CAPPUCCINO CHOCOLATE CHIP MUFFINS: National Muffin Day

Yesterday was National Muffin Day, and I totally forgot to post this easy recipe for Cappuccino Chocolate Chip Muffins! 

And, FYI: A cappuccino is an Italian coffee drink prepared with espresso, hot milk, and steamed-milk froth. The name cappuccino comes from the Capuchin friars, referring to the color of their habits. 

This being said, I always look for a way to add chocolate to every 'food' holiday, and this is a great recipe for National Muffin Day!

Because I use a lot of Wilton products in my baking from pans to coloring, I came across this great recipe for Cappuccino Chocolate Chip Muffins on the Wilton Website, and I adapted it just a bit. I like to have chocolate chips in my muffins! I use Wilton's Jumbo Muffin Pans, because if I'm going to have a muffin on National Muffin Day, it may as well be a big one!

CAPPUCCINO CHOCOLATE CHIP MUFFINS

Tools:
Jumbo Muffin Pan
Jumbo Baking Cups

Ingredients:
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup semi-sweet chocolate chips, divided 
1/2 cup pecans, chopped and divided
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cup milk
1/3 cup instant coffee granules
1/4 cup unsalted butter, melted
1 egg

Instructions
Makes: about 6 jumbo muffins

Preheat oven to 350º F. Line jumbo muffin pan with jumbo baking cups.
In large bowl, combine flour, sugar, 1/2 cup chocolate chips, 1/4 cup chopped pecans, baking powder, cinnamon, and salt.
In small bowl, combine milk and coffee granules; stir until completely dissolved. Add melted butter and egg; mix well.
Add coffee mixture to flour mixture; mix until just moistened (Do not overmix).
Distribute mixture evenly into baking cups.
Sprinkle top of each muffin with reserved chocolate chunks and pecans.
Bake 25 to 28 minutes or until cake tester inserted in center of muffin is clean when removed. Remove from oven; cool muffins in pan 8 minutes.
Remove muffins from pan; cool completely on cooling grid.

CAPPUCCINO TRUFFLES: National Cappuccino Day!

Today is National Cappuccino Day. I'm sure you've already had a cappuccino to celebrate, but here's another way to celebrate the day -- Cappuccino Truffles. This easy recipe is from Taste of Home. These truffles are absolutely delicious.

CAPPUCCINO TRUFFLES

Ingredients 
1 Tbsp boiling water
2 tsp instant coffee granules
2 1/2 tsp ground cinnamon, divided
1/3 cup heavy whipping cream
6 ounces bittersweet chocolate, chopped
2 Tbsp butter, softened
3 Tbsp sugar

Directions 
In small bowl, combine water, coffee and 1 tsp cinnamon; set aside.
In small saucepan, bring cream just to a boil. Remove from the heat; whisk in chocolate and butter until smooth. Stir in coffee mixture. Press plastic wrap onto surface. Refrigerate for 1 hour or until easy to handle.
In small bowl, combine sugar and remaining cinnamon. Shape chocolate into 1-inch balls; roll in cinnamon-sugar.
Refrigerate for at least 2 hours or until firm.

Makes about 1 1/2 dozen.

CAPPUCCINO CHOCOLATE TRUFFLE PIE: National Cappuccino Day!

Today is National Cappuccino Day, and here's an awesome Cappuccino Creme Chocolate Truffle Pie to celebrate. This is great for today and this holiday weekend-- or save the recipe for Thanksgiving! Recipe adapted from the Hershey's Kitchens.

CAPPUCCINO CHOCOLATE TRUFFLE PIE

Ingredients
1/2 cup DARK Cocoa
1/3 cup unsalted butter
1/4 cup sugar
1 can (14 oz.) sweetened condensed milk
1 cup Chopped Dark Chocolate (65-75% cacao)
2 eggs, slightly beaten
9-inch baked pastry crust (prepared or make your own)

CAPPUCCINO CREME (wait until ready to serve): In mixer, combine 1 cup (1/2 pint) whipping cream, 1-1/2 teaspoons powdered espresso, 2 teaspoons DARK Cocoa, and 3 tablespoons powdered sugar; beat until stiff. About 2 cups.

Directions
Heat oven to 350°F.
Melt butter over low heat. Stir in cocoa and sugar. Add sweetened condensed milk, chocolate, and eggs; stir until smooth. Remove from heat. Pour into crust.
Bake 25 to 30 minutes - until center is almost set. Cool completely.
Refrigerate until ready to serve.
Just before serving, prepare and top with Cappuccino Creme.

CAPPUCCINO CHEESECAKE WITH OREO CRUST: National Cappuccino Day!

Today is National Cappuccino Day. I'm not a regular coffee drinker, but that doesn't keep me from having a mocha every now and again. Chocolate and coffee go so well together, and I often add coffee or espresso to brownies, cakes, and cookies. So in honor of the holiday, here's a recipe adapted from Philadelphia Cream Cheese for Cappuccino Cheesecake. The actual cheesecake does not contain chocolate, but with an oreo crust, you'll get your 'jolt' of chocolate!

CAPPUCCINO CHEESECAKE WITH OREO CRUST

Ingredients
16 ounces Cream Cheese, softened
1/2 cup sugar
1/4 tsp vanilla
2 eggs
1 Tbsp milk
2 Tbsp Instant Coffee (choose a quality Instant Coffee or coffee granules)
1 Oreo Pie Crust - see below

Directions
Preheat oven to 350°F.
Beat cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended.
Microwave milk in small microwaveable bowl on high 15 seconds. Add coffee granules; stir until dissolved.
Add to batter; mix well.
Pour into crust.
Bake 40 minutes or until center is almost set.  (do not overbake)
Refrigerate several hours or overnight.  

Oreo Pie Crust
Ingredients
24 Oreos (or Trader Joe's JoeJoes)
1/4 cup unsalted butter, melted

Directions
In medium-sized bowl or food processor, add Oreo cookies and blend until texture of coarse meal or crumbs. Add melted butter and blend until combined. Put ground crumb mixture into 9 - or 10 - inch deep-dish pie pan and press evenly on bottom and up sides  (about 1/8 inch around).
Refrigerate crust for hour+ before adding filling to prevent crumbling when you serve.

1/4 cup unsalted butter, melted
1 egg

Instructions

This recipe is adapted from the Hershey's Kitchens.

CAPPUCCINO CREME CHOCOLATE TRUFFLE PIE

Ingredients
1/2 cup DARK Cocoa
1/3 cup sweet butter
1/4 cup sugar
1 can (14 oz.) sweetened condensed milk
1 cup Chopped Dark Chocolate (70-85% cacao)
2 eggs, slightly beaten
