BRANDY ALEXANDER BROWNIES & COCKTAIL: National Brandy Alexander Day


Today is National Brandy Alexander Day. A Brandy Alexander is a sweet, brandy-based cocktail that became popular during the early 20th century. It was supposedly created for the wedding of Mary, Princess Royal and Countess of Harewood and Viscount Lascelles, in London, in 1922. The Brandy Alexander is based on an earlier, gin-based cocktail called simply an “Alexander.”

From the Brandyalexander website comes the history that Movie Stars have consumed Brandy Alexanders on sets of movies and TV shows and during celebratory events over the last century.  Among the famous calls are by Jack Lemon in Days of Wine and Roses. In one scene Lee Remick receives a Brandy Alexander and is impressed with the chocolate flavor, yet smooth taste of the drink. In the pilot of the Mary Tyler Moore show, Mary calls for a Brandy Alexander when asked if she would like a drink at her job interview and Peggy on a blind date in an episode of Mad Men, Indian Summer orders for a Brandy Alexander. Over time other movies made reference to Brandy Alexanders.

So with this exciting alcoholic Food Holiday, break out the Brandy and Creme de Cacao!

Brandy Alexander

1 1/2 oz brandy
1 oz dark creme de cacao
1 oz half-and-half
1/4 tsp grated nutmeg

In a shaker half-filled with ice cubes, combine the brandy, creme de cacao, and half-and-half. Shake well. Strain into a chilled cocktail glass and garnish with the nutmeg

I'm not sure where I found the original recipe for Brandy Alexander Brownies, but I found a similar recipe at The Pioneer Woman that includes a recipe for Brandy Alexander Icing. My original recipe below includes optional walnuts, and I don't usually frost brownies. They're plenty rich the way they are, but I do use more chocolate, but then I'm always Dying for Chocolate.

Brandy Alexander Brownies

Ingredients
6 Tbsp unsalted butter, softened
3/4 cup sugar
2 eggs
2 ounces unsweetened chocolate, melted and cooled
2 Tbsp creme de cacao
2 Tbsp brandy
2/3 cup all purpose flour
1/2 tsp baking powder
Dark chocolate chips (optional)
1/3 cup chopped walnuts (optional)

Directions
In mixing bowl, cream together the butter and sugar till fluffy.
Add eggs; beat well.
Blend in cooled chocolate, creme de cacao, and brandy.
Stir together flour, baking powder, and 1/4 teaspoon salt.
Stir into creamed mixture.
Stir in chocolate chips and chopped nuts (optional)
Spread in a greased 9x9x2 inch baking pan.
Bake at 350° for 20 to 25 minutes.
Cool. Cut into bars.

Optional: Frost with Brandy Alexander Frosting before cutting into bars!

Brandy Alexander Frosting
2 Tbsp Unsalted Butter, Softened
1 cup Powdered Sugar
1 tsp Creme De Cacao
1 Tbsp Brandy

Mix all together!

LIFE IS JUST A BOWL OF CHOCOLATE COVERED CHERRIES: History, Recipes, & Vintage Ads for Chocolate Covered Cherry Day!

Life is just a Bowl of Chocolate Covered Cherries! Because there's nothing quite like a chocolate covered cherry, I thought I'd post 4 recipes for Chocolate Covered Cherries Day. Don't have time to make these? Buy your favorite chocolate covered cherries to celebrate the day!

When I was growing up, I always wanted the chocolate covered cherries in the Whitman Sampler Box. Although there was a diagram on the inside lid of the box of the types of chocolates, my sister would often move the cherry ones, our favorites. Then, she'd leisurely eat them, knowing that they were mis-marked, without anyone claiming them. Oh, childhood!

Some history of Chocolate Covered Cherries: According to National Day, in the 1700s in England, cherries were enrobed in chocolate with a little kirsch liqueur. After finding their way to the United States, Americans received them quite well, delighting in the little bit of alcoholic cordial surrounding the fruit dipped in chocolate. Although originally made with the liqueur, cordials/chocolate covered cherries are more commonly made with a sugar syrup flavored with cherries. The pitted cherries have been cooked in sugar syrup and jarred.

I can buy fresh cherries in January at Berkeley Bowl, my favorite produce market here in Berkeley, but if you're a locavore, you may not want to buy Chilean Cherries or maybe they're not available where you live, so I've also provided recipes for dried or maraschino cherries. If you decide to use maraschino cherries, be sure and dry them thoroughly or your chocolate will seize. And, if you're using maraschino cherries, save the juice from the jar to make the Chocolate Covered Cherry Cocktail in this post! My favorite jarred cherries are Chukar Cherries. So many varieties. Any of these recipes would be great for Valentine's Day, so bookmark this page!

1. Chocolate Covered Fresh Cherries

Personally I like dark chocolate with cherries, but if you're a milk chocolate fan, go for it! As always, use the very best quality, organic, fair trade chocolate! Hint: If the melted chocolate starts to harden  before you’re done dipping, put it back on the stove for a few minutes and give it a good stir.

Ingredients
8 ounces chocolate (I use Guittard 65%)
1/2 pound fresh, sweet cherries

Directions
Wash and dry cherries.
Line baking sheet with parchment paper.
Melt chocolate in top of double boiler or in saucepan over saucepan over simmering water.
Stir chocolate until completely melted and smooth.
Remove chocolate from heat.
Grab each cherry by stem and dip into chocolate. Swirl cherry clockwise, coating bottom 3/4. It's always nice to see the cherry showing at the top.
Place cherry on parchment paper covered baking sheet.
Repeat with remaining cherries.
Place in refrigerator until chocolate hardens.
If not eating right away, put chocolate covered cherries in covered container and keep in refrigerator for a few days.

2. Chocolate Covered Marschino Cherries

Use the above recipe with maraschino cherries. Just be sure and dry cherries thoroughly before dipping.

3. Chocolate Covered Dried Cherries

Ingredients
8 ounces Dark or Milk Chocolate
1 cup dried Cherries (Chukar or Trader Joe's)

Directions
Line baking sheet with parchment paper.
Melt chocolate in double boiler as above or glass bowl in microwave. Once melted, remove from heat.
Add cherries to chocolate. Stir until coated.
Remove clumps of coated dried cherries with two forks or slotted spoon (this works very well), shaking off excess chocolate on side of bowl. Transfer to lined baking sheet.
Put baking sheet in refrigerator until chocolate hardens, about 20 minutes.
Store in refrigerator.

4. Easy Chocolate Covered Cherries

Ingredients
60 maraschino cherries with stems
3 tablespoons butter softened
3 tablespoons light corn syrup
1/4 teaspoon salt
2 cups sifted powdered sugar
1 1/2 pounds candy-making chocolate

Directions
Drain cherries thoroughly on paper towel. Combine butter, corn syrup, and salt. Stir in powdered sugar; knead mixture till smooth (chill mixture if too soft).
Shape 2 teaspoon of the sugar mixture around each cherry. Place coated cherries on a baking sheet lined with waxed paper (or parchment paper), chill.
In a heavy 1 quart saucepan, melt chocolate over low heat, stirring constantly (use the microwave on low to melt more quickly). Holding by the stems, dip coated cherries, one at a time, into chocolate coating. Spoon chocolate over cherries to coat to ensure the center is fully encased. Place cherries on a baking sheet lined with waxed paper (or parchment paper). Chill. Store in refrigerator in a covered container. Let candies ripen in refrigerator for one or two weeks before serving.....If you can wait!

Want to drink your Chocolate Covered Cherries? 

Chocolate Covered Cherry Cocktail

Fill a tall glass with ice.
Add 1/2 ounce Bailey's, 1/2 ounce Kahlua.
Add a few drops maraschino cherry juice.
Shake.
Strain into another glass with ice.
Add a Chocolate Covered Maraschino Cherry for garnish!

FULL MOON COCKTAIL: International Cocktail Day!

 It must be in the stars, and I'm over the moon about it. Tomorrow is International Cocktail Day, and tonight is the Full Moon. To celebrate, here's a recipe for a Chocolate Full Moon Cocktail. Tequila and Chocolate (Creme de Cacao, both dark and clear) go so well in this easy cocktail. Don't let it fool you, though. You'll be howling at the moon, if you drink too many. :-)

Chocolate Full Moon Cocktail

Ingredients
1 oz Cream
1/2 oz Creme de Cacao
2 oz Tequila
1/2 oz Dark Creme de Cacao

Directions
Pour all ingredients into cocktail shaker with ice and shake.
Strain into cocktail glass.
Garnish with chocolate curls.

EASTER BUNNYTAIL COCKTAIL

Perfect for your Easter Egg Hunt, this Easter BunnyTail Cocktail recipe comes from Drink of the Week.


Easter BunnyTail Cocktail

1 1/2 oz. Dark Creme de Cacao
1/2 oz. Vodka
1 tsp. Chocolate Syrup
1 tsp. Cherry Brandy

Shake creme de cacao and vodka with ice. Strain over ice in a cocktail glass.
Top with a float of chocolate syrup and cherry brandy.

Hurricane Tips and Recipe for Chocolate Hurricane Cocktail!


Hope all my friends in the path of Hurricane Helene have their hurricane supplies on hand as Helene heads your way. Here are a few tips. 

Hurricane Tips:

1. Make sure you have enough emergency supplies such as water (fill jugs and bathtub), batteries, a battery powered radio (retro?), flashlights, first aid kit, canned goods, extra cash, toilet paper,  matches, medicines, can opener, Swiss army knife.

2. Since you might lose power, transfer essential foods to a small mini-fridge if you have one, so you won't lose the cold in the main refrigerator by not having to open it as much--or at all.

3. Get important papers and special photos together and secure in plastic.

4. If you have time, video or photograph your property (this will help with insurance later).

5. Make sure you have pet supplies, crate, carriers in easy reach. If you need medication for your pets, have it handy.

6. Have clothes and sleeping gear together in a closet in case you need to go to a shelter.

7. If you can, put plywood on windows that will get the brunt of the storm. If you don't have any plywood, criss-cross windows with duct tape. Take in or tie down any objects outside that might fly around--patio furniture, toys, garbage cans, garden tools, etc.

8. To keep the kids calm (without power), have board games and cards ready, play charades or other non-electrical dependent games. Do arts and crafts projects.

9. Make sure you have an emergency plan to contact other family members to check on safety.

10. Stay inside!

After the All-Clear Signal:

1. Check for power lines that are down and stay away from them.

2. Drink bottled water until you know your water is safe.

3. Check on neighbors.

4. Replenish your emergency supplies in case there's a next time.

CHOCOLATE HURRICANE COCKTAIL

1 oz Captain Morgan® Parrot Bay coconut rum
1 oz Godiva® chocolate liqueur
1 3/4 oz orange juice
1 splash lemon juice

Pour all ingredients into cocktail shaker half-filled with ice cubes. 
Shake well, strain into a cocktail glass, and serve.

CHOCOLATE STRAWBERRY SHORTCAKE: National Strawberry Shortcake Day!

Today is National Strawberry Shortcake Day. There's something about strawberries, whipped cream, and shortcake that says Summer! This recipe for Chocolate Strawberry Shortcake is the bomb!

A definition ... There are several different types of shortcake or pastries known as shortcake. First there are scones and biscuits -- perfect for Strawberry Shortcake. And, then there are sponge cakes like those little spongy cups you get at the supermarket, also good, just different. And, of course, there's just plain cake which can be chocolate! All these 'cakes' are quick to make and taste great with strawberries and whipping cream. Of course, for me, the shortcake should always be chocolate. As always, your cakes are only as good as the chocolate you use!

A bit of history... No one really knows exactly when the first strawberry shortcake was made. Shortcake, itself, is a European invention that goes back at least to the late 1500s. Strawberries have been around for over 2000 years. But putting strawberries and shortcake together is an American tradition. Strawberry Shortcake parties became popular in the United States around 1850 with the earliest recipe in 1847. Strawberries were so popular that people talked about strawberry fever. Advertisements and articles about strawberry shortcake, caused more and more demand. Harpers Magazine in 1893 said, "They give you good eating, strawberries and short-cake-- Ohh My!"

Here's a great recipe for Chocolate Strawberry Shortcake adapted from Rhoda Peacher at Hobbyfarms.com

A tip from Lynda King at Hobbyfarms: one of the best ways to prepare berries for shortcake is to bruise them with a potato masher. You don’t want all the berries mashed, but you want most of them bruised sufficiently to yield their juice into the mixture. If needed, add sugar or honey to taste, depending on your preference, and chill for a few hours before serving.

CHOCOLATE STRAWBERRY SHORTCAKE

Ingredients

Shortcake
2 cups all-purpose flour
1/2 cup sugar
2/3 cup Dutch process cocoa powder
3 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup + up to 2 Tbsp milk

Filling
4 to 5 cups fresh strawberries
1/4 cup sugar
1 cup whipping cream, whipped

Directions
Preheat oven to 400 degrees F.
Grease two 8-inch round cake pans.

In large bowl, combine flour, 1/2 cup sugar, cocoa powder, baking powder, and salt.
Using pastry blender, cut butter into mixture until consistency resembles coarse crumbs.
Stir in 1 cup milk with fork until mixture is just moistened (you may need to add extra milk for the mixture to blend evenly).
Using your fingers, spread into prepared pans.
Bake at 400 degrees F for 15 minutes, or until cake begins to pull away from sides of pans.
Cool 15 minutes; remove cakes from pans. Cool completely.
Reserve five whole strawberries for garnish.
Wash, hull, and halve remaining strawberries.
In large bowl, combine halved strawberries and 1/4 cup sugar.
Place 1 shortcake bottom-side up on serving plate.
Top with half of strawberries and half of whipped cream.
Drizzle with a few tablespoons of chocolate sauce, to taste.
Place the other shortcake on top of this, right-side up.
Top with remaining prepared strawberries and whipped cream.
Garnish with reserved whole strawberries.

CHOCOLATE STRAWBERRY SHORTCAKE COCKTAIL


1 shot amaretto
1 shot creme de cacao
2 double shots of fresh strawberry puree
2 double shots of cream

Add several ice cubes, 2 double shots of fresh strawberry puree, 2 double shots of cream, add one shot of amaretto and one shot of creme de cacao. Blend for 1 min until mixture is thick. Pour into a martini glass.

Garnish with a whole strawberry or rim the glass with crushed chocolate--or both!

This year National Tequila Day coincides with the Full Moon. It must be in the stars, and I'm over the moon about it. To celebrate, here's a recipe for a Chocolate Full Moon Cocktail. GERMAN CHOCOLATE CAKE COCKTAIL: National German Chocolate Cake Day

I totally forgot to post this on Tuesday for National German Chocolate Cake Day. German Chocolate Cake Day is an American Holiday has nothing to do with Germany. The chocolate part was invented by Sam German at Baker's... to learn more about the history of German Chocolate Cake go to my post HERE.

But maybe you're not a baker? Want that cake in a cocktail? You're in luck. There are several recipes..with and without cream..with lemon.. rimming the glass with chocolate, adding chocolate curls. Invent your own, but here's a start!

German Chocolate Cake Cocktail 

1 ounce Malibu coconut rum
1 ounce Dark Creme de Cacao
1.5 ounces Cream
Splash of Frangelico

Mix and serve with ice in a cocktail glass. You can also half the recipe and serve over ice in a shooter glass.
