggs (room temperature)
• 1 ½ teaspoons vanilla extract
• 1 lb See's Custom Mix filled with
See's Dark Scotchmallows/Milk Bordeaux™ (1/2 pound of each)

Chocolate Ganache Ingredients

• 8 oz See’s Semi Sweet Chocolate Chips
• 1 cup heavy whipping cream

Chocolate Cake Instructions

1. Preheat oven to 350°. Grease three 4–6 in. round cake pans. Line with parchment.

2. In a medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool.
Sift together flour, baking soda, baking powder and salt; set aside.

3. In a large bowl, mix butter and sugar together until light and fluffy. Beat in room temperature
eggs one at time, then stir in vanilla.

4. Add the flour mixture alternately with the cocoa mixture into prepared pans. Spread batter
evenly between them.

5. Bake in preheated oven for 18-24 minutes. Allow cake to cool in pans for 10 minutes.

6. Remove onto cooling rack until it reaches room temperature.

Chocolate Ganache Instructions

1. Bring heavy cream to a simmer on the stove top, stirring occasionally. Just as soon as you
see a simmer, remove from heat and poor over chocolate chips, swirling the bowl to make sure
all chips are covered.

2. Place lid on chocolate chips to trap the heat and let sit undisturbed (no mixing) for 5
minutes.

3. Remove lid and swirl the chocolate chips with a whisk starting in the center and working
outward until smooth.

4. Let ganache come to room temperature. The longer ganache sits, the thicker and more of a
frosting it becomes.

Assembly

1. Assemble cooled cake with a thin layer of chocolate ganache between each layer and 2
chopped Dark Scotchmallows®/Milk Bordeaux™ pieces (or as many as you’d like).

2. Apply a thin “naked” frosting coat over entire assembled cake. (Optional: Slightly heat the
cooled ganache in 10-second intervals at half power in a microwave. A slightly warmed ganache
makes for a smooth frosting finish.)

3. Use whole, halved and quartered candy pieces to embellish top of cake. Candies can be
stacked on wooden bamboo skewers and placed into cake for added height and drama, as well as scattered around the base.

CHOCOLATE CHIP BUNDT CAKE: National Chocolate Chips Day

I love a good Chocolate Chip Bundt Cake This cake, adapted from Southern Living, May 2010, is delicious and easy -- two of the most important components of any recipe for me. It's also the perfect cake for National Chocolate Chip Day. BTW, my favorite chocolate chips are from Guittard. They're so rich that they elevate any recipe.

The original recipe has a nut crumble 'crust', but I don't think it needs it--and it sometimes sticks to the pan. Have a look, though, and decide for yourself. I rarely garnish Bundt Cakes. I don't think they need anything more. This cake is great toasted with morning coffee or tea.

CHOCOLATE CHIP BUNDT CAKE

Ingredients
2 + 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, softened
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 Tbsp pure vanilla extract
4 large eggs
1 cup buttermilk
12 ounce semisweet chocolate chips (I do a mix of milk and bittersweet chocolate chips)

Directions
Preheat oven to 350°. Grease and flour 12-cup Bundt pan.
Whisk together flour, baking soda, and salt.
Beat butter, brown sugar, granulated sugar, and vanilla at medium speed with stand mixer 3 to 5 minutes or until fluffy. Add eggs, 1 at a time, beating just until blended. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition, stopping to scrape bowl as needed.
Fold in chocolate chips. (Mixture will be thick.)
Spoon batter into prepared pan.
Bake at 350° for 50 to 55 minutes or until long wooden pick inserted in center comes out clean.
Cool in pan on wire rack 10 minutes; remove from pan to wire rack, and cool completely (about 1 hour).

Melt white chocolate in heat-proof bowl over simmering water; stir occasionally.
Remove bowl; mix in oil.

DECADENT EGGNOG BROWNIES: National Eggnog Day!

It shouldn't come as a surprise, but December is Eggnog Month. Today, though, is Eggnog Day and Christmas Eve, so let's celebrate! If you're like me, you have eggnog around this time of year, and Santa doesn't always partake. So how else to use Eggnog? Eggnog Brownies? Eggnog adds extra richness.

This amazing recipe is from Amy Guittard's Guittard Chocolate Book...no surprise there! I love Guittard Chocolate, and the recipes in Amy's cookbook are fantastic. These brownies are absolutely delicious! If you already have brandy in your eggnog, you don't need to add more... And, as always, use the very best chocolate and Eggnog!

Decadent Eggnog Brownies

Ingredients
6 ounces Guittard 100% Cacao Unsweetened Chocolate, chopped
1 cup + 2 Tbsp unsalted butter
4 large eggs plus 1 egg yolk, divided
2 1/2 cups plus 4 Tbsp granulated sugar, divided
1 tsp vanilla extract
1 tsp salt
1 3/4 cup all-purpose flour
16 ounces cream cheese, room temperature
1/4 cup eggnog
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp ground nutmeg

Directions
Preheat oven to 350°F.
Line 9x9x2 inch pan with foil covering the bottom and extending up sides.
Melt unsweetened chocolate and butter in medium microwave safe bowl at medium power (50% or level 5) mixing at 30-second intervals until smooth and all of chocolate is melted. Set aside.
In large bowl of stand mixer, fitted with paddle attachment, beat eggs, sugar, vanilla, and salt at high speed for about 2-3 minutes or until light and creamy. Blend in melted chocolate at low speed, stopping to scrape sides as needed. Add flour just until incorporated.
Spread two-thirds of the batter into prepared pan and transfer remainder to a small bowl.
Clean bowl and paddle of stand mixer and refit to mixer. Beat egg yolk on medium-high until frothy. Stir in 4 tablespoons granulated sugar, eggnog, vanilla, cinnamon, and nutmeg. Beat in cream cheese until mixture is smooth.
Top  brownie batter with cream cheese eggnog mixture, using spatula to level out mixture. Spoon remaining brownie batter over cream cheese eggnog layer, again using spatula to spread evenly. Drag the spatula through pan to create marbled effect.
Bake about 45 minutes to an hour or until top is puekered and cracked and toothpick inserted in center is moist (DO NOT OVERBAKE!)
Cool before cutting.

TRIPLE CHOCOLATE CAKE: National Chocolate Day!

Today is National Chocolate Day. To be honest there are several Chocolate Days throughout the year, and, of course, every day is Chocolate Day at DyingforChocolate.com. So to celebrate, you can take a spin back over the past 12 years of daily chocolate recipes on this site, or you can make this Triple Chocolate Cake from Tommy Bahama Restaurant & Bar. This is a cake to share!

Triple Chocolate Cake

Ingredients
6 oz E. Guittard Cocoa Rouge cocoa powder
24 fl oz water
1 lb and 12 oz all-purpose flour
1 Tbsp iodized salt
2 1/2 Tbsp baking soda
2 1/2 lbs sugar
24 fl oz buttermilk
18 fl oz vegetable oil
7 whole eggs
1 Tbsp and 1 1/2 tsp pure vanilla extract
Chocolate Ganache Frosting (see recipe below)
Chocolate Whipped Cream (see recipe below)

Directions:
Bring water to boil, turn off heat, add cocoa powder, and stir until thick. Set aside to cool.
Mix dry ingredients in mixer with whip attachment on low-medium speed for 3 minutes. Mix all liquids at once, except the chocolate mixture, with the remaining dry ingredients for 2 minutes at medium speed. Scrape well. Add chocolate mixture and mix for about 1 minute on medium speed. Set the batter aside for 1 hour.
Preheat oven to 325°F. Grease two 10” cake pans. Cut two circles, approximately 10” in diameter, out of parchment paper. Place them into greased pans. Spray parchment circles evenly with cooking spray. Pour half batter into each of the two pans.
Bake for 1 hour. (Insert toothpick into each cake after 1 hour; if comes out clean, cakes are done.) Cool cakes on wire rack.

CHOCOLATE GANACHE FROSTING

Ingredients:
4.8 oz E. Guittard 61% Lever du Soleil semisweet chocolate wafers
28.8 oz powdered sugar
19.2 oz sour cream
19.2 oz butter, cubed
9.6 oz E. Guittard Oban unsweetened chocolate wafers

Directions:
In double boiler, melt chocolate at 110-112°F until there are no lumps.
Slowly add butter.
In small mixer with whip attachment, add all of powdered sugar and sour cream at once. Whip on high speed until incorporated for about 2 minutes.
Add chocolate mixture to sour cream mixture and whip until the color turns light brown (like the color of milk chocolate) for about 3-4 minutes.
Refrigerate frosting for 20-30 minutes while cutting layers of cake so it firms up.
The temperature of the frosting should remain around 60°F while building the cakes.

CAKE ASSEMBLY

Ingredients:
2 chocolate cakes, each sliced into two layers ¾” thick (for four total layers), top and sides trimmed

60 oz Chocolate Ganache frosting
3 cups chocolate cake crumbs

Directions:
Take cooled cakes out of the pans. Invert them on cutting board, with the tops facing up.
With cake cutter, slice each cake into two layers, each 3/4” thick. Be very gentle when handling, as the cakes are very moist.
Trim all layers until they are same size.
Place all cake trimmings in food processor and pulse until coarse. Place the cake crumbs on a sheet pan and put into an oven to dry out. Reserve for later.
Evenly spread 12 oz of frosting across the top side of the bottom layer.
Repeat previous step with each remaining cake layers, stacking them as you go.
Evenly spread 12 oz of frosting over sides. Make sure frosting is smooth all over.
Remove dried-out cake crumbs from oven and sprinkle over top and sides.
Place entire cake in refrigerator.

CHOCOLATE WHIPPED CREAM

Ingredients
1 quart heavy cream
2 Tbsp E. Guittard Cocoa Rouge cocoa powder
8 oz Swiss Chalet white chocolate mousse powder

Directions
Whisk all ingredients in mixing bowl.
Transfer mixture to mixer with whip attachment and whip until cream has stiff peaks.

PLATING
Instructions: Cut cake into 8 large pieces.

I often use their cocoa, bars, chips, and wafers, and I really love their Collection Etienne Chocolate. Their 100 percent cacao bars are amazing, but they also make 64 and 70% bars--all fair trade-certified, non-GMO, kosher, and whatever else you want from your chocolate. These are also available as wafers. I love this company! So here are two recipes from Guittard for their incredible Collection Etienne Brownies. You will marvel at the intense chocolate flavor in both. The first recipe is my favorite, since it's fudgy. The second recipe is more cake-like, but equally fab...just different. Let me know which you prefer.

LEMON CHIFFON TRUFFLES: National Lemon Chiffon Cake Day

March 29 is National Lemon Chiffon Cake Day, and there's nothing so light and wonderful as a lemon chiffon cake made right! However, there really isn't a Chocolate Lemon Chiffon Cake, so instead to celebrate the day, I suggest making Lemon Chiffon Truffles. The truffle recipe below is simple to make. There's no coating.. so they're really easy. I always use Meyer lemons, maybe because I have 4 Meyer lemon trees that never stop producing lemons - or maybe because Meyer Lemons have the best flavor.  For the white chocolate I use Guittard. Whatever you do, please use 'real' white chocolate.

Want to read a great book related to Lemon Cake? Read The Particular Sadness of Lemon Cake by Aimee Bender.

No time to make these? Michael's Chocolates makes my favorite -- Lemoncello Truffles.

LEMON CHIFFON TRUFFLES

Ingredients
1/4 cup unsalted butter
Zest of 1 Meyer lemon
3 Tbsp heavy cream
1 cup white chocolate, finely chopped (real white chocolate not disks-I use Guittard)
3/4 tsp lemon extract
1/4 cup powdered sugar or sparkling sugar for coating

Directions
Put white chocolate in mixing bowl, set aside.

Melt butter with lemon zest in saucepan. Stir in cream and heat until bubbles form around edges but not boiling.
Pour hot cream mixture over white chocolate. Add extract then stir until smooth.
Cover mixture and refrigerate 2 hours (or overnight) -- until firm enough to handle.
Scoop mixture by heaping teaspoon fulls and form into balls. Roll in powdered sugar or sparkling sugar.
Freeze truffles 20 minutes or refrigerate for one hour, then enjoy.
Keep truffles in refrigerator until ready to eat.

GUITTARD'S BEST BROWNIES EVER: World Chocolate Day

Today is World Chocolate Day. There is great chocolate made all over the world, but today I thought I'd feature my favorite baking chocolate--Guittard--which is close to home.

DECADENT EGGNOG BROWNIES: National Eggnog Month

It shouldn't come as a surprise, but December is Eggnog Month. If you're like me, I have eggnog around this time of year, but Santa doesn't always partake. So how else to use it? Why not make Eggnog Brownies?
